A favourite haunt of celebrities – and the island choice for weddings and birthday parties with a touch of class – Joe’s is unbeatable, whether for a light lunch, sunset cocktails or a fine dinner. 20 years and many awards on, Da Maurizio Bar Ristorante (next door to Joe’s) continues to offer discerning diners the finest contemporary Italian cuisine. Almost on the rocks, this is one of the most stunning settings on Phuket – its spectacular backdrop a favourite for wedding parties up to 100. Chef/owner Maurizio Laureri, known for his wine dinners with their stimulating menus, changes the restaurant menu every month. Choose live local fish, crab, lobster and other shell fish, homemade pastas, exotic salads and imported delicacies such as black and white truffle. And, of course, the Wine Spectator Award-winning cellar.

From the minds of many can come the idea to provide a guest a good meal out. However, it takes the expertise and creativity of ‘two chefs’ to produce a concept that fulfills that promise and is more than just a cut above the rest. Well prepared dishes, which are appealing to the palate are the makeshift of a dinner out. But by adding that extra touch of creativity, superb hospitality and service with great attention to detail in surroundings that exuberate smart casual sophistication, there is indeed an evening to remember. The people behind the Two Chefs concept, Billy and Henrik, have produced several dining venues in Phuket. Their third and newly opened location in Kata Center, under the management of ‘third chef’ Krister, exemplifies this notion of fine dining. A warm ambience and refinement pervade the open aired and alfresco eating areas including the open rooftop bar and seating area on the second floor. International cuisine with strong underlying tones of a Scandinavian influence and Thai food are exquisite to the eye and even more to the taste. A medley of starters that include Toast Skagen with prawns, dill, chili and mayonnaise, Homemade Pepper Smoked Norwegian Salmon with rosepepper crème, roasted chiabatta and salad, Tzatzki and Garlic Bread provided delighful tastes and texture combinations. Accompanied by a glass of white wine, the appetizers offered an insight into the delights that were yet to come. From the selection of wines, our host Krister recommended an Australian red, a Hardy Cabernet Shivaz, for the main course. What a superb choice that complemented the Pork File ala tzatzki with herb gravy, roasted vegetables served with baked potato and the Pepper Steak, Two Chefs most famous steak served with creamy brandy flavoured pepper sauce, baked tomato sautéed vegetables and potato gratin! The dishes were incomparable – perfectly cooked and topped with savoury sauces and served with side dishes. A sampling of the marvelous desserts served at Two Chefs continued to provide further enjoyment. A blueberry cheesecake, a brownie and an apple crumble served amidst creams and glazes was a perfect top off to the meal. Expect magnificent food, excellent service and friendly hospitality in a warm ambience. Two Chefs offers an ideal opportunity to enjoy and savour a memorable evening out.

Pasta Basta not only brings another dimension to waterside dining at Royal Phuket Marina, but offers something unique to Phuket: Design your own pasta dish. As for the environment, JOBI designers’ Pui has employed her creative talents creating an ‘industrial’ feel; a long communal dining table occupies the centre of the restaurant, surrounded by high level dining ‘à deux’ tables. The décor is simple, creating the kind of unassuming atmosphere you could expect from a chic Milan city-centre eatery. Back to that do-it-yourself pasta. If you’re like me, this kind of thing doesn’t generally appeal BUT, once we got stuck into it, there’s no denying it’s a great way to go. Take a few minutes to work out how to do it, check with your host Cathy Masson if you’re not sure what goes with what, then dive in and create your own mouthwatering experience. My choice: penne with (base sauce) olive oil, (ingredients) scallops and mussels and (additional condiments) garlic and white truffle oil. I’m a genius! OK, the fact that the ingredients were top quality and the chef clearly knows a thing or two may have contributed to my enjoyment of the best pasta meal I’ve eaten for as long as I can remember. My dining companion went against Cathy’s advice and selected smoked salmon and Parma ham – two of her favourite tastes – as her two main ingredients and said it was divine. Just goes to show: when you’re in the driving seat you can buck convention happily. But, if you prefer to stay within the bounds of convention, feel free to go for one of the ‘Classic Creations’, where the chef does all the work. But you’ll be missing out. Around the edges of our pasta creations, we ordered garlic bread, bruschetta and a fresh salmon salad. The former were as you’d expect, the latter simply heavenly. All was washed down with a very drinkable Santa Helena Cabernet Sauvignon and followed by desserts from nearby Les Anges bakery. Pasta Basta is quite simply first-rate waterside dining with no pretentions – just impeccably sourced and prepared ingredients and excellent service from a team that never stops smiling and is obviously happy at work. My companion’s question, “When can we come back?” says it all.

It was a brave move to open three restaurants (well, two restaurants and a unique lounge bar) on the same day – but Royal Phuket Marina did it with their soft opening on the first day of the Phuket International Boatshow in January 2014. Long-awaited by mid-island residents, the marina’s boardwalk has come alive and promises to be a unique place to drink and dine ‘à la St Tropez’. We started our ‘marina evening’ at The Speakeasy – a name that conjures up 1920s-30s prohibition in the USA, when alcohol was illegal. Speakeasies blossomed and, unlike the traditional bars, welcomed men and women who wanted a few drinks, to listen to live music and to dance. Why “speakeasy”? Well, originally it was because pre-prohibition unlicensed USA bartenders would tell their customers to “speak easy” when ordering their alcohol. Of course, there’s nothing dodgy about Phuket’s Speakeasy at Royal Phuket Marina’s boardwalk – but it does conjure up images of an Al Capone hangout; you almost expect Eliot Ness and his ‘Untouchables’ to burst through the doors. This atmosphere is thanks to interior designer Pui (of JOBI designers) who, with her eye for detail, has done an amazing job of recreating the authentic ‘speakeasy’ environment. The Speakeasy, along with the two boardwalk restaurants, is managed by Cathy Masson – one of Phuket’s best known restaurateurs whose unique ‘The Wall’ in Rawai was one of the south island’s favourite eateries in the late 90s. What is The Speakeasy about? Well, lounge around with friends on one of the luxurious sofas, soaking up the atmosphere with a perfect gin & tonic or a cocktail from the extensive menu. Or sip a malt whisky accompanied by a good cigar outside on the boardwalk. It’s perfect for informal meetings and briefings too, with a private area in the back behind the central island bar (but no, there isn’t a door into a back alley – that would be just a bit TOO authentic). And anywhere that limits its selection of gins to Hendricks, Bombay Sapphire and Tanqueray has my vote! Daily happy hour from 6-9 pm Fridays live music from 7pm 11

Chef Nuttanun says this is a favourite dish at Palm Seafood Restaurant. His secret in making this dish so popular is that he uses live Phuket lobster and chooses only the best-quality ingredients.

Method Cut the lobster in half and remove any meat from the head and set aside. Cut the meat up into pieces Put the butter in a pan, add the shallots and cook until softened. After that add lobster meat and the fish stock, cognac, mushrooms, tarragon leaves, the mustard powder and the whipping cream. Cook for three minutes and lastly add hollandaise sauce heated until golden brown After cooking the lobster with the sauce place the lobster back into the shell and it’s ready to serve
