Northeast Metro Expo brings community together
Alumna walks to beat MS BY SARA MARIE MOORE VADNAIS HEIGHTS EDITOR
MINNEAPOLIS — Brittany Machus, a 2005 Mahtomedi High School grad, completed her seventh Walk MS: Twin Cities May 1. Machus was diagnosed with MS in 2009 at the age of 22. Her parents, sister and often some extended family have walked the Walk MS with her. They carry her over the finish line. Machus walks either the 1 ½ mile walk or the 6 ½ mile walk, depending on how she is feeling. This year she and her family did the 1 ½ walk together. “I can get pretty tried and sore after it,” she said. “I have to make sure I take it easy.” Machus and her clan take breaks to help her get the most out of the walk. Exercise is actually also important for those who have MS. “It definitely can take a lot out of me,” said Machus. “But it feels good to finish it.” MS is a disease which affects the central nervous system. While the cause is unknown, something causes the immune system to attack the spinal cord and nervous system. Myelin, a protective coating on nerve fibers, becomes damaged and signals to and from the brain are disrupted. This can cause numbness, tingling, fatigue and paralysis. Symptoms can vary widely from patient to patient. Machus enjoys the camaraderie of the walk and seeing so many people come together to try to put a stop to MS. “It’s great because I can see the support not only of my loved ones, but all of the other families and

Military's top chef got start in hometown restaurant BY DEBRA NEUTKENS EDITOR
U.S. Navy chef Jeremy Andersen traces his culinary journey back to time spent in his grandmother’s kitchen and his first job at the long-gone Fiddleheads Bistro in downtown White Bear Lake. Today the 2002 White Bear grad is a culinary specialist 2 who cooks for an admiral at the Naval War College in Newport, Rhode Island. “It’s not that stressful,” said Andersen, whose parents, Kim and Mary, still live near Podvin Park. “At least it’s a lot less stressful than cooking at sea on a ship.” The petty officer second class, who enlisted in ’07, has served on a submarine and spent five years on a destroyer preparing three meals a day for a crew of 250. “Spending seven months straight on a ship
can be challenging,” Andersen said. “We are limited by ingredients, what you are required to cook and the equipment you have. It’s difficult to be creative.” His proficiency in a ship’s galley helped hone Andersen’s skills enough to beat the military’s best cooks for top honors last month when he was named Armed Forces Master Chef of the Year. The sailor competed against 240 culinary experts from throughout the Department of Defense at the competition, held at Fort Lee, Virginia. It was sanctioned by the American Culinary Federation and designed to introduce military cooks to new, modern methods to prepare food for service men and women. Andersen’s career started at the upscale Fiddleheads, which was located in the Premier SEE MILITARY TOP CHEF, PAGE 8A
