Students will gain practical experience working in a professional kitchen. Learn about food preparation, a range of cooking methods and techniques, a la carte skills, stock management, menu planning and kitchen design. Tutors keep pace with current trends and have relationships with industry to ensure students are provided with the knowledge and skills industry are looking for.
PROGRAMME INFORMATION >> Food preparation and cooking students will gain knowledge and techniques to be able to demonstrate a range of cooking methods such as boiling, poaching, stewing, steaming, braising, deep frying, shallow frying, baking, roasting, grilling and sous-vide. An understanding into the nutritional value of food will be gained. Students will be able to work with knives and utensils safely without danger and learn the correct procedures of food preparation methods. >> Food safety students learn how to maintain effective personal hygiene when working with food to prevent cross contamination and learn methods to control hazards in a kitchen. Students will be up-to-date with industry training standards around safe storage and care of food. >> Food preparation and cooking (culinary arts) students will prepare, cook and provide a service in our onsite training restaurant, for a large range of culinary dishes. Learn basic pastry techniques to produce a range of desserts, pastry products and breads.

FURTHER STUDY OPTIONS Graduates of this programme may wish to progress into further study at Whitireia, or other tertiary institutions or industry.
CAREER OPPORTUNITIES Graduates will have the knowledge and skills to work as a commis chef progressing to sous or executive chef within hotels, restaurants, cafĂŠs or bars.
