Cycling In Moray -

SpotLight Local Interest

A Personal View

As a cyclist for at least 30 years, I have cycled along most roads and cycle paths in the North East. Finding my way around was not a difficult thing to do as I would pick up an ordinance survey map, pick a road or track and off I went. By doing this I discovered many fabulous cycle paths and tracks. In some cases an animal track in the woods would be a great way of getting about. Most paths and tracks nowadays are looked after by the Forestry Commission, they are well maintained and offer real fun for all cycling abilities. Here are just a few tracks I have come across. ? Whiteash Trails, Fochabers - The Fochabers Ring. A difficult varied cross country trail you’ll want to ride again and again. A difficult climb to the monument, then the fun starts. To complete this ride is a good outing at 8km. ? Ordiequish Trails start at the car park. An easier ride for the less adventurous, a wee bit for everyone. The Soup Dragon This is great fun, a friendly route that can be enjoyed by everyone. The only catch is the climb, but well worth it, I promise. A good 5 km round trip. The Haggis This is a long trek which leads in the direction of Ben Aigan, full of interest but could take most of the day. Not too difficult, I would personally recommend this for a great day out. Gordzilla Not the monster it sounds… a great flowing route which could be done at speed or at a more peaceful pace. Not a long ride at 1hr but could be liked to other paths like the ‘Haggis’. The Gully Monster As the name suggests an awesome trail of monster proportions! Not many have ridden one like it. More for the technically minded and a great ride. ? Quarrelwood, west side of Elgin A great place to learn the skills of off road cycling and for the family to enjoy the surrounding beauty of this woodland area. A popular place for walkers, so watch how you go and follow the code. ? Ben Aigan Trails A95 Ben Aigan Car Park - this has 3 tracks all very different. The Ben Aigan Hammer A ride round the summit of Ben Aigan it has some of the most beautiful views of the Spey Valley. page 4 - April 2010

Lots of bumps and wooden walking sections but well worth the travel to the start. The Mast Blast Not for the faint hearted, this trail is very fast, downhill with rocks and jumps. Once you hit the forest road remember to follow the marker and take the right turn. This is a single track which takes you right back to the car park. The Pink Fluffy Bunny For the more experienced, not the cuddly trek the name would suggest. Fast, free, furious and downhill. More a Hare than a Rabbit I think!! Best of the bunch, but be careful. ? Sanquhar Woodlands, Forres This is a Forres Community Woodland Trust facility. A designated mountain bike trail within the Sanquhar woodland. A three colour grading: moderate; difficult; jumps. This means that all levels of ability can enjoy this beautiful trail. A total of 1.1km, but packed full of fun. ? Culbin Forest, Nairn Heavy-duty mountain bikes aren’t necessary here. This is fairly level terrain with a mixture of long, straight tracks where you can pick up speed, and winding paths among dunes covered in pine trees where you can just enjoy a leisurely cycle. There aren’t any specific bike trails so you can make up your own route within the forest. And it’s easy to find your way around, with numbered junction markers and a helpful free map available. If you want to cycle to Culbin, National Cycle Route 1 runs through the south side of the forest, around 800 metres from the Wellhill Car Park. These are but a few of the wonderful treks, tracks and paths you can travel within the Moray Coastal area. For people who prefer harder surfaces, there are many roads that branch from the A96 that can take you along quiet country roads enabling you to see a lot of what you would miss if you travelled by car or train from Inverness to Aberdeen. In this age of 50’’ TVs and computer games I recommend that you get out there and see your beautiful Moray Coast and get fit at the same time. If further information is required, log on to the Internet and see what’s available in your area, or pop in to your local cycle shop for advice on all aspects of cycling. Happy Cycling! What is Life? As I was asked the other day what I, as a Christian, knew about life. The question caused me to think about what I and other people understand about life. For some people, life can mean going out at weekends and drinking alcohol to excess, or could even mean taking drugs until the problems of life seemingly disappear. Maybe even to have sex with as many different people as one can. Or many other things that, deep down, we probably accept are not right. But the reality is that after doing these things, after the temporary high that these things can give, we find that they don’t satisfy at all. This can lead to a frustration with life which can lead to anger and bitterness. The questioner probably felt that a Christian is someone who has never been involved in these things, and

therefore knows nothing about life. However, Christians are not born Christians, but become one at some point in their lives when they asked Jesus Christ to come into their lives. Before this lifechanging event, we all did some of the things mentioned above, and some of us did even more things than those. I began to think about what life means to me, as somebody who seeks to live my life as a follower of Christ. Jesus said in John 14:6, “I am the way, the truth, and the life. No one comes to the Father except through Me”. What Jesus is saying in this verse of Scripture is that He Himself is what life is all about. He is THE life. But to enjoy this life to its fullness, we are to be in Him, and He in us. When we accept His gift of life, what can we expect to receive? Galatians 5:22-23 says, “But the fruit of the Spirit is love, joy, peace, patience,

kindness, goodness, faithfulness, gentleness, self-control”. To enjoy life to the full, we must have and display these attributes. Life can be a “hell on earth” for many people because we don’t know how to love because often we haven’t received love. Life can be unendurable because we have no joy in our hearts. Life can be moving from one crisis to another for some, because we don’t have peace in our hearts. Because of a lack of these things, then there can be a short supply of patience, kindness, goodness, faithfulness, gentleness and self-control. We only get one life. God wants us to live life to the full, enjoying all of His benefits. Let us not rely on the things that ultimately don’t matter; but rather live our life in the secure knowledge that God is for you and not against you. Donnie Darko’s favourite!

Rabbit Spring Rolls

®

SpotLight Chef’s Confidential

Donnie Darko came to dinner and subsequently we cooked him a great spring time recipe! Rabbit is a very lean meat with virtually no fat on it and has a very delicate flavour. Get your local butcher to bone the rabbit and cube the meat, which will make it much easier for you to use. Anyone wondering who Donnie Darko is, he’s the teenage boy from the film of the same name who is ‘guided’ by Frank, a demonic time travelling rabbit!

For the spring rolls 450g rabbit - 1 cm cubed - this can be replaced with chicken 50g bean sprouts 5cm piece fresh root ginger cut into matchsticks 1 tbsp chopped fresh coriander, stems only 1 red chilli, finely chopped 1 egg 12 sheets spring roll wrappers or filo pastry Vegetable oil, for deep frying For the dressing 150g sugar 200ml rice vinegar 150 ml light soy sauce 2 limes, juice only Pinch star anise powder - optional 1 clove garlic For the salad ½ red cabbage, finely shredded 1 apple peeled and grated 2 red onions finely sliced For the spring rolls Mix together all of the spring roll ingredients, except for the wrappers and egg, until well combined. Lay a spring roll wrapper on the work surface and spoon some of the filling into the centre. Draw in the page 10 - April 2010

sides of the wrapper, then roll upwards, sealing the ends with the beaten egg. Repeat with the remaining spring roll wrappers and filling, until you have 12 spring rolls. Half fill a deep, heavy-based pan with vegetable oil and heat to 180°c. Deep-fry the spring rolls in small batches for 6-8 minutes, or until golden-brown and crisp. Remove with a slotted spoon and drain on kitchen paper. For the dressing Bring the sugar and vinegar to the boil in a pan, then simmer for 5-6 minutes, or until thickened and syrupy. Take off the heat and add the remaining ingredients. Set aside to cool. For the salad Toss all of the salad ingredients together, then drizzle over the dressing and mix well to coat evenly. To serve, pile the salad onto serving plates and place the spring rolls on top. Garnish with coriander leaves and lime wedges.

Happy Cooking! John McCruden head chef, chapter one restaurant forres high street

Police Matters there have been reports of youths throwing snowballs at passing motorists on the a96 and at premises in Mid Street Keith. Sergeant Ralston would act upon this. Parking in lanes has been increasing again li reported. the traffic warden would be advised about this. Staff parking at Wisemans on the newmill road has been causing concern especially in the recent wintry weather with vehicles finding it difficult to negotiate in icy conditions especially big lorries. Sergeant Ralston would approach business in the area to try and rectify the situation. Congestion on Edindiach Road was also highlighted as being hazardous. Parking at the junction on Station Road – alexandra Road was also deemed dangerous Mobile police unit is going to be returning to Keith/fife-Keith in february and March. Resident s are welcome to approach with any problems they would like to air. Correspondence dH has forwarded on various emails for council members to read. dH wrote a letter to Moray Council regarding the recent bad weather that Keith has recently experienced. She voiced her concerns about the fire Brigade and ambulances not being able to get out on calls. She raised

concerns where the emergency services were unable to get to taylor Court where there is a sheltered housing scheme. also many elderly people and parents with young children were not able to get out as the pavements were treacherous with no snow clearing having been done on paths or street pavements. What would have happened in a real emergency? She got a reply saying that they had been doing there best and that council workers had been working very hard.and that the council had limited resources. dH also wrote to BEaR about the state of the pavements on the a96 in Keith. they hadn`t been touched for days. david Stewart from BEaR also replied saying that they don’t have to start clearing for 48 hrs after a snowfall meaning that if it stopped snowing on friday at 5 o`clock then BEaR would not have to do anything until Monday. gC also wrote a letter to BEaR about the state of the pavements in Keith. He received a reply saying that everybody was experiencing the same problems. the a96 pavements are also a category 3 which is not top priority. the public are not aware of these categories and it is hoped a meeting can be held to complain and to make a big fuss to the people involved in snow clearing in and around Keith. it is hoped that transport Minister Stewart Stevenson can be approached on the matter.
