One Sunday morning the minister asked the organist to play something appropriate as soon as he had appealed to his congregation for yet more money for repairs to the church. After his sermon, the minister took the plunge and said, "Brothers and Sisters, we are in great difficulty; the roof repairs are to cost twice as much as we had expected. We need £4,000 more. Any of you who can pledge £100 today, please stand up." At that moment, the organ burst into the National Anthem and everyone immediately stood up! Sadly, many people think that the Kirk is “ayewyes wintin mair siller.” Of course, we couldn’t survive without money to pay the upkeep of our church building and the wages of our ministers/priests/pastors. But the church is about so much more than money. It is about the love and care of Jesus Christ for the people shown through the words and acts of his followers. Last year our church set up a Pastoral Team of visitors to help me while my husband has been off long term recuperating from cancer. At first, the volunteers were anxious and fearful about how they would be received by those they visited, or if they would find the right words to say. Having sent them out on several visits over the last year, the visitors

have always come back buzzing with what they themselves got out of the visit, and those visited have always been very grateful and appreciative of the visit. Of course there will always be some who ridicule the work of the church, perhaps none more as now, when for example the national Church of Scotland is proposing to reduce its ministers by one sixth (i.e. the proposal is for 200 ministers less, 4 in the Presbytery of Moray). The other side of the coin is down to money, so if you want to complain that your parish won’t have a minister, then just think does your congregation willingly and sacrificially give to cover the costs of that ministry? If not, then you will only have yourselves to blame. If all this sounds depressing, then let us not forget that whatever happens, the church belongs to God. Out of ruins, He built a Temple and a city. Out of death, He brought resurrection. Let us briefly consider the Book of Nehemiah. In reconstructing the ruins of Jerusalem and its Temple Nehemiah and and his builders met opposition from their enemies: opposition by ridicule which Nehemiah and his builders answered by prayer and work; and opposition by threat of armed intervention which Nehemiah and the builders answered

by precautionary measures for battle, whereby they kept alert and ready for action by day and by night. There was also opposition from inside the ranks by a spirit of doubt and defeatism. Defeatism seems to be part of human nature. As the eternal pessimist Homer Simpson said, “Trying is the first step towards failure.” The Book of Nehemiah clearly demonstrates that trying is the first step towards succeeding when we have God as our architect and builder. By chapter eight of Nehemiah, the opposition to the building work has disappeared. The people have entered a time of peace and unity because of their faith and hard work. Above all, the fact that they were “gathered as one man” indicates that they were united in purpose. The assembly of the worshippers was characterized by unity, zeal, attentiveness, preparation, reverence, prayerful and active participation, AND involvement by working together, and together making a difference, a life-changing difference. This is a message not only for the Church of Scotland congregations, but for all of us. R e v. D r. K a y F. G a u l d Kir k of Kei th C of S

Tarte Tatin
Tradition says that the Tarte Tatin was first created by accident at the Hotel Tatin in Lamotte-Beuvron, France in 1898. The hotel was run by two sisters, Stéphanie and Caroline Tatin. There are conflicting stories concerning the tart's origin, but the predominant one is that Stéphanie Tatin, who did most of the cooking, was overworked one day. She started to make a traditional apple pie but left the apples cooking in butter and sugar for too long. Smelling the burning, she tried to rescue the dish by putting the pastry base on top of the pan of apples, quickly finishing the cooking by putting the whole pan in the oven. After turning out the upside down tart, she was surprised to find how much the hotel guests appreciated the dessert. I n g r ed i e n t s 150g/5oz unsalted butter 1 fresh vanilla pod 200g/7oz caster sugar 8 apples 300g/10½oz puff pastry 1 medium egg, yolk only, plus 5ml double cream - to make egg wash 150ml/5fl oz crème fraîche to serve F or t he b u tt er sc ot ch sa u ce 150g/5oz caster sugar 150g/5oz unsalted butter 150g/5oz golden syrup 70g/3oz whipping cream
Roll out the puff pastry evenly to about 2mm thick on a floured surface and prick with a fork. Place on top of the apples and cut the excess pastry away. Egg wash and then bake in the oven at 200C/400F/Gas 6 until the pastry is golden brown, about 15 minutes. Meanwhile make the butterscotch sauce. Place the sugar, butter and golden syrup in a stainless steel pan and boil until the sauce is a dark caramel colour. Add the whipping cream to the hot caramel and stir until mixed thoroughly.
Cut the unsalted butter into thin slices and mould the butter slices (using well washed hands) into a nonstick frying pan with high sides. Split the vanilla pod and mix the vanilla seeds by hand with the sugar. Tip the vanilla sugar onto the butter and shake the pan until the sugar is evenly dispersed. Peel and core the apples and cut in half through the core. Pick out any pips. Arrange the apples skin side down. Pack the apples in as tightly as possible.
page 12 - June 2010
Cook on a baking sheet on top of the stove until the apples have started to caramelise. You may need to change this tray a few times during the cooking process but it saves the oven top. Always take great care when dealing with hot liquids and under no circumstances leave it alone.
tel: 01309 690063
Press the tart with a plate that fits the inside of the pan and drain any excess liquid. Leave to rest for 20 minutes. Then turn the tarte tatin out onto a plate and serve immediately. Pour the caramel sauce around and offer the crème fraîche separately. H a pp y C oo k i n g! J o h n M c C r u d en h e a d c he f , ch ap t er o n e r e sta u r an t f o r re s h i g h s t r e e t

Whales and Dolphins around the Moray Firth At the Whale and Dolphin Conservation Society (WDCS) we are only too aware of how much whales and dolphins have always fascinated us humans and that seeing these amazing animals in their natural environment is often a memorable experience. People tell us just that every day! If you choose the right site and invest a little patience, then you could glimpse one or more of the 24 species of whales, dolphins and porpoises recorded around the Scottish coast. If you do fancy getting out by yourself, with the family or the dog to see some of these creatures, then the Moray Firth is a fantastic area to see whales, dolphins and porpoises from land. The resident population of bottlenose dolphins tends to spend a lot of time close to the coast and can be very active, making them easy to spot. Porpoises are smaller and tend to be quite shy but with a bit of practice, they can also be seen around the coast. Even minke whales make regular
visits to some of the deeper coastal waters like Cullen Bay. Before you get out and about, there are some considerations that you will need to take onboard- a good set of binoculars for a start! In the Moray Firth area, the bottlenose dolphins and minke whales tend (not always though) to be seen more regularly in the summer months - watching in good weather (and earlier in the day) will increase your chances of sighting a whale or dolphin. On a windy day, waves and sea spray may obscure a dorsal fin breaking the surface. As for good viewing spots, there are countless great places from which you can watch for whales and dolphins in the Moray Firth. Top sites include; Cromarty Sutors, Chanonry Point, WDCS Dolphin and Seal Centre at North Kessock, Fort George, WDCS Wildlife Centre at Spey Bay, Cullen Bay, Broughty Ferry Castle, and Aberdeen Harbour. If you want to watch for whales and dolphins in comfort and with easy access to food and facilities, then the WDCS centre at North Kessock is ideal. From the Cullen Bay Hotel too, you can even look for minke whales through the dining room windows while you eat! Other sites such as Lossiemouth, SpotLight - Buckie, Keith and District

Nairn and Spey Bay offer easy access to cafés and toilets. Fancy being guided by the experts? Then WDCS can help here too. Some of the best encounters with whales and dolphins are when out walking the cliffs and beaches, and if it is an all round encounter with nature that you are interested in then you could sign up to WDCS' PoD Plod, a brand new challenge event taking place in August, and created to help raise funds to protect the dolphins of the Moray Firth. The event is a 26-mile sponsored walk along the breathtaking Moray Coastal Trail from Findhorn Bay to Spey Bay….. the challenge is to do it in 2 days! Guided by Sarah Dolman, WDCS’s head of policy for Scotland, and Alice Pope, WDCS’s Scottish Conservation Officer, you will also be taken on a dolphin and wildlife boat cruise, look out for dolphins from viewing spots along the route, enjoy a reception and guided tour of the WDCS Wildlife Centre at Spey Bay and finish with a dolphin watching trip to Chanonry Point with resident dolphin expert, Charlie Phillips. No matter where or how you choose to go watching, a notebook and ID guide are useful to take with you. These will help you to make notes about what you are seeing and look up the details if you are not sure. If you spot something that puzzles you then WDCS now has a comprehensive species guide that can be accessed on-line through wdcs.org. Make good notes and take pictures, then check them on-line when you get home. If you get hooked, then you could become a regular WDCS shore watcher. Contact our volunteer manager and we’ll get you trained up and watching the sea! It’s a vital part of what WDCS does as we use our shore watch data and other research to try to understand dolphin movements all year round and better manage potential impacts to them and their environment. The Moray Carers Project
SpotLight
Helping people to help others The Moray Carers Project in Elgin has recently been awarded funding from the Long Term Conditions Alliance Scotland to create our innovative new Digital Story Project. Digital Stories are short documentary films about unpaid Carers that will aid communication and awareness in communities by showing the vital role Carers play in society. The Digital Story Maker will work with Carers to make creative films about their experiences, concerns and contributions to society. We are hoping this project will create a new link between Carers and the community. The finished films will be used in a number of ways and the Carers involved will have full control over who gets to see their film. Some will want to keep theirs for personal reflection; some will take part solely for the therapeutic benefits of being involved with the process; others will be happy for their film to be seen by others. These latter films will form the basis for a library service at the Moray Carers Project, as well as being used in screenings in various Moray communities, to raise awareness. We will also be posting some of the films on our website: www.moraycarers.co.uk/digitalstories.htm . The Digital Story Project is the newest edition to the services provided by the Moray Carers Project. We work with Carers of all ages throughout Moray to ensure they are recognised, valued and supported to manage the impact of caring on their lives. The Moray Carers Project describes a Carer as ‘someone who, without payment, provides help and support to a partner, child, relative, friend or neighbour, who could not manage without their help. This could be due to age, physical or mental illness, addiction or disability.’ An important part of our work is the ‘Will You Care’ initiative. This initiative is funded by the Big Lottery and aims to raise the profile of unpaid Carers in Moray and contribute to the range of services available to them. We deliver specialist training for Carers and focus on long-term conditions, e.g. stroke, diabetes, heart disease,

Local Interest
dementia, and many other conditions. We also work with GP practices and hospitals in Moray to ensure that Carers, as well as patients, are being identified effectively and supported appropriately. We liaise closely with NHS professionals who contribute their different areas of expertise to the courses we deliver. One of our key aims is to reach out to the many ‘hidden Carers’ in Moray and assist them in accessing the help and support they may need to manage their role. To achieve this, we work with pharmacies throughout Moray. When a Carer makes contact we provide an initial listening ear, explain more about our services and then ‘signpost’ people in the right direction for any additional support. The Moray Carers Project also offers a free, confidential counselling service. We offer services for Carers of all ages, including Young Carers. Our Education Support Workers work with Young Carers primarily through primary and secondary schools, but also in colleges. Some of the services provided by the Young Carers team are: supporting Young Carers to raise issues with school, Social work, school nurses and other support systems; highlight issues that Young Carers may have with Guidance staff e.g. bullying, homework problems, etc; providing a listening ear to Young Carers, pupils and school staff; raise awareness of Young Carers through delivery of PSE lessons to year one pupils. As well as all of this we organise great activities for Young Carers to take part in. So, as an addition to these services, Digital Stories hopes to bring a new dimension to the way in which the Moray Carers Project, and care organisations in general, can provide help to Carers. We are now asking Carers to get in contact to discuss the possibilities of making films. We are also keen to hear from members of Moray communities to discuss the possibilities for future screenings to help raise awareness. Moray Carers Project is based at 227 High Street Elgin (IV30 1DJ) and people with caring responsibilities (friends, children, parents neighbours, colleagues) can drop in or make an appointment by phoning 01343 540990, or emailing info@moraycarers.co.uk. Information about our services can also be accessed via our website at www.moraycarers.co.uk. If you want to get in contact with the Digital Story Project then phone and ask for Will, or email: will.burgess@moraycarers.co.uk.

EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF 25TH MARCH 2010 OF CULLEN & DESKFORD COMMUNITY COUNCIL
Police Matters It was noted that the Coffee Shop had been broken into over the weekend; enquiries were on-going. John Robertson confirmed that he had advised PC Russell re troublesome individuals who had moved into the Deskford area.
Local Councillors Cllr Cree noted continuing concerns re the financial position of the Moray Council, and confirmed that the Cullen Property Review would only happen as part of a Moray-wide review of council properties - likely to happen during the next financial year. The request from the Cullen, Deskford and Portknockie Heritage Group for use of the Memorial Hall over the summer was to go to the Policy Committee on Tuesday 30th March; Cllr Cree indicated that he was likely to speak in favour of a 2nd proposal which the Heritage Group had submitted (including a 3-month trial, with running costs being met). The Community Council indicated support for the Heritage Group in its objectives. It was also confirmed by the Secretary (conversation with the Secretary of the Heritage Group) that, should their application be successful, the Heritage Group would move out of the Memorial Hall for other potential bookings (and this had always been part of their proposal). Treasurer In the absence of the Treasurer, the Secretary reported that the bank balance stood at £2,553.97 (including
the sum of £252.51 being kept in trust for the Neighbourhood Watch).
Young Members In the absence of the Young Members, the Secretary undertook to e-mail them to establish how they are progressing with their action points, including a Young Talent Evening and a "Publicity Campaign" re membership of a Community Council in Buckie High and Keith Grammar. They had also previously indicated their support for the 11th Moray Great Bike Ride.
Harbour Committee Report The Vice-Chair advised that he had not received any feedback from Cllr MacDonald re the list of requirements for the 3 Harbours and the continuing failure of the Moray Council to address the huge spending deficit on the 3 Harbours' upkeep. A further meeting of the 3 Harbours Committee was scheduled. A draft letter to the First Minister is being compiled.
Floodlighting of the Market Cross/War Memorial The Chair plans to attend the Fundraising Seminar in Elgin on 1st April 2010 with a view to identifying potential funding sources.
Planning Cullen Harbour Lighthouse Finalised quotation from supplier: A definitive quotation has now been obtained from Varis Engineering - a total of £10,575 (£9,000 + VAT) for a replica painted stainless steel structure. Following discussion, it was agreed

that the Vice-Chair should accept the quotation on behalf of the Community Council, and that all efforts should now be made to raise the gap in funding.
A.O.C.B. Lack of roadsweeper in Deskford/ Deskford concerns re HGV traffic/ Deskford concerns re fast traffic on the B-road: John Robertson raised all 3 issues on behalf of the Deskford community. In addition to a lack of roadsweeper (and considerable mess is created by lorries and agricultural vehicles), the HGV traffic rumbling through the very tight road through the village of Kirktown has already caused damage to a tree, hedge and signpost; there are no signs for HGVs to take an alternative route. In addition, the Deskford community feel threatened by fast traffic on the B-road, and are asking if signs or traffic calming measures can be installed; there is also the concern of pick-up and drop-off of school kids by bus in this stretch; there is but one post box in the area in Berryhillock, causing people to walk on the B-road; there has been an increase of "boy racers" and commercial vehicles recently; the community propose a pedestrian sign Berryhillock Community Centre - Kirktown. Following discussion, it was agreed that John Robertson would write to Gordon Holland on all 3 matters. Date, time and place of next meeting 29th April 2010 at 7 p.m. in the Memorial Hall, Cullen Town Hall.
