A Reflection on the American Celebration of Easter by Friar Timothy Patrick Dore, OFM Conv. In the United States, if one would step into any grocery store, market or shop during the traditional season of Lent, it might be assumed that the celebration of Easter had already arrived. The word ‘lent’ for many is merely a footnote to the changing of the seasons, while the word ‘Easter’ is nothing more than an excuse to have up decorations of bright floral designs and pastel colours, long before the otherwise and somewhat solemn days of Holy Week actually arrive. Many stores and shops put up Easter decorations and they may grace homes and schools, but they are often devoid of any religious symbolism. This, of course, parallels a similar phenomenon that occurs during the Advent season, when many take to celebrating a kind of secular Christmas long before the sounding of the church bells at Christmas midnight.

Pastoral Letter and Church Meetings and death? This idea has, unfortunately, lost its significance to many, even as they give and share their chocolate Easter bunnies and their sugar-coated candies. Brightly colored Easter eggs for many are merely a novelty, perhaps only calling to mind ancient pagan springtime rites. The Easter egg as a Christian symbol of victory over the darkness of the tomb, and of new life through resurrection from the dead, is a concept very alien to many. The idea that new life springs forth from the tomb through the power of God’s son, the Resurrected Jesus, is simply forgotten by many who often, and too early, utter the words “Happy Easter.”

An often materialistic American culture will prematurely sing a kind of faith-less Easter Alleluia. But in spite of the early bloom of the daffodils, and the vibrant burst of the forsythias, the faithful and well versed Christian will wait and endure the somberness of Lent, Passion Sunday and Holy Week before daring to celebrate with joyful song. The clever Christian, unaffected by the materialism around him, will recall the need to turn away from sin and to believe

On Easter Sunday, and on the days that follow, the grocery stores, the markets and the shops will put their remaining Easter candy on clearance sale, and they will clear the windows of their pastel colored decorations, for there is no profit in dwelling on something that has passed. But those who celebrate the true meaning of Easter know that what has truly passed is sin and death, and they believe that new life, through the power of Jesus’ resurrection, has prevailed; the sharing of the Easter food and sweet candies recalls the joy of knowing that Jesus gives each of us new life that will last forever! For many in secular America, as well as in other places in our world, Easter may simply be a prelude to the coming holidays of the summertime. Police matters • Sergeant Black and PC Collie attended tonight’s meeting and updated councilors with a report on recent crime in Keith. He explained that the police would tell us what is happening at the moment with crime. There has been 30 reported crimes in the past month:7 - dishonesty crimes; 3 - vandalisms; 10 - road traffic offences; 1 - drink drive offence, and the remainder anti social behavior crimes such as assault and breach of the peace. • An anti social driving operation took place recently with fixed penalty tickets being issued including the following :1 - misuse of fog lamps; 2 - not wearing seatbelts; 2 - using hand held mobile phone whilst driving; 1 - failing to adhere road signs; 1 - exceeding speed limit. Over that weekend 35 motor vehicles were stopped for minor road traffic offences including defective lights and excessive revving of engines. • it is the intention of the police to reintroduce the Pub Watch scheme by the end of March 2011. • Constable ian Ralston and Community Warden Jamieson are working on a Junior Warden Scheme at Keith Primary School to promote Good Citizenship. • They have also working with the Community learning Development Staff on the very successful live bands Rock The loft on 18th february. Over 200 teenagers with no reports on youth disorder. • The Tesco incident reported at last month’s meeting: - Police have spoken to security and SC has spoken to the Manager at Tesco. The lights will be seen to by the maintenance team in the near future.

matters arising • The loft was suggested as a meeting point for the kerbs group where they may receive some guidance. iC had a list of youths involved in the project, it was again reiterated that KCC could not take this on. • DH and MC are to attend the forthcoming Social Enterprise meeting. • JM had asked that everyone involved with the Christmas lights be thanked for their efforts last year. correspondence • DH had various correspondences including correspondence from Moray Task force. • There was an invitation to the Common Ground meeting in Glasgow. • There was a renewal for membership to AECC • DH has emailed the Community Service organistion but has had no response yet. it was hoped they would give a talk to KCC about what they do. community councillors updates • iC - Environment - iC said that tar has been lifting in various areas. SC replied that the parking areas getting repaired will not be a priority until the roads have been done. • Cl - Roads and Rights of Way - Cl said that gullys have still to be emptied in Turner Street. The council has a separate machine to do this. Manhole covers and kerb work are being done since the recent stormy winter. Cl said to SC to thank the staff when he saw them.There is a fire hydrant in Alexandra Road leaking. There is resurfacing work due to start on Regent Street shortly at the end of March. Signs on the outskirts of the town welcoming you to Keith need cleaning.

• Christmas lights - Thanks go to CC and family for all the work they have done on getting the trees down in fife Keith. The trees will need to go to the recycling centre. The lights are all off but are still at Strathmill Distillery. The discs that were used last year saying who had sponsored a tree that were hung on the trees will not be of use for next year. SH will ask RP to order more Christmas lights tins. • MC - furniture and signs - A small advert about Mither Tounge to go into a brochure called the Speyside and Moray Coast which would hopefully advertise the town. A CC said that if the town had a business association a bigger advert could be put into the brochure with more business contributing. Kilt school will be moving to the loft. • NC - Housing - No updates although it was mentioned that the houses to be built have started to be pegged out with big machines arriving as well to do the work. it has been decided the new housing scheme will be called Colvin Court. • SC - At a recent discussion it had been decided that the Coat of Arms will be left as it is at the moment. • Conservation Scheme - SC said that money will be granted providing they are successful in receiving money from the Heritage fund. Properties with water problems can apply for funding. • Spikes have been put up at the institute to prevent pigeons resting and making a mess at the institute although it doesn’t seem to be making any difference. No more progress with the R8 development. a.o.c.B. it was suggested that we also get an update from the Tourist Action Group, this was agreed.

Herb and Parmesan Crusted Salmon with Salsa Verde

With the fishing season well and truly here and Salmon being caught in the rivers of Speyside, what better dish to signal the start of what we hope will be a warm Summer. At Knockomie we have revitalised our lunch menus and this Herb Crusted Salmon is proving a real favourite. Throughout May we are offering a 2 course lunch menu for just £7.95 per person. Serves 4 25grm finely grated fresh parmesan 2 x tablespoons finely chopped parsley 50 grm Fine Wholemeal Breadcrumbs Salt and freshly Ground Pepper 4 x 180grm Boneless, skinless Salmon Fillets

Whilst the salmon is cooking make the Salsa Verde. Place the capers, gherkins, parsley, basil and mint in to a food processor and whiz until all finely chopped.

Salsa Verde Add the mustard and vinegar and whiz again. 2 x dessert spoon capers 2 x dessert spoon pickled gherkins ½ x 35grm pack of curly or flat leaf parsley 1 x generous bunch picked basil leaves 1 x generous bunch of picked mint leaves 2 x dessert spoon Dijon Mustard 2 x tablespoon White wine vinegar 150ml Olive oil Salt and freshly Ground Pepper

Add the salt and pepper to taste and you're done! The great thing about Salsa Verde is that you can store in an sealed jar in the fridge and it will keep for a couple of weeks. It's great with chicken and white fish too!

Mix the parmesan, chopped parsley and breadcrumbs together. Season with the salt and pepper.

Once the salmon is cooked remove from the oven and serve with crushed new potatoes and a crisp salad.

Baxters Speyside Hame! “Pate or Royal Game?” Was the question I was asked at a friend’s home in Hong Kong! “…the Soup’s Baxters’’ I was informed. A surreal question 7,000 miles from my home in Elgin! Like being offered Ostrich burgers in Elgin High Street…. not what you expect! Since then, I have been aware of how widespread the Baxters’ brand is. In my opinion Scotland’s second largest export! A brand I am proud to say is 100% Scottish. The Baxters story began in 1868 when, with a little encouragement, George Baxter borrowed £100 from an uncle and other relatives, and opened a small grocery shop in Fochabers. George's wife, Margaret, started making jams and jellies in the back of the shop and once her jams had found their way to Gordon Castle, their superb quality ensured that they swiftly became popular with the Duke's friends up and down the land. From then until now Baxters has become a household name, sold in over 150 countries world wide and still growing. A recent visit to Baxters with my family was a very enjoyable day out. My initial thought when it was suggested was…”I don’t want to traipse around a food factory!” How wrong was I! The Old Shop visit was a step back in time to the Victorian era, exploring George Baxters original 19th century grocery shop. This leisurely wander through time was with audio, which had the kids engrossed for ages! The visit through the main shop was a delight with all the Baxters’ goodies on display and we couldn’t help buying our favourite Baxters soups and preserves. “I’m starving!” was the next cry. The smell of the freshly made pancakes from the self-service restaurant was irresistible! A fantastic choice of hot and cold meals was on offer with Blackboard Specials changed daily. This spacious restaurant is family-friendly with great facilities for the disabled.

To walk off the scrumptious meal, we took the Baxters half hour nature walk beside the Spey. I would highly recommend this trail and if the weather is warmer you should try having a picnic by the river! history

The Elgin Marbles – why Elgin? Elgin Museum continues to receive the occasional tourist expecting to find the “Elgin marbles”, probably having by-passed their location in London. We even used to have bags of children’s marbles, available as a consolation prize. What are the “Elgin marbles”? They are the marble architectural sculptures brought to Britain by Thomas Bruce, 7th Earl of Elgin, from the temple, the Parthenon, built on the Acropolis of Athens between 447 and 438 BC. The building had survived largely intact until 1687; it then suffered an explosion in a bombardment when in use as a gunpowder store, after which the sculptures suffered from ongoing damage and piecemeal sale. In 1799, Elgin became ambassador to Constantinople (Istanbul), capital of the Ottoman Empire, which then included most of Greece. As a personal gesture, in return for a diplomatic intervention, the local authorities allowed him to record the remaining monuments, and later to allow their embarkation for Britain. The sculptures survived the sinking of the “Mentor” and Elgin subsequently sold them to the British Museum, where, controversially, they remain. The Scottish sculptor, John Henning (1771 – 1851) saw the marbles soon after they arrived in Britain and was so impressed that he obtained permission to draw and make models of them. Using earlier drawings to help him work out the order of the procession depicted in the frieze, Henning carved miniature impressions in slate, from which casts were made in white plaster. Classical sculpture and casts like these became immensely popular in the 18th and 19th centuries. By a quirk of fate, Elgin Museum has a set of

these 2” by 6” casts on display. Originally gifted to the Museum by Louise, Countess of Seafield in 1886, they disappeared to resurface in someone’s attic in 2003! Also, on loan from the present Earl of Elgin, we have two of John Henning’s original drawings, which show the power and beauty of the horses in the original sculptures. Returning to the original question, why did a British diplomat, whose main residence was Broom Hall in Fife, have the title 7th Earl of Elgin? For a closer geographical link, we can go to Kinloss Abbey, ten miles west of Elgin. Edward Bruce, the father of the 1st Earl, was in 1583 both parson of Torie, in Fife, and associated with the abbey of Kinloss. He became abbot, and later Lord Bruce of Kinloss when Kinloss became a temporal lordship and barony in 1604. It was his third son, Thomas who became 1st Earl of Elgin in 1633, probably as a reward from King Charles I for contributing to the pomp of his coronation in Scotland. A fortnight later, Thomas is reputed to have provided a more significant service, rescuing the King from drowning when their pinnace capsized in a gust of wind on the crossing homeward from Burntisland to Leith. Thomas lived almost entirely in England. It is said that, as all the cities and counties around the Bruce country of the upper Firth of Forth had already been used for titles, Thomas wrote to friends in Scotland, and the great cathedral city of Elgin, not far from his considerable land holdings of Kinloss, was suggested.
