PASTORAL LETTER & CHURCH MEETINGS As we have already begun our journey through 2013, one topic above all has been occupying my mind more than any other and that is the subject of forgiveness. I don’t know if there is ever a right time to talk about forgiveness, or if there is, in fact, any time. So, what does it mean to forgive? Forgiveness is the process of ceasing to feel resentment, indignation or anger against another person for a perceived offence, difference or mistake, or ceasing to demand vengeance, punishment or restitution. Forgiveness is granted without any expectation of compensation and possibly without any response on the part of the perceived offender (for example, if the person is deceased). Often a question asked is, “How often should I forgive somebody who keeps on offending and hurting me?” Jesus was asked that very question by Peter, and their conversation is recorded in Matthew 18:21-22, “Then Peter came to Him and said, ‘Lord, how often shall my brother sin against me and I forgive him? Up to seven times?’ Jesus said to him, ‘I do not say to you up to seven times, but seventy times seven.’” In other words, forgiveness is a choice we make, and it should become a lifestyle. Just as love is not a feeling, forgiveness

is not a feeling, but it is an act of our will. If we were to wait until we felt like forgiving, it would never happen. So, practically, how do we get to the place of forgiveness? Step 1. Choose to speak out forgiveness when a person or situation comes to mind. Step 2. Pray a blessing over the person. I have found that it is impossible to truly pray for someone and resent them at the same time for long.

I am not somebody who makes resolutions, but if I were to recommend just one, it would be this, that we choose to forgive as the Lord Jesus Christ forgave those who treated Him so badly and cruelly.

Step 3. Ask God to bless them in a tangible way. Unforgiveness is a door that allows things to come into our lives, to captivate and control us, and for our emotions to do cartwheels inside us. The only person to suffer is the unforgiving person, not the person who has injured us - they are probably totally unaware or uncaring of any wrongdoing. Forgiveness releases us to hear from God. Forgiveness releases us to be changed by God. Forgiveness releases us to be led by God. And forgiveness releases us to be used by God. Well, one of the big stories of recent months has obviously been the Forres Mechanics award for the best footy scotch pie. No great surprise really when it is supplied by Murdoch Brothers - already winners of a variety of top scotch pie awards.

As a bit of a film buff, I took some time out recently to see the fantastic screen adaptation of Tolkien’s epic The Hobbit. It is a book I loved to read and the filming is breathtaking in its scale.

While it may not be good for the waistline, I can certainly testify that Forres Mechanics/Murdoch Brothers pies are good for the soul. I should, of course, point out that there are other butchers and bakers in Moray who also make really excellent pies and I am on a mission to check them out as well. However, in the meantime, well done to Mechanics for keeping their loyal supporters well fed with some high quality Moray produce!

It was great to see Scottish actors in the cast as well, which is hugely encouraging for those involved in the arts. Dreaming of... ...Bermuda

Bermuda is located 1,000 miles north of the Caribbean and just 2 hours flying time from the East Coast of America which makes it a perfect destination for a stop-over en-route to New York or Boston. It is just 8 hours from Gatwick and British Airways offer connections from Inverness.

Port Royal Golf Course

The island’s culture is a rich fusion of British colonial history and African heritage. Bermudans are well known for their sincere friendliness and warmth. The island is famous for its Bermuda shorts that were fashioned on the British Military uniform for hot climates in the 20th century, and the Royal Navy still have them as part of their uniform today. This is taken very seriously with rules stating that Bermuda shorts should not be worn shorter than 6 inches above the knee. Bermuda’s capital, the city of Hamilton, is packed with historic buildings, churches, shops, museums, galleries, parks and gardens. All of this set alongside a beautiful harbour. During the summer months Front Street in Hamilton City is closed to traffic one night a week for Harbour Nights. This is where the cruise ships dock and the harbour is transformed into a bustling festival of arts, crafts and food stalls, late night shopping and colourful live performances! Bermuda is an all-year-round destination. The spring, summer and autumn months are the best time of year to make the most of spotless pink beaches such as the popular Elbow Beach and the exciting diving opportunities on offer. There are over 200 species of hard coral and wreck dives are very popular too with Bermuda boasting over 400 dive sites. It is also famous for its 7 golf courses! This is more golf courses than any other small island in the world. The winter months are the perfect time of year for golfing. In 2013 the PGA Grand Slam of Golf will be played at the prestigious Port Royal Golf Course between the 16th and 18th of October.

Chef’s Confidential Sundried Tomato or Olive & Herb Flatbreads Served with salads, soups, curries or any spicy dishes, but also nice served with warm fillings or toppings. Use them pizza style by splitting in half, length ways, topping each half with tomato, cheese, herbs, olives or anchovies and in a hot oven for 10mins until the topping is warm and the cheese has melted. They make delicious warm sandwiches too. Makes 2 breads Ingredients 500g good quality strong white bread flour 5g quick action dried yeast 10g fine sea salt 25ml extra virgin rapeseed oil or you can use olive oil 50g plain yoghurt 1 free-range egg For sundried tomato flatbread use 65g sundried tomatoes in oil. For olive and herb flatbread use ½ tsp dried mixed herbs and 50g pitted black olives roughly chopped. Method Mix flour, salt, dried yeast, roughly chopped sundried tomatoes (or the olives and herbs) either briefly on a slow speed with a mixer or by hand in a bowl. Stir oil & yoghurt in a measuring jug and add warm water to make up 300ml of liquid. Mix and add to dry ingredients - on a medium speed with the mixer (5-10mins) or stirring into the mixture and then bringing together by hand until a supple dough is formed (10mins). Place in a large, oiled plastic mixing bowl, cover with cling film or damp tea towel and leave in a warm place for an hour until the dough has doubled in size. Turn out onto the worktop and “knock back” pressing it into a large circle (be firm but not too rough). Form into a ball, place back in bowl, cover & leave for a further 10mins. Turn out and divide into 2 equal pieces forming each into a smooth ball and shape by pressing into an elongated flattish oval shape. Place on an oiled baking sheet, cover with a tea towel and rise further for 20 - 30mins. When ready it will have almost doubled in height. Beat one egg, 1tsp warm water & 1tsp plain yoghurt to form an egg wash. When the breads have risen, score a shallow criss-cross pattern across the top with the back of a knife. Brush with the egg wash. Bake in a pre-heated oven at 200C-210C for approx. 20mins. They will be golden in colour and hollow sounding when tapped if they are ready, but may need a little longer if still pale on top. Remove from the oven and place on a cooling rack. Serve while slightly warm. You can make plain bread without the sundried tomatoes or olives or play around with flavours. For example, you can add garlic, different herbs or chilli flakes in place of the tomatoes or olives, or try flavoured oil in place of the plain oil. Ola lemon infused rapeseed oil makes lovely bread for grilled salmon or roast veg. The breads freeze well and can be reheated/refreshed wrapped in foil in a warm oven for about 10 minutes.
