Huntly Peregrine Wildwatch The Forestry Commission award winning Huntly Peregrine Wildwatch Centre (HPWW) gives a wonderful opportunity to view one of our iconic and spectacular birds of prey close up and in their natural habitat. The site is an old quarry and is the result of a volcanic magma chamber and is an Site of Special Scientific Interest (SSSI) in its own right. Scottish Natural Heritage are now designing interpretation highlighting the geology of the quarry. The centre has been open every season since 2002 and has grown in stature every year, regularly being mentioned in local and national press and also appearances on national TV. It has won several prestigious awards for tourism and customer care, including the highly acclaimed Scottish Thistle Award twice and the Northern Lights award. The centre is open daily from March to September, with all ability access and toilets. The interpretative centre and hide are staffed by knowledgeable and friendly Forestry Commission wardens and volunteers, ensuring the visitors始 experience is a memorable one.

We have excellent CCTV coverage giving close up viewing of the nest site, peregrines, quarry and all its inhabitants. The fantastic viewing facilities within the quarry offer the visitor a rare insight into our wonderful NorthEast wildlife. Binoculars and telescopes are provided for visitors to use. stations at the visitor centre and our top hide give visitors the opportunity to observe up close the red squirrels as well as a huge array of woodland birds, all literally inches away from the viewing windows. The birds have also done well over the years. Sixteen young peregrines (eyasses) have successfully fledged over the past 7 years and of these eyasses, fifteen have been rung.

HPWW has so much to offer and not just for the serious bird watcher, it provides a great destination for a family outing and even a new experience for those not having had the opportunity or knowledge to enjoy our wonderful countryside. We would love to hear from all school and non school groups wishing to visit the centre and discover what we can offer. Please contact us so we can tailor your visit. We also have a number of places for junior volunteer wardens aged 12-16, which has been a very successful venture with many young people returning year on year. We are always looking to encourage and involve more volunteers, both the young, and the young at heart. SpotLight Pastoral letter and Tide Times

More than just a shelter While meditating in the smallest room in the house, I have been reading a book called "Adventures in Architecture". The first chapeter is about visiting an area where there are still some of the most basic buildings ever invented - igloos. The author writes - I tell Andreas that I feel lucky to have one of the town's few igloo builders. He smiles. There is no one else, reveals Andreas ruefully. He was taught to build an igloo by his grandfather and father and he has not been able to pass the mystery on. No one cares and the children don't want to know.

At the end of the chapter, the author speaks about the igloo they've built. It's stunning! The igloo is an admirably functional object, but what strikes me is it's perfect beauty. The igloo's dome is celestial, an image of the heavens, the Inuit's symbol of the life-giving sun in their icy world. Yes! the igloo is more than just a shelter, more than architecture - it's a world in itself. As I read this chapter, my mind related what I was reading to the faith by which I live. Jesus has shown us a belief system, a way of life which is "more than just a shelter". It is a shelter from the stormy blasts of life, strength in times of weakness, comfort in times of sorrow. But it is so much more. It is functional

Rabbit Spring Rolls

Donnie Darko came to dinner and subsequently we cooked him a great spring time recipe! Rabbit is a very lean meat with virtually no fat on it and has a very delicate flavour. Get your local butcher to bone the rabbit and cube the meat, which will make it much easier for you to use. Anyone wondering who Donnie Darko is, he’s the teenage boy from the film of the same name who is ‘guided’ by Frank, a demonic time travelling rabbit!

For the spring rolls 450g rabbit - 1 cm cubed - this can be replaced with chicken 50g bean sprouts 5cm piece fresh root ginger cut into matchsticks 1 tbsp chopped fresh coriander, stems only 1 red chilli, finely chopped 1 egg 12 sheets spring roll wrappers or filo pastry Vegetable oil, for deep frying For the dressing 150g sugar 200ml rice vinegar 150 ml light soy sauce 2 limes, juice only Pinch star anise powder - optional 1 clove garlic For the salad ½ red cabbage, finely shredded 1 apple peeled and grated 2 red onions finely sliced For the spring rolls Mix together all of the spring roll ingredients, except for the wrappers and egg, until well combined. Lay a spring roll wrapper on the work surface and spoon some of the filling into the centre. Draw in the page 14 - April 2010

sides of the wrapper, then roll upwards, sealing the ends with the beaten egg. Repeat with the remaining spring roll wrappers and filling, until you have 12 spring rolls. Half fill a deep, heavy-based pan with vegetable oil and heat to 180°c. Deep-fry the spring rolls in small batches for 6-8 minutes, or until golden-brown and crisp. Remove with a slotted spoon and drain on kitchen paper. For the dressing Bring the sugar and vinegar to the boil in a pan, then simmer for 5-6 minutes, or until thickened and syrupy. Take off the heat and add the remaining ingredients. Set aside to cool. For the salad Toss all of the salad ingredients together, then drizzle over the dressing and mix well to coat evenly. To serve, pile the salad onto serving plates and place the spring rolls on top. Garnish with coriander leaves and lime wedges.

EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF 9TH FEBRUARY 2010 OF ELGIN COMMUNITY COUNCIL

Recreation, Leisure & Environment • Anne Glover advised she had taken photos of the Mosaic on the Plainstones to show the extent of the damage and asked if there was anything that could be done.Cllr Russell said the Mosaic may be beyond economic repair but he was looking into the possibility of removing it and putting it into storage. Anne Glover to investigate the possibility of funding being made available from the BID project for restoration works. • Anne Glover advised that Wilma Milne, Pat Paterson, Alan Bell and Mary Wall had all joined the Recreation, Leisure and Environment Committee and a meeting had taken place to discuss the work that was currently being undertaken by the Committee. At this meeting concerns were raised regarding the Enquiries Office at the Bus Station no longer being available and that if you wished to purchase a ticket you had to do this via the Newsagents in the St Giles Centre. Pat Patterson advised that the electronic board does not give information on late departures or arrivals and the Aberdeen office is only open between 8am - 5pm to make enquiries regarding connections and late arrivals. Anne Glover agreed to arrange for a letter to be written to Stagecoach highlighting their concerns. Alex Macmillan suggested that a visual representation of Elgin bus routes, rather like a London Underground map, would be useful to all passengers, especially visitors. • Murray Ross felt that the collection

of brown bins on a fortnightly basis during the winter months should be looked into as he felt that this service was not needed. Cllr Russell advised that it had been discussed at Committee and information regarding refuse collections had been put in the press and on the Moray Council website. He also advised that statistics showed that there was sufficient garden waste being generated during the winter months to warrant this service. Roads & Transportation • Regarding the inadequacy of bus provision highlighted by Harry Torry, Anne Glover suggested asking the Practice Manager of the Linkwood Medical Centre to carry out a survey to establish the need for such a service. Cllr Leadbitter suggested raising this issue with Chris Thompson of the Elgin Freedom project.

Elgin Ear • Alex Macmillan advised that an email had been sent to all members regarding the Elgin Ear and requested confirmation from the Community Council that they wished to support this project. It was unanimously agreed to support the Elgin Ear.

Cooper Troopers • Denise Gormley advised that she had met with Wendy Tonner and Amy Cheer and confirmed that they have recognised that the group needs to refocus. Denise Gormley stated that they are still very keen for the

Michael Gates agreed to ask members of the High School Pupil Council. • Denise Gormley advised that she had briefly spoken with Gavin Morgan from the Duke of Edinburgh Scheme regarding how to can get young people represented via the Duke of Edinburgh. Denise Gormley to arrange a meeting at the beginning of next month between the Community Council, Forums and Gavin Morgan to see how we can create opportunities for young people to get involved.

AOCB • The Chairman advised that the next Joint Community Council meeting was due to take place on 11th February 2010 at 7.00pm in the Council Chambers. • Permission was given for Mary Dow to record meetings to help with accuracy of Minutes. • Anne Glover advised she should be in a position to give an update on the Wetlands at the next meeting.
