What did you do last week?
Mountaineering in Nepal? As it was approaching the 70th anniversary of RAF Lossiemouth, the Mountaineering Club looked to find a suitable expedition to both celebrate the event and to challenge the club in both planning and execution. The Himalayas has always been the ultimate destination for the majority of aspiring climbers and was a clear choice for the members. Mera Peak, a 6400m trekking peak in the Makalu Barun National Park of Nepal, matched all of the requirements of remoteness, altitude, technical difficulty and affordability and once selected, the expedition planning began in earnest early in 2008. Out of a group of around 30 applicants a team of 12 was selected as expedition members based on their experience, ability, fitness, availability and what skills they could bring along to increase the chance of success in the endeavour. Not all of those selected had been to altitude before and so training was carried out in the Alps in the summer of 2009 to give those who required it experience in high altitude walking, rope work and crevasse rescue. The expedition set off on Thursday 15th Oct 2009 which is in the middle of the Nepalese post monsoon period and although this was the autumn and getting cold it would provide a few weeks of settled dry weather. The team travelled to Kathmandu where we met Lakpa Tenji Sherpa, our Nepalese Sirdar, who was to be our guide on the expedition. Equipment was checked and repacked for the flight to Lukla and the team’s spirits were high as we left civilisation behind as we finally headed into the mountains. Nepal is not a large country but getting around can be problematic, the locals judge distances to the next village not in miles but in days travelled, for once in the mountains there are no roads only tracks over high level passes and down low valleys. We spent 9 days trekking with our porters to get into Base Camp on the mountain, although this was ideal acclimatisation training for the summit attempt. As we progressed up the mountain the difficulties increased, the falling air pressure and night time temperatures slowing our early morning exit from the warmth of our sleeping bags and daily upward progress to little more than a crawl. Summit day fell on 2nd Nov. We left our camp at 3 am having breakfasted on porridge and noodles and it was very dark, very windy and very cold. Moving as two roped parties we climbed steadily but slowly up the mountain, the altitude and incline taking a heavy toll on our progress, till at one point I had to stop to throw up. Eventually the altitude put paid to any further progress for two of us and at 6300m we turned page 4 - January 2010

back, we were only 140m from the top. As we descended the sun rise came to warm us and our recovery started. We were soon joined by two others, one of whom had begun to feel the first effects of frostbite on his toes and so took the sensible decision to come down, only 100m from the top. As we sat in High Camp enjoying a brew, we were reunited with the rest of the team who were also driven back down by the cold, as they prepared to fix ropes for the final part of the ascent, only 40m from the top. It would seem that we had failed; we had not achieved our goal. In fact what had been the point, all that effort, months of planning and training, the worry for our families when we lost communications, not to mention the cost? Maybe we should just have stayed at home; we could have just gone for a walk up Ben Rinnes with the dogs! But we didn’t, we went to the Himalayas, we took a challenge, we stepped out of the boat, out of the comfort zone and did something amazing. Life is like that, you have to challenge yourself or you aren’t moving forward, you are dying; standing still is not an option. You don’t need to go as far as Nepal, maybe just a 5 minute jog on the beach, you never know where it might take you; the longest journey starts with the first step, but you only get out what you put in. Although you can get out a whole lot more; filled up to overflowing, packed down and topped up again. I have found it is this way with my faith as a Christian, unless I challenge it and work at it, I so easily slip and the ways of the world come flooding in and life seems to become so difficult. Nobody ever said it would be easy but everyday I give thanks for a gracious and forgiving Lord who gives me the strength for the real challenge. The truth is out there, if you are prepared to look. The next day 3 of the guys felt strong enough for a second attempt and summited easily on a beautiful, windless and sunlit morning.

New Year, New Me So another Hogmanay has come and gone and we’ve all made resolutions - which we’ll maybe keep…for a month. Am I being too optimistic? For so often I find it easier to say that I’ll do a thing than to actually carry it out. Of course it is possible to change things in your life; people do it all the time. They change jobs, partners and house, clothes and adopt a new fitter lifestyle not necessarily all at the same time or with the same frequency. But all too often when we do make a change in our lives we find the same old problems coming to the surface. The new job still comes with irritating colleagues and demanding bosses; the new partner may be absolutely wonderful but there are still arguments over money. The new house or new clothes are great for a time but - like all new things they don’t stay new forever. And what about that new fitness focussed lifestyle? A survey revealed that people who walk dogs
(that’s me folks) are most likely to be still regularly walking their dog a year on; by contrast people who join a gym are much less likely to be at the gym a year from now. A dog is for life; gym membership is for a moment. But wait - don’t go and scrap those resolutions! It’s not hopeless. Of course real change is difficult and does require us to resolve to change, to commit to it and persevere at it. It does require a decision from us and a willingness to embrace that change. But for real and lasting change we need help; not just the kind of help you might get from a fitness guru or financial adviser but the kind you get from someone much stronger and smarter than you and I will ever be. Paul, who was one of the great Christian writers, was someone who spent the early part of his life trying to do his best - constantly making resolutions to be a better person. He was

actually quite proud of his efforts until he realised that he was in fact going backwards. It was then he found that it was Jesus - the crucified Lord - who could provide him with the new life he so desperately wanted but couldn’t achieve by himself. He said if we have been united with Christ in his death, ‘we will certainly also be united with him in his resurrection. For we know that our old self was crucified with him so that the body of sin might be done away with, that we should no longer be slaves to sin - because anyone who has died has been freed from sin.’ (Romans 6:5) So if we have ‘died’ with Christ, we believe that we will also live with him. That new life with Christ is not only the happy result of his sacrifice; it’s also the means by which those resolutions to become a new person are translated into a living reality. Belly-icious! A Real New Year Treat
®
SpotLight Chef’s Confidential
Braised Belly of Pork with Herb Crust This spectacular dish regularly appears on our Chapter One menus. Belly Pork may be a cheaper cut but responds beautifully to slow gentle cooking becoming meltingly tender. You may need to order this cut in advance from your butcher. You can serve it with potato puree, lightly wilted spinach and fresh herb tagliatelle. Pork 4 tablespoons Olive Oil 1 whole belly joint about 1 kg 1 Carrot chopped 1 Onion chopped 1 Leek chopped 1 Celery Stick chopped 100ml Sherry Vinegar 200ml Soy Sauce 1.5 litres Chicken Stock Crust 100g Fresh Basil 100g Fresh Coriander 100g Fresh Bread Crumbs 100g Parmesan Heat a shallow, flameproof, cast iron casserole or deep sauté pan with lid until you feel a strong heat rising. Add 2 tablespoons olive oil and brown the pork joint, turning until caramelized all over. Remove and place on a plate. Add the remaining olive oil to the pan and sauté the vegetables for about 5 minutes. Deglaze with sherry vinegar and cook until reduced to half. Then return the pork joint to the pan placing on top of the vegetables. Pour in the page 16 - January 2010
soy sauce and stock. Bring to the boil and partially cover the pan. Braise slowly at a low heat, or in the oven at 170C/gas mark 3. Cook for 2 ½ - 3 hours. Baste the pork occasionally with the pan juices, until the meat feels very tender. Lift out the meat and cut in to 4 even square pieces and set aside. Put basil, coriander, bread crumbs and parmesan in food processor and blitz until you get a crumble texture. Heap the mixture on top of each slice of pork belly and place in oven on a baking tray at 200c for 5 minutes and crust should form. Remove from oven and serve with fresh herb tagliatelle. EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF 10TH NOVEMBER 2009 OF ELGIN COMMUNITY COUNCIL

Secretary – Alex Macmillan - Proposed George Littlejohn; Seconded Harry Torry. Treasurer – Morna Abernethy – Proposed Alastair Kennedy; Seconded Anne Glover. Adoption of Constitution The Secretary advised that a copy of the Constitution for the City and Royal Burgh of Elgin Community Council had been distributed to all members for comment. It was Proposed by Harry Torry and Seconded by Murray Ross to adopt the Constitution, as presented together with adoption of Standing Orders as amended (no ref to AGM) and the Code of Conduct as set out in the Member’s Handbook. This was carried unanimously. Secretary was to obtain signatures from the Chairman, Vice Chair and Secretary and send to Moray Council for ratification. Police Business Inspector Mowat advising that over 50 motorists had been warned over using the Plainstones; there have been no repeat offenders that he was aware of and the Police will now be moving towards enforcement following this period of education. Community Champions Alex Macmillan advised that he had attended a meeting to discuss Community Champions. He stated that the original idea of Community Champions was a way in which the Police could obtain information from the community anonymously and pass the
information on to the appropriate agency. He said that this idea had never been fully taken up and that he felt that it was something that Community Councillors and Area Forum Members could take forward as a way of community engagement. At the Induction Meeting a suggestion was put forward regarding holding regular surgeries of the Community Council whereby members of the public could air their concerns and these concerns could then be passed to the relevant agencies or be dealt with by the Community Council and then fed back to the community as appropriate. It was agreed that Alex would take the idea forward and discuss with Chief Inspector MacKenzie and Area Forums. It was also suggested that the Community Council have their own webpage and e:mail address for the community to e:mail their concerns anonymously, this was agreed in principle. Denise Gormley agreed to support and to develop the proposal. Alex Macmillan advised that help from all Community Councillors would be needed. Planning Bryan Watson advised that an application had been received from Kentucky Fried Chicken to build on land adjacent to the Reiket Lane roundabout on the A96 next to Alan Milne and he was happy with the plans, although the window had now closed for any comment. AOCB The Chairman advised that members will be receiving a letter in the near future with regard to the Budget Consultation and meetings will be taking place throughout Moray. The Chairman asked members to inform as many people as

possible regarding the proposed savings and ask them to email their views. The Chairman also advised that a meeting is to take place at the Town Hall on 24th November 2009 between 7.00 - 9.00pm and asked for as many members as possible to attend. Cllr Russell advised that a hard copy of the consultation document is available in libraries and Denise Gormley advised that the document could be downloaded from the Moray Council Webpage. Alex Macmillan urged members to look beyond the consultation pack and if they have any different ideas not mentioned then to put these views forward. Alex Macmillan advised that the Community Council’s Data Protection Registration is due for renewal; a cheque for £35.00 would be required. Alex Macmillan reminded members to send any comments to him as soon as possible regarding the proposed Local Licensing Forum action on ‘Bring your Own Booze’ events. Anne Glover advised that she would be in a position to give an up-date on the Flood Relief Fund at the next meeting. Harry Torry advised that the Athletics Association at Morriston Park are applying for a £50,000 grant from Peoples Millions. Cllr Russell advised that Moray Council is now able to accept household batteries at recycling points. Alex Macmillan thanked members for their attendance at the Remembrance Day Celebrations and the Memorial Service held at New Elgin. Date and Time of Next Meeting. Tuesday 8th December 2009 at 7.00pm.
