“Iʼm going to die! Jesus, Allah, Buddha - I love you all!”

SpotLight Pastoral letter and Tide Times
On ly On e Wa y ? We live in interesting times. Today our culture and thinking is dominated by tolerance and diversity. As such when us Christians harp on about Jesus being the only Saviour it can make us sound kind of … well … erm … intolerant! Worse still when we state that he is unique and superior to any other ‘saviour’ - that is just too narrow minded by far! Indeed the Buddha taught that there are eightyfour thousand paths to enlightenment. Surely we can all find our own way to God? Personally I don’t really understand how eighty-four thousand paths all heading in different directions, can all lead to the same destination. And yet, the opinion that Jesus is just one path among many that leads to God, is a very popular spiritual concept, and not just with Homer Simpson! John Lennon: “I believe that what Jesus and Mohammad and Buddha and all the rest said was right. It’s just that the translations have gone wrong.”

Mahatma Gandhi: “All paths leading to God are equally good.” Oprah Winfrey: “One of the biggest mistakes humans make is to believe that there is only one way. Actually, there are many diverse paths leading to what you call God.” Do just humour me for a few moments as you continue to read and think about this. Are we really to believe that the atheist road (which says there is no God), the agnostic road (which is unsure if there is a God), and the Hindu road (which says there are millions of gods) all lead to the same place? What about the road that says there is no life after death, or the road that says you reincarnate? Do these roads lead to the same place as the Christian road, which says you stand before Jesus for judgment and sentencing to eternal heaven or hell? Are we truly to believe that the road that says we save ourselves leads to the same place as the road that says only Jesus can save us?

The exclusivity and superiority of Jesus is exactly the teaching of scripture. This foundational truth, that Jesus is the only Saviour, has been proclaimed by the Christians for 2,000 years. By the time you read this the church will have just celebrated Pentecost. It is a time when we Christians remember that God the Holy Spirit was gifted to us. Having just been filled and led by Him, the Apostle Peter boldly proclaimed “there is salvation in no one else, for there is no other name under heaven given among men by which we must be saved.” But even this claim wasn’t something he’d made up - he was simply echoing Jesus himself who clearly said: “I am the way, and the truth, and the life. No one comes to the Father except through me.” I am so grateful to God for the assurance and hope that springs from this truth. I’d hate to be like Homer, hedging my bets with my final breath, unsure and uncertain. What about you? Jon Teasdale, Leader The Lighthouse Church, Forres

Colour Trends for Summer 2010
To change your hair colour is one of the easiest and most obvious ways to update your look for summer. And it doesn’t require a long-term commitment. This season’s colours are about the individual projecting their own style. Moving away from monochrome and into natural accents and highlights. With summer on the way and the 80s trend slowly softening, movement, soft texture and gorgeously conditioned locks are what it's all about!
Blondes - Ultra-hot colours like clean blondes and warm caramels should be added through the hair to freshen your look this season and give you a sunkissed look. Spring peroxide blondes will transition into summer’s golden blondes with emphasis being on multi-tones. Think vanilla, latte, honey, caramels and strawberr y blondes.
Reds - For those of you who love reds we recommend natural reds. This season reds are paired down - but never boring! Think of vibrant and beautiful poppies or rich tom ato with rustic coppers. Colours are still bold, still strong yet natural. In keeping with this season’s trend, beautiful reds can be created using different tones but without huge contrast. For something a little different let the team at Kam heat up your hair with vibrant gold and copper tones. These are brilliant for accentuating texture, whilst adding an extra edge to a cut. Brunettes - Brunettes this season are dark and deep, rich tones with multidimensional highlights. Subtle variations in shade and tone such as rich mochas and c hocolate will allow us to use varying shades of the same colours, graduating out from light to dark and adding caramel or honey accents throughout.
Super Shiny and Healt hy Matrix Colour Prizms clear natural glosses, which keep hair looking super shiny and healthy are going to be big for summer 2010. They're a great way to keep your hair looking ultra healthy and are extremely wallet-friendly. Don't forget to book an appointment for this treatment for any special occasions or just to treat yourself! page 10 - June 2010
Consultation is Key! - At Kam we think that talking it through with one of the team is essential in achieving a look you will love this summer. We always look at your skin tone and colour of eyes and we like to make sure that we find out what you're really looking for. It’s so important to us that you leave the salon feeling a million dollars and delighted with your look.
Hair Condition - The condition of your hair is paramount and must be taken seriously especially before you apply any colour. At Kam we will advise you on the condition and strength of your hair and what needs to be done in order to keep it in tip-top condition. With the use of hot irons, tongs and natural effects such as exposure to the sun and the elements, your hair should always be given extra TLC.
Protect your hair from the Sun this summ er Kam recom mends - Biolage Sunsorial shampoo, conditioner and after-sun repair treatment. Perfect for those of you heading off on holiday or regularly on the golf course or in the garden.

The Moray Carers Project
SpotLight Local Interest
Helping people to help others The Moray Carers Project in Elgin has recently been awarded funding from the Long Term Conditions Alliance Scotland to create our innovative new Digital Story Project. Digital Stories are short documentary films about unpaid Carers that will aid communication and awareness in communities by showing the vital role Carers play in society. The Digital Story Maker will work with Carers to make creative films about their experiences, concerns and contributions to society. We are hoping this project will create a new link between Carers and the community. The finished films will be used in a number of ways and the Carers involved will have full control over who gets to see their film. Some will want to keep theirs for personal reflection; some will take part solely for the therapeutic benefits of being involved with the process; others will be happy for their film to be seen by others. These latter films will form the basis for a library service at the Moray Carers Project, as well as being used in screenings in various Moray communities, to raise awareness. We will also be posting some of the films on our website: www.moraycarers.co.uk/digitalstories.htm . The Digital Story Project is the newest edition to the services provided by the Moray Carers Project. We work with Carers of all ages throughout Moray to ensure they are recognised, valued and supported to manage the impact of caring on their lives. The Moray Carers Project describes a Carer as ‘someone who, without payment, provides help and support to a partner, child, relative, friend or neighbour, who could not manage without their help. This could be due to age, physical or mental illness, addiction or disability.’ An important part of our work is the ‘Will You Care’ initiative. This initiative is funded by the Big Lottery and aims to raise the profile of unpaid Carers in Moray and contribute to the range of services available to them. We deliver specialist training for Carers and focus on long-term conditions, e.g. stroke, diabetes, heart disease,
dementia, and many other conditions. We also work with GP practices and hospitals in Moray to ensure that Carers, as well as patients, are being identified effectively and supported appropriately. We liaise closely with NHS professionals who contribute their different areas of expertise to the courses we deliver. One of our key aims is to reach out to the many ‘hidden Carers’ in Moray and assist them in accessing the help and support they may need to manage their role. To achieve this, we work with pharmacies throughout Moray. When a Carer makes contact we provide an initial listening ear, explain more about our services and then ‘signpost’ people in the right direction for any additional support. The Moray Carers Project also offers a free, confidential counselling service. We offer services for Carers of all ages, including Young Carers. Our Education Support Workers work with Young Carers primarily through primary and secondary schools, but also in colleges. Some of the services provided by the Young Carers team are: supporting Young Carers to raise issues with school, Social work, school nurses and other support systems; highlight issues that Young Carers may have with Guidance staff e.g. bullying, homework problems, etc; providing a listening ear to Young Carers, pupils and school staff; raise awareness of Young Carers through delivery of PSE lessons to year one pupils. As well as all of this we organise great activities for Young Carers to take part in. So, as an addition to these services, Digital Stories hopes to bring a new dimension to the way in which the Moray Carers Project, and care organisations in general, can provide help to Carers. We are now asking Carers to get in contact to discuss the possibilities of making films. We are also keen to hear from members of Moray communities to discuss the possibilities for future screenings to help raise awareness. Moray Carers Project is based at 227 High Street Elgin (IV30 1DJ) and people with caring responsibilities (friends, children, parents neighbours, colleagues) can drop in or make an appointment by phoning 01343 540990, or emailing info@moraycarers.co.uk. Information about our services can also be accessed via our website at www.moraycarers.co.uk. If you want to get in contact with the Digital Story Project then phone and ask for Will, or email: will.burgess@moraycarers.co.uk.

Elgin Rotary Club Motorfun & Food Fest Elginʼs Cooper Park will be overflowing on Sunday, June 6th when the fourth Motorfun free family fun day, organised by the Elgin Rotary Club, takes place between 12noon and 5pm. Already a firm favourite with the people of the town…and those from further afield, this yearʼs event will be bigger, better…and a little bit different.
The event will once again be built around a motoring theme, with the usual array of new and vintage vehicles, along with a glittering display of customised cars taking part in the “Show and Shine” competition. This event, which attracts a large number of car enthusiasts, is already attracting attention with information appearing on a number of internet forums and a Facebook site being set up to exchange information.
A new addition is being introduced this year in the form of a Food Fest, which will be held inside a marquee (£2 entry) and will feature around 20 exhibitors from food related backgrounds, each offering “tastings”, along with a number of demonstrations from well-known Moray chefs to spice up the afternoon.
Local Interest
As ever, fun is set to take centre stage in the three rings in the middle of Cooper Park with the popular ʻItʼs A Knockoutʼ again set to hit the heights. There is also a place for people who enjoy messing about in boats, with ʻPirates on the Pondʼ, a rowing race around the Cooper Park duck pond, set to be a wonderful -and wet spectacle.
Other entertainment on offer will include a display by sheepdogs controlling ducks, Grampian Police Dogs, chainsaw carving, Speyside Cooperage and sheep shearing.
A number of local musical groups and pipe bands will also be appearing over the course of the afternoon. As well as the cars and the entertainment, there will be up to 40 local organisations manning stalls around the field, along with other demonstrations and displays.
On Saturday (June 5) a ʻMusic in the Parkʼ concert is taking place in the marquee, featuring local ladies choir ʻCantare and Friendsʼ and all proceeds will go to Macmillan. Macmillan are also set to benefit from a sponsored walk by primary school children, which take splace around the Cooper Park perimeter on the Saturday afternoon, beginning at 2pm.
For further information contact Ken Smith on 01343 547237 or email knsmith59@aol.com
Sponsors have been sought to back the various events and already the Mansion House and the Mansfield Hotel have promised support for the Food Fest, while McDonald and Munro, John R. Weir, Forsythʼs of Rothes and Johnston Carmichael have agreed to sponsor other areas. More companies are being asked to get on board. Elgin Rotary Club has also been offered help in the form of food donations from various local companies, such as Tesco, Aldi, Sangs and Marks and Spencer. The club also applied for Lottery funding this year, for the first time, and were successful in receiving a grant for £3000, which will cover site security, a PA system, advertising costs, first aid cover and entertainment costs. page 14 - June 2010

Whales and Dolphins around the Moray Firth At the Whale and Dolphin Conservation Society (WDCS) we are only too aware of how much whales and dolphins have always fascinated us humans and that seeing these amazing animals in their natural environment is often a memorable experience. People tell us just that every day! If you choose the right site and invest a little patience, then you could glimpse one or more of the 24 species of whales, dolphins and porpoises recorded around the Scottish coast. If you do fancy getting out by yourself, with the family or the dog to see some of these creatures, then the Moray Firth is a fantastic area to see whales, dolphins and porpoises from land. The resident population of bottlenose dolphins tends to spend a lot of time close to the coast and can be very active, making them easy to spot. Porpoises are smaller and tend to be quite shy but with a bit of practice, they can also be seen around the coast. Even Minke whales make regular visits to some of the deeper coastal waters like Cullen Bay.
Before you get out and about, there are some considerations that you will need to take onboard- a good set of binoculars for a start! In the Moray Firth area, the bottlenose dolphins and minke whales tend (not always though) to be seen more regularly in the summer months - watching in good weather (and earlier in the day) will increase your chances of sighting a whale or dolphin. On a windy day, waves and sea spray may obscure a dorsal fin breaking the surface. As for good viewing spots, there are countless great places from which you can watch for whales and dolphins in the Moray Firth. Top sites include; Cromarty Sutors, Chanonry Point, WDCS Dolphin and Seal Centre at North Kessock, Fort George, WDCS Wildlife Centre at Spey Bay, Cullen Bay, Broughty Ferry Castle, and Aberdeen Harbour. If you want to watch for whales and dolphins in comfort and with easy access to food and facilities, then the WDCS centre at North Kessock is ideal. From the Cullen Bay Hotel too, you can even look for minke whales through the dining room

windows while you eat! Other sites such as Lossiemouth, Nairn and Spey Bay offer easy access to cafés and toilets. Fancy being guided by the experts? Then WDCS can help here too. Some of the best encounters with whales and dolphins are when out walking the cliffs and beaches, and if it is an all round encounter with nature that you are interested in then you could sign up to WDCS' PoD Plod, a brand new challenge event taking place in August, and created to help raise funds to protect the dolphins of the Moray Firth. The event is a 26-mile sponsored walk along the breathtaking Moray Coastal Trail from Findhorn Bay to Spey Bay….. the challenge is to do it in 2 days! Guided by Sarah Dolman, WDCS’s head of policy for Scotland, and Alice Pope, WDCS’s Scottish Conservation Officer, you will also be taken on a dolphin and wildlife boat cruise, look out for dolphins from viewing spots along the route, enjoy a reception and guided tour of the WDCS Wildlife Centre at Spey Bay and finish with a dolphin watching trip to Chanonry Point with resident dolphin expert, Charlie Phillips. No matter where or how you choose to go watching, a notebook and ID guide are useful to take with you. These will help you to make notes about what you are seeing and look up the details if you are not sure. If you spot something that puzzles you then WDCS now has a comprehensive species guide that can be accessed on-line through wdcs.org. Make good notes and take pictures, then check them on-line when you get home. If you get hooked, then you could become a regular WDCS shore watcher. Contact our volunteer manager and we’ll get you trained up and watching the sea! It’s a vital part of what WDCS does as we use our shore watch data and other research to try to understand dolphin movements all year round and better manage potential impacts to them and their environment. Tarte Tatin
Tradition says that the Tarte Tatin was first created by accident at the Hotel Tatin in Lamotte-Beuvron, France in 1898. The hotel was run by two sisters, Stéphanie and Caroline Tatin. There are conflicting stories concerning the tart's origin, but the predominant one is that Stéphanie Tatin, who did most of the cooking, was overworked one day. She started to make a traditional apple pie but left the apples cooking in butter and sugar for too long. Smelling the burning, she tried to rescue the dish by putting the pastry base on top of the pan of apples, quickly finishing the cooking by putting the whole pan in the oven. After turning out the upside down tart, she was surprised to find how much the hotel guests appreciated the dessert. I n g r ed i e n t s 150g/5oz unsalted butter 1 fresh vanilla pod 200g/7oz caster sugar 8 apples 300g/10½oz puff pastry 1 medium egg, yolk only, plus 5ml double cream - to make egg wash 150ml/5fl oz crème fraîche to serve F or t he b u tt er sc ot ch sa u ce 150g/5oz caster sugar 150g/5oz unsalted butter 150g/5oz golden syrup 70g/3oz whipping cream
Cook on a baking sheet on top of the stove until the apples have started to caramelise. You may need to change this tray a few times during the cooking process but it saves the oven top. Always take great care when dealing with hot liquids and under no circumstances leave it alone. Roll out the puff pastry evenly to about 2mm thick on a floured surface and prick with a fork. Place on top of the apples and cut the excess pastry away. Egg wash and then bake in the oven at 200C/400F/Gas 6 until the pastry is golden brown, about 15 minutes. Meanwhile make the butterscotch sauce. Place the sugar, butter and golden syrup in a stainless steel pan and boil until the sauce is a dark caramel colour. Add the whipping cream to the hot caramel and stir until mixed thoroughly.
Cut the unsalted butter into thin slices and mould the butter slices (using well washed hands) into a nonstick frying pan with high sides. Split the vanilla pod and mix the vanilla seeds by hand with the sugar. Tip the vanilla sugar onto the butter and shake the pan until the sugar is evenly dispersed.
Press the tart with a plate that fits the inside of the pan and drain any excess liquid. Leave to rest for 20 minutes. Then turn the tarte tatin out onto a plate and serve immediately. Pour the caramel sauce around and offer the crème fraîche separately.
Peel and core the apples and cut in half through the core. Pick out any pips. Arrange the apples skin side down. Pack the apples in as tightly as possible.
