One of the disciples of Jesus was a man by the name of Thomas. He is perhaps best known as doubting Thomas because of his refusal at first to believe in the resurrection of Jesus from the dead. However I must confess that I have a great deal of sympathy for Thomas along with a great deal of admiration for him. There is one particular account in his life that I find very interesting and it involves a conversation that he and the other disciples had one day with Jesus. Jesus was seeking to comfort His disciples by assuring them that true peace is found in trusting in Him, and that He was going to be going to prepare a place for them, and come and take them to be with Him one day. And Jesus finished by saying you know the LOW TIDE TIMES FOR LOSSIEMOUTH IN OCTOBER Walking on the beach should be possible 2 hours either side of these times AM PM 1 2 3 4 5 6 7

way to the place where I am going. However Thomas was not so sure so he asked Jesus the rather obvious question; “Lord, we don’t where you are going, so how can we know the way?” A rather obvious question and one that he seemed to ask on behalf of all the disciples. I imagine the situation was a bit like being in a class unsure of what the teacher means and so glad when someone else plucks up the courage and asks the question you wanted to ask! Jesus responded by giving the clearest message as regards entry to heaven when He says; “I am the way and the truth and the life. No-one comes to the Father except through me.”
This is a message that in our pluralistic post modern society has been lost with the carefree attitude that says all roads lead to God. Jesus, the Son of God made it clear to Thomas that day that He, Jesus, was the way, the truth and the life. Jesus is not a way, but the way, not a truth but the truth, not a life but the life. He came that we might have life and have it to the full, He came to forgive us and gives us peace, joy, forgiveness and eternal life with Him. Why not read the passage for yourself and, as you do, ask God to speak to you through it. It is found in the gospel of John Chapter 14 and verses 1-6. Graham S wanson Elgi n Bapti st Church

Organic Farming
SpotLight
Sandy’s Story
At the vegetable section of my local supermarket I stood pondering….Organic…Non Organic? What’s the difference? Well for those of you who want to know, this is what it’s all about…. Organic farming is the name given to a variety of agricultural production systems that aim to work with nature, rather than by conquering it. Organic is most commonly associated with food production, both crop and livestock. However, organic methods are also employed in the production of many other goods, leading to products as diverse as timber and clothing, to be labeled as organic. The principal differences between organic farming and conventional farming are: ❍ an extensive restriction of the use of artificial pesticides, fertilisers and other agro-chemicals; ❍ a hostility to the agricultural application of biotechnology; ❍ a rejection of the routine use of pharmaceuticals on livestock; ❍ an attention to animal welfare; and ❍ a focus on crop rotation, soil quality and maintaining biological

diversity as chemicals.

to
In this way, organic farming is in many respects, a return to traditional farming methods. Organic food is felt by a growing number of consumers to be safer, more nutritious, taste better and be less harmful to the environment and animal welfare than conventionally produced food, and the market for it has grown in recent years accordingly. I recently spoke to Hugh Grierson, one of Scotland’s largest organic farmers, and he talked to me about his father Sandy. “Sandy was not an Organic farmer but watched with interest as Hugh stopped using sprays and fertiliser. He still worries about the weeds but the change that he really noticed was the butterflies. Insects have thrived since we went organic, especially the butterflies. They are drawn to the red clover that we plant for soil fertility. As they feed on the flowers they fill the farm with colour and movement. When the white clover flowers it can be quite alarming to walk through. Every step disturbs a cloud of bees. Fortunately they are well fed – too sleepy to be alarmed. Hoverflies and ladybirds hunt through our potato crops keeping them free of aphids and the diseases that aphids carry. Where there are insects there will be birds and mammals. We have wetland fields with Lapwings, Red Kite and Curlew. Other fields provide seeds for finches, larks, and Tree sparrows. Sand Martins follow the cows, hunting for tel: 01309 690063
insects. Barn owls hunt for voles and Red Kites clear up the leftovers.
Organic farming has brought the wildlife back into the fields but we have also worked at improving the woods and waste ground. We have planted hedges and wildflower meadows. We have dug ponds and planted woods. We look after wetlands and rare habitats. It is always very rewarding because new plants and animals moving in and setting up home repay our efforts. SOUND & VISION
30 YEARS AND STILL ROCKIN’! I opened the shop in 1980 after 14 years as a local DJ playing the best music around between Wick in the north and Arbroath in the south supplying DJ gear and records to the local music lovers. After a short time the decision was taken to stock musical instruments as the existing music shop had closed its doors.
Caption ‘Fish’ from Marillion opening our record deptartment 1989 We quickly established a reputation for stocking quality instruments at very keen prices along with excellent back up service. Late in 1989 the opportunity arose to move into our existing showroom which gave me the space to expand our range and selection of top brands, such as Martin, Gibson, Fender and Ibanez guitars along with top amplifiers from Marshall, Blackstar, Line6, Peavey and many more. We also stock Digital pianos by Yamaha and Kawai, Violins, Saxophones and almost any other kind of musical instrument available.
Caption Jim Marshall opens the guitar department 1989 Don't forget that we are also the only independent music shop still stocking a large choice of CDs and Music DVDs. Special orders a speciality (let us track down that elusive CD or DVD).
We have 100s of Guitars, 1000s of CDs and Music Books, and more amplifiers and accessories that you could shake a stick at! Some of our staff have been with us for over 20 years and have obtained a vast knowledge which they will gladly share with our many customers. Local Choice, Local Service and Local Backup with keen prices to boot. Look no further than Sound and Vision Elgin!

Sticky Toffee Pudding and Butterscotch Sauce
This month as the leaves are turning, one of our most popular sweets is sticky toffee pudding. It features often in our menu so I thought I would share the recipe. It is a fantastic sweet for the cooler months and cheer up those dark evenings. Ingredients - Pudding 100g Pitted Dates 50mls Water 50mls Orange Juice 75g Dark Or Light Brown Sugar 65g Butter (Room Temperature) 1 Egg 125g Plain Flour 7g Baking Powder 5g Bicarbonate Soda 1 tin condensed milk Ingredients - Sauce 75g Butter 250ml Double Cream 100g Light Brown Sugar Pinch Of Salt One Vanilla Pod Seeded Put dates, water and orange juice into a small pan and bring to the boil. Simmer until they have broken up slightly then leave aside (chefs tip - put in 2-3 earl grey teabags to add flavour) Cream sugar and butter with a hand blender or wooden spoon. Once soft, add your egg then continue to mix well. Sieve the flour and baking powder into creamed butter mix, then add bicarbonate of soda to date mix. Combine the date mix to the butter mix, stir well, then put into a greaseproof paper lined deep baking tin roughly 10”x 10”.
condensed milk (toffee) and spread it around into the mix before baking (the more the better). Cook in the oven at 180°C (gas mark 5) for 15/20 minutes. The mix will still will be soft and wet when you test with a skewer, hence the Sticky in Sticky Toffee Pudding! Cut to desired size and shape. Sauce method - this is simple - add all sauce ingredients into a sauce pan then boil gently until all has come together and sugar has dissolved. The difference between this and toffee sauce is that butterscotch has salt and vanilla in it. I would serve the Sticky Toffee Pudding with your favourite ice cream and the butterscotch. You could also replace buttertscotch with custard if you liked. This Recipe was given to me by my old head chef and good friend Mark Greenaway and I am now passing it out to you as I think we all love it! It's got to be up there with chocolate brownie for me, which I will leave for another month!
Boil the tin of condensed milk for 3 hours making sure the tin is fully submerged at all times (to save time, you may wish to purchase Carnation caramel available from local supermarkets). Take your boiled page 18 - October 2010

Police Business and National Security Update Anne Glover raised concerns at the increase in the number of skateboards and bikes being used on the Plainstones. Alex Macmillan pointed out that the Community Council raised this issue many years ago and believed that once the skate park had been erected the Council were to consider the introduction of a Bye-law prohibiting this on the Plainstones. George Littlejohn asked when the railings around St. Giles church were to be erected. The Chairman stated that he believed that planning permission had been granted. inspector Mowat agreed to pass comments onto officers and appropriate action would be taken. • George Littlejohn asked how many Police officers were called upon and what was the response time during the Lesmurdie road incident. He also asked if the local Police force was satisfied with their involvement overall. inspector Mowat advised that the initial Police unit had attended very quickly and following their risk assessment a number of resources were called upon locally and out with Moray. inspector Mowat advised that he was happy with the response and overall result of the enquiry and commended the community and other agencies for their part. Committee Reports • Planning. Bryan Watson advised that the Sainsbury’s planning application was ongoing and he was carrying out research regarding flooding and crossings etc. • Bryan Watson reported that he had no concerns regarding the application to combine Vodafone and o2 on the same transmitter based at Glenmoray Drive. Environment • Shop Greenery. Anne Glover advised that some letters had been sent to shop owners regarding removal of greenery from gutters and the Environment Committee were awaiting replies. • Anne Glover advised that the r&L page 20 - October 2010
Committee and Environment Committee were currently working together. Roads & Transportation • road Markings on the roads within the City of Elgin. A receipt of the letter sent to Alexander ritchie, Moray Council has been received but no response has yet been received from ralph Newlands of Bear Scotland regarding the road markings on the A96 through Elgin. An update from James Smith (Engineer Traffic), Moray Council was received on 31st July 2010 outlining work on white lines on present budget. Murray ross contacted James Smith and was advised that the maintenance team are working all over Moray and should cover a good number of roads on this years budget, although next year’s budget may be a different story. • Speed limit on B9012 Duffus road. Murray ross spoke with Kevin Price, Moray Council roads Department on 5th August 2010 regarding the alteration of speed on Duffus road and the r&T Committee’s objection to this increase. Mr Price advised that three Moray Councillors have now withdrawn their objection following a site visit and explanation of an alteration to the bend coming into the proposed 40mph. Murray ross informed Mr Price that the r&T Committee’s objection still stands. Mr Price also explained that the 40mph is in line with new guidelines from Transport Scotland for this road, a 40mph can come about where the development skirts one side of the road. Murray ross requested details of the average speed figures for this stretch of the road to date and was advised 37mph, this being on an existing 30mph. The new deadline for objections has now been extended to october 2010. Murray ross proposes that the C&rBoECC r&T Committee stand firm with their objections as previously stated. This was agreed by all members present. CounCil Minutes Continued on Page 26

With the time delay between writing a column and it being in print I suspect summer will be a distant memory, however I feel it is still timely enough to make mention of a new business in Fochabers which is already enjoying great success with locals and visitors alike. After a visit to Fochabers Ice Cream Parlour you, like me, will probably be amazed, not just at the very cool old style signage complete with giant cone, but also at the unbelievable mouth watering selection of ice creams. With flavours including ‘Blackforest Gateaux’, ‘Fudgy Mallow Swirl’ and the very old school ‘Parma Violets’ I can honestly say I had to be dragged away, but not before managing to get a cone. It’s great to see a new business up and running and using local suppliers, especially in the current challenging economic environment, and I wish them every success.
Angu s Robert son MP Over the summer and away from parliamentary duties I have managed to get back to cycling, which I very much enjoy but which also often takes a back seat. Along with the family I have been exploring the cycling byways around Elgin and Lossiemouth and introducing my two young children to the activity before being rapidly outclassed with youthful energy while I am peching and wheezing my way up a hill. Fortunately a few days out have blown the cobwebs away and I am feeling a little fitter than I was. The trick of course will be keeping up the effort but with the same two youngsters pestering me to take them out it will hopefully continue! Rich ard Lochhead MSP

Granary Bar & Club

Thunderton Place Elgin Tel: 555175 The Granary Bar & Club, tucked away in Thunderton Place in Elgin is a traditional town centre pub in a quiet pedestrianised street, just off the High Street. Formerly known as The Foundry, the Granary now offers a warm & welcoming atmosphere to customers of all ages, including families. Owned by brewers Belhaven and managed by Derek Hess, the Granary has a modern yet homely feel to it, with stylish décor & leather sofas, as well as cosy booths with room for 8 people and plasma screen TV’s. Live sports fixtures are a big crowd puller at the Granary, with large screen TV’s dotted around the Bar area and, upstairs in the Club, a live DJ plays host to weekend revellers. A friend and I went for a meal at the Granary on a Friday evening and were treated to an enjoyable evening meal in a vibrant weekend atmosphere. Live football was the order of the day, with many enjoying the match on the big screen and free half-time pies! We however, opted for something a little more formal and were pleased by the quality of food on offer. Whilst the menu is small, it is
certainly perfectly formed, with something to suit all tastes. Traditional pub favourites such as burgers, lasagne and steak pie were offered alongside tempting chicken dishes, chilli con carne and a range of daily specials. All the food at The Granary is locally sourced and freshly cooked on the premises - a delightful change for ‘pub grub’. For starters I had a small portion of Chicken Goujons, (a larger portion is available for those with a more substantial appetite!) which came partnered with a lovely fresh salad with a delicious honey & mustard dressing, and a choice of dips. The five chicken breast pieces were tender & moist with a light & crispy batter. My friend had Breaded Mushrooms, which were perfectly cooked in a crunchy breadcrumb coating, and these were also served with a fresh salad and dips.
sausages from the local butcher. The sausages were meaty & delicious, served on a pile of home made mashed potato with a fabulous onion gravy, just like your Granny used to make! My fish cakes were exceptional, with a crispy coating and a soft & creamy texture on the inside. Whilst we would have welcomed a side dish of vegetables with our main meal, in the end we both felt too full to sample the puddings on offer – sticky toffee pudding had particularly caught our eye! By the time we had finished eating, the football was all over, and the live DJ in the Club on the upper level was getting everyone in the mood for a great Friday night. The Granary is the ideal one-stop venue for a vibrant night out in Elgin – you can enjoy a delicious, home cooked meal whilst watching live sports then move upstairs to the Club for drinks and a dance. And because the Granary is just a stone’s throw from the centre of town, it’s ideally suited to cater for those working or shopping in Elgin. Pop in during your lunch hour with colleagues or take the kids along for lunch on Saturday and see just what the Granary has to offer.
For our main course, I opted for one of the choices from the specials board -which is a neat and very convenient chalkboard on the table – Smoked Haddock Fish Cakes, whilst my friend had Sausage and Mash, which featured pork and leek page 22 - October 2010

Murray ross has arranged with the Springfield gardener for the two planters on the A941 South, entering and exiting the City to be shaped and winter pansies planted before the end of the year, and then continue to plant in Spring and Winter. Treasurer’s Report No.1 account = £1,205.01, No. 2 account = £3,971.10 - The invoice from Moray Council for the planting of the A96 planter at Eight Acres has been paid. Elgin Ear Progress • 005: overflowing bins at Elgin Cemetery - Solution proposed by emptying bins on a more regular basis which proved to be non-effective. • 006: i’m really concerned at the amount of money being spent on the A96 underpass project. it seems such a waste of money when we are crying out for things like the Bishopmill Bowl to be sorted out. Surely the money can be spent on better things that encourage youth participation, fitness and team
building and building (football at the Bowl etc). - response: Following a second successful bid to the Scottish Government for money from the Scottish Town Centres regeneration Fund, one of the projects was the refurbishment of the A96 underpass so you will understand that the money for that project was obtained from the Scottish Government specifically for the Town Centre. unfortunately, restoration of the Deanshaugh Playing Fields could not fall within the scope of the Scottish Town Centres regeneration Fund. A.O.C.B • Kathleen Masson raised concerns regarding overhanging foliage from walls and asked who was responsible as she felt it needed addressing as it was hazardous, in particularly for people with visual impairment. Cllr russell advised that the roads Department should be contacted. recreation and Leisure committee agreed to take forward. • Bryan Watson advised that he had been approached by two residents of Springfield regarding a blocked drain.

He contacted Scottish Water who advised that they needed a postcode in order to help. Harry Torry did not feel this was acceptable and suggested the C&rBoECC write to Scottish Water highlighting the difficulty in contacting their emergency service and the insistence of a postcode. • Alex Macmillan informed members of a telephone scam whereby the caller advises that he is a representative of BT and states that there is an unpaid bill and unless payment is received immediately he would disconnect the phone and it would cost £118 to re-connect at a later date. Training - based on what Carers tell us they need and delivered in local communities. Subjects include managing stress and benefit awareness.
Opportunities to meet other Carers - our Care and Share groups run throughout Moray and offer Carers an opportunity to meet up, share experiences and relax.
