Do fish complain to the sea for being wet? Not at all, it’s their natural environment. It’s where they are at home. They would complain if they were on dry land, ‘a fish out of water’. What’s our natural environment, where are we truly ‘at home’. Surely the answer must be in this world; the world of time that begins when we are born and ends when we die. We live in time as we live in the air that we breath. We love the air - we love to take deep breaths of pure, fresh country air, just for the joy of it.How strange then that we do not love time so much. Indeed time seems to spoil our loveliest moments. Nothing quite comes up to our expectations, because of time. We never have enough; it goes too fast; it passes too slow; where has it gone! When Henry Ford began the first motor car mass production line, he was sure it would enrich our lives. The car would make our journeys quicker, and the time we save we could use to do more of the things we enjoyed. and more time in them, driving further and further afield for shopping, leisure and work.
We are harassed by time. Half our inventions are advertised to save time washing machines and dish washers, faster and faster cars, and jet travel but for what? We are pursued by time; watches, buzzers, time clocks, schedules, diaries and so on. In fact I better get to the point of this quickly or I won’t get this in to Spotlight on time! Living in earthly time isn’t our natural environment. We are like fish out of water. We will never really feel that we are at home, until we are free of the constraints of time. Where or when can that happen? In eternity - God’s endless, timeless, peace filled eternity. That’s what we are made for. We are made in the image of God and our hearts will never find their rest until they find it in the heart of God. “Come to me, all you who are weary and burdened, and I will give you rest. Take my yoke upon you and learn from me, for I am gentle and humble in heart, and you will find rest

for your souls.” (Matthew 11:28-29) Jesus, when he was going to die, told his followers that he was going to prepare a place for them; when the time is right, he will come and take us to be with him forever. Some of the old hymns talk of heaven as ‘going home’. Loved ones who have died before us, have simply gone home before us and one day we’ll be at home with them. Can you be sure? Yes, by simple faith in God through Jesus. Jesus said “I am the way and the truth and the life. No one comes to the Father except through me” (John 14:6) Life is much richer for me, and it will be for you too, when you know that all you experience here on earth, is just part of the journey home. One day you will be where you truly belong and where you will be at peace forever.

ExTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF TUESDAy 13TH JULy 2010 OF ELGIN COMMUNITy COUNCIL
Police Business and National Security Update • Inspector Strachan commented on the high profile of police since the last meeting and informed those present that things were almost returning to normality for the Lesmurdie community. There has been a leaflet drop to residents expressing gratitude for their help and patience during this time. • Inspector Strachan gave an update on behalf of Inspector Mowat in relation to the matter raised at the previous meeting by Bryan Watson. Since this meeting the two parties have expressed interest in mediation and this has been organised by the police. An individual body is now dealing with this matter. Planning • Murray Ross asked for clarification on why the site next to McDonalds was being cleared. The Chair responded that the planning application had been agreed some two or three years previously and his understanding was that it was for two or three business units. • The Chair had received a letter from Sainsbury’s regarding a proposal to build on the Mart site. This is in the form of a pre-planning consultation. The Chair informed those present that Bryan Watson will respond to this in a similar way to what was previously submitted by the Community Council. The Secretary requested that a presentation to the community council would be useful as it is such a major development. Environment Anne Glover gave an additional update in terms of shop greenery and advised that the committee had met and were sharing the work on this. Fifty three shops will be approached in relation to this matter. Jacqui Taylor (BIDS Manager) had supplied Ann with a list of proprietors’. Roads & Transportation • Parking at Pansport - The committee was opposed to this and put forward alternative proposals. The committee are now concerned over the lack of use of this parking area and the manner of the cars parking there.

• Linkwood Medical Centre cycle path - A letter had been sent to Diane Anderson concerning the cycle path that links to the pathway. This is outwith Moray Council responsibility because it belongs to Springfield Properties. Linkwood Medical Centre also responded that it was outwith their responsibility. The Roads & Transportation Committee is awaiting a response from Sandy Adams. • Lossie Green & Lossie Wynd car parking charges - George Littlejohn explained that the Roads & Transportation Committee had no objections to this and that the charges are to commence in the Autumn. Elgin North Area Forum • Concerns continue to be raised at the forum over the litter mess at the River Lossie. •Trees at Ladyhill are causing a visibility issue. • Interviews had been held for the vacancies within the Community Support Unit for support workers for Elgin North and Elgin South. Councillor Sharp pointed out that budgets will be preserved as much as possible in terms of provision for older adults. Elgin South Area Forum • Parking issues with local residents which may arise when Moray Council moves into the old Safeway building. • Murray Ross asked if it was possible to have cycle bays at the front of the Linkwood Medical Centre and pointed out that there was no signage to say cycle bays were at the back of the building. Councillor Jarvis responded to this by saying that he had been there today and that signs were in place stating where the cycle bays were located. • Councillor Russell advised that the Moray Council car pooling scheme is proceeding. • Kieron Green advised that Moray Council employees have access to a subsidised bike purchase scheme. Elgin Ear Alex Macmillan advised that further listening reports had been received to Elgin Ear via the listening box and the surgeries. Elgin Ear Steering Group has

I was lucky enough to get along to Speyfest in Fochabers for some fantastic music from musicians who had travelled from near and far, as had the audience. The atmosphere was great with some great stories being swapped in between the lively foot-tapping efforts of the musicians. For me the highlight was Calum Stewart opening for Capercaille. It was great to catch up with Calum who, as well as being able to charm an audience with phenomenal flute playing alongside Breton guitar marvel Heikki Bourgault, is also a former neighbour of mine! Celtic supergroup Capercaille then played with a brilliant set.They are a band I have followed for many years and it took me back to my previous career as a radio journalist when I played them as the top track on an Austrian radio show about Scottish music. I can say with some confidence that a great Speyfest was had by all! Angus Roberts on MP The Scottish Parliament is in summer recess allowing me to catch up on a range of constituency visits and surgery tours. I also get the time to visit the dozens of summer fetes and shows in Moray and catch up with my constituents in a more informal setting. I take my hat off to the volunteers that run these events and keep the community spirit alive. My young sons probably enjoy these events even more that myself because they get to tour Moray’s bouncy castles and lucky dip stands! I also find that I am a lot luckier when I get my sons to pick the tombola tickets and so far they have won me sparkling wine and various tins of soup. met and discussed these. Four listening reports are being progressed: • Overflowing flower bin situated at the top end of Elgin Cemetery. There is a large industrial green bin at the main entrance off Linkwood Road but only a small black one at the top end. Request is being made for this to be replaced by a large green industrial bin. • Obstruction being caused by Moray Council buses at junction of Quarry Road and Morriston Road when dropping off and picking up Elgin Academy students. • Request for traffic calming measures on Morriston Road as the flashing 20mph signs during school hours are having little. • Alex Macmillan further advised that the students and staff from Elgin Academy have finished making additional listening boxes and these are to be situated in the following sites - Elgin Library; Asda; Elgin youth Café; Linkwood Medical Centre; CJ’s Plaice and Elgin Community Centre. There has also been a display in the foyer of Elgin Library recently and this will be on show in MVSO week commencing Monday 23rd August 2010. A press release is also scheduled for August with Elgin Academy and Grampian Police.
A.O.C.B. • The Chair asked the elected members present for clarification on whether something was in place that connects tourism locally. Councillor Russell advised that the Moray Tourism Group had been successfully launched. The Secretary suggested that it would be worthwhile approaching this group to ensure there is no duplication and that all the necessary information is included in the entry. Councillor Russell advised that Marion Walker is the contact person for this. • George Littlejohn requested that a member or committee take on the responsibility for reading and highlighting issues on all Grampian Police reports. It was agreed that the Planning Committee would pursue this. • Murray Ross advised that the Boots Pharmacy appeal was scheduled for 17th August 2010. • Harry Torry expressed his disappointment in the lack of community involvement in the recent turf turning ceremony at the Elgin Academy re-development. Whilst there were students in the photo shoot there were no community members. Harry Torry had relayed these concerns to Andy Oliver.

Is it the right time to buy? SpotLight property market survey ‘As safe as houses’ - a phrase that we often hear to reflect something that is beyond risk and a solid investment. In the last few years the national media would have us believe that the property market is no longer ‘as safe as houses’. But how much of this is scaremongering to make a good story, and how much of it is actually based in truth. Below is a table of house values across the whole of the UK including Scotland, which shows price movements over the past 35 years, moving from an average house price (adjusted to take into account inflation) in 1975 of £75,188 to the current level of £168,719. We can see from the graph that there has been a general movement upward with occasional periods of falling prices, most notably in the period 1990 to 1995, and then 2007 to the present time. But it can be seen that these periods are generally temporary and in the past growth has returned relatively quickly.

Featherblade Steak with Creamy Horseradish Mash, Root Vegetables and Whisky Jus

At Knockomie, we pride ourselves on using the finest local produce and try to source as much of our food from local suppliers. Macbeth's Butchers has supplied Knockomie with their quality meats for 23 years. The Feather Blade cut of meat that we have used is a lesser known cut from the shoulder of the beast, however is one of the tastiest and I would say outshines fillet in comparison of flavour. Feather Blades are available from good local butchers like Macbeths or do ask at your local supermarket butcher/meat counter, if they don't have this do ask for a stewing steak such as Brisket. Ingredients (feeds two) 2 Featherblade Steaks (each weighing 250grms) Half A Celeriac (Roughly chopped) Half an onion roughly chopped Two Carrots (roughly chopped) Half Bottle Cheap Red Wine Six Pink Peppercorns Two Sprigs Fresh Thyme (or one sprig Rosemary) Two Bay Leaves Beef Stock (250ml) 25ml Benromach 10 year Old Whisky One Teaspoon Creamed Horseradish Butter to taste Cream to taste 6 Large Good Quality Mashing Pota toes (Maris Piper are ideal) Method - Feather Blade Steaks Season Feather Blades with salt then seal in hot oil in a frying/sautee pan, then put in roasting tray, oven proof container with lid or slow cooker with the Red wine, peppercorns, thyme (or Rosemary) and bay leaves. Make sure steaks are covered by liquid and, if you need to, add some water then cover tightly with tin foil. Cook at 180°C / Gas Mark 5 for 2½ hours or until tender. After 1½ hours add the rustic vegetables and cook for remaining hour.
Method - Creamy Mashed Potatoes Cook your potatoes either in water (or in the oven with their skins on - once cooked spoon out the potato flesh) or drain well and then mash with either a masher or press through a sieve (a sieve will be hard work but is worth it). Season and add butter, cream and Horseradish to taste - I like to add a good bit of cream and butter as these are a chefs best friend ! After a very busy August at Knockomie we come into an exciting new season for food with a lot of game coming into season. You will be likely to see on my menus over the coming months, Guinea Fowl, Partridge, Pheasant, and my favourite Venison just to mention a few. Also in season is some lovely seafood including, Sea bass, Squid, Halibut, Scallops, Lemon Sole, and my favourite Monkfish will all make an appearance on the menus. In the vegetable and fruit corner, as well as our edible flowers and fantastic micro herbs (supplied by Speyfruits of Elgin) there will be some lovely fresh herbs, also some, Kale, Parsnips, Pumpkins, Spinach, Leeks and Butternut Squash just a few fantastic and tasty things that will be at their best! As always we look forward to welcoming you to Knockomie.
Take out the feather blades then pass liquid through a sieve, reduce liquid by half and thicken with a touch of flour and feather blade juices, Add some Benromach 10 year Old Whisky (to taste). Pour over the beef and vegetables and serve with Creamy Horseradish Mash. page 22 - September 2010
