PASTORAL LETTER & CHURCH MEETINGS Many people have sought to define the word grace. Writers, artists, poets and lyricists have all tried to explore this wonderful, beautiful concept. Bono, of the band U2, penned the song “Grace”, seeking to communicate its beauty, impact and transformative power. Grace She takes the blame She covers the shame Removes the stain It could be her name Grace It's a name for a girl It's also a thought that changed the world And when she walks on the street You can hear the strings Grace finds goodness in everything Grace as a word and a concept is truly amazing. The world thirsts for grace in ways it does not even recognise; little wonder the hymn, “Amazing Grace” edged its way into the Top Ten charts two hundred years after composition. The Bible makes it clear that one of God’s key characteristics is grace. We are told in Psalm 145:8 that “The Lord is gracious and compassionate, slow to anger and rich in love.” The Apostle Paul, who wrote much of the New Testament, was himself an example of the grace of God in action. In Acts 7:58 we are told that Saul of Tarsus, a Pharisee, was watching the awful scene, as Stephen was murdered. We learn from Acts 8:1-4 that Saul

became a bitter opponent of the Church, trying to destroy it and he became a zealous persecutor of the Church. It may even have been during these events that Saul’s conscience was pricked. It is amazing to consider that this man, Saul of Tarsus, was gloriously converted to Christianity, by the grace of God, on the Road to Damascus. He would become the great apostle and missionary to the Gentiles. Here we see the grace of God. Saul, who became Paul, didn’t just change his name, God changed his heart. What a trophy of grace! As Paul reflects on what God did for him in 1 Timothy 1:13 he writes: “Even though I was once a blasphemer and a persecutor and a violent man, I was shown mercy because I acted in ignorance and unbelief. The grace of our Lord was poured out on me abundantly, along with the faith and love that are in Christ Jesus.” God is gracious and consequently He sent His one and only Son as the Saviour of the world. Jesus was born to die so that through faith in Him we, the guilty ones, can be saved. As Paul said in 1 Timothy 1:15: “Christ Jesus came into the world to save sinners.” A.W. Tozer describes it like this: “The cross is the lightning rod of grace that short-circuits God’s wrath to Christ so that only the light of His love remains for believers.” God has done all that we need to be saved. All we have to do as accept the gift of His grace by trusting in Him. For those

COMMUNITY COUNCIL NEWS ExTRACTS FROM THE MINUTES OF THE MEETING OF 9TH APRIL 2013 OF THE CITY AND ROYAL BURGH OF ELGIN COMMUNITY COUNCIL POLICE & COMMUNITY WARDEN UPDATE Sgt Michael Irwin reported that the transition to Police Scotland or Police Service Scotland was on-going with new paperwork and procedures being implemented but with effectively no change to the local offices in Elgin, Buckie and Forres. New multi-ward plans are now available and the plans for Elgin North and Elgin South are similar so all of Elgin is treated the same. Anne Glover asked for any information about signs that she had noticed in Seafield Street attached to the lampposts about cold calling. No information was available and these are unlikely to be police notices. He added that canvassers require a licence from the Council. Anne Glover asked about the 101 police number. Sgt Irwin advised that the new 101 number was a non emergency number and calls to it are directed locally and expected to be of a non emergency nature eg advising of a historical incident, vandalism etc whereas 999 was still correct for emergencies and ongoing serious incidents. Alastair Kennedy thanked Sgt Irwin for attending and updating the Community Council. PLANNING HAWCO EDGAR ROAD: James Wiseman reported that he had collated comments and submitted a response expressing concerns about traffic at the junction of the Wards and Edgar Road. George Littlejohn advised that the gate to the sales lot should be made wider to accommodate two way traffic. James Wiseman responded by saying that he had not had that information at the time and the time for comment was now closed. Action: James Wiseman to circulate his collated response. There ensued a discussion highlighting concerns about motor retailers making specific uses of the public highway adjacent to their businesses. Steven

Christie recounted discussions at the South Forum about the Arnold Clark transporters. Alastair Kennedy question the suitability of certain locations for this type of business and Cllr Graham Leadbitter responded by saying that these situations occur by historical development, usually staff park away from the site and whilst there are insurance rules about how far away a transporter may park delivering cars the businesses generally respond as much as they can to such complaints to avoid adverse publicity but infringements of traffic laws should be reported to the Police. It was also noted that customers parking inconsiderately was not the direct responsibility of a business.. GLENMORAY DISTILLERY: Discussions are being progressed with Glenmoray Distillery regarding some planting. James Wiseman to arrange a meeting with all key players Glenmoray, SPICE and the Community Council. RECREATION & LEISURE FLOWERBEDS: Anne Glover reported that the new flower pots were in place at Ladyhill and acknowledged the help of colleagues and Covebay Nursery. She also reported that there was a problem with dog fouling at the site and that she had contacted Kathy Grant the Community Warden to advise her of the problem. Alastair Kennedy asked about the fountain at Dr Gray’s hospital. James Wiseman reported that he had contacted Ralph Newlands of BEAR Scotland who had advised that the area was not owned by BEAR Scotland but was managed by them as part of the A96 trunk road and that there were on-going works due to be completed this week. James Wiseman undertook to convene a meeting of the relevant people to take the project forward. Alastair Kennedy suggested that if this worked it would be the way forward given the cuts currently being made. James Wiseman offered to help with the weeding at the flowerbeds.

WETLAND: Bryan Watson pointed out that a burnt-out motor bike had been removed from the wetland area at Edgar Road and said that there was a litter problem there and the Litter pick could target that area. He added that a notice informing people of the litter pick could be put at both entrances to the wetland. AOCB MORAY PLAYHOUSE VISIT: Bryan Watson confirmed that the proposed visit to the Moray Playhouse is to be scheduled for the end of April 2013 and suggested it would be good to show appreciation of the investment in Elgin and to offer a publicity opportunity. Bryan Watson intimated an apology that he expects to be late to the next meeting. Mary Wall had received an email saying that the Cooperative were looking for a young members board and 16-25 year olds could apply on line at www.cooperative.coop/cymb Graham Leadbitter mentioned that he was walking the Speyside Way at the end of May (Sun-Wed) for Moray Women’s Aid and he can be sponsored at www.virginmoneygiving.com/grahamlead bitter . Alastair Kennedy proposed that the Community Council sponsor Graham. Gordon Wells advised that the Cadets were holding an open day and car boot sale on Saturday 13th April 2013, gates open at 09:00hrs and there will be displays, tea & coffee, face painting and much more. George Littlejohn reminded Alastair Kennedy about the £75 to be paid to the JCC Action: Alastair Kennedy to send the £75 to the JCC (Tracey Rae) Steven Christie reminded the meeting of the forthcoming Elgin Bids Fashion Show and the shortage of female models. George Littlejohn asked if anyone had heard rumours of a lorry park at Pinefield or a Tesco Express coming to Elgin? No one said they were aware of these developments.

While I am always at pains to point out the dangers of over-consumption of alcohol it is also important to point out the positives of the industry, particularly here in Moray where we produce a huge amount of high quality alcohol product that is generally not associated with anti-social behaviour. In that respect it has been great to see three breweries springing up in quick succession in Moray, producing exactly that - high quality product for those with a taste for quality and complexity and for a drink that is to be savoured! We have the Speyside Craft Brewery in Forres, the Windswept Brewing Company in Lossiemouth and, most recently, Brewmeister in Keith. A solid sweep right across the county. The great thing about specialist breweries is that they are more of a compliment to each other than competition and having three is a fantastic addition to Moray’s booming food and drink sector.

Elgin BID’s showcase event in Elgin Town Hall last month deserves a mention. It was a great family event and I was persuaded to become a model for the night and show off highland-wear from local shops. There was some great backstage banter at the event and I thoroughly enjoyed myself. Congratulations to the organisers and especially to Out of the Darkness Theatre Group and all those on stage (who had far more to remember than my own walk-on/walk-off role!). The event was once again a great success and did exactly what it said on the tin by showcasing local businesses in an innovative and fun way.

Caring about... Before Renovation

...complete Lawn Renovation. A project this year ? Many of you will, in your darkest moments, consider giving up on your lawn… too far gone… wouldn’t know where to start… best to get it dug up and put down a new lawn ! Replacing a lawn can be very expensive however whether you plan to replace it with a new lawn or even slabs or gravel. Consider this, a worn-out lawn can actually be renovated in situ at a fraction of the cost of removing and replacing the whole thing. I have included here a before and after picture taken just a few weeks apart last summer. I suggest there are 4 stages in the process, and you could either try this yourself, probably with some hired machines, or get some help (probably best as you have to live with the results for years to come). 1. Hollow tine Aeration removes thousands of cores, reducing compaction and allowing air to move in the root zone, encouraging microbial activity and root development. 2. Severe Scarification removes as much thatch as possible, allowing the seed to find the soil surface which always aids germination. Once the thatch has been removed it has to be cleaned off the surface by either raking or sweeping, using a leaf sweeper. 3. Seeding should be applied at a rate of 20-25gms per m². The seed, being on the soil surface, puts it in direct contact with the material that will help it germinate; it is however open to the elements and can be disrupted by heavy winds and birds’ feasting. 4. Top Dressing covers the seed. Many think top dressing should be a sandy soil mix. We actually use a lawn compost, manufactured from recycled green waste and therefore environmentally friendly. It contains nutrient to assist existing grass and promote good germination from the seed and aids good microbial activity. This is applied at 2kg per m². All that’s required now is regular watering until the seed germinates (regular rainfall isn’t usually a problem in these parts). The best time to tackle this is June-Sept in Scotland, and that means starting planning now for your new lawn this summer. At around £2 per m2 to renovate, compared with around £12 per m2 to replace, it really is worth considering.

Outfit Moray, the award-winning outdoor activity charity based in Lossiemouth, has just announced its exciting Summer Holiday adventure activity programme for young people. Hopeman Gala Week 2013 Programme

Every summer, the normally quiet, tranquil village of Hopeman begins to get busier as holidaymakers and day trippers make for the pristine sandy beaches, the caravan park, rock pools, skate park complex, and the stunning cliff walks with their breath-taking views over the Firth. For some visitors, the middle of July means a special trip to join the community in the highlight of the year, Hopeman Gala Week.

Now in its’ 40th year, the villages’ ever-popular, non-stop fun filled event has continued to go from strength to strength, during a time when others in the area have struggled to stand the test of time. Hosted over nine hectic days, it has always been a huge crowd puller, sunshine or rain, with people from across the district and indeed far beyond, booking their holidays for mid-July to ensure they don’t miss out on all the action! This years Gala has so much more to offer than the usual singing and dancing (although there will still be plenty of both) with some exciting new events added to all the traditional favourites. Planning for Gala Week starts very early, usually around September or October the previous year, but the first real sign that things are beginning to happen is when the Gala Queen and Princesses are chosen in mid May. This years Gala Queen, Miss Abi Cameron, will be led in a procession down Harbour Street by the Elgin Pipe Band and be crowned at the village green straight after the fancy dress parade on Monday, 15th July. Abi will be accompanied by her three Princesses, Miss Ellen Tough, Miss Kylah Munro and Miss Carla Russell, to be followed by a Disco at 7pm in the Marquee. Abi will attend with her Princesses at a number of events throughout the Gala. Every day of the Gala offers something for everyone. The wee ones look forward to the sandcastle competition, Fancy dress parade, Story time, Teddy Bears’ Picnic, (bring along your favourite Teddy!) and loads more. Older kids always enjoy the skate park competitions, five a side football, art classes and discos. Hopeman Gala is all about families, though, and again there are many activities to choose from. Firm favourites are the hotly contested car treasure hunt, family fun quiz, tombola night and the mega get-together on the famous ‘Harbour Night’, including the ‘Raft Race’, and the hugely popular ‘Final Night’, this year headlining BIRO ( Black Isle Rock Orchestra ) a dynamic four piece rock covers band playing a great selection of classic rock and rhythm'n'blues covers from the 70's to 00's. Their brand of 'driving rock' is guaranteed to get everyone going and keep the crowd dancing all night. BIRO is one of the most popular and hard working bands in the north of Scotland, utilising a professional sound system and fantastic stage lighting. For the older age groups, the golf club and bowling club run gala competitions during the week and both local pubs, the Braemou and the Station Hotel host fund-raising themed nights. Of course, the Gala wouldn’t continue to thrive without the marvellous support given to it by the local community. The tireless work of the Gala Committee is backed by generous donations from local businesses and individuals, with services offered at cost price and often donated free of charge. Moray Council has also been very supportive of the Gala organisers, helping with licensing, road and harbour issues to smooth the way for events to go ahead without a hitch. So, as we say here in Hopeman - ‘Come Awa In!’

Local Charity and Social Enterprise ReBOOT are celebrating their 16th year in operation

I know what a Charity is, but what is a Social Enterprise? Simply put, a Social Enterprise is a company that has social and environmental values as the core driving force of their existence, alongside striving to be financially sustainable whilst keeping any profit within the community. So why do ReBOOT consider themselves a Social Enterprise? We are a Non-for-profit organisation with core values surrounding environmental protection through our recycling and reuse service, social and community support through our kind donations, affordable sales and hands on training and voluntary opportunities. So how does ReBOOT exist, we all need money? In the early days, ReBOOT sourced financial help from grant funders and support from the local Council, but since 2007 we have been a fully self-sufficient Non-for-profit organisation, earning all the money needed to support the charitable objectives above. So that’s your 16th birthday done, what are the plans for your 18th and 21st birthdays?

We currently have operations in the Greshop Industrial Estate in Forres, and near the College in Inverness. We hope to develop our current projects and sustain all that we do now well beyond our 21st birthday. At our annual away day meet up, all the volunteers, trainees and staff from Forres and Inverness met up to discuss the future, so watch this space as new developments begin over the coming months. So what are all these projects and things ReBOOT does? Chef’s Confidential Arbroath-smokie cakes with chilli jam Here we are with another recipe for you to try at home. It may seem quite heavy on ingredients but it is a great start to a well stocked larder. Do not be put off by the recipe’s length because the end result is phenomenal. An Asian twist on one of Scotland’s best ingredients. These are ideal as a starter to that summer Barbie. Once again have fun and happy cooking. Ingredients For the chilli jam

For the fish cakes

75g/3oz caster sugar 2 red chillies, roughly chopped 3 plum tomatoes, roughly chopped 8 lime leaves 2 lemongrass stems, tough outer leaves removed, finely chopped 25g/1oz roughly chopped fresh ginger 2 garlic cloves, peeled, left whole 2 small shallots, roughly chopped 4 tbsp Thai fish sauce (nam pla) 40ml/1½fl oz sesame oil 50ml/2fl oz dark soy sauce 2 tbsp clear honey 3 limes, juice and zest 110g/4oz crème Fraiche

110g/4oz Arbroath smokie, skinned, boned and flaked into small pieces 110g/4oz mashed potato 1 red chilli, finely chopped 1 tsp medium curry powder salt and freshly ground black pepper 1 lime, juice only 75g/3oz plain flour 2 free-range eggs, beaten 90g/3½oz Panko breadcrumbs Vegetable oil, for deep frying

1. For the chilli jam, heat the sugar in a heavy-based saucepan over a Medium heat until it melts and forms a golden-brown caramel. (Do Not stir and keep an eye on it so that it doesn’t burn.) 2. Blend all of the remaining chilli jam ingredients, except the crème Fraiche, in a food processor to a smooth purée. 3. Once the sugar has caramelised, pour in the puréed chilli jam Mixture and stir well. Bring the mixture to the boil, then reduce the heat and simmer for 4-5 minutes, or until sticky and jam-like. Remove from the heat and set aside to cool. 4. Once the chilli jam mixture has cooled, stir in the crème Fraiche until well combined. 5. For the fish cakes, mix the Arbroath smokie, mashed potato, chilli and curry powder in a bowl until well combined. Season with salt and freshly ground black pepper and lime juice, to taste. 6. Shape the mixture into 2cm/¾in diameter balls. 7. Sprinkle the flour onto one plate, beat the egg in a bowl then place the breadcrumbs on another plate. 8. Dredge each ball in the flour, then dip it in the beaten egg and roll in the breadcrumb until completely coated. 9. Heat the oil in a deep-fat fryer to 190C/375F. Alternatively, heat the oil in a deep, heavy-based saucepan until a breadcrumb sizzles and turns brown when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.) 10. Carefully lower the fish cakes into the hot oil and fry for 3-4 minutes, or until crisp and golden-brown and completely cooked through. Remove from the pan using a slotted spoon and set aside to drain on kitchen paper. Keep warm until needed. 11. Thread the cakes onto small skewers and arrange on a serving plate. Spoon the chilli jam into a bowl and serve alongside the cakes.

Moray House Builders Report Upsurge in House Market Confidence MORAY-BASED Springfield Properties are reporting strong signs of improvement in the housing market with confidence returning to the property market.

And at Nairn the Springfield Meadow Lea development is offering a mix of bungalow and house designs that has already attracted 11 reservations. How grateful then, that my decision, made in life, was CHRIST FOR ME. And when time shall cease and the day of judgement shall have run its solemn course, then shall the true Rock of Salvation tower in solitary grandeur over the wreckage of every blighted hope, delusive doctrine and human endeavour. While all those who built upon any other foundation shall languish in hopeless torment and misery in the lake of fire., I shall reign with Christ in endless bliss and glory, not through any merit of my own but simply because by the mercy of God I was moved to decide - CHRIST FOR ME. review “friendly and efficient service...” A warm and welcoming atmosphere is what greets diners on arrival at the Royal Hotel & Restaurant in Keith. The dining room and its anteroom are up a short flight of stairs and offer comfortable chairs and tasteful decoration – an ambience that whets the appetite for what one expects to be a meal to relish. Every day the restaurant has an excellent choice of specials as well as the more formal a la carte menu. The Royal specialises in fresh Scottish seafood and succulent rib-eye steaks, and we were told that the cranachan is to-die-for. We chose to be a little more delicate in our menu selection. To start we picked Butternut Squash and Ginger Soup – a warming, creamy and sweetish flavour with a faint ginger under-taste – extremely moreish, and a soup for which you would like to borrow the chef’s recipe. The Hot Goat’s Cheese was covered in a subtle herb breadcrumb coating that gave crunch to the smooth, clean and creamy cheese. The accompanying cranberry sauce was a rich and fruity delight to the palette. Seared Salmon fillets in caper butter beckoned, and the crispy skin and softness of the salmon was more than complemented by the vegetables and the smoothness of the melted caper butter. This was not for the faint-hearted – this was a man-sized portion (as indeed were they all). On our other plate was a Rack of Lamb, cooked to a professional and perfect pinkness. The creamed potatoes were silky smooth and spiced with mustard seeds, while the medley of vegetables was cooked to perfection – nothing soft and flabby here. The wine list was more than ample and diverse, offering crisp white sauvignon or chenin blanc to fully robust Chateau Neuf du Pape, as well as bubbly like Moet et Chandon should you be in celebration mode.
