Pastoral Le er & Church Meetings As we reach the month of October, we are filled with the joy of the changing of colour all around us. The purple heather on the mountains has started to lose its colour. The trees are changing from bright green to brown, loosing their leaves (picking them up is not necessarily a breeze – pardon the pun) and all around us we are reminded that autumn has finally arrived. Change is part of our life and the changing of seasons remind us that even in our own lives we are confronted with change. Sometimes, when we are challenged with change, we go to the well-known position that protects and shields us from change. This was also true for the people in the time of Paul when he was writing to the congregation in his letter to the Ephesians. They were challenged to follow the example of Christ but were yearning the old ways of the world. He explains his argument in Ephesians 4: 25 – 27 as follows: “Therefore, each of you must put off falsehood and speak truthfully to your neighbour, for we are all members of one body. 26“In your anger do not sin”: Do not let the sun go down while you are still angry, (NIV Translation).“
They were challenged to follow the example of Christ as he writes: “Follow God’s example, therefore, as dearly loved children and walk in the way of love, just as Christ loved us and gave himself up for us as a fragrant offering and sacrifice to God. (Ep 5: 1 NIV Translation)”. How does this challenge change our lives? Someone said to me a while ago, that we are losing our sense of community. That is perhaps the one thing that stands out for me in the towns and villages, the communities that make up the wonderful place we call Moray. Yet, we are sometime so despondent about life and the changes we see around us, that we go back to a position of protecting ourselves by building walls around us. Emotional walls where we would rather be angry and speaking untruthfully, than rather being challenged to love, to care, to show tenderness and mercy to those around us. This is true from our inner circle family to the stranger we see in a car or a queue. Perhaps, as we see the change of seasons around us, we can follow the example of Christ. As His children we are challenged to change the way we look at life and the people around us.

Perhaps we can be a bit less annoyed and impatient with my spouse, partner, child or family member. Friendlier to the stranger in front of me in a queue. There is a saying that a stranger is a friend not met yet. A bit more relaxed when we drive on the roads this winter, taking time to volunteer or perhaps there is something else you can do. Think of the example of love if we go and visit our neighbour with a plate of food, reading a book for an elderly person in a care home or perhaps helping at your local church or charity shop. We change the world by being the person who allows him or herself to be changed. When we follow the example of Christ in our lives that means that we are also open to change. Parliament Blog & Tide Times The Tattie Holidays are here and the long, hot summer now seems like a distant memory. When the temperatures in Moray were higher than we would normally experience on an exotic holiday, you know it has been quite an exceptional year. As autumn is a precursor for long winter months, many people will be concerned about the downgrading of the maternity unit at Dr Gray’s and the mothers who are due to give birth in Moray but now may have to travel to Aberdeen or Inverness to have their child during the winter. There has been a great campaign launched by local people to retain these services but both maternity and paediatric care needs to be returned to Dr Gray’s to the levels we enjoyed before the recent changes. We want to attract people to our area, but as more services are centralised within NHS Grampian, even if just for a limited amount of time, the less appealing Moray becomes for individuals and families. The professionalism and care offered by staff at Dr Gray’s is second to none, but they need the support of the Health Board and the Scottish Government to ensure the services we need in Moray are delivered in Moray.
I was delighted to celebrate the first anniversary of the Scottish Government’s Baby-box scheme recently. More than 52,000 boxes have been distributed across Scotland and the latest survey showed 100% satisfaction – certainly something to be proud of! The box contains lots of useful items for the new baby’s first weeks of life and it can itself be used as a sleeping space. The boxes are having a real impact on families receiving them, and demonstrate that as a society, we value each and every child. It was great to see the box take its place in history in the Museum of Childhood in Edinburgh and have an opportunity to meet “the Baby box generation” – one of whom was toddling already – time flies!

For a number of years, I have been campaigning to persuade Historic Environment Scotland to develop the famous Dallas Dhu and I am delighted that at long last they are seeking external investment to write a new chapter in the distillery’s story. Dallas Dhu is spectacular and unique and is Scotland’s only historic distillery with the potential to restart production of a famous whisky at a time when the industry is booming and also to play a wider role in the Scotch whisky sector and tourism. Interested parties are now being formally invited to come forward and over the years I’ve had exciting and creative ideas suggested by very serious players in the industry and now these can be taken forward. Speyside is at the heart of scotch whisky production and with imagination and ambition we can open an exciting new chapter in the Dallas Dhu story providing a huge boost for Moray and Speyside and the wider economy.

The Moss Season Approaches! We live in cool maritime climate, which is ideal for moss to thrive. You cannot change the weather, and you cannot banish moss permanently, but you can control its’ infestation with some basic good husbandry, and a bit of work. I’m talking about scarifying again of course. This will also be featuring in all the TV gardening programmes and magazines about now, and it is what we at GreenThumb spend all winter doing. We will have 3 heavy blade scarifier machines out clearing (at the last count) 1,000 lawns round here. – oh joy!
lawn! An “average” lawn usually takes 2 experienced crew half a day to do with machines and blowers. The best time to tackle this is either side of Christmas. Scarifying is never recommended in the growing season because the very nature of the exercise is pretty traumatic for the grass, and some recovery time is required, during which time it looks pretty shabby. Doing it off-season allows recovery, then you put on a spring feed, and have a season of decent grass to mow. Enjoy!
Scarifying moss and thatch out is undertaken to clear the lawn surface of all the dead material and moss to allow fresh grass plants to dominate the lawn environment, providing the best conditions for absorbsion of sunlight, moisture and nutrients. If this task is overlooked (or avoided), the following season there is even more build-up, and in no time, the lawn is more moss than grass. There’s no getting away from it, this is hard work and often generates haystacks of debris.. It can be done by hand with a spring rake, but some mechanical help is really the best option for anything more than quite a small lawn. You can hire a blade scarifier for the day at some garden machinery centres, but be warned, these are pretty vicious machines and it’s only too easy to “plough” your garden, and then need a new

You can choose to dine on the lawn, weather permitting, in Tipplings Bar (informal), Hamblins Restaurant (more formal) or reserve a private dining room. My friend and I chose Tipplings Bar for an evening meal and were spoilt for choice with the menu and specials board - full of fresh, locally sourced seasonal produce. Decision making was hard with prime steaks, corn fed chicken breast, beef ragu with pasta and monkfish, special burgers and roast cauliflower steak, just some of the main dishes to choose from. Our waitress was friendly, knew the menu and checked whether either of us had any dietary requests. Vegetarian, gluten free, and a children's menu are all available. To start, I chose the Foraged Mushrooms on Sourdough, served with rocket, poached hen's egg and shaved parmesan. It smelt and looked amazing... the best tasting mushrooms I have had, with a perfectly cooked poached egg. We cut into the egg with anticipation and... the yolk gently flowed over the mushrooms beautifully! As a main course I chose the Venison Haunch Steak served with a pastrami and black pudding hash, baby veg and a bramble jus. The baby vegetables were heritage carrots - both the usual orange and beautiful purple colour, along with the asparagus and brambles to complement.
The talented chefs led by David and Kris, once again triumphed. Lovely tender venison, medium rare and definitely no blood on the plate, this dish did not disappoint and was a tasty, well presented plate. My friend's main course looked equally impressive Sticky Cajun Chicken, accompanied by chips, salad, slaw, and a red pepper and chilli jam. I begged a taste - the jam and cajun favours were spicy, with a hint of sweetness. Yummy!! We just had to have dessert - but decided sharing was the best option. After much debating, and a recommendation from the waitress, we plumped for the light Black Forest Cheesecake - with 2 plates! It was a truly spectacular presentation - a tower with spun sugar spiral, yuzu fruit pearls and cherry ice-cream. I am not usually an ice cream fan but could easily have eaten a tub of this. The cheesecake was beautiful with a crumb base, fruity mousse, and surrounded by a delicate sponge. Delicious! I would definitely recommend a visit to the Ramnee in Forres for any occasion, though to avoid disappointment in the evenings it is recommended to book ahead. Locally sourced ingredients, well cooked, helpful friendly staff, something for everyone. B la ck

4 Shallots 10 Parsnips 400J Vegetable Bouillon 3 Tablespoons Cumin & Litres Boiling Water
Peel and roughly chop up the Parsnips and Shallots, add the Cumin and sweat them off in a medium sized pan with 2 tablespoons of Vegetable Oil, until ž cooked. Add the Vegetable Bouillon to the 4 Litres of Boiling Water and mix well, then add the Shallots and Parsnips and simmer gently for approx. 20 minutes. Once the Parsnips and Shallots are fully cooked, use a hand blender to blitz until the desired texture is reached.
] Serve with Crusty Bread and Butter. Dress it up with double cream.

Afghan Biscuits An Afghan biscuit is a traditional New Zealand biscuit made from cocoa powder, butter, flour and cornflakes, topped with chocolate icing and a nut. ... Invented in the 1940s the actual reason why it's called an Afghan biscuit is debated, with no reliable sources one way or another.
Ingredients: 600g Margarine
2tsp Bicarbonate of soda
2 1/2 Cups of soft brown sugar
3/4 Cup of cocoa
4 1/2 Cups of plain flour
Chocolate frosting
2 Handfuls of cornflakes
Walnut pieces
Method: 1. 2.
Start by creaming together the margarine and brown sugar until well beaten.

Add in the cornflakes and mix through the dough.

After cooling for 10 mins on the baking tray transfer to a wire rack to cool completely.

When cooled, top with chocolate frosting and half a walnut.
Sift in the flour, cocoa and bicarb and mix together with your hands until you get a dough.
Roll into 20 equal sized balls and flatten slightly on the baking tray with a fork. Give each cookie some room on the tray. You may need two trays. Bake at 180 degrees for around 15 mins until they are cooked and cracked a little on top.
