As summer draws to a close, I often look forward to seeing the incredible panoply of colours brought to us by the autumn leaves. From reds to browns, yellows and greens it is a sight to behold. Americans talk of the Aspen woodlands but we have just as stunning autumn scenery along the Moray Firth Coastline. Try stopping alongside one of the many fast flowing rivers and sucking in the views. It cannot be beaten!

Are you settling in? How are you enjoying being here? These are the natural questions asked when someone comes to a new area. After only six weeks I think that I am settling in quite well, and yes I have enjoyed these past weeks. I really don’t know this part of Scotland so there is a lot a to see and learn about. With the weather being reasonable I have been able to walk around the town even when working, and get to know the place more easily. Of course as a locum minister in St Giles and St Columba s Church, being in Elgin is a very temporary arrangement for me, I do not know what the future holds, or for that matter where I might be living in days to come. That however is not an uncommon experience for many people around this area. The changes brought about by the Defence Review will cause upheaval for many families. Both the ones who move out and the ones who move in. Children changing schools,
parents looking for work, even pets having to settle in to some new environment. Uncertainty can bring about tension and worry and that can damage relationships. So the changes are going to need patience and understanding, both from those directly affected, and from those who could be described as local folk. There is a line in scripture about welcoming strangers whereby one entertains Angels, so who knows who you might meet in the future.

As winter approaches a truly remarkable spectacle begins along the coastline of Moray - the arrival of thousands of wintering sea ducks. Pick a calm sunny day, arm yourself with binoculars (and telescope if you have one), a flask of hot drink, a notebook and field guide and head to a coastal headland or harbour, for example Alturlie Point outside Inverness, Nairn Harbour, Findhorn bay, Burghead or Lossiemouth. Carefully scan across the water surface and what originally appeared to be empty sea will transform into a mass of whirring wings and rafts of roosting ducks. Common Eiders are usually fairly near to shore. The males are in their smart black and white plumage and if you look closer you will see a pink blush of colour on the breast and muted Eider

with their dull brown feathers warrant a second look and you will notice subtle differences in the browns and blacks and the intricate overall barred pattern. A similar species that is present at this time is the Long Tailed Duck. These birds arrive in Moray in internationally important numbers with estimates of over 25,000 individuals overwintering here. Slighter built than the Eider the male sports elongated tail feathers that bend and flex in the breeze. Look closer at these birds and you will see the smart contrasts of browns on the face and the pink patch stretching across the bill. Their call is a musical yodelling that carries a good distance over calm seas. Along with the arrival of the ducks we also encounter different garden birds and next month we will be looking at two winter thrushes - Redwings and Fieldfares - and how to tell them apart. Chef’s Confidential As the nights draw in there is a sense that winter is on the way and without being alarmist I thought I would talk about whisky and food this month, in particular sharing with you my recipe for Whisky Christmas Cake. This is a real family favourite during the festive period and now is the best time to make it and let it mature over the coming weeks. Whilst I am not one for putting the best single malts into the cake it is worth using a really good blended whisky that is full of character and flavour. My favourite for this recipe is Chivas Regal 12 year old, it has a lovely fruity and toffee aroma and when steeping the fruit in it brings out the most amazing flavours. Any good blended whisky can be used.
Whisky Christmas Cake Preheat the oven to 170°C (150°C fan oven) Gas Mark 3 Dried Fruit
350g
Ready to eat prunes
150g
Grated lemon rind and juice
1 lemon
Chivas Regal
150ml
Whisky Liqueur
30ml
Softened butter
225g
Ground Almonds
50g
Muscovado Sugar
225g
Large eggs
3
Wholemeal Self raising flour
225g
Mixed Spice
1.5 tsp
Cinnamon
1 tsp
Method 1. Soak the dried fruit, prunes and grated lemon rind in a bowl with the whisky and whisky liqueur. Soak at least overnight but preferably longer. 2. Grease and line the base and sides of an 20.5com round cake tine, with a removeable base. Use a double thickness of baking parchment. Wrap a double thickness of brown parcel paper around the outside of the tin and secure with string. 3. Using an electric hand mixer beat together the soft butter and sugar. Add the eggs a little at a time and continue beating until smooth. Mix the flour and spices together and using a large metal spoon add gradually to the egg and butter mixture. Finally add the ground almonds. 4. Place half the soaked fruit into a food processor and pulse to a puree. Add this and the rest of the fruit to the rest of the mix and combine well. 5. Spoon into the cake tin and place in the oven on a centre shelf, for 2 .25 to 2.75 hours. 6. Remove from the oven after the minimum cooking time and test using a skewer to see if cooked. The skewer should come out clean. If it doesn't place back in the oven and check after a further 15-20mins. If the cake starts to look quite dark on the top, cover with brown paper with a whole cut in the middle to prevent it getting too discoloured. 7. When cooked, allow the cake to cool in the tin before removing the lining paper. If storing for Christmas then leave the lining paper on, cover with foil and finally cling film and store in a cool dry cupboard until you are ready to decorate.

Legal â&#x20AC;&#x201C; Ease De-mystifying Missives. The missives are a series of Solicitors letters, the contents of which form the contract between the seller and the purchaser of a property. Generally, when a purchaser finds a property that they would like to buy their Solicitor will submit a formal Offer on their behalf. The formal Offer will comprise terms which are specific to the particular property such as price, date of entry and whether the offer is subject to any further conditions for example receipt of a Damp & Timber Report. The formal Offer will also incorporate a set of standard conditions, for example, the Moray Standard Clauses 2009 Edition. These comprise clauses which have been agreed between the Solicitors of regional Law Faculties as being relevant to the area and which are fair and reasonable to both the seller and the purchaser. The sellerâ&#x20AC;&#x2122;s Solicitors will reply with a formal Acceptance. The Acceptance will usually be â&#x20AC;&#x2DC;qualifiedâ&#x20AC;&#x2122; so that some of the purchaserâ&#x20AC;&#x2122;s conditions are accepted, some rejected and some amended to reflect the title deeds to the property and if say any alterations have been carried out etceteras. It then falls to the purchaserâ&#x20AC;&#x2122;s Solicitor to either reject or accept the qualifications depending on how reasonable they are or including further conditions if relevant. More rarely, the Acceptance can accept the whole of the terms of the Offer, thereby concluding the contract between the seller and the purchaser in just two letters. This is why a purchaser must know that they can commit to a purchase when they instruct their Solicitor to submit an Offer. Missives are said to be concluded when all of the terms of the contract have been agreed. This is the point when the contract becomes legally binding on both parties and there will be penalties if either party tries to â&#x20AC;&#x2DC;back outâ&#x20AC;&#x2122; of the transaction. Exceptions to the general rule include purchases involving property developers as these generally issue an Offer to Sell on their terms so that all the purchasers on an estate are contracting on the same conditions. Dreaming of... ...a Skiing Holiday
At this time of year our minds turn to that wonderful winter pastime â&#x20AC;&#x201C; the skiing holiday. Europe has become closer and closer with dedicated flights from Scottish airports, mainly Edinburgh and Glasgow with some from Aberdeen. A good skiing holiday is a total change to your normal routines, but it is not a lazy option â&#x20AC;&#x201C; skiing or snowboarding use muscles that we don't otherwise use every day, and although exhilarating it can be hard work to ski all day every day for a week or a fortnight. It is a great advantage to be able to test your interest in skiing at a Scottish resort â&#x20AC;&#x201C; if you like it you can continue to use the local facilities at weekends but it is tempting to go to the greater snow fields of Europe, and then the ultimate treat is in North America and Canada. In Europe the popular countries are France, Switzerland and Austria. French resorts tend to be high such as Tignes (the highest in France) or Chamonix which is a small French industrial town surrounded by three clear skiing areas. Swiss resorts tend to be picturesque and Alpine-like, including Verbier and Zermatt â&#x20AC;&#x201C; Verbier is high with good skiing, and is a mecca for the British if that is what you want, whereas Zermatt has retained its charm as a Swiss-style resort. Austria, although not the highest resorts, offers the most charming and stylised such as Kitzbuhel and St Anton. The west coast of Canada has wonderful skiing in Banff, Lake Louise and Whistler, where the winter Olympics were held in 2010. Whistler offers so much choice there are even 2 mountains to choose from, both offering guides to show you round. The ski lifts are generally larger and wider than European ones, as are the pistes, and the mountain restaurants are enormous and modern, but very efficient. The ski police keep you on your toes. The final but very important consideration is the cost of your skiing holiday. The key components are your flights, your accommodation, your food and drink bills, your equipment hire (skis or snowboard and boots), and your lift passes, but these can range enormously in price and there are always some very good deals around. Switzerland is likely to feel the most expensive this season for the British due to the current very strong Swiss Franc.

DON’T GET THE WRONG IDEA! Men have many strange, un-scriptural ideas about what it takes to be forgiven and be at peace with God. WHO TOLD YOU THAT...all you have to do is live a good life and God will then accept you? Does God say that your best is good enough for you to be acceptable to Him? God’s viewpoint is “There is none righteous, no, not one.” Romans 3:10. Why is this true? God states, “For all have sinned, and come short of the glory of God.” Romans 3:23. God cannot accept you because you have already sinned. WHO TOLD YOU THAT... being a member of a church would get you into Heaven? To get into Heaven God must deal with your sin problem. Joining a church will not save you. You need forgiveness and cleansing so that God can associate with you. This change is a spiritual birth where God causes a brandnew spiritual nature to live in you. The Bible says, “Therefore if any man be in Christ, he is a new creature: old things are passed away; behold, all things are become new.” II Corinthians 5:17. To be forgiven and associate with God you need to be born again. “Except a man be born again, he cannot see the kingdom of God.” John 3:3.
WHO TOLD YOU THAT.... obeying God’s law will save you? It is too late. God’s Word states, “For whosoever shall keep the whole law, and yet offend in one point, he is guilty of all.” James 2: 10. Every one of us has broken at least one of God’s laws. WHO TOLD YOU THAT... loving every one has anything to do with being saved? This is commendable, however we are separated from God because of our sin nature. Even a sinful person can be loving, however he is stiIl sinful until God removes the stain in Christ.

ExTRaCTS FROM THE MiNuTES OF THE MEETiNG OF 9TH OF auGuST2011 OF THE CiTy & ROyaL BuRGH OF ELGiN COMMuNiTy COuNCiL Police Update–Officers Kyle MacKinnon and Kelly Green in attendance Speeding Vehicles - Officer MacKinnon advised during 2.5hrs speed checks in Elgin town centre, 3 drivers were reported for speeding and 9 were educated. During 11hrs checks on fast approach roads, 7 drivers were reported for speeding and 4 were educated. Drunk driving - During 1 hour of operation, no drunk drivers were detected, but 3 were detected out-with this operation. Collisions - One slight collision and no serious collisions to report. Shoplifting - Two habitual shoplifters have been sentenced to jail. Theft by housebreaking - had increased from its normally quite high incidence in Elgin, but detection rate is good. Planning - For information, the Chairman advised that a very large wind farm is proposed at Brownhill near Teindland and innes Community Council had been in touch seeking Elgin Community Council’s support in this matter. Ladyhill path - Bryan Watson advised that the deadline for input had passed and there were insufficient funds for the Community Council’s proposal, but suggested the matter should be looked at again in future. Kathleen Masson reported on her investigation into Fochabers flower baskets. a self-managed, self-funded team of 15, mostly retired, volunteers do the work as and when requested by the team leader. it was suggested this model is unlikely to work in Elgin unless the city was divided into smaller areas. a discussion on the possibility of a gardening club at the secondary schools was held. it was decided to try and assess level of interest at Elgin High School e.g. by including it in the daily bulletin and having a sign-up sheet. Roads & Transportation - Disabled parking bay - Murray Ross advised work has begun. Boroughbriggs Road - Murray Ross and Gordon Methven met with James Smith (Roads Dept.) to view the proposed plan to reduce double parking issue. The is considered to be favourable. Speed Signs at Duffus Road - Murray Ross reported these are now in the correct position. He has requested a speed check after 6 months. He advised that Kevin Smith (Roads Dept) has asked a contractor to deal with bushes blocking signs. Street sweeping – Murray Ross has spoken to
Grant Wilson (Env. Services) and advised that street sweeping should be carried out within 2448hrs of bin collections. Due to cuts, roads will be swept at driver’s discretion. Murray Ross will email a report to the Chairman to be included with the minutes. Litter at Elgin Academy – a detailed discussion was held on dealing with the litter problem. it was concluded any scheme is likely to be more effective if lead by the school and pupils &/or with a teacher acting as a driving force. Ways forward include engaging with the new Head Teacher at Elgin academy, who may have ideas of his own, and to taking photographic evidence of the severity of the problem and how far it can extend beyond the school. Pedestrian refuge (island) at Pansport stores – Donnie Mackay advised he has been asked to write to Moray Council requesting removal. Pinefield Football pitches – one of the two pitches unplayable due to re-turfing work begun immediately before the new season. it was agreed there was nothing to be gained by further action from ECC at this stage. -Lack of clarity at point of sale about fees lasting the lifetime of house ownership. Common misconception that Moray Council will take over and adopt the roads and lighting, as the estate has high levels of affordable housing. Could improved clarity be legally enforced in some way? Lack of clear communication from Screen autumn, no explanation of fee increases or itemisation of how fees spent -Screen autumn failing to carry out scheduled works -Difficulty of mobilising mixed tenancy groups to co-operate in removing management company Lack of clarity about whose responsibility it is to keep roads clear – builders or management company Responses included: unadvisable to be in situation with no management company Nonprivate tenants pay management fees through their rent so the approx. 40% affordable housing in Linkwood is not a reason for Moray Council to have to adopt roads and lighting The situation concerning responsibility for road cleaning is complex and is problematic in other schemes too Cllr Leadbitter responded positively to Gillian McKay’s idea that company management duties be built into planning permission Progress: Cllr Russell suggested bringing the dissatisfaction to Sandy adams’ (Chairman, Springfield Properties) notice in the first instance. She had invited all local, voluntary organisations to a meeting, from where a fair development committee was drawn. a community centre was used to host the fair, involving local schools, pre-schools, churches, and various interest groups in a Fun day. although hard work, it was felt to be a very effective networking tool and had increased interest in local voluntary groups. a lead-time of 6-7 months was recommended. To be progressed by emailing local voluntary groups to see if appetite for a fair. Northern Scot - Bryan Watson asked if it would be possible to have a dedicated spot to report ECC activities, rather than having them distributed on various pages. Chairman to speak to Mike Collins (Ed). AOCB -anne Glover advised she is investigating the possibility of a children’s/youth art project in Elgin city centre, involving schools and Moray College and using local people. She is meeting with aSDa regarding funding. it may be possible for ECC to fundraise for this. The Chairman proposed that the Community Council carries forward this idea. Murray Ross seconded. anne will produce a report on costings and design. Murray Ross advised that the Biblical Gardens lacked adequate numbers of picnic benches and had no recycling bins. The Recreation, Leisure and Environment Committee will write to Donnie McBean (Senior Horticultural Officer, Moray Council) asking for improvements. George P Littlejohn advised it would be useful to send a representative to the licensing forum. No volunteers.a discussion was held about food waste bins. Cllr Russell advised brown bin collection over Christmas and New year was yet to be reviewed. Moray Council will no longer buy back compost due to increased prices Cllr Leadbitter advised Dept. of Culture, Media & Sport had announced Elgin was on the list of 65 towns for local TV broadcasting. In early September I was delighted to welcome my Scottish Government Cabinet colleagues to elgin, where we held the 4th of our summer cabinets that take us around Scotland. It was, of course, a further opportunity to recognise the community effort to retain raF lossiemouth and challenges facing the community around Kinloss as they go through a transitional period, however it was also a chance to see many of the sports available in moray being demonstrated in the Cooper park.
recently I was delighted to be asked to visit the Highland Gliding Club, who are based at an airfield south of elgin. the occasion was the official opening of their new hanger - built to collapsed under the wait of snow replace one that had over 18 months ago, causing major damage to the gliders inside at the time.
two things struck me, firstly the fact that the impact of that severe weather can, in many cases, take a considerable amount of time and there will be people elsewhere in moray and in the North who are still in the of recovering from that. Secondly - the hanger process is something of a phoenix from the ashes. the necessity of coming together in adversity has, I have a believe, made the club stronger. they now better facility than before and are looking to the future.
It was also wonderful to get a birds eye view of moray in one of the gliders and I would recommend it for anyone thinking of trying something new!
Sports activity was a key theme for the visit and it was to see coaches, young people and adults all demonstrating their skills in some of the less wellknown sports as well as those we would all recognise. a big thank you to everyone who came out to show off their skills, ask the questions in the town Hall and take time out of their day to talk to us. It was very productive and I personally got a great deal out of the day, as I know the rest of the cabinet did as well.

nature The Red Deer rut With the summer migrants having left for warmer climes and the Calling Stag winter migrants just starting to arrive, October is a bit of a watershed month for the keen wildlife watcher. However, it also brings one of the most dramatic events in the wildlife calendar, the red deer (Cervus elaphus) rut. From late September, the hills and glens resound to the calls of roaring stags, a sound I have heard described as “a cross between a chainsaw and a burp!” The calls are an attempt by the stags to establish their superiority over other stags, claiming the right to mate with a group of hinds.
Look out also for the stags apparently digging the vegetation by tossing their head, lifting heather and bracken as they do. They are actually spraying themselves to give a distinctive scent, to attract the Red Deer fawn hinds. Not quite old spice but it seems to work for the hinds! After mating, the hinds go through an eight month gestation period with the young born in June the following year, when they are left hidden in long vegetation for the first few weeks, safe from predators such as golden eagle.

Often, the roaring alone is not enough to ward off rivals and a challenger will try to penetrate the group to mate with the hinds himself. This challenge is usually met by simply chasing off the would be usurper, however occasionally when two stags are very evenly matched a spectacular clash of antlers can occur, with both stags determinedly fighting for the right to spread their genes. These clashes are usually short lived with no real damage done. However, very occasionally they may end in serious injury or even death.
The stags shed their antlers in April, with a full new set re-growing by the end of August, ready for the rut. In the wilds, the antlers rarely grow beyond 16 points (tines) whilst in captivity or where they have easy access to good grazing they can grow much larger. Stags will often eat the shed antlers, providing their bodies with much needed resources for the regrowth of new antlers. Whilst a stags cannot be accurately aged by it's points, generally the more points, the older the animal. A 12 point stag is a Royal, 14 an Imperial and a 16 pointer is a Monarch. Great places to see the rut around Inverness include Glen Affric, Glen Cannich and Strathconon.
