Cycling In Moray -
®
SpotLight Local Interest
A Personal View
As a cyclist for at least 30 years, I have cycled along most roads and cycle paths in the North East. Finding my way around was not a difficult thing to do as I would pick up an ordinance survey map, pick a road or track and off I went. By doing this I discovered many fabulous cycle paths and tracks. In some cases an animal track in the woods would be a great way of getting about. Most paths and tracks nowadays are looked after by the Forestry Commission, they are well maintained and offer real fun for all cycling abilities. Here are just a few tracks I have come across. Whiteash Trails, Fochabers - The Fochabers Ring. A difficult varied cross country trail you’ll want to ride again and again. A difficult climb to the monument, then the fun starts. To complete this ride is a good outing at 8km. Ordiequish Trails start at the car park. An easier ride for the less adventurous, a wee bit for everyone. The Soup Dragon This is great fun, a friendly route that can be enjoyed by everyone. The only catch is the climb, but well worth it, I promise. A good 5 km round trip. The Haggis This is a long trek which leads in the direction of Ben Aigan, full of interest but could take most of the day. Not too difficult, I would personally recommend this for a great day out. Gordzilla Not the monster it sounds… a great flowing route which could be done at speed or at a more peaceful pace. Not a long ride at 1hr but could be liked to other paths like the ‘Haggis’. The Gully Monster As the name suggests an awesome trail of monster proportions! Not many have ridden one like it. More for the technically minded and a great ride. Quarrelwood, west side of Elgin A great place to learn the skills of off road cycling and for the family to enjoy the surrounding beauty of this woodland area. A popular place for walkers, so watch how you go and follow the code. Ben Aigan Trails A95 Ben Aigan Car Park - this has 3 tracks all very different. The Ben Aigan Hammer A ride round the summit of Ben Aigan it has some of the most beautiful views of the Spey Valley. page 4 - April 2010
Lots of bumps and wooden walking sections but well worth the travel to the start. The Mast Blast Not for the faint hearted, this trail is very fast, downhill with rocks and jumps. Once you hit the forest road remember to follow the marker and take the right turn. This is a single track which takes you right back to the car park. The Pink Fluffy Bunny For the more experienced, not the cuddly trek the name would suggest. Fast, free, furious and downhill. More a Hare than a Rabbit I think!! Best of the bunch, but be careful. Sanquhar Woodlands, Forres This is a Forres Community Woodland Trust facility. A designated mountain bike trail within the Sanquhar woodland. A three colour grading: moderate; difficult; jumps. This means that all levels of ability can enjoy this beautiful trail. A total of 1.1km, but packed full of fun. Culbin Forest, Nairn Heavy-duty mountain bikes aren’t necessary here. This is fairly level terrain with a mixture of long, straight tracks where you can pick up speed, and winding paths among dunes covered in pine trees where you can just enjoy a leisurely cycle. There aren’t any specific bike trails so you can make up your own route within the forest. And it’s easy to find your way around, with numbered junction markers and a helpful free map available. If you want to cycle to Culbin, National Cycle Route 1 runs through the south side of the forest, around 800 metres from the Wellhill Car Park. These are but a few of the wonderful treks, tracks and paths you can travel within the Moray Coastal area. For people who prefer harder surfaces, there are many roads that branch from the A96 that can take you along quiet country roads enabling you to see a lot of what you would miss if you travelled by car or train from Inverness to Aberdeen. In this age of 50’’ TVs and computer games I recommend that you get out there and see your beautiful Moray Coast and get fit at the same time. If further information is required, log on to the Internet and see what’s available in your area, or pop in to your local cycle shop for advice on all aspects of cycling. Happy Cycling! The Subtle Face of Discrimination. According to a recent BBC News website article “Children's Secretary Ed Balls has denied plans for compulsory sex education in England's schools have been watered down. But an amendment to a government bill gives faith schools more freedom to tailor teaching to their own beliefs.” The issue seems to have prompted a clash between the differing secular and religious beliefs with regard to human sexual practice. Secularists are concerned that the amendment permits teaching religious convictions that will result in prejudice and discrimination. It is important to note that we are talking here about religious belief and practice that doesn’t violate the law. On a recent BBC interview one prominent critic of the amendment contended that secular teaching on sex education is “accurate and balanced”. In contrast, he insinuated that this was not the case with religious teaching on the subject. His criticism was challenged by a supporter of the amendment. She proposed that governmental control on this sensitive
subject should not be prescriptive; that parents should be free to choose to have their children educated in way consistent with their personal beliefs. I suggest that one issue in operation here is confusion, from the secular point of view, regarding the legitimacy of religious belief compared with secular. From a faith point of view secular belief has no more moral or ethical authority than religious. I’m not sure that this is how secularists perceive things. There seems to be an assumption from secularists that their morality is more legitimate than religious moral reasoning and belief; and indeed that religious belief breeds prejudice. I cannot comment upon other faith groups concerning this issue, but I can speak for orthodox Christianity. I’ll grant that history provides ample evidence of prejudice and persecution in the name of the Christian faith. This is to be lamented. However, historically, secular ideology itself is not free from fostering and promoting prejudice and discrimination. It often seems to me that, unwittingly, prejudice and discrimination are to be found in those who claim to be

Pastoral letter and Church Meetings challenging it in others. I can understand the concerns of the opponents of this amendment. It is highly concerning and, indeed, bigoted, when the one ideology is indiscriminately promoted over all competing views. However, this is as true for secular beliefs as it is for religious beliefs. Jesus Christ taught his followers to: love your neighbour as yourself, love your enemies, not judge others and treat others as you would have them treat you. Likewise, the Bible teaches that the authentic Christian life is to be characterised by love, joy, peace, patience, kindness, goodness, gentleness, faithfulness, and self control. True, this still leaves room for holding different opinions and beliefs. Indeed, in any difference of opinion, tolerance doesn’t necessarily mean approval of the opposing position(s). However, I propose that Christ’s teaching leaves no room for the kind of prejudice and discrimination that some seem to be concerned about. Cllr Bell was also to look into cycle scheme particularly arrangement between Moray Council and Halfords in Elgin for the provision of cycles. This was not suitable for Forres. Moray Council could have looked into this further by not selecting one outlet only. No input after two and a half months. • 20 MPH speed limits - Cllr Ferris advised this will require to be taken further as no one has returned his calls or emails. Leys Road is an area under discussion. If community not interested he will facilitate if required and has suggested a mail drop to each house in that area. Public can contact Cllr Ferris. • Update on future use of Tolbooth - Cllr Mackenzie. All present referred to meeting at St Leonard’s Hall the previous Monday. Cllr Bell sent an email re the costs incurred with respect to the Tolbooth. Passed to Alastair Campbell however the costs given were questionable. Cllr Mackenzie would be investigating funding for the Tolbooth similar to those sourced for the Merkat Cross. • Cllr Hellyer asked by Cliff Piper on behalf of personal interest in subject re Public Consultation by Moray Council with respect to financial cuts and in particular ‘At Risk’ pupils which was one of the proposals. This has gone as far as notices to teachers involved in ‘At Risk Pupils’ with redundancy. This decision could have long term problems for future causing disruption for pupils if teachers unavailable. Cllr Young advised it would have been useful if Cliff Piper had notified him of this as he did not have the
details. Cllr Hellyer expressed concern that recommendation for Moray Council to consider giving Simpler the opportunity to assess finance as opposed to the report given by Serco, Simpler were prepared, at no cost, to meet with Moray Council but there has been no uptake to this suggestion. Simpler came highly recommended having carried out work at RAF Kinloss. Although put forward as a concern at the Consultation meeting the matter was never put on the Moray Council website. Cllr Ogilvie said that it was passed on. • Various complaints from lack of grit bins to lack of gritting pavements and roads. It was stated that if gritters had come out when bad weather began it would have been beneficial. Secretary’s Report • Secretary welcomed Cllr Young back after illness. • Secretary advised that Cllr Hayward would stand in as acting Secretary during his absence from Community Council. • Letter received from Grant and Geoghegan, consultants re planning application for housing at site R3 Forres (Ferrylea). They have advised there will be an exhibition in Forres sometime between February and October 2010 when plans and information will be available for comment. • Letter received from Mr Wilson of Mackenzie & Cruickshank regarding proposals for flood relief scheme at River Findhorn, Forres. External Groups Report • Castle Inn, Caroline Street Forres - Cllr Bell has advised Cllr Hayward that Mr Forbes will be attending the February Community Council meeting to discuss
OTHER COMMUNITY COUNCIL CONTACTS Dyke Landward Community Council: meets third Wednesday of each month (excluding August and December) 7pm at Dyke Village Hall. Contact: Karen Hamilton (Secretary) on 641236. page 10 - April 2010
this issue. • Cllr Hayward advised of difficulties with Planning Department when she requested copy plan of the Lochyhill site however this was eventually delivered in time for CC meeting on 21 January. Noted three access points to the site. It was noted that Phase 1 would be fundamentally dependent upon a roundabout access from A96. • Cllr Duncan advised Mt Dora meeting would be held on Monday 25 January 2010. Treasurer’s Report • Balance to end of December 2009 : £37.65 • Received letter with cheque for £355.17 to assist with running costs from December 2009 to March 2010. By calculation this falls short over a twelve months period. If complaint made it could result in payment being made on a monthly basis. Cllr Ogilvie would question why this is now six monthly and why this has changed. A.O.C.B • Cllr Hamilton has not seen fit to attend the Forres Community Council. Reason for non-attendance given as the Tolbooth not being disabled friendly. CC were advised by Cllrs Young and Ogilvie that they divided up the ward between the four councillors. They suggested we write to Cllr Hamilton to ask why he has never attended any of our meetings. • The Moray Council Sports Coaching programme discussed particularly what was available in Moray for 3-16 year olds. Forres fell short on the programme and what programmes were allocated overlapped at same times. Date of Next Meeting Thursday February 18th at 7.30pm
Findhorn & Kinloss Community Council: meets last Thursday of every month (excluding July and December) 7.30pm at alternate venues. Contact: Mr Tim Negus (Secretary) on 691823. SpotLight - Forres and District

Donnie Darko’s favourite!
Rabbit Spring Rolls
®
SpotLight Chef’s Confidential
Donnie Darko came to dinner and subsequently we cooked him a great spring time recipe! Rabbit is a very lean meat with virtually no fat on it and has a very delicate flavour. Get your local butcher to bone the rabbit and cube the meat, which will make it much easier for you to use. Anyone wondering who Donnie Darko is, he’s the teenage boy from the film of the same name who is ‘guided’ by Frank, a demonic time travelling rabbit!
For the spring rolls 450g rabbit - 1 cm cubed - this can be replaced with chicken 50g bean sprouts 5cm piece fresh root ginger cut into matchsticks 1 tbsp chopped fresh coriander, stems only 1 red chilli, finely chopped 1 egg 12 sheets spring roll wrappers or filo pastry Vegetable oil, for deep frying For the dressing 150g sugar 200ml rice vinegar 150 ml light soy sauce 2 limes, juice only Pinch star anise powder - optional 1 clove garlic For the salad ½ red cabbage, finely shredded 1 apple peeled and grated 2 red onions finely sliced For the spring rolls Mix together all of the spring roll ingredients, except for the wrappers and egg, until well combined. Lay a spring roll wrapper on the work surface and spoon some of the filling into the centre. Draw in the page 18 - April 2010
sides of the wrapper, then roll upwards, sealing the ends with the beaten egg. Repeat with the remaining spring roll wrappers and filling, until you have 12 spring rolls. Half fill a deep, heavy-based pan with vegetable oil and heat to 180°c. Deep-fry the spring rolls in small batches for 6-8 minutes, or until golden-brown and crisp. Remove with a slotted spoon and drain on kitchen paper. For the dressing Bring the sugar and vinegar to the boil in a pan, then simmer for 5-6 minutes, or until thickened and syrupy. Take off the heat and add the remaining ingredients. Set aside to cool. For the salad Toss all of the salad ingredients together, then drizzle over the dressing and mix well to coat evenly. To serve, pile the salad onto serving plates and place the spring rolls on top. Garnish with coriander leaves and lime wedges.
