ST JOHN’S - A LOCAL GEM
SAILING HISTORY
St John the Evangelist Church, Forres, part of the Scottish Episcopal Church, was founded in 1840 and is a focal point for the community, being used for concerts and rehearsals by the choir, as well as for worship and church services. The Hall behind the church is used by a Playgroup? Nursery, the Townswomens’ Guild, the Youth Services like the Guides and brownies and Alcoholics Anonymous.
The Moray Gig is a charitable venture run by volunteers primarily concerned with providing sail training opportunities for young people from all walks of life, 12 years and older; adult groups, too, also enjoy the varied and challenging programmes on offer. In June 2000, after years of fundraising, form filling and numerous regulatory hoops to go through, Bien Trouvé a replica 18th century Admiral's gig which, unusually, utilises both sails and oars was launched at Findhorn for her first season. She was built in the village by local boatbuilders Martin Cruden and Robert Angus. She is the only boat of her type in Scotland and is based at Findhorn. Ten years down the line the Moray Gig has gone from strength to strength with many Moray schools and youth groups having used Bien Trouvé as a means of instilling self-confidence and teamwork. Clients of other organisations, such as Moray New Futures and the Criminal Justice Services, have also been involved in the experience of crewing her. The summer season began on Sunday 18th April. The Moray Gig is affiliated to Atlantic Challenge International, an organisation that trains young people from some 12 nations in the skills of seamanship using replica gigs in order to maintain the knowledge of small boat handling and usage, which has declined since the days of sail. Based on the teaching of Kurt Hahn (founder of Gordonstoun School), development of teamwork and leadership as well as fostering
The Church building itself is Italianate in style and is Grade A Listed. During the last eight years the Vestry has spent more than £100,000 from reserves, on renovation and repairs, with considerable aid from Historic Scotland and the Heritage Lottery Fund. These works include the complete re-harling of the exterior, while inside the Church has been rewired with new lighting and central heating and completely redecorated. It is now regarded as one of the most beautiful and best-kept churches in Scotland. There is however one major item of work still to be undertaken, which is the cleaning and restoration of the Murals, two of which are by William Brassey Hole (1846 – 1917) and a third by Archibald Haswell-Miller, which was completed in 1936, to an original design by William Hole. The ‘String Course’ is another notable ‘Hole’ feature, containing texts from St John’s Gospel and the Revelation, this was restored, with the lettering in gold leaf, when the redecoration took place. Part of the repair and renovation costs above were covered by a loan and the purpose of the St John’s Summer Fete are to meet the cost of restoring the Murals and paying off the loan. We are hoping for a fine day on Saturday 26th June, at least from/ when all the usual attractions, of stalls, sideshows and Arena events of a Summer Fete, will be there in Grant Park, Forres. There are still vacancies for Craft Stall exhibitors who should contact M r s E l l a D a y k i n o n 0 1 3 4 3 8 5 0 3 9 7 if interested. page 4 - June 2010
national and international friendship, regardless of background and experience, is central to Atlantic Challenge's ethos. Every two years Atlantic Challenge holds an international contest of seamanship. In July ten young people from Moray, all regular crew members of Bien Trouvé, will be flying out to Midland, Ontario as part of the team representing Great Britain. They are currently involved in fundraising to meet the costs of this trip.

“Iʼm going to die! Jesus, Allah, Buddha - I love you all!”
O n l y O n e Wa y ? We live in interesting times. Today our culture and thinking is dominated by tolerance and diversity. As such when us Christians harp on about Jesus being the only Saviour it can make us sound kind of … well … erm … intolerant! Worse still when we state that he is unique and superior to any other ‘saviour’ - that is just too narrow minded by far! Indeed the Buddha taught that there are eighty-four thousand paths to enlightenment. Surely we can all find our own way to God? Personally I don’t really understand how eighty-four thousand paths all heading in different directions, can all lead to the same destination. And yet, the opinion that Jesus is just one path among many that leads to God, is a very popular spiritual concept, and not just with Homer Simpson! John Lennon:“I believe that what Jesus & Mohammad & Buddha and all the rest said was right. It’s just that the translations have gone wrong.”

Mahatma Gandhi: “All paths leading to God are equally good.” Oprah Winfrey: “One of the biggest mistakes humans make is to believe that there is only one way. Actually, there are many diverse paths leading to what you call God.” Do just humour me for a few moments as you continue to read and think about this. Are we really to believe that the atheist road (which says there is no God), the agnostic road (which is unsure if there is a God), and the Hindu road (which says there are millions of gods) all lead to the same place? What about the road that says there is no life after death, or the road that says you reincarnate? Do these roads lead to the same place as the Christian road, which says you stand before Jesus for judgment and sentencing to eternal heaven or hell? Are we truly to believe that the road that says we save ourselves leads to the same place as the road that says only Jesus can save us? The exclusivity and superiority of

Jesus is exactly the teaching of scripture. This foundational truth, that Jesus is the only Saviour, has been proclaimed by the Christians for 2,000 years. By the time you read this the church will have just celebrated Pentecost. It is a time when we Christians remember that God the Holy Spirit was gifted to us. Having just been filled and led by Him, the Apostle Peter boldly proclaimed “there is salvation in no one else, for there is no other name under heaven given among men by which we must be saved.” But even this claim wasn’t something he’d made up - he was simply echoing Jesus himself who clearly said: “I am the way, and the truth, and the life. No one comes to the Father except through me.” I am so grateful to God for the assurance and hope that springs from this truth. I’d hate to be like Homer, hedging my bets with my final breath, unsure and uncertain. What about you? Jon Teasdale, Leader The Lighthouse Church, Forres

Huntly Peregrine Wildwatch The Forestry Commission award winning Huntly Peregrine Wildwatch Centre (HPWW) gives a wonderful opportunity to view one of our iconic and spectacular birds of prey close up and in their natural habitat. The site is an old quarry and is the result of a volcanic magma chamber and is an Site of Special Scientific Interest (SSSI) in its own right. Scottish Natural Heritage are now designing interpretation highlighting the geology of the quarry. The centre has been open every season since 2002 and has grown in stature every year, regularly being mentioned in local and national press and also appearances on national TV. It has won several prestigious awards for tourism and customer care, including the highly acclaimed Scottish Thistle Award twice and the Northern Lights award. The centre is open daily from March to September, with all ability access and toilets. The interpretative centre and hide are staffed by knowledgeable and friendly Forestry Commission wardens and volunteers, ensuring the visitors始 experience is a memorable one.
We have excellent CCTV coverage giving close up viewing of the nest site, peregrines, quarry and all its inhabitants. The fantastic viewing facilities within the quarry offer the visitor a rare insight into our wonderful NorthEast wildlife. Binoculars and telescopes are provided for visitors to use. stations at the visitor centre and our top hide give visitors the opportunity to observe up close the red squirrels as well as a huge array of woodland birds, all literally inches away from the viewing windows. The birds have also done well over the years. Sixteen young peregrines (eyasses) have successfully fledged over the past 7 years and of these eyasses, fifteen have been rung.
HPWW has so much to offer and not just for the serious bird watcher, it provides a great destination for a family outing and even a new experience for those not having had the opportunity or knowledge to enjoy our wonderful countryside. We would love to hear from all school and non school groups wishing to visit the centre and discover what we can offer. Please contact us so we can tailor your visit. We also have a number of places for junior volunteer wardens aged 12-16, which has been a very successful venture with many young people returning year on year. We are always looking to encourage and involve more volunteers, both the young, and the young at heart. If interested please visit our website at www.forestry.gov.uk/huntlyperegrines A series of events are run throughout the season and information on these can be found at our website, through the Forestry Commission events leaflet or by contacting the Peregrine Centre on 01466 760790 (between March and September). www.forestry.gov.uk/scotland

EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF THURSDAY 18TH MARCH 2010 OF FORRES COMMUNITY COUNCIL
Public Session • Mr Peter Wilson of Mackenzie & Cruickshank returned to update the members of the response of Moray Council, the Flood Relief Team and elected members of the Council. He asked for further support of the CC as a further month of efforts to start a dialogue with the authorities had failed to achieve anything. Basically he said that he was told the compensation to him would not leave him out of pocket but failed to take into account the losses to his employees, either in wages or jobs. He felt that his employees deserved a better response from their Local Authority than that. He asked if the Community Council would press the CEO of Moray Council to place more authority behind his instructions to investigate all options. • Mr Andy Jamieson, the Anti-Social Behaviour Co-ordinator for Moray Council addressed the meeting on his role and the initiatives as part of the Safer Communities Theme Group. This involved cooperation between Police, Fire, NHS and Moray Council and covered Violence reduction (not great In Moray), Fire & Home Safety, Road Safety ( mainly under 25’s) and ASBO’s, for dog fouling & litter. He complimented Forres on their Community Warden & the way she had involved the community in initiatives to look after the town & expressed a desire to have six copies of her for use throughout Moray. He said ideas she had initiated in Forres were being exported throughout Moray. Mr Jamieson said that a number of warning stages had to be passed through before the issuing of an ASBO which meant that response was not instantaneous. Cllr Smith said that he realised that and that it had taken 5 years to remove a noisy neighbour’s stereo. Cllr Kennedy said that whilst youngsters were
good about cycling safety in general their parents need educating about helmets and lights. Youth Representative Ross Kennedy said that initiatives about litter could only work if there was a sufficiency of bins but Constable Skivington said that it was possible to carry personal rubbish a few extra yards to the next available bin. Cllr Pitstra said that as a responsible dog owner she felt that more dog litter bins should be available as already bagged dog litter looked untidy hanging in hedges & on trees and bushes. Cllr McDowell told Constable Skivington he felt the public were concerned by the poor response to reports of vandalism. This he was told was a call centre problem and calls were being evaluated though Mr Jamieson said that Moray was luckier than most places. Secretary’s Report • The Secretary told members that our Constitution had been returned, unratified, by Moray Council & that he would take a further look at it to satisfy the objections. • He drew members attention to a planning application, submitted by a Moray Council Officer, converting a common good car park into a street market site. Members instructed the Secretary to object to the application on the grounds that it was too close to a major road. • Moray Council notify us of a legal requirement of 28 days, up from 7 for public processions. Chair’s Report • The Chair informed members that as of the 1st of April 2010 Public Liability Insurance for Moray Community Councils was being provided by Highland Council. This was in order to gain reduction of costs by economy of scale in increasing the number of Community Councils covered by the policy.
OTHER COMMUNITY COUNCIL CONTACTS Dyke Landward Community Council: meets third Wednesday of each month (excluding August and December) 7pm at Dyke Village Hall. Contact: Karen Hamilton (Secretary) on 641236. page 10 - June 2010
• The Chair briefed members on the presentation given to the Forres Area Forum on the Community Support Unit and their activity plan for 2010 – 2011. Members were concerned about the inclusion of Community Councils in the plan when no effort had been made to consult with us over the need for such a unit. It was also noticed that there was an intention to amalgamate funding of the Community Councils and Area Forums and members objected strongly to this. Cllr Kennedy pointed out that this had been raised at an e-planning seminar he had attended in Llanbryde and he had made known that whilst Community Councils were elected bodies, with a statutory role, none of the other participating groups, area forums, village hall committees and community associations were elected. Members also remarked on the JCC being used to represent all the Community Councils when in fact the JCC constitution prevented them acting in such a role without prior authority from the individual Community Councils. Members instructed the Secretary to write to the Moray Council and inform them that the Forres Community Council had no wish to be included in the plans of the CSU, and to minute the fact that the Community Council had not been consulted over the CSU & its plans, prior to the unit’s creation. A.O.C.B. • At the last JCC meeting the Chair of the JCC had offered support re our letter sent to Audit Scotland in September 2009. No response has been received by JCC from letters to our MSP or Audit Scotland. Cllr Hellyer said that the pressure would be maintained until a response was received. Date of Next Meeting • Thursday 15th April 2010 at 7 30 pm
Findhorn & Kinloss Community Council: meets last Thursday of every month (excluding July and December) 7.30pm at alternate venues. Contact: Mr Tim Negus (Secretary) on 691823.

The Moray Carers Project
SpotLight Local Interest
Helping people to help others The Moray Carers Project in Elgin has recently been awarded funding from the Long Term Conditions Alliance Scotland to create our innovative new Digital Story Project. Digital Stories are short documentary films about unpaid Carers that will aid communication and awareness in communities by showing the vital role Carers play in society. The Digital Story Maker will work with Carers to make creative films about their experiences, concerns and contributions to society. We are hoping this project will create a new link between Carers and the community. The finished films will be used in a number of ways and the Carers involved will have full control over who gets to see their film. Some will want to keep theirs for personal reflection; some will take part solely for the therapeutic benefits of being involved with the process; others will be happy for their film to be seen by others. These latter films will form the basis for a library service at the Moray Carers Project, as well as being used in screenings in various Moray communities, to raise awareness. We will also be posting some of the films on our website: www.moraycarers.co.uk/digitalstories.htm . The Digital Story Project is the newest edition to the services provided by the Moray Carers Project. We work with Carers of all ages throughout Moray to ensure they are recognised, valued and supported to manage the impact of caring on their lives. The Moray Carers Project describes a Carer as ‘someone who, without payment, provides help and support to a partner, child, relative, friend or neighbour, who could not manage without their help. This could be due to age, physical or mental illness, addiction or disability.’ An important part of our work is the ‘Will You Care’ initiative. This initiative is funded by the Big Lottery and aims to raise the profile of unpaid Carers in Moray and contribute to the range of services available to them. We deliver specialist training for Carers and focus on long-term conditions, e.g. stroke, diabetes, heart disease,
page 12 - June 2010
dementia, and many other conditions. We also work with GP practices and hospitals in Moray to ensure that Carers, as well as patients, are being identified effectively and supported appropriately. We liaise closely with NHS professionals who contribute their different areas of expertise to the courses we deliver. One of our key aims is to reach out to the many ‘hidden Carers’ in Moray and assist them in accessing the help and support they may need to manage their role. To achieve this, we work with pharmacies throughout Moray. When a Carer makes contact we provide an initial listening ear, explain more about our services and then ‘signpost’ people in the right direction for any additional support. The Moray Carers Project also offers a free, confidential counselling service. We offer services for Carers of all ages, including Young Carers. Our Education Support Workers work with Young Carers primarily through primary and secondary schools, but also in colleges. Some of the services provided by the Young Carers team are: supporting Young Carers to raise issues with school, Social work, school nurses and other support systems; highlight issues that Young Carers may have with Guidance staff e.g. bullying, homework problems, etc; providing a listening ear to Young Carers, pupils and school staff; raise awareness of Young Carers through delivery of PSE lessons to year one pupils. As well as all of this we organise great activities for Young Carers to take part in. So, as an addition to these services, Digital Stories hopes to bring a new dimension to the way in which the Moray Carers Project, and care organisations in general, can provide help to Carers. We are now asking Carers to get in contact to discuss the possibilities of making films. We are also keen to hear from members of Moray communities to discuss the possibilities for future screenings to help raise awareness. Moray Carers Project is based at 227 High Street Elgin (IV30 1DJ) and people with caring responsibilities (friends, children, parents neighbours, colleagues) can drop in or make an appointment by phoning 01343 540990, or emailing info@moraycarers.co.uk. Information about our services can also be accessed via our website at www.moraycarers.co.uk. If you want to get in contact with the Digital Story Project then phone and ask for Will, or email: will.burgess@moraycarers.co.uk.

Open Farm Sunday
SpotLight Local Interest
13 June 2010
On Sunday 13 June 2010, East Grange Farm near Kinloss and Bogton Farm, Portsoy Banff will be opening their gates to the public for Open Farm Sunday 2010. The day offers visitors a great day out, and an opportunity to meet the farmers who grow their food and care for the countryside. G When: Sunday 13 June G Where: East Grange Farm, Kinloss , IV36 2UD. (Follow signs to The Loft Bistro & Venue) G Opening Time 10am until 4pm Or Bogton Farm, Portsoy Banff, AB45 2SP G Opening Time: From 12noon until 4pm
!
Grigor Butler from East Grange Farm is inviting everyone to come and see what happens beyond the farm gate. Grigor said: “This is the general public’s chance to come and see how a modern farm efficiently produces food and interacts with nature to the benefit of both. Come and see the Pet lambs in the yard and the not so friendly ones out in the fields. There are farm nature walks. Maps will be available showing where to go and what to look for. Pick up a nature seeker leaflet and see if you can spot our varied wildlife, from Skylarks to Buzzards and stoats and weasels to Foxes. Go “Tree spotting”! Can you find at least ten different varieties of tree? There will be two guided walks to see the diversity of wildlife on the ground and in our streams and ponds. The first will be at 10.30, so don’t be late! It is recommended that appropriate outdoor clothing, walking boots or wellies (recommended, especially if you want to guddle in the burn for bugs and beasties!)are worn.
Other attractions on the day are Quad bike taster sessions for kids, indoor laser tag fun, Jazz in the Bistro and more... Old Cullen Farms, a part of Seafield Estate are inviting visitors to Bogton Farm at Portsoy to see how a large estate is run. If you want to see large farm machinery, essential for a modern agriculture, this is the place to go. There will also be demonstration stands showing how the barley in our fields turns into Scotland’s biggest export, Whisky, a forestry exhibition and composting on a large scale at Gray's Composting Services, Ley Farm Fordyce. Caroline Drummond, Chief Executive of LEAF (Linking Environment And Farming), organiser of Open Farm Sunday said: “This is a day out with a real difference! Whatever you do at an Open Farm Sunday event on Sunday 13 June, it is a great chance to take in some stunning scenery and enjoy the country air. You will really get to know how your food is produced and maybe even taste some, all whilst finding out how the countryside around you is cared for”. This will be the fifth Open Farm Sunday and over 450 farms across the country are expected to open. For up-to-date campaign information and to let us know about your time on the farm, follow us on Twitter - twitter.com/openfarmsunday.

Nairn Community and Arts Centre
SpotLight Local Interest
reflecting a cultural partnership The face of Community Centres in the Highlands is changing. Nairn is leading the way in promoting Arts and Culture in addition to the more traditional Community Centre Activities. This bright, modern adaptable building with excellent Arts Facilities has become a vital part of the Community. Now in its third year of operation the centre offers a wide variety of activities and events for all ages. The unique aspect of The Centre is its adaptability. The large comfortable Theatre which can seat up to 300 has catered for local events such as Fashion shows, Cookery Demonstrations and even weddings! and has also hosted Scottish Opera, The National Theatre for Scotland and Traditional stars “Phil and Ally”.
together and sharing in this ideas adaptable architectural designed building”. Evidence of these successful partnerships can be seen this June when Nairn Book & Arts Festival host their annual celebration of literature, drama, art and film at the Community Centre. Partnerships have been formed with many of the groups already using the Centre including Cinema Nairn, who are putting on three films, two concerts promoted by Music Nairn, and “Fun with Gaelic” by Feis Inbhir Narainn The Centre also offers Art Exhibition space, and during the Festival, last year’s Open winner, Ruth Nicol, who also won the Student Prize, will be holding a solo exhibition based on road journeys in the North of Scotland. The popular, 4Square, selling exhibition painted by Highland artists will make a welcome return to the Centre. The Nairn Camera Club, who meet at the Centre on a weekly basis are also working with the Festival and will exhibit the winning entries of their Photographic competition throughout the week. The Festival is an excellent chance for local people to come along to the various events which are not normally available in the area, at a reasonable cost. All aspects of the Community are catered for in The Centre. Excellent meeting facilities are also available to hire, which ensures that the building is always busy, with both Community and Business Groups.
It is home to Music Nairn, Ramage International Jazz Festival, Feis Inbhir Narainn and the Nairn Book & Arts Festival. Renaming the Centre “Nairn Community and Arts Centre” will reflect this cultural partnership Jim Clark, Chairman said “It has always been the board’s vision to see community groups and the arts working page 22 - June 2010

SpotLight Chef’s Confidential
Tarte Tatin
Tradition says that the Tarte Tatin was first created by accident at the Hotel Tatin in Lamotte-Beuvron, France in 1898. The hotel was run by two sisters, Stéphanie and Caroline Tatin. There are conflicting stories concerning the tart's origin, but the predominant one is that Stéphanie Tatin, who did most of the cooking, was overworked one day. She started to make a traditional apple pie but left the apples cooking in butter and sugar for too long. Smelling the burning, she tried to rescue the dish by putting the pastry base on top of the pan of apples, quickly finishing the cooking by putting the whole pan in the oven. After turning out the upside down tart, she was surprised to find how much the hotel guests appreciated the dessert. I n g r ed i e n t s 150g/5oz unsalted butter 1 fresh vanilla pod 200g/7oz caster sugar 8 apples 300g/10½oz puff pastry 1 medium egg, yolk only, plus 5ml double cream - to make egg wash 150ml/5fl oz crème fraîche to serve F or t he b u tt er sc ot ch sa u ce 150g/5oz caster sugar 150g/5oz unsalted butter 150g/5oz golden syrup 70g/3oz whipping cream
Cook on a baking sheet on top of the stove until the apples have started to caramelise. You may need to change this tray a few times during the cooking process but it saves the oven top. Always take great care when dealing with hot liquids and under no circumstances leave it alone. Roll out the puff pastry evenly to about 2mm thick on a floured surface and prick with a fork. Place on top of the apples and cut the excess pastry away. Egg wash and then bake in the oven at 200C/400F/Gas 6 until the pastry is golden brown, about 15 minutes. Meanwhile make the butterscotch sauce. Place the sugar, butter and golden syrup in a stainless steel pan and boil until the sauce is a dark caramel colour. Add the whipping cream to the hot caramel and stir until mixed thoroughly.
Cut the unsalted butter into thin slices and mould the butter slices (using well washed hands) into a nonstick frying pan with high sides. Split the vanilla pod and mix the vanilla seeds by hand with the sugar. Tip the vanilla sugar onto the butter and shake the pan until the sugar is evenly dispersed.
Press the tart with a plate that fits the inside of the pan and drain any excess liquid. Leave to rest for 20 minutes. Then turn the tarte tatin out onto a plate and serve immediately. Pour the caramel sauce around and offer the crème fraîche separately.
Peel and core the apples and cut in half through the core. Pick out any pips. Arrange the apples skin side down. Pack the apples in as tightly as possible.
