Go Wild on Mussels in the Moray Firth

The Common Mussel (Mytilus Edulis) is found in many places in the Moray Firth. They can form huge beds particularly in areas where conditions are good for larval settlement, and where there is plenty of food. The largest wild mussel fishery in Scotland is in the Dornoch Firth and run by Highland Fresh Mussels Ltd. on behalf of the Highland Council. The fishery employs 4 staff, rising to 8 at busy harvesting periods, as well as supporting a number of jobs in shore based businesses. Income generated goes to the Tain Common Good Fund.

The mussel fishery has had a long association with the people of Tain. In 1612, ownership of the mussel scalps and the right to fish for mussels was bequeathed to the Royal Burgh of Tain by James VI of Scotland. The Dornoch Firth Mussels provided an important source of food during times of famine, and are today considered a highly desirable food item.

Approximately 60% of the mussels are exported directly to France. Much of the remainder is sold to two local companies in Tain, who clean and grade the mussels, pack them in 5kg bags and sell to customers across the UK. Mussels are extremely high in proteins, calcium and iron while being low in fat and calories. They are also excellent for your heart, containing the highest amount of Omega 3始s of any shellfish (this is the naturally occurring fatty acid that is believed to lower blood pressure).

The Dornoch Firth is regarded as an area of high ecological value. The Firth is virtually unaffected by industrial development and supports a wide range of marine and bird life.

Around one third of the Firth lies within Sites of Special Scientific Interest (SSSI), and forms part of the proposed Marine Special Area of Conservation.

Local Interest

Dornoch Firth mussels are not farmed like most of the mussels sold in supermarkets.

Wild beds are used that regenerate naturally and great care is taken to ensure these are not over-fished. Stock surveys are carried out annually using a variety of techniques including underwater cameras. These then determine the harvest levels for the coming year.

Mussels as a food

Mussels are truly one of nature始s most delightful delicacies.

They are usually steamed, although they are wonderful grilled, baked, stewed or sauteed. It is difficult to understand why mussels have taken such a battering by the British palate. They are often dismissed as the delicacy that they are, perhaps due to the fact that there were once a staple part of our diet.

Europeans do not seem to have lost this and eat them by the bucketload!

Moules Mariniere 4lbs mussels, scrubbed and scraped Bunch of fresh herbs 4 tbsp onion, freshly chopped 1 oz butter unsalted 8 fl oz dry white wine 1 tsp lightly crushed black peppercorns 2 fl oz double cream

In a large pan with a tightly fitting lid, bring to the boil the herbs, onion, butter, wine and pepper. Add the mussels, return to the boil and cook over a high heat until all the mussels have opened.

Turn the mussels into a colander set over a bowl to collect all the liquor.

Put the mussels into a tureen to keep warm, then strain the liquor back into the pan through two thicknesses of muslin to remove sandy grit. Reduce the liquor by about a third to intensify the flavours, then add the cream and pour over the mussels.

Garnish generously with chopped parsley. Serve with crusty bread to mop up the juices and your desired quantity of dry white wine.

As I write the nights are now well and truly drawing in and we have had our first frost. It’s that time of year when I recall to action my central heating and do my best to reclaim my share of electricity from the national grid, as I keep my home illuminated in the gathering gloom! Halloween and Bonfire Night are now just around the corner. Yes - it’s autumn already! I do love the variety of our seasons, and the way they change, but I must confess to being no lover of the dark. Don’t get me wrong, it’s not that I’m scared of the dark (ok, maybe I am a little!), but I much prefer the light where things can be seen and identified more clearly.

Generally bad things seem to happen more often in the dark. Just think of how many films you’ve seen, horror or otherwise, where the evil deed occurs under the cover of darkness. And it’s not just physical darkness that leads to trouble. We often complain that we have been ‘kept in the dark’ about an issue and then make poor decisions as a result. If only we’d had the ‘light’ of knowledge, maybe then we would have said or acted differently.

Sometimes I wonder if we have an unhealthy fascination with darkness, especially concerning how we entertain ourselves. Films seem to promote themselves more and more on being darker and edgier, Harry Potter has its ‘dark arts’ and Star Wars the ‘dark side of the force’. Just one look at a video games chart reveals numerous games based on death, destruction and crime. Or maybe you feel that there is enough dark stuff in the real world to consider.

Not just the obvious terrorists, serial killers or evil dictators, but bullying gangs, drugs and crime. The more we think about it, the more we see we are surrounded by evil. Of course it is almost Halloween, a mainstream ‘celebration’ that is based on violence, fear and real evil, not make believe evil.

‘Surely not!’ I hear you cry. ‘It’s just a bit of harmless fun.’ Well, maybe on one level I guess it is, but I really do believe that the physical world we see is not all there is. And I for one, don’t like the thought of entertaining the powers of darkness.

Interestingly, and probably not surprisingly, the Bible talks about light and darkness quite a bit. Jesus himself says

Time and again the bible makes reference to us living in spiritual darkness and talks of Jesus being the one true light who can illuminate our path and help us make sense of this thing called life. Sadly though, not all want to live in the light. Light has come into the world, but men loved darkness instead of light because their deeds were evil (John 3:19).

What about you? Which do you love darkness or light?

Listen again to the words of Jesus: “I have come into the world as light, so that whoever believes in me may not remain in darkness”. (John 12:46).

As you stock your cupboards with treats for the imminent ‘trick or treat-ers’, may you ponder his offer of light for your life.

Jesus alone brings this dark world the light of true knowledge, moral purity and ultimate rescue.

EXTRACTS FROM THE RATIFIED MINUTES OF THE MEETING OF AUGUST 19TH 2010 OF FORRES COMMUNITY COUNCIL

Public Session • Mr Andrew Fowlie, from the Moray Health Care Partnership, thanked the Community Council for the invitation to address members and introduced Mr L Stewart, Ms E Brown & Dr J Hogg who would answer specific questions if required. He explained that although the Health Centre & Hospital had been decided on previously, with funding all agreed the current financial climate had thrown all plans out of the window. Now, he said, we have to look again at the situation and start building up a fresh case. Mr Stewart said that previously he had suggested that an NHS built Dental Surgery was possible for Forres but now that was a financial non-starter.

The survey, carried out previously, showed 600 people needed an NHS Dentist in the area and this was not sufficient to justify a post. Cllr Hellyer pointed out that this was 600 without any dentist & was achieved in a fortnight of polling. More could be found who would prefer not to travel afield to Elgin, Inverness or further for dental treatment. If the 600 were added to NHS IV36 patients on lists in the extended area it would no doubt justify another surgery.

Ms Brown told members that having previously created a full business case for the Hospital/Health Centre they now have to revise the case for a Health Centre & continue using Leanchoil for Hospital facilities. Leanchoil would require a backlog of maintenance work being prioritised and a member of the public asked why it had been allowed to

deteriorate. Ms Brown said that they had hoped that it would have been replaced by the new centre. When asked she said there were no plans to reduce the number of beds in use but there are ongoing discussions about the best use of facilities. Estimated repair costs would be between £600,000 & £1 million to bring it up to standard. Cllr Mackenzie asked if it would not be more sensible to build the new Health Centre on the same site whilst revising their plans but Moray Cllr Bell pointed out that it would mean making the case from scratch rather than just amending the plan. The Chair thanked Mr Fowlie & party for their input.

• Cllr Kennedy, who had attended that afternoons preplanning consultation by Robertson’s on their Lochyhill planning application said that he was surprised to hear that no indication had been given by the planning department to the developers as to the nature of the objections lodged against the proposed plans. That being the case how, he asked, could the planning application cater for the objectors and the developer reaching a mutual acceptable agreement. Cllr Hellyer suggested that a meeting between the developer and objectors could bridge the gap created by the inflexibility of the Moray Council Planning Department.

Often we hear bad things in the media about young people but like all sections of society it is a handful who are giving an impression to society that, in the vast majority of cases, is well wide of the mark.

My own experience in recent weeks on various school visits has been of meeting young people who are engaged, enthusiastic and confident individuals. It is great to see them continuing to develop these skills with the encouragement and guidance of their parents, teachers and the wider school community.

Secretary’s Report • The Secretary apologised for his late arrival at the meeting, due mainly to delays in the buses from Aberdeen.

• The mail in this month included an invite to assist with the recruiting of panel members for the Moray Children’s Panel and included leaflets for distribution. The Secretary pointed out that these leaflets produced by the Moray Council Printing Service, were a poor advert for inhouse production if they were not checked for spelling mistakes prior to production.

• A letter from the Chair of the JCC encourages all Community Councils to support the JCC and stresses its benefits to member Councils.

• The CC has received notification that a consultation process will start on the 6th Sept to discuss the location of the Gypsies/Travellers Halting Sites and asking for our help in selecting suitable locations for the consultations. The Secretary reminded members that one of the suggested site locations was, in fact, common good land on the back road to Kinloss.

• The Community Warden, Mrs M Cowie, has approached the Community Council to ask if we would once again support the funding of the winter months Friday film shows in the Town Hall, commencing in October, and cover the hall letting fees of £120.

Members voted unanimously to support this initiative for young people and instructed the Treasurer accordingly.

• Following concern by a member of the public over traffic speed in Forbeshill, in the vicinity of a playground, a letter from the Traffic Department notified us that traffic speeds in the area had been checked over a three day period and had been found to be within the laid down limit.

Chair’s Report • The Chair said that he had received mail calling for an early day motion in the House of Commons objecting to the use of nuclear power. He also drew members attention to the digging in the Museum Square, by the chess board, to install a notice board promoting small towns funded by the Small Towns Partnership.

External Groups Report • The Youth Representative, Ross Kennedy, asked if representatives of the Pupil’s Forum could address the Community Council next month on Facilities for Young People.

• Cllr Mackenzie said that the Mount Dora visitors had returned to the United States and that the Scotland in Bloom Judges would be announcing the results on the 22nd of September.

Treasurer’s Report • The Treasurer informed the meeting that our account stood at £593.26

A.O.C.B. • Cllr Hellyer warned members that British Gas were not acting on complaints or change of service unless a proof of posting could be produced.

Forres Common Good Fund • Cllr Hellyer informed the meeting that the CEO of Moray Council was on holiday at present and he hoped to have more information on a meeting with him by our next meeting.

INTRODUCTION:

SIGNAGE: Fully Signed

This route explores the coast west of Buckie as far as the Portgordon, returning at a higher level with extensive views over the Moray Firth.

WALK GRADE: Moderate

THE ROUTE AND FEATURES OF INTEREST:

An undulating path of between one and four miles, which may have a few short steep sections and/or varying surfaces.

Starts and finishes in the square in Buckie.

HEIGHT CLIMBED AND DEGREE OF SLOPE:

Follows pavements to Buckpool Harbour, the northern terminus of the Speyside Way, and then follows this route to Portgordon. Look out for seals along the foreshore. Return by the old railway line as far as the Gollachy Burn, then skirt the Buckpool golf course back to Buckie.

Short steep section climbing up to the golf course near the Gollachy Burn.

Follow the metal and timber signs with the green Buckie Footpaths Network logo.

MILEAGE: 5 Miles

TERRAIN: Tarred pavements and gravel paths. A short section of path at Gollachy Burn can be muddy.

Now that the weather will be getting colder I thought that I would bring along a soup to the table.

Veloute translates as ‘velvety’ in French, it is a very rich, smooth and filling soup and it is a very big seller in our restaurant. The base for the soup remains the same - it is just the core flavour, in this case parsnips, that change. So, you could use any thing from artichoke to zucchini, my personal favourites are cauliflower, parsnip and carrot. The key to getting this soup velvety is cooking the ingredients until they are very soft, then liquidising and then passing them through a sieve. So onto the recipe that is basic as it only has four base ingredients, but is extremely worthwhile and will please your family or your dinner guests.

Serves 4-6 approx 4 Large Parsnips 1 Large Onion 125g Slightly Salted Butter 500ml Double Cream (it must be double for cooking) 1 Pint of Water Salt to season and pepper if you must Peel the parnips, quarter them, take out centre stalk by cutting at an angle to remove, this is so your soup cooks quicker and to maintain smoothness.

Peel the onion and slice roughly, put parsnips, onions, butter, cream and water into a large pan, making sure all ingredients are covered by the liquid and cook until very soft. Liquidise until smooth, pass through your finest sieve, taste and season if necessary, then serve. If it is slightly thick you can add water to reach your desired texture. I would serve this with parsnip crisps and a wee splash of white truffle oil.

Peel one large parsnip, cut the top and tail off, if you have a mandolin slice thinly remembering to use it's guard, if you don’t have a mandolin just use a good potato peeler to peel strips from top to bottom. Then place the strips of parsnips into a metal or glass bowl and cover with boiled water and a teaspoon of salt, cover with cling film and allow to cool naturally, once they have cooled, remove from water and place on a tea towel and pat them dry, then put them into a deep fat fryer at 180°c until they crispen. The point of putting them in water and salt is to maintain as much of the natural white colour as possible (some food science happens along the way!)

Next month I will bring you a good and hearty winter warmer main course, just like we are serving in The Grill for this season, where we are concentrating on homely feel good food such as Fish and Chips, our ever popular Steaks and the classic Sticky Toffee Pudding which featured in last month’s issue. These traditional dishes will run alongside the existing seasonal menu.
