Pastoral letter and Church Meetings The Greatest Human Problem Remains the Same “3 Now this is eternal life: that they may know you, the only true God, and Jesus Christ, whom [God] has sent.” (John 17:3, NIV). After a 19 years association with Forres, 13 years being involved with The Lighthouse Church, Forres, I will be moving South with my family in July. As I consider my first arrival in January 1989 as a young RAF Aircrewman fresh out of training and then as a young Minister fresh out of training in 1999, much has happen and changed in the world. We’ve delighted in the cessation of the ‘Troubles’ in Northern Ireland and also with the end of the long ‘Cold War’. Yet, we’ve also witnessed a sobering demonstration of the power of modern warfare unleashed in two Gulf wars. We’ve been shocked as we saw human aggression take an astonishing and tragic turn on 11th September 2001, plunging the world into a new era of conflict - the ‘war on terror’. However, we have also seen the demise of many long term oppressive dictatorships and the abolition of Apartheid in South Africa. On the economic front, we have witnessed the tragic consequences of greed and mismanagement on a global scale. Again, the impact of this is still biting, affecting every household and even bringing whole countries to
their knees. We have witnessed the advent of the digital age. The way we communicate and manage our lives has been transformed through the internet and the introduction of devices like the smart phone and Apple ipad. This has been coupled with a revolution in social networking, with Yahoo, Google, Twitter and Facebook becoming global names. Few households have been left untouched - just consider how the average lounge has been transformed with the addition of a large flat screen TV. Of course, Forres and district hasn’t been immune to change either, the most obvious one being the relatively sudden loss of the RAF community at Kinloss. New housing estates have been built and shops have come and gone. In all of these changes one constant remains - the unchanging reality of human nature. Even this brief review reminds us that with all our advances nothing really changes. Peace, joy and fulfilment are fleeting – anxiety, fear, conflict and pain are ever lurking near by. I am persuaded that the only explanation and answer for human history lies with the gospel of Jesus Christ. It reveals that the problems plaguing every generation find their cause in the spiritual crisis with the Creator. The

problem of humanity is its fundamental condition - slavery to sin. Forged into every human heart is a denial of God - a brooding militancy against God’s declaration of how his creatures should live. All that is required is the right circumstances to bring it to the surface. Yet it is in Christ that all of God’s love, grace and mercy, his patience and faithfulness are freely offered. In the cross this world stands condemned and all will have to give an account to their maker – an account, according to his reckoning, concerning right and wrong, not our opinions. Yet here at the end of the Age we find we live in a precious time of grace before a throne of mercy. As bizarre as this may sound to the modern mind, those who hear his call a saviour. will recognise the need of So I sign off with the same appeal with which I began my ministry here in Forres. I offer the most valuable thing I can think of, the Christian gospel. That is, salvation, the forgiveness of your sins and eternal life that is in Jesus Christ. Public session: • No Police report was available. • Mr George Alexander, Chair of the FCAA, came to brief the members of the Community Council on the programme of events planned for this year’s Scottish Week, to be held from Sat 16th June through to Sunday 24th June. This includes old favourites to the week such as a charity Golf event, the High Street Mile race, the Burgess Ceremony and the Toon Mercat as well as a Welcome to the royal engineers and a Cinema Night and Car Boot Sale. • Cllr Ferris updated members, in a written report on preparations he had initiated towards a Diamond Jubilee event, including the purchase of a church beacon. He suggested that a picnic could be had in Grant Park for children. He had booked Grant Park for the occasion on June 4th and the Community Council liability insurance will cover the public event. As he was going to be away, he asked for a sub committee to process preparations in his absence and Cllrs Bremner, Hayward & Hellyer agreed to take on the task. He was looking to start the event with the children’s picnic at six pm and continue through to the beacon lighting, as part of a national chain event at about 10.30pm. He hoped that Wave radio could be part of the entertainment programme and an army unit, with a band on exercise at Kinloss at that time is seeking events which they could be involved in. • Cllr Bell begged permission to brief the members on the Findhorn Flood
relief Scheme as he needed to leave the meeting early. He said that recycling would be continuing, with the dump remaining in use and the flood relief scheme would keep the area from being affected. Findhorn bay, there’s lots to do! In the seventeenth century Findhorn was the principal seaport of Moray and vessels regularly sailed to and from all parts of the North Sea and as far as the Baltic Ports. Changes to the narrow and shallow entrance to the Bay created obstacles to navigation and as the size of trading vessels increased so the volume of trade to the village declined. During the nineteenth century fishing predominated. The interest in pleasure sailing was probably kindled when the country was slowly recovering following the First World War. Records are vague but in the early 1920s there were at least five local yawls. Evidently they held their own competitive regatta each year and probably attracted larger crowds of spectators than major races today. Nowadays Findhorn bay is buzzing with watersports of all sorts, including Windsurfing, Parasailing, Canoeing, jet Skiing, Water skiing and of course Sailing.

Chef’s Confidential Diamond Jubilee Chicken This June we celebrate the Diamond Jubilee of HM Queen Elizabeth II, and this is my variation of the famous coronation chicken created when she came to the throne. It is adaptable and you can cater for four to twenty four with ease. For larger numbers it is easier and more economical to cook a whole chicken and when it's cooled strip all the meat from it. For a whole chicken just multiply the sauce quantities by 3 or 4 depending on how large your chicken is.
For 4 people 4 x skinless chicken breasts A few peppercorns 2 x Bay Leaves 2 x slices of lemon For the sauce 1 x medium bunch Coriander 1 x medium bunch of fresh mint 300ml Creme Fraiche 3 x dessert spoons Lime Pickle or Chutney of Your Choice Grated Zest of one lime Juice of 2 limes Watercress and Coriander to decorate Method 1. Fill a pan of cold water, enough to cover the chicken breasts. Add the lemon slices, peppercorns and bay leaves. Bring to the boil, add the chicken breasts and turn the heat down and gently poach for 15 – 20 minutes until cooked. 2. Once cooked remove from the pan to a plate and allow to cool. 3. To make the sauce, take the coriander and cut the stalks off and put the leaves into a food processor with the mint leaves, grated lime zest and lime juice. Blitz until all are finely chopped. 4. Take out of the processor and put in to a clean bowl. Add the crème fraiche and stir. Stir in the Lime Pickle. 5. Once the chicken has cooled, slice in to strips and coat in the sauce. Serve with new potatoes and salad. You can use whatever chutney comes to hand, however it does work well with Baxters Tomato Chutney.

Cawdor Castle is proud to welcome the BBC Antiques Roadshow on Thursday 21st June. The Roadshow was last in Inverness-shire in 1995. Cawdor Castle, a magical place steeped in history is the ideal location for a show, renowned for uncovering history. As is frequently the case we envisage that the crowds attending will bring their precious trinkets, artefacts and memorabilia, that will no doubt unveil a hidden gem from years gone by, or perhaps a dormant heirloom with high value that will bring a smile to the owner’s face.
Walking round this 14th century Castle one is fascinated by the history, stories and atmosphere of the home of the Thanes of Cawdor – mentioned by Shakespeare in his play Macbeth. There is also the added pleasure of reading through the late Lord Cawdor’s room notes that will certainly amuse the reader. The event will be an exciting day for all involved and attending. The stunning gardens will be in full flower giving spectators and visitors alike the opportunity to enjoy the hard work of our Cawdor Castle gardeners. Dreaming of... A different side to Tenerife!
With more and more holiday makers looking to travel from their local airport, Tenerife may seem to be a repetitive choice, but why not try some of these Canary Islands hidden gems. The island of La Gomera lies to the west of Tenerife and is ideal for a short break or as a twin-centre with Tenerife. Just a 45 minute ferry crossing from Los Cristianos, it is a far cry from the lively southern resorts. Steeped in history this sleepy island is unspoilt and has a dramatic landscape of terraced valleys and plunging ravines, and according to the locals the best views of Mount Teide. Car hire is definitely the best way to see the best of this island, roads are winding but recently resurfaced and widened and are easily navigated. The Garajonay National park with its dense, lush flora and fauna is a walker’s paradise with mapped trails and guided walks through the rainforest. Lunch at the Casa Conchita restaurant is a must with traditional cuisine, local wines and spectacular panoramic views from your table. Back on Tenerife, there are unspoilt towns such as Garachico, recently featured on channel 5’s Holiday Heaven on Earth. Garachico in the north of the island is an uncommercialised fishing village and an ideal way to see real Canarian life! The locals still meet in the evenings under the old trees in the bustling town square. And the crystal clear waters at the volcanic pools are ideal for a dip, or for the braver a diving platform. Despite the up and down weather this Spring, some things remain constant in the garden; the weeds come up again, and the grass needs cut every week or two. For many, these are chores. We have found over the years that for so many households, they have tried to make the grass nice, and given up. Yet we fix it in just a couple of visits usually. What has really struck us is how many people appear to take new heart as soon as the grass begins to look good, and in no time we see new bedding plants, a patio, a BBQ, and the garden is obviously being enjoyed, no longer just a chore. There are two main “problems” we see all the time in this area however; moss, and the lesser understood lichen. You may recognise lichen from the picture here, a greyish, almost silvery, scaly fungus on the grass. If you look up, you will likely also see lichen growing on the tree bark, even hanging off the branches. Mosses, lichens, indeed mushrooms and toadstools too, are the fruiting blooms of fungal spores which naturally grow in the ground given the right conditions. Lichen in particular needs clean air, and it thrives in Scotland.
You will probably see it on your lawn if the ground has become compacted, the soil is a bit undernourished, and the grass is a bit weak (often as a result of mowing too short). Together with a damp climate, these are ideal conditions for moss and lichen to challenge grass for dominance on a lawn.
Turning the balance around to favour grass can be quite simple however, and does not need to involve very serious money at all (such as re-turfing). The compacted ground can be opened up easily by aerating it. Some gardeners do this regularly with a garden fork. Golf Clubs, and GreenThumb, and others, use a tining machine, which is run over the lawn, lifting out thousands of cores from compacted ground. This immediately improves airflow and drainage in the turf rootzone, and crucially allows space for new roots and new grass to grow. Healthy, thriving grass on a healthy base does it’s own bit to choke out moss and lichen. We generally find that the lichen is gone from the lawn within a few months of aerating it.

As I walked back to the road, the car park opposite the path to Insh Church was half full. This was not Sunday but 9.00am on a bright warm Friday morning in late May, so what was the attraction? Across the road, by the side of Loch Insh, several groups of people were standing gazing intently at a pile of sticks in a pine tree on a small island about 500 metres away. The small white dot occasionally appearing on top of the pile of sticks was the head of an Osprey sitting on her eggs. With the help of binoculars, the Osprey’s mate could be seen sleeping on a branch high up further back on the Island. The tiny black and white blob sharing the loch with a small sailboat was a rare duck called a Goldeneye. So, with these rare birds in front of me why was I leaving to have breakfast? At 5am on the same day the car park was deserted. Loch Insh was like a dark mirror and on the far bank mist was forming where the first rays of the sun came over the hills behind me. I settled down by the shore 200 metres from the Osprey’s island and waited. In the Sallow bushes above me a pair of Willow warblers were systematically searching for small green caterpillars and, despite being only a few metres away, they ignored me. To my left, three Roe deer stepped into the Loch and appeared to be walking on water as they made through the shallows to the island to feed greedily on the new reed growth. To my right, a Golden eye drake slipped low into the water moving like a torpedo to attack a rival; driving him off in a flurry of wings and spray. Then movement on the dark surface of the Loch caught my eye, a V-shaped wake heading for the bridge; two otters returning to the river after a night hunting in the reed beds. Meanwhile, having spent an hour preening every feather and prompted by impatient calls from his mate, the male Osprey decided it was time for action. He slipped from his branch and circled low over the loch between the Island and the bridge. On seeing a fish he started to dive, aborting at the last second and flying up the Spey. A little while later, the female stood on the side of the nest calling, the male flew back over the bridge holding a fish. After leaving it in the nest he set off down the loch, returning with a pike which he ate on the preening branch. The sun was now well up on the other side of the Loch. Six hundred metres away, the flap of a tent opened and I heard a conversation about breakfast. Cars were parking by the road. The deer slipped back from the island, the Osprey sat back into the nest, a family of Goldeneye hid in the reeds and a Common Sandpiper feeding nearby flew off with a penetrating alarm call.
