IT support and enhancements for your business A bit about anti-malware All of our customers are pretty good when it comes to anti-malware, and have at least something installed. In particular you need to be wary of any free products, as you will find that the free editions are only licensed for home use and are only partial products aimed at getting you to buy their full counterparts, they shouldn’t be considered complete protection by themselves. By antimalware we mean any kind of antivirus or antispyware software, see our website for more information. Recruitment We are now looking for a technical person with IT skills to join our team. Please go to our website for more information. Closing date 31st October.

How am I and How can I tell?

example being a husband. How do I

“How are you?” “I’m doing fine thanks.” I’m sure we have all frequently engage din this familiar exchange. But what does it mean. Of course, “how are you” is a general enquiry to how one’s life is going. But what do we mean by the “I’m fine thanks” or “No so bad”? Do we mean health, career, finances, family life, self esteem, or general well being?

know what is the correct way to function as a husband? What is a good husband? Where do I go to find answers on theses questions? The fact is, our culture simply has no coherent answers to these questions or what it means to grow and function correctly as a human generally. Why? Because our culture has decided that humanity is merely the result of an arbitrary sequence of cosmic events adequately explained by scientific theory. Consequently, all idea on how humans ought to be is self determined and arbitrary.

It is almost certainly a general statement that covers many areas of our lives. But how can we conclude that things are ‘ok’ or otherwise? What are we comparing our lives to; what measurement is being used? What should be my expectations of myself as a human being, family member, employee or employer, friend, neighbour etc? We can say from the outset that our secular society provides no coherent means by which to answer these questions. All answers are according to the conventions of the culture (or sub-cultures) we live in. Take for

In stark contrast the Bible quite comprehensively presents what it means to be a human being and how to live. It boldly declares humanity exists through the divine purpose and intention of a sovereign creator God. The Bible lays out the story of mankind so far; a catastrophic fall from grace and departure from how humanity should exist ‘all have sinned and fall short of the glory of God’. This fall brings consequences; a dysfunc-

tional humanity ultimately destined for judgement and death. Where does this leave me? Is there a blueprint for humanity that I can look to and a means by which I can change by sinful nature? Yes, in Jesus Christ and the life of sinless obedience that he lived before God the Father; in his death and resurrection that by faith gives birth to a new nature in me. Although not obvious to the fallen human eye, in Christ God has wrought a mighty work of new creation - a new humanity. So when asked “How are you?” and we reply “fine” do we mean: “I am at peace with my creator God and rejoice in His love; I am growing daily in the life that Christ has demonstrated; by His strength I am persevering in perusing the holiness and applying this to every area of life as father, son, friend, employee etc. So here I am asking you, “How are you?” Chris Woodman Pastor, The Lighthouse Church Forres

Organic Farming - Sandy’s Story At the vegetable section of my local supermarket I stood pondering….Organic…Non Organic? What’s the difference? Well for those of you who want to know, this is what it’s all about…. Organic farming is the name given to a variety of agricultural production systems that aim to work with nature, rather than by conquering it. Organic is most commonly associated with food production, both crop and livestock. However, organic methods are also employed in the production of many other goods, leading to products as diverse as timber and clothing, to be labeled as organic. The principal differences between organic farming and conventional farming are: H

an extensive restriction of the use of artificial pesticides, fertilisers and other agro-chemicals; H a hostility to the agricultural application of biotechnology; H a rejection of the routine use of pharmaceuticals on livestock; H an attention to animal welfare; and H a focus on crop rotation, soil quality and maintaining biological

diversity as chemicals.

In this way, organic farming is in many respects, a return to traditional farming methods. Organic food is felt by a growing number of consumers to be safer, more nutritious, taste better and be less harmful to the environment and animal welfare than conventionally produced food, and the market for it has grown in recent years accordingly. I recently spoke to Hugh Grierson, one of Scotland’s largest organic farmers, and he talked to me about his father Sandy. “Sandy was not an Organic farmer but watched with interest as Hugh stopped using sprays and fertiliser. He still worries about the weeds but the change that he really noticed was the butterflies. Insects have thrived since we went organic, especially the butterflies. They are drawn to the red clover that we plant for soil fertility. As they feed on the flowers they fill the farm with colour and movement. When the white clover flowers it can be quite alarming to walk through. Every step disturbs a cloud of bees. Fortunately they are well fed – too sleepy to be alarmed. Hoverflies and ladybirds hunt through our potato crops keeping them free of aphids and the diseases that aphids carry. Where there are insects there will be birds and mammals. We have wetland fields with Lapwings, Red Kite and Curlew. Other fields provide seeds for finches, larks, and Tree sparrows. Sand Martins follow the cows, hunting for tel: 01309 690063

insects. Barn owls hunt for voles and Red Kites clear up the leftovers.

Organic farming has brought the wildlife back into the fields but we have also worked at improving the woods and waste ground. We have planted hedges and wildflower meadows. We have dug ponds and planted woods. We look after wetlands and rare habitats. It is always very rewarding because new plants and animals moving in and setting up home repay our efforts. They all beautiful and all have a role to play. They are all a part of the jigsaw that makes up a healthy, living farm.” Moray Coast and the Highland’s have some of the finest organic farming in the world, so next time, like me, you stand pondering Organic or Non Organic, think of Hugh’s dad, Sandy! EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF 15TH JULY 2010 OF FORRES COMMUNITY COUNCIL

Police Report • Traffic patrols had spoken with young car racers issuing 126 warnings. • There were 74 reported crimes in Forres with 16 detected and this figure rising. • A number remain undetected and were still ongoing. Shopkeepers were to be targeted in regard to shoplifters. • CCllr Hellyer apologised for being remiss in not replying to survey and said that it arrived with a completion date that was before the C C meeting, a consensus was therefore not possible. • It was recommended that the arrow in Tolbooth Street should be larger for the benefit of clarity. CCllr McKenzie suggested a “No Entry” sign be painted on the road

Secretary’s Report • Community Planning - CCllr Hellyer advised that on 1st June 2010 the Planning & Regulation Committee of Moray Council passed approval for a market at Leys Road. He went on to ask the Councillors if they knew of the objections made by the C C. They replied that they did not. • Redco Milne (Development at Bogton) - It would appear that MC are still progressing with a valuation for Bogton despite the fact that over 1200 signatures objecting to sale of this land were submitted to the Planning Department. The C C and the Forum maintain that the land at Bogton should be leased if this application is to be considered. Spending money on actions like this seems contrary to current financial constraints.

Chair’s Report • Forres Community Council Constitution - CCllr Hellyer proposed that CCllr Kennedy’s amendments be accepted. CC Ferris seconded the proposal and the meeting approved it.

page 10 - October 2010

External Groups Report • Forres in Bloom - The judges will attend the town on 2nd August 2010 with the Wee Fibees being judged between 2pm4pm on the Tuesday afternoon. • Forres Railway Station would also be dressed for the visit.

AOCB • CCllr Mackenzie said it was hoped that items stored in the Tolbooth would soon be removed. He also advised that no funding was forthcoming from Moray Council but others were securing grants. He also advised T-shirts (which he was wearing) with the Tolbooth logo would be available. The Tolbooth Clock was to be adjusted to ensure all sides showed the correct time, and floodlighting was also being considered for the Tolbooth. • CCllr Pistra said the path parallel to Clovenside Cemetery was overgrown however this was the Council’s responsibility. • Balnageith Cairn was also overgrown however the owner of the Bervie Chipper said he would pay for this to be tidied up. • It was noted that the flag at Auchernack required adjusting. Cllr Bell has taken note of this. • CCllr Mackenzie commented on the Nelson Tower Flag. If the flag was flying the tower would normally be open to the public however there was no access to the Tower at the present time. When the Tower officially opens, the flag will revert to the old system. • Cllr Bell had nothing to report other than the Murie Path. He wondered if any voluntary groups would assist in a tidy up. CCllr Hellyer would take request to the Woodland Trust. • Andrew Fowlie of NHS Grampian will be in attendance on 19 August 2010 to answer questions on dental issues and the proposed Health Centre for Forres also Leanchoil. Cllr Bell said the new hospital plans were to be more affordable and that Leanchoil would not close. CONTINUED ON PAGE 26 tel: 01309 690063

With the time delay between writing a column and it being in print I suspect summer will be a distant memory, however I feel it is still timely enough to make mention of a new business in Fochabers which is already enjoying great success with locals and visitors alike. After a visit to Fochabers Ice Cream Parlour you, like me, will probably be amazed, not just at the very cool old style signage complete with giant cone, but also at the unbelievable mouth watering selection of ice creams. With flavours including ‘Blackforest Gateaux’, ‘Fudgy Mallow Swirl’ and the very old school ‘Parma Violets’ I can honestly say I had to be dragged away, but not before managing to get a cone. It’s great to see a new business up and running and using local suppliers, especially in the current challenging economic environment, and I wish them every success.

Ang u s R ob e rt son MP

Over the summer and away from parliamentary duties I have managed to get back to cycling, which I very much enjoy but which also often takes a back seat. Along with the family I have been exploring the cycling byways around Elgin and Lossiemouth and introducing my two young children to the activity before being rapidly outclassed with youthful energy while I am peching and wheezing my way up a hill. Fortunately a few days out have blown the cobwebs away and I am feeling a little fitter than I was. The trick of course will be keeping up the effort but with the same two youngsters pestering me to take them out it will hopefully continue! Millbuies Loch

SpotLight Local Walks

Fogwatt INTRODUCTION: Millbuies Loch was created by the damming of streams to provide angling facilities on the loch. Moray District Council took over the estate in 1975 and the fishing was extended to the public.

THE ROUTE & FEATURES OF INTEREST: Many improvements were made to the estate over the years, and now Millbuies offers a variety of family orientated activities. There is a large grass area for play with picnic tables and barbecue points, a large car park and toilet facilities and also a feeding station for birds of many types. The featured path around the loch is hard aggregate with various other paths leading off to scenic

views. A large variety of rhododendrons and trees have been planted and this attracts wildlife, from red squirrels feeding at the station to roe deer, badger, rabbit and if you are quiet and lucky, pine martin. On the loch there is mallard, tufted duck, moorhen and swan. In the loch, which is stocked with rainbow trout, you can hire a boat for flyfishing. This is an excellent outdoor environment to be enjoyed by the whole family. WALK GRADE: Easy A generally flat level path with good surfaces of less than two miles distance. MILEAGE: 1.5 Miles ESTIMATED WALKING TIME: 1 Hour

SOUND & VISION

30 YEARS AND STILL ROCKIN’! I opened the shop in 1980 after 14 years as a local DJ playing the best music around between Wick in the north and Arbroath in the south supplying DJ gear and records to the local music lovers. After a short time the decision was taken to stock musical instruments as the existing music shop had closed its doors.

ĘťFishĘź from Marillion opening our record deptartment 1989 Caption

We quickly established a reputation for stocking quality instruments at very keen prices along with excellent back up service. Late in 1989 the opportunity arose to move into our existing showroom which gave me the space to expand our range and selection of top brands, such as Martin, Gibson, Fender and Ibanez guitars along with top amplifiers from Marshall, Blackstar, Line6, Peavey and many more. We also stock Digital pianos by Yamaha and Kawai, Violins, Saxophones and almost any other kind of musical instrument available.

We have 100s of Guitars, 1000s of CDs and Music Books, and more amplifiers and accessories that you could shake a stick at! Some of our staff have been with us for over 20 years and have obtained a vast knowledge which they will gladly share with our many customers. Local Choice, Local Service and Local Backup with keen prices to boot. Look no further than Sound and Vision Elgin!

Sticky Toffee Pudding and Butterscotch Sauce

This month as the leaves are turning, one of our most popular sweets is sticky toffee pudding. It features often in our menu so I thought I would share the recipe. It is a fantastic sweet for the cooler months and cheer up those dark evenings. I n g r e d i e n t s - Pu d d i ng 100g Pitted Dates 50mls Water 50mls Orange Juice 75g Dark Or Light Brown Sugar 65g Butter (Room Temperature) 1 Egg 125g Plain Flour 7g Baking Powder 5g Bicarbonate Soda 1 tin condensed milk

condensed milk (toffee) and spread it around into the mix before baking (the more the better). Cook in the oven at 180°C (gas mark 5) for 15/20 minutes. The mix will still will be soft and wet when you test with a skewer, hence the Sticky in Sticky Toffee Pudding! Cut to desired size and shape.

I n g r e d i e n t s - Sa u c e 75g Butter 250ml Double Cream 100g Light Brown Sugar Pinch Of Salt One Vanilla Pod Seeded Put dates, water and orange juice into a small pan and bring to the boil. Simmer until they have broken up slightly then leave aside (chefs tip - put in 2-3 earl grey teabags to add flavour) Cream sugar and butter with a hand blender or wooden spoon. Once soft, add your egg then continue to mix well. Sieve the flour and baking powder into creamed butter mix, then add bicarbonate of soda to date mix. Combine the date mix to the butter mix, stir well, then put into a greaseproof paper lined deep baking tin roughly 10”x 10”.

Sauce method - this is simple - add all sauce ingredients into a sauce pan then boil gently until all has come together and sugar has dissolved. The difference between this and toffee sauce is that butterscotch has salt and vanilla in it. I would serve the Sticky Toffee Pudding with your favourite ice cream and the butterscotch. You could also replace buttertscotch with custard if you liked. This Recipe was given to me by my old head chef and good friend Mark Greenaway and I am now passing it out to you as I think we all love it! It's got to be up there with chocolate brownie for me, which I will leave for another month!

Boil the tin of condensed milk for 3 hours making sure the tin is fully submerged at all times (to save time, you may wish to purchase Carnation caramel available from local supermarkets). Take your boiled page 22 - October 2010

Since there were still outstanding questions and no minutes existed it was felt that attending this year would be pointless. • CCllr Mackenzie said we should move
