Cycling In Moray -
®
SpotLight Local Interest
A Personal View
As a cyclist for at least 30 years, I have cycled along most roads and cycle paths in the North East. Finding my way around was not a difficult thing to do as I would pick up an ordinance survey map, pick a road or track and off I went. By doing this I discovered many fabulous cycle paths and tracks. In some cases an animal track in the woods would be a great way of getting about. Most paths and tracks nowadays are looked after by the Forestry Commission, they are well maintained and offer real fun for all cycling abilities. Here are just a few tracks I have come across. Whiteash Trails, Fochabers - The Fochabers Ring. A difficult varied cross country trail you’ll want to ride again and again. A difficult climb to the monument, then the fun starts. To complete this ride is a good outing at 8km. Ordiequish Trails start at the car park. An easier ride for the less adventurous, a wee bit for everyone. The Soup Dragon This is great fun, a friendly route that can be enjoyed by everyone. The only catch is the climb, but well worth it, I promise. A good 5 km round trip. The Haggis This is a long trek which leads in the direction of Ben Aigan, full of interest but could take most of the day. Not too difficult, I would personally recommend this for a great day out. Gordzilla Not the monster it sounds… a great flowing route which could be done at speed or at a more peaceful pace. Not a long ride at 1hr but could be liked to other paths like the ‘Haggis’. The Gully Monster As the name suggests an awesome trail of monster proportions! Not many have ridden one like it. More for the technically minded and a great ride. Quarrelwood, west side of Elgin A great place to learn the skills of off road cycling and for the family to enjoy the surrounding beauty of this woodland area. A popular place for walkers, so watch how you go and follow the code. Ben Aigan Trails A95 Ben Aigan Car Park - this has 3 tracks all very different. The Ben Aigan Hammer A ride round the summit of Ben Aigan it has some of the most beautiful views of the Spey Valley. page 4 - April 2010
Lots of bumps and wooden walking sections but well worth the travel to the start. The Mast Blast Not for the faint hearted, this trail is very fast, downhill with rocks and jumps. Once you hit the forest road remember to follow the marker and take the right turn. This is a single track which takes you right back to the car park. The Pink Fluffy Bunny For the more experienced, not the cuddly trek the name would suggest. Fast, free, furious and downhill. More a Hare than a Rabbit I think!! Best of the bunch, but be careful. Sanquhar Woodlands, Forres This is a Forres Community Woodland Trust facility. A designated mountain bike trail within the Sanquhar woodland. A three colour grading: moderate; difficult; jumps. This means that all levels of ability can enjoy this beautiful trail. A total of 1.1km, but packed full of fun. Culbin Forest, Nairn Heavy-duty mountain bikes aren’t necessary here. This is fairly level terrain with a mixture of long, straight tracks where you can pick up speed, and winding paths among dunes covered in pine trees where you can just enjoy a leisurely cycle. There aren’t any specific bike trails so you can make up your own route within the forest. And it’s easy to find your way around, with numbered junction markers and a helpful free map available. If you want to cycle to Culbin, National Cycle Route 1 runs through the south side of the forest, around 800 metres from the Wellhill Car Park. These are but a few of the wonderful treks, tracks and paths you can travel within the Moray Coastal area. For people who prefer harder surfaces, there are many roads that branch from the A96 that can take you along quiet country roads enabling you to see a lot of what you would miss if you travelled by car or train from Inverness to Aberdeen. In this age of 50’’ TVs and computer games I recommend that you get out there and see your beautiful Moray Coast and get fit at the same time. If further information is required, log on to the Internet and see what’s available in your area, or pop in to your local cycle shop for advice on all aspects of cycling. Happy Cycling! What will you believe this Easter? Why do you believe what you believe? If you want to answer that question, then you really need to know what you believe. For example, do you really believe what the Bible tells us about Jesus, or have you been influenced by others to think differently about Jesus! In fact, there are many people who do not take the time to prove what they actually believe regarding the biblical account of Jesus. Many people assume what they believe is right because that is what they have learned over the years. Where did you get your beliefs? Is the source of your religious beliefs the Bible - or some other authority? If it is not the Bible, then maybe your Easter will be all about those lovely Easter eggs and Easter bunnies! On the other hand, the Bible gives us something far more substantial and meaningful to think about. Indeed, this is the time of year to remember
the death and resurrection of Jesus Christ.
Do you believe that Jesus died for your sins? Let us never forget the brutality of Christ’s crucifixion that all the Gospels tell us about! Yet many treat the historical events of Christ’s death as if Jesus were a fictional character like the Easter Bunny because that is what they have been led to believe. But what we need to remember is that Jesus was a real person who died for our sins on the cross. After all, the Old Testament prophets foretold of Christ’s death with extreme accuracy hundreds of years before it actually occurred. And the whip that tore his bleeding back open was a real whip - just like those big nails that were driven into His body because of our transgressions. Why should we believe that Jesus died for us? The author of Hebrews says in chapter 9:22, ‘...without shedding of blood is no remission.’ Therefore

Jesus blood was shed, so that we can experience forgiveness of sin. If you do not believe that, then you cannot know God in a personal way. This kind of language might seem strange to those who have never experience Christ’s forgiveness. However, I can testify that as young man my life was completely ruined by alcohol, until someone told me about a Saviour who could sort out my messed up life. I thought there was nothing to lose by asking God to forgive me, and it was as simple as Romans 10:9-10 says, ‘That if you shall confess with your mouth the Lord Jesus, and shall believe in your heart that God has raised him from the dead, you shall be saved. For with the heart man believes to righteousness; and with the mouth confession is made to salvation.’ Now, that is a powerful reality you can believe and experience this Easter if you real want to – the choice is yours! Donnie Darko’s favourite!
Rabbit Spring Rolls
®
SpotLight Chef’s Confidential
Donnie Darko came to dinner and subsequently we cooked him a great spring time recipe! Rabbit is a very lean meat with virtually no fat on it and has a very delicate flavour. Get your local butcher to bone the rabbit and cube the meat, which will make it much easier for you to use. Anyone wondering who Donnie Darko is, he’s the teenage boy from the film of the same name who is ‘guided’ by Frank, a demonic time travelling rabbit!
For the spring rolls 450g rabbit - 1 cm cubed - this can be replaced with chicken 50g bean sprouts 5cm piece fresh root ginger cut into matchsticks 1 tbsp chopped fresh coriander, stems only 1 red chilli, finely chopped 1 egg 12 sheets spring roll wrappers or filo pastry Vegetable oil, for deep frying For the dressing 150g sugar 200ml rice vinegar 150 ml light soy sauce 2 limes, juice only Pinch star anise powder - optional 1 clove garlic For the salad ½ red cabbage, finely shredded 1 apple peeled and grated 2 red onions finely sliced For the spring rolls Mix together all of the spring roll ingredients, except for the wrappers and egg, until well combined. Lay a spring roll wrapper on the work surface and spoon some of the filling into the centre. Draw in the page 12 - April 2010
sides of the wrapper, then roll upwards, sealing the ends with the beaten egg. Repeat with the remaining spring roll wrappers and filling, until you have 12 spring rolls. Half fill a deep, heavy-based pan with vegetable oil and heat to 180°c. Deep-fry the spring rolls in small batches for 6-8 minutes, or until golden-brown and crisp. Remove with a slotted spoon and drain on kitchen paper. For the dressing Bring the sugar and vinegar to the boil in a pan, then simmer for 5-6 minutes, or until thickened and syrupy. Take off the heat and add the remaining ingredients. Set aside to cool. For the salad Toss all of the salad ingredients together, then drizzle over the dressing and mix well to coat evenly. To serve, pile the salad onto serving plates and place the spring rolls on top. Garnish with coriander leaves and lime wedges.

Council News
EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF FEBRURAY 23RD 2010 OF NAIRN SUBURBAN COMMUNITY COUNCIL
• Sandown Lands Planning Inquiry. Comm. Cllr. John Mackie reminded all about the forthcoming Planning Inquiry due to start on Tuesday 2nd. March 2010 within Nairn Community Centre and recommended it to all those with an interest. We should attend to support THC and Nairn Concerned Residents Group who were speaking against the Planning Application. • Community Council Election.Comm. Cllr. John Mackie advised all that we were due to meet on Tuesday 2nd. March 2010 within Nairn Academy for election of NSCC for a further 4 years. He was pleased to say that we now appeared to have 4 candidates standing with the possibility of more by 2nd. March 2010. In the event of more than 5 we would require a Postal Ballot to elect the 5 Comm. Cllrs. • Comm. Cllr. John Mackie gave his report covering some of the issues dealt with over the past 4 years, some with success and others not so successful. He also outlined the numerous changes to Community Councils over that period and highlighted the amount of time spent on Planning matters, which was very difficult due to lack of adequate resources. He also highlighted some of the surveys NSCC had undertaken, involving A96 safety; Play Equipment in our area; Spring Clean-ups undertaken all of which had a positive effect on our
neighbourhood. Our efforts in relation to the A96 has resulted in local Elected Members; MSP’s and Government Ministers all coming forward and recognising the problems and identifying the need for a Nairn By-pass. He then went on the thank the various Cllrs. Who were standing down and outlined some of their achievements. He also thanked THC Elected Members and Council Departments for their support over the years, also Northern Constabulary; The Nairnshire Telegraph and Spotlight for their support, which was gratefully acknowledged. He also thanked the Comm. Cllr’s. Wives/partners for their support when we were attending meetings and other duties. Without all of them we would be able to function. • Comm. Cllr. Youngson reported that we had £304.48, the drop in our funds being due to THC requiring us to pay for their BIG AD. In the Nairnshire for our Termly Election. We have lodged a complaint against this. • Cllr. Laurie Fraser thanked NSCC Cllrsf or all their work over the past 4 years, in particular in relation to the A96. • Comm. Cllr. Youngson informed the meeting about an application submitted in respect of Little Balblair House (former Convalescent Home) on Mossside Road. The application was to divide the original building and to add a further 3 apartments, making an additional 5
apartments. This would require removal of an number of trees which are covered by TPO’s and would greatly increase the vehicular traffic emerging onto Mossside Road, as well as requiring up to 13 Rubbish Bins to be placed on the footpath at that entrance. Car Parking bays proposed would further impact on the Tree root systems. The meeting unanimously agreed that NSCC should lodge an objection to this application. We have still to be formally told about this application by THC Planning Dept. He also reported that a previous application for Sandown House had been approved for the addition of two rooms (B & B) & we had supported this application. • Likewise Deskford Cottages had applied for an extension which we were supporting. • Murd Dunbar asked to speak in connection with the Firhall Bridge which is in need of upgrading to allow disabled; wheelchair users and mothers with pushchairs to cross more easily. NSCC was already aware of this issue from Press coverage and the Chair, with the agreement of those in attendance, gave our full support to this venture, and offered to help in any way. Next Meeting - 7.30pm on Tuesday 2nd. March 2010 in Nairn Academy to determine the Election of NSCC Candidates for the next 4 year term.
