Do N ot M i ss T h i s F r eed om Two of us were standing speaking with Pastor Martin Akumu outside his home. It was late afternoon and hot. We had just been speaking to two thousand children at the opening of a completely refurbished library, following a morning and part of the afternoon teaching at a Leader’s Seminar. This was taking place seven miles east of the city of Kisumu in Kenya, two miles off the main Nairobi Road. Martin and his family, and some three hundred people in the surrounding community, walk four miles each day along a rutted rural track to buy water. Martin houses and feeds ten orphans in two ‘huts’, outside his tiny home. Carrying water daily for seventeen people is no easy task. A hydrologist examined the field outside his home, and there was water underground. Martin spoke to us about his dream. “If only I could drill a borehole, and install a pump for fresh water.” He is a capable responsible man. “If this water were to be provided, I could also sell containers of water for a

few Kenya shillings, to help feed the orphans, and prevent people tramping the four miles to the water centre at Nemasaria.” I have known Martin for seven years. He oversees some 17 rural churches around Kisumu, and I have spoken in these various churches during my visits.

Martin has a ministry to those who are really poor, and by poor, I mean have almost nothing! When local folks back in Scotland learned of this water situation, and of how easily it could be resolved, the requisite money was generously given and sent, within a few weeks. Work started digging a deep well, and at the end of March it was completed and functioning. The water is clear and clean and people no longer have to trek along that rough track to the main Nairobi Road for water. When children come home from school they can now study, and complete their homework assignments, instead of being sent to fetch water before darkness falls. This micro project has made an immense and immediate difference in

one local community. Jesus Christ was always taking people one more step along the road, and sometimes a stage further than some really wanted to go, but one more step with Jesus is invariably exciting, and when we move on to the next stage we can experience a new sense of freedom. Jesus taught, “If you hold to my teaching, you are really my disciples. Then you will know the truth, and the truth will set you free”. His brother Jacob wrote, that faith by itself, if it is not accompanied by action, is dead. Faith and action; but do note the order. These rural Kenyans have been set free from the drudgery of having to carry heavy loads of water, as a result of one man’s compassionate vision. Grigor said: “This is the general public’s chance to come and see how a modern farm efficiently produces food and interacts with nature to the benefit of both. Come and see the Pet lambs in the yard and the not so friendly ones out in the fields. There are farm nature walks. Maps will be available showing where to go and what to look for. Pick up a nature seeker leaflet and see if you can spot our varied wildlife, from Skylarks to Buzzards and stoats and weasels to Foxes. Go “Tree spotting�! Can you find at least ten different varieties of tree? There will be two guided walks to see the diversity of wildlife on the ground and in our streams and ponds. The first will be at 10.30, so don’t be late! It is recommended that appropriate outdoor clothing, walking boots or wellies (recommended, especially if you want to guddle in the burn for bugs and beasties!)are worn.

Nairn is leading the way in promoting Arts and Culture in addition to the more traditional Community Centre Activities. This bright, modern adaptable building with excellent Arts Facilities has become a vital part of the Community. Now in its third year of operation the centre offers a wide variety of activities and events for all ages. The unique aspect of The Centre is its adaptability. The large comfortable Theatre which can seat up to 300 has catered for local events such as Fashion shows, Cookery Demonstrations and even weddings! and has also hosted Scottish Opera, The National Theatre for Scotland and Traditional stars “Phil and Ally”.

Evidence of these successful partnerships can be seen this June when Nairn Book & Arts Festival host their annual celebration of literature, drama, art and film at the Community Centre. Parnerships have been formed with many of the groups already using the Centre including Cinema Nairn, who are putting on three films, two concerts promoted by Music Nairn, and “Fun with Gaelic” by Feis Inbhir Narainn The Centre also offers Art Exhibition space, and during the Festival, last year’s Open winner, Ruth Nicol, who also won the Student Prize, will be holding a solo exhibition based on road journeys in the North of Scotland. The popular, 4Square, selling exhibition painted by Highland artists will make a welcome return to the Centre. The Nairn Camera Club, who meet at the Centre on a weekly basis are also working with the Festival and will exhibit the winning entries of their Photographic competition throughout the week. The Festival is an excellent chance for local people to come along to the various events which are not normally available in the area, at a reasonable cost. All aspects of the Community are catered for in The Centre. Excellent meeting facilities are also available to hire, which ensures that the building is always busy, with both Community and Business Groups.

It is home to Music Nairn, Ramage International Jazz Festival, Feis Inbhir Narainn and the Nairn Book & Arts Festival. Whales and Dolphins around the Moray Firth At the Whale and Dolphin Conservation Society (WDCS) we are only too aware of how much whales and dolphins have always fascinated us humans and that seeing these amazing animals in their natural environment is often a memorable experience. People tell us just that every day! If you choose the right site and invest a little patience, then you could glimpse one or more of the 24 species of whales, dolphins and porpoises recorded around the Scottish coast. If you do fancy getting out by yourself, with the family or the dog to see some of these creatures, then the Moray Firth is a fantastic area to see whales, dolphins and porpoises from land. The resident population of bottlenose dolphins tends to spend a lot of time close to the coast and can be very active, making them easy to spot. Porpoises are smaller and tend to be quite shy but with a bit of practice, they can also be

seen around the coast. Even Minke whales make regular visits to some of the deeper coastal waters like Cullen Bay. Before you get out and about, there are some considerations that you will need to take onboard- a good set of binoculars for a start! In the Moray Firth area, the bottlenose dolphins and minke whales tend (not always though) to be seen more regularly in the summer months - watching in good weather (and earlier in the day) will increase your chances of sighting a whale or dolphin. On a windy day, waves and sea spray may obscure a dorsal fin breaking the surface. As for good viewing spots, there are countless great places from which you can watch for whales and dolphins in the Moray Firth. Top sites include; Cromarty Sutors, Chanonry Point, WDCS Dolphin and Seal Centre at North Kessock, Fort George, WDCS Wildlife Centre at Spey Bay, Cullen Bay, Broughty Ferry Castle, and Aberdeen Harbour. If you want to watch for whales and dolphins in comfort and with easy access to food and facilities, then the WDCS centre at North Kessock is ideal. From the Cullen Bay Hotel too, you can even look for minke whales through the dining room windows while you eat! Other sites such as Lossiemouth, page 10 - June 2010

Nairn and Spey Bay offer easy access to cafés and toilets. Fancy being guided by the experts? Then WDCS can help here too. Some of the best encounters with whales and dolphins are when out walking the cliffs and beaches, and if it is an all round encounter with nature that you are interested in then you could sign up to WDCS' PoD Plod, a brand new challenge event taking place in August, and created to help raise funds to protect the dolphins of the Moray Firth. The event is a 26-mile sponsored walk along the breathtaking Moray Coastal Trail from Findhorn Bay to Spey Bay….. the challenge is to do it in 2 days! Guided by Sarah Dolman, WDCS’s head of policy for Scotland, and Alice Pope, WDCS’s Scottish Conservation Officer, you will also be taken on a dolphin and wildlife boat cruise, look out for dolphins from viewing spots along the route, enjoy a reception and guided tour of the WDCS Wildlife Centre at Spey Bay and finish with a dolphin watching trip to Chanonry Point with resident dolphin expert, Charlie Phillips. No matter where or how you choose to go watching, a notebook and ID guide are useful to take with you. These will help you to make notes about what you are seeing and look up the details if you are not sure. If you spot something that puzzles you then WDCS now has a comprehensive species guide that can be accessed on-line through wdcs.org. Make good notes and take pictures, then check them on-line when you get home. If you get hooked, then you could become a regular WDCS shore watcher. It’s a vital part of what WDCS does as we use our shore watch data and other research to try to understand dolphin movements all year round and better manage potential impacts to them and their environment. Tarte Tatin

Tradition says that the Tarte Tatin was first created by accident at the Hotel Tatin in Lamotte-Beuvron, France in 1898. The hotel was run by two sisters, Stéphanie and Caroline Tatin. There are conflicting stories concerning the tart's origin, but the predominant one is that Stéphanie Tatin, who did most of the cooking, was overworked one day. She started to make a traditional apple pie but left the apples cooking in butter and sugar for too long. Smelling the burning, she tried to rescue the dish by putting the pastry base on top of the pan of apples, quickly finishing the cooking by putting the whole pan in the oven. After turning out the upside down tart, she was surprised to find how much the hotel guests appreciated the dessert. I n g r ed i e n t s 150g/5oz unsalted butter 1 fresh vanilla pod 200g/7oz caster sugar 8 apples 300g/10½oz puff pastry 1 medium egg, yolk only, plus 5ml double cream - to make egg wash 150ml/5fl oz crème fraîche to serve F or t he b u tt er sc ot ch sa u ce 150g/5oz caster sugar 150g/5oz unsalted butter 150g/5oz golden syrup 70g/3oz whipping cream

Cook on a baking sheet on top of the stove until the apples have started to caramelise. You may need to change this tray a few times during the cooking process but it saves the oven top. Always take great care when dealing with hot liquids and under no circumstances leave it alone. Roll out the puff pastry evenly to about 2mm thick on a floured surface and prick with a fork. Place on top of the apples and cut the excess pastry away. Egg wash and then bake in the oven at 200C/400F/Gas 6 until the pastry is golden brown, about 15 minutes. Meanwhile make the butterscotch sauce. Place the sugar, butter and golden syrup in a stainless steel pan and boil until the sauce is a dark caramel colour. Add the whipping cream to the hot caramel and stir until mixed thoroughly.

Cut the unsalted butter into thin slices and mould the butter slices (using well washed hands) into a nonstick frying pan with high sides. Split the vanilla pod and mix the vanilla seeds by hand with the sugar. Tip the vanilla sugar onto the butter and shake the pan until the sugar is evenly dispersed.

Press the tart with a plate that fits the inside of the pan and drain any excess liquid. Leave to rest for 20 minutes. Then turn the tarte tatin out onto a plate and serve immediately. Pour the caramel sauce around and offer the crème fraîche separately.

Peel and core the apples and cut in half through the core. Pick out any pips. Arrange the apples skin side down. Pack the apples in as tightly as possible.

EXTRACTS FROM THE DRAFT MINUTES OF THE MEETING OF 27TH APRIL 2010 OF NAIRN SUBURBAN COMMUNITY COUNCIL

Police Report P.C. Eric Craig attended and gave an update on Policing matters. P.C. Craig informed the meeting that things had, happily, been fairly quiet of late with a 10% - 20% reduction in reported crime in Nairn, Badenoch and Strathspey areas compared to same time last year. Nairn has not suffered from cuts although some Supervisor roles had been reduced. There has been a spate of vandalism in the Fishertown area.

Matters Arising From Previous Minute Not Otherwise On Agenda Election of Chair ~ C. Cllr Harry Thompson was proposed by Dick Youngson and seconded by John Mackie, at this point the retiring Chair John Mackie stood down and handed over the Chair to Harry Thompson. Election of Vice-Chair~ C. Cllr. John Hart was proposed by John Mackie and seconded by Dick Youngson. Election of Secretary ~ C.Cllr John Mackie was proposed by Dick Youngson and seconded by Martin Ashford. Election of Treasurer Dick Youngson was proposed by John Mackie and seconded by Martin Ashford. Co-option ~ Martin Ashford and Dr. Alistair Noble were co-opted onto Nairn Suburban C.C. with full voting rights. Proposed by John Mackie and seconded by Dick Youngson. Chair’s Report Sandown Lands Inquiry ~ said there was little happening at the moment, page 20 - June 2010

we probably wont hear anything till after the General Election. He thanked John Hart and Nairn Concerned Residents Group for their presentation to the Inquiry and also Dr’s Alistair and Joan Noble for their contribution on behalf of the local community.

Community Council Consultation John Mackie & Martin Ashford will carry on with the consultation process. There will be a meeting of the Nairnshire C.C.’s on Tuesday 4th. May 2010 at 7pm in the Courthouse. There followed an open debate on the Highland Council’s Proposed Cuts consultation. The meeting agreed, generally, that while the Swimming Pool had grabbed the headlines, and consequently the public attention, there were many other important services facing cuts. Bus Services to and from the Hospital were identified as potential problem, leaving some out-patients and people attending GP Surgeries with no option but to pay for Taxi’s or walk.vDr. Noble commented that the available resources needed to be identifiedvand the various transport options rationalised. Treasurer’s Report C. Cllr. Dick Youngson reported that our current balance was £231.57. He also reported that a subcommittee from the Nairn C.C.’s was being formed to deal with local planning issues that affected Nairn, and not just in the C.C. areas involved. that this joint committee should look at “joined up thinking” in respect of roads and not just building. C. Cllr. John Mackie commented that NSCC still had not officially been notified about a planning application in respect of the former Convalescent Home. Oral or Tabled Reports from Local Authority Councillors Cllr. Laurie Fraser told the meeting that THC were to meet Bear Scotland on Monday 3/5/2010. Cllr. Fraser will also look into the reason why no notification for the Convalescent Home was forthcoming. CC Committee Reports Planning/Environment Very few Planning applications have been received. Roads/Community We would like to know just what Bear Scotland intend doing in the work scheduled for the A96 Tradespark Road/ Delnies area during May. Health/Education C. Cllr. A.
