PASTORAL LETTER & CHURCH MEETINGS

Have you ever thought about the fact that we have to tackle a number of years simultaneously? There’s the school year, the financial year, the shopping year with summer and winter sales and the poor neglected church year. In a sense, we live in all of them and keeping our feet planted in each reality is no easy thing. All too often we only remember that the church has a year when we look at the order of service on Sunday and try to figure where we are - whether it’s Easter, Remembrance, Advent or Christmas Advent, which starts at the end of November, is the beginning of the Church year and yet, to my mind at least and despite an array of advent calendars on sale, the Christian year presents the greatest challenge because it reminds us that we are citizens of another place and that we owe our allegiance to another ruler. And this poses a problem and a challenge. Think about it, there is little doubt that, in an era of secularism, people of faith can perhaps be regarded as rather eccentric. But we do have a

faith to proclaim and it is no private, personal thing and because we are citizens of the kingdom of God we would want to love and care for those around us for Christ’s sake. We want to let the world know that, through Advent, we look forward to Christmas because we are remembering the coming of Jesus as the greatest gift to the world. Advent then is a time to be subversive because we work and pray to transform what is into what shall be. Advent sets our sights on the miracle of Christ’s birth, that God came to us as a helpless child. This vulnerable God walks with us, transforms our humanity and gives us the hope of resurrected life in a new heaven and a new earth. In the weeks that lie ahead, when our credit cards are stretched to the max, our feet exhausted with shopping, our over fed tummies cured with gaviscon and alka seltzer and our nerves frayed with visits to relatives and friends, then perhaps we can rise to the challenge of Advent. We can be subversive by quietly taking a few minutes each day in holy

preparation. We can keep the spirit of Christmas by speaking the whispers of faith that come through the loving service of those around us; by taking a minute to say a prayer for those we love; by quietly sharing what we have with those who are needy and by cherishing our own. And you know if we do this, if we a take a couple of minutes each day to remember the baby who is King, then I know our lives will seem different and our hearts will find the hope that never ends and the love that never fails Have a blessed Advent and Happy Christmas

I was delighted to be able to open the terrific new courts at Inverness Tennis and Squash Club, this Autumn. The work that members of the club have done to attract £104,000 worth of funding from various bodies, to replace the old worn out courts, deserves great credit. Remarkably, £70,000 of the money raised was gathered together by contributions from the 450 members alone. With the popularity of tennis on the rise, thanks to icons like Andy Murray, the new courts will be very well used and of great benefit to the area. Although my tennis isn’t of the highest quality, on the day of the opening I very much enjoyed a brief match with some of the club’s youngest members. I look forward to seeing the facility help many young tennis players reach their potential with the help of the club and contribute to the future health of the game. It's fantastic to see our local sports clubs going from strength to strength.

2013 has seen Scotland voted the best country in the world to visit - by the news organisation CNN. 2014 will see Scotland on the world stage hosting the Commonwealth Games and the Ryder Cup. Never have we hosted larger events, nor will there be more people watching us. An estimated 500 Million will watch the golf and 70 countries take part in the games. They are, of course, for young people particularly, so it was a great pleasure once again to judge the Millburn Academy Public Speaking competition and see so many articulate young people take part. 2014 I hope, for Scotland, will be a year of aspiration.

This really needs doing every year to avoid blunt or pitted blades tearing the grass rather than cutting it. Poor mowing is one of the main causes of grass browning off as the leaf tips are bruised by blunt blades. Often it is not worth paying to have the blades of lighter electric mowers sharpened as you can buy new blades as little as £10 or so. For smaller lawns, any of the many electric mowers are suitable (or push mowers are still available). Battery mowers avoid the cable problems, but are more expensive. If you use a cable, you should have a Safety Cut Out device at the socket. A petrol mower becomes more suitable for a lawn the size of a tennis court and perhaps a bit bigger. They are heavier, more expensive, but more powerful and should help with thicker, longer or even wet grass. If it takes you 3 hours or more to cut the grass, chances are you may be in ride-on mower country ! Whatever your lawn size, the best thing you can do over the winter is keep leaves off the grass. Prolonged covering by drifts of leaves will rot the grass underneath, and it may not recover next year. Chef’s Confidential Mandarin Orange, Thyme and Mint Mousse

INGREDIENTS 12 Mandarin oranges Grated zest of 1 lemon 2 Fresh lemon thyme sprigs 4 Large fresh mint leaves 1 Quantity pâte á bombe 1 Quantity Italian meringue 300ml double cream

Pâte á bombe 100ml Water 150g Caster sugar 5 Large free-range egg yolks Put water and sugar in a small heavy pot and slowly dissolve. Turn up the heat and boil for 5 to 7 minutes to 120°C.Whisk the yolks until pale. Continue whisking and slowly add the sugar syrup until it’s a thick foam. Italian meringue 120g Caster sugar 2 Tablespoons water 2 Large free-range egg whites Use the same method as pâte á bombe taking the egg whites to soft peak stage before adding the syrup. Whisk for about 5 minutes. For the mousse Grate the zest from 4 of the mandarins and lemon then reserve. Half all the fruit and squeeze the juice. You should have 500ml. Pour the juice into a sauce pan and add the thyme and mint, boil to reduce to 200ml Make the pâte á bombe and meringue and cool both. Strain the infused fruit juice through a fine sieve into a bowl. Stir the mandarin juice into the pâte á bombe until smooth and then fold in the meringue. Finally whip the cream until softly stiff and fold into the mousse. Divide between individual dishes or spoon into one large bowl chill until softly set.

Fairy lights aren’t just for your Christmas tree. You can use this lighting to create different atmospheres in different rooms. Perhaps drape them across a mantel piece or you could wrap them around old urns or statues for a subtle but effective look. Decorating the tree is the most important part. I tend to keep it light and simple, with my Christmas colours being silver and white and add lots of fairy lights, to give it that extra special Christmas twinkle. You can add pussy willow to all the branches which make them fan out.

One of the main things I associate with Christmas is scents and fragrance. The addition of scented Christmas candles is vital. Place them throughout the house so that you are constantly reminded what time of year it is. When you are sitting down to eat Christmas dinner, you want your guests to feel as though they are in a enchanted Christmas home. Use big bold accessories on the dining table to help create this atmosphere. I use big chunky napkin rings on simple linen napkins or and a large centre piece for the table. If you don’t want to put all your xmas cards up, get a big bowl and throw the rest into it.

PERU Peru was the home to the Incas, the most advanced civilisation in the world, until the Spanish conquered them in the early 16th century and took them in a totally different direction. It is now a democratic republic, with land varying from the arid plains of the Pacific coast to the peaks of the Andes Mountains and the tropical forests of the Amazon basin. Thus a 3 week trip to Peru is full of fascination.

We started in Lima, the capital city which rarely sees the sun or rain but is warm, and travelled down to Paracas to see the ancient Nazcar lines – large drawings in the desert best seen from light aircraft. Because Peru’s land is quite volatile an earthquake in the 1990’s exposed interesting geology which has been transformed into a National Reserve, and includes a boat trip to the Ballestas Islands – Peru’s ‘Galapagos’. The islands are covered in many varieties of birds and sealions, with penguins, pelicans and storks to top it off. Then we flew to Arequipa in the Volcano country, a city close to a live volcano, known as the ‘White City’ due to its volcanic Sillar stone buildings. The main features include several old monasteries and convents, and being on a river the countryside round about is very green. From there we went to the Colca Canyon which is larger than the Grand Canyon, and saw the bread basket of the Inca Empire – fields upon fields in the terraced format producing vegetables and fruit. In Cusco we saw a very fine, developed city, the capital of the old Inca Empire, and today a UNESCO World Heritage site. The Inca remains are extraordinary, and it is from here that we went to Lake Titicaca, staying on an island for 2 nights, and then on to Machu Picchu and the early morning climb up Wanapicchu, the small mountain behind the village. At 3,800m above sea level Lake Titicaca also has inhabited floating islands, accessed in reed boats, and ships on it built on the Clyde in the 1890’s and transported up to the Lake in pieces and reassembled. Finally we spent 3 days in the Amazon Jungle, going Caiman spotting in the evenings (small crocodiles) in motorised canoes, and walking through Nature Reserves seeing various types of monkeys, spiders, lizards and birds of all types followed by a spot of fishing for Piranha (caught 2!).

The hotels generally were of a very good standard and service was excellent – Peru is well geared for tourists, the Inca trails are fascinating, and the textile industry is alive and well with Vicuna and Alpaca as their fine fibres.

It’s that time of year again when everyone is cooking turkey but for this month’s recipe we are going to do seafood instead. Try this ultra cool fish dish and say stuff the turkey! Thanks to David and the team for inviting me back-let’s start a cooking revolution.

Seafood and Pumpkin Stew Sweet winter vegetables such as pumpkins and squash are intensely warming and great value. Here I have used them with shellfish – the flavours work perfectly together. 12 large raw or frozen defrosted shell-on prawns 2 bay leaves 10 peppercorns 10 parsley sprigs Small pumpkin or butternut squash 3 tbsp oil 2 tbsp mustard seeds 3 sprigs rosemary 250g firm white fish 8 scallops Peel the prawns. Put the shells in a large saucepan with the bay leaves, peppercorns and parsley. Add 1 litre water and simmer, uncovered, for 30 minutes. Peel and chop the pumpkin, and brown in the oil in a large pan. When nicely coloured, add the mustard seeds, brown for a couple of minutes, add the rosemary, then pour in the prawn stock through a sieve, discarding the contents. Season, simmer for 20 minutes then mash. Add the fish, cut into large pieces, then the prawns and just colour the scallops. Remove the twiggy rosemary to serve in deep bowls Keep Exploring, John
