PASTORAL LETTER & CHURCH MEETINGS Forgiveness! What could make 2015 a special year for you? Would it be lots of money, or more material possessions, or something a bit more substantial like a broken relationship being restored? Obviously, only God knows what the next twelve months will bring. Yet, there will be joyful moments for some people because there will be weddings and other happy occasions. There will be sad moments for others because people will die. In fact, there are some things that we are powerless to do anything about. Nevertheless, there are some things that we can all do something about – and forgiving others is something we can all do. If we are honest with ourselves – we know that getting hurt or being rejected can be very painful, but it will happen in life. Personally, I believe the best way to deal with it is to forgive those who have hurt us. Does that mean people should sweep their pain under the carpet and say it did not matter? Of course not, but forgiving is the only way to have peace. I have come across so many people over the years who have struggled to forgive others. I have seen people become bitter and even sick because they refuse to

forgive. On the other hand, I have seen people truly forgiving from the heart, and they have become free. For example, my brother-in-law, Reinhard Hirtler, has written a book called The Power to Forgive. In his book, Reinhard tells how he went through sexual and spiritual abuse, but he was only able to deal with the emotional torment when he forgave those who had abused him. It is easy to say these things in words, but it is difficult to put it into practice. It could be that you have been hurt badly by someone. They might never change; you might never forget; but if you want peace then forgiveness is the only way to have it. The main reason people will not let it go, is because they want to see the wrong put right. Sadly, the person that does not forgive is the one who truly suffers the most in the end. For example, unforgiveness is like drinking poison and hoping it will harm the other person! Now the Bible is full of stories of people who were able to forgive others. One of the best known stories is that of Joseph who was hated by his own brothers. They sold him off as a common slave, and Joseph ended up in prison. But God used those difficult circumstances to help bring the family together. At the same time,

Joseph ended up in a position of power, and he could have taken revenge on his brothers. After all, they rejected him; they betrayed him; and they robbed him of his family for many years. Anyway, Joseph saw pass all the pain and hurt - and he forgave them (See Genesis 37-50). How was Joseph able to do it? Well, Joseph trusted God, the righteous Judge, to make everything right in the end. Therefore, forgiveness is agreeing to live with the consequences of someone else's sin. You may say, ‘Well, that is not fair!’ Neither was it fair that Jesus, an innocent man, died on a cruel cross to forgive humanity. However, Jesus taught forgiveness in the Lord’s Prayer and in His parables for a reason. Some of the last words Jesus spoke were words of forgiveness: ‘Then Jesus said, Father, forgive them, for they do not know what they do…’ (Luke 23:34). If you want to make 2015 a special year, then forgive someone who might have hurt you!

Hopefully I will see you out and about - if, like me, you are doing any last minute Christmas shopping. Christmas is a time for families and friends to come together. We also think of those less fortunate than ourselves and those who cannot be with their families at Christmas. It is a time to extend an extra helping hand to them, such as checking on an elderly neighbour or supporting those who are without their loved ones this year. 2015 - Year of Food and Drink. Last year saw Scotland on the world stage as never before, with the both the Commonwealth Games and Ryder Cup being hailed as the best ever. But in Government one cannot rest on past laurels. Yesterday’s trophies soon gather dust on the mantelpiece. So, the new year comes with more opportunities and for tourism 2015 is The Year of Food and Drink. Two thirds of visitors to Scotland cite as a reason to return, our high quality food and drink. Our natural larder is second to none. And it is now "cool" to cook - young males want to emulate Andrew Fairlie or Michelle Roux! Changed days indeed. Why not make a challenge to yourself - a late new year’s resolution. Why not do your bit for the local tourism industry in Scotland and the 211,000 people who work in it. Holiday in Scotland this year. Surprise yourself by the enormous range of things we have to offer. You won’t regret it!

Our small team of 4 based here in the Moray Firth, will have a busy year ahead as we will have over 1,000 regular customers presenting us with their lawn problems. Sounds a lot, but we are a pretty small franchise up here though. GreenThumb across the UK will have 500,000 customers this year ! As we will be providing local monthly updates as the season unfolds through the year again in Spotlight Magazine, we thought it might be nice to let you see where we are based.

Although we don’t know exactly what the weather will throw at us this season, we have a fair idea what we will be asked to tackle. Highlights will likely include: Winter Months Moss and thatch; we will be aerating and scarifying all hours of the day to get through everybody before the Spring Weed and Feed Treatments start. Also look out for leatherjackets emerging (crane fly grubs) and eating lawn roots, sometimes causing devastation. Spring Months Weedkill and Spring fertiliser; we will want some decent weather to get lawns off to a good start. Many of you will remember the very late/non-existent Spring in 2013. Summer Months Mowing; best practice is never cut shorter than 1 inch. Mowing too close is the most destructive thing you can do to a lawn (usually a man-thing) and in particular encourages

moss to flourish ! June is when we will likely see the first signs of Red Thread fungal disease damage (wet summers are the worst). A repeat of last Summer would be good. Autumn Months Moss control treatments and winter feeds; we will want to get all our customers’ lawns ready for next winter, and most will want to think about aerating and scarifying outwith the growing season, either themselves or using us and our machines.

Chef’s Confidential

Beef Bourguignon Serves: 4 Preparation time: 15 minutes Cooking time: 2 hours Ingredients 2 tbsp plain flour

75ml brandy

1kg braising steak, cut into 2.5cm dice

750ml red wine

4–5 tbsp olive oil

1 litre beef stock

150g pancetta, cut into small cubes

1 bouquet garni (2 bay leaves, 2 sprigs of thyme,

1 shallot, peeled and finely chopped

2 sprigs of flat-leaf parsley)

2 onions, peeled and sliced

115g baby onions

1 garlic clove, peeled and crushed

25g butter

100 g French beans

Salt and black pepper

Method 1. Season the flour with salt and pepper and toss the beef in it. Place a large, non-stick frying pan over a high heat, add one to two tablespoons of olive oil and fry the beef for one to two minutes in batches, removing each batch from the pan when browned and placing it on a plate while you fry the rest, adding more oil as needed. (Too much meat in the pan at once will mean it takes longer to brown). 2. Add the pancetta and fry for one to two minutes or until golden brown, then tip in the shallot, onions and garlic and fry for a further two to three minutes or until browned. Return the cooked beef to the pan and mix well with the other ingredients. 3. Pour in the brandy and carefully set it alight to burn off the alcohol. Add the wine and stock and bring to a simmer. Add the bouquet garni, then cover and cook on a low heat for two hours or until tender and thickened. Alternatively, cook in the oven at 140°C/gas mark 1, for two hours, or in a slow cooker for three to four hours. 4. Half an hour before the meat is cooked, blanch the baby onions in boiling water for 30 seconds, then peel. Place a separate frying pan over a high heat, add the butter and a little olive oil and fry the onions for two to three minutes or until just golden, then add to the casserole for the last 20 minutes of cooking time. 5. Just before serving, check the seasoning. Spoon a generous portion of beef bourguignon on to each plate and a pile of creamy potato mash alongside, together with some green beans or carrots. Tips: The diced beef needs to soak in red wine over night. (You can use 250ml wine for marinade). The meat has to obsorb all the wine to get more tender.

A profile on John Hughs, Manager of

Caledonain Thistle FC Time flies when you're having fun and it's certainly the case for Inverness Caledonian Thistle manager John Hughes.

Spend any more than sixty seconds in the man's company and his beliefs and ideas for football teams to play the game in the correct manner will quickly be evident. Hughes wants his side to play football in a style that is just as attractive as the Highland scenery surrounding the Tulloch Caledonian Stadium.

The former Hibernian and Falkirk manager took over the reigns at the Inverness club a year ago taking over from Terry Butcher and made the move to the Highlands unsure of what to expect in his new surroundings.

That’s why it’s no surprise to see Caley Thistle once more towards the top end of the SPFL Premiership and aiming for an even higher position than last season.

Fast forward a year and like his predecessor, Hughes has settled nicely into the area and would even go as far to say he's in love with his new abode.

John Hughes and his team are looking to push on in 2015 and with the philosophy that the manager is implementing at the club, here’s to continued progress and success.

He's able to combine his biggest passions in the tranquil environment, cycling, golf and especially coaching football!!

Queen Victoria School Raising to Distinction Admissions Deadline 15th January each year Queen Victoria School in Dunblane is a co-educational boarding school for the children of UK Armed Forces personnel who are Scottish, or who have served in Scotland or who have been members of a Scottish regiment.
