fter a warm end to June, we can say with (near) certainty that summer has arrived. Whilst we definitely can’t predict the weather, we can predict an action and adventure filled couple of months in South Wilts. With the Larmer Tree Festival celebrating its 25th year, Salisbury Museum hosting its own Festival of Archaeology and the one day Gillingham & Shaftesbury Agricultural Show all happening over the next eight weeks, the party atmosphere created by the Salisbury Festival is set to continue. Larmer Tree boasts none other than Sir Tom Jones among its headliners, whilst the Festival of Archaeology will see talks from some of the biggest names in the field. The 2015 Gillingham & Shaftesbury Show looks set to be one of the best events ever, with a record number of trade exhibitors, attractions and entries too. All three are covered in this issue.

As well as events, the schools break up soon and with it there’s six weeks of summer holidays to look forward to. The festival returns this summer to celebrate its 25th year (14-19 July) with what promises to be its most exciting event yet. Comedy Club at the ARC stage. Headlining this year are Ed Byrne, Russell Kane, Sara Pascoe and Seann Walsh, ably supported by the eclectic talents of Kerry Godliman, James Acaster, David Trent, Alex Edelman, Gareth Richards, Rhys James, Carl Hutchinson, Stephen Bailey, Damian Clarke, Fin Taylor, Yve Blake and Mark Simmons.

armer Tree Festival delivers five magical days with its eclectic and varied blend of music, comedy and activities for all ages in the grounds of Larmer Tree Gardens, near Salisbury. Founded by Festival Director James Shepard in the summer of 1990, with an audience of just 100 people and 12 hours of music, 25 years on, Larmer Tree Festival draws in crowds of up to 5,000 a day for a 5-day extravaganza.

contemporary folk band Bellowhead both headlining. Other lead acts include Bill Bailey, acoustic guitar due Rodrigo y Gabriela, Femi Kuti & The Positive Force, Jimmy Cliff, and The Magic Numbers, all on the Main Stage.

After the Main Stage finishes at 11pm festival-goers can make their way to the new after-hours DJ venue tucked away in Lostwood. Set among the trees, The Hide is the perfect place to dance the night away. Also open until 4am, The Social is home to acoustic music and chilled out chatting by day, and by night late-night live acts and resident DJs.

It’s Show Time! A traditional one-day agricultural event, the Gillingham & Shaftesbury Show on Wednesday 19 August is a great family day out.

T

he Gillingham & Shaftesbury Show is one of the largest one day agricultural shows in the south, held on our own Turnpike Showground in North Dorset. This traditional show is always held on the third Wednesday in August and regularly has an attendance of over 24,000 people. The 2015 Show looks set to be one of the best events ever, with a record number of trade exhibitors, a great range of attractions for all the family and entries for the competitive classes being received at a record rate. With over 520 trade stand exhibitors there is an enormous choice available

and our Education Area will help to show how milk, meat and grain are produced on local farms and how it eventually reaches your table. In the Harts of Stur Food Hall there are over 60 producers of the finest quality food and drink, including a gluten free bakery specialist, local wines and cheeses, speciality Greek food providers, hot roast potatoes and a huge range of ready to eat foods. New to the Show this year will be the ‘Scare Crow Trail’ . Trade exhibitors are making up scarecrows that represent or promote their business. BARBECUE

Ingredients 2 x 200g Aberdeen Angus rib eye steaks ½ tsp olive oil ½ x 30g sachet Discovery Texan Fajita Spice Mix 4 soft flour tortillas 1 little gem lettuce, washed & sliced 4 tbsp tomato salsa 50g Cheddar, grated 4 tbsp soured cream 10g fresh coriander, stalks discarded

Serves 4

Method Rub the steaks with the olive oil and the spice mix. Barbecue them over hot coals for 2-3 minutes on each side until medium rare and seared on the outside. Set aside to rest for 5 minutes.

Trim any excess fat from the steaks, then cut diagonally into thin slices. Divide between the warm tortillas. Top each tortilla with lettuce, salsa, cheese, soured cream and coriander, then roll up. Serve immediately.

Using a griddle, dry fry the tortillas, one at a time, for 15 seconds on each side until lightly coloured. Wrap in foil to keep warm, and set aside.

Cook's tips Slice the cooked steak into smaller pieces and serve in warmed taco shells, adding the same topping.

LAMB KOFTAS & CUCUMBER DIP Serves 4 Ingredients 2 x 250g lean lamb mince 2 tbsp chopped fresh oregano 1 tsp ground coriander Grated zest and juice of ½ lemon 1 small cucumber, diced 150g natural yoghurt 1 clove garlic, finely chopped 3 tbsp chopped fresh mint 12 bamboo skewers Method Preheat the grill or barbecue. Mix together the mince, oregano, coriander, lemon zest and seasoning. Divide the mixture into 12 and squeeze around 12 skewers.

BARBECUE VENISON RACK WITH SAFFRON & ROASTED PEPPER COUSCOUS Serves 3-4 Ingredients 2 racks of venison, each with 3 or 4 ribs 1 tbsp chopped fresh rosemary 2 tbsp olive oil Grated zest and juice of 1 lemon 200g couscous Large pinch saffron 1 chicken stock cube 280g jar chargrilled peppers in olive oil, drained and cut into thin strips 25g pack fresh flat-leaf parsley, chopped

Method Place the venison in a large dish, add the rosemary, olive oil and lemon zest and juice and rub in well. Leave to

marinate at room temperature for 15 minutes. Place the couscous, saffron and stock cube in a heatproof bowl and add 350ml boiling water. Stir well and set aside for 5 minutes until the water is absorbed and the couscous is tender. Remove the venison racks from the marinade then barbecue them over hot coals or under a preheated grill for 10–12 minutes on each side until crusty and well browned but still pink in the centre. Leave to rest for 5 minutes before carving into cutlets. Stir the peppers and parsley into the couscous. Serve with the venison.

To make the dip, mix the cucumber with the yogurt, garlic, mint, lemon juice and seasoning. Grill the lamb koftas for 10–12 minutes, turning occasionally until well browned and cooked through. Serve the koftas in warm pittas with salad leaves and the mint dip. Cook's tips Soak the wooden skewers in water for 10 minutes to prevent them from burning.

ARUNDELLS 59 Cathedral Close, Salisbury SP1 2EN There is a sense of growth and renewal about Arundells, the home of former Prime Minister, Sir Edward Heath, which is situated in the Salisbury Cathedral Close. The 2015 season involves ambitious plans for a new exhibition space and for exhibitions on ‘Heath the Soldier’ and, from July ‘1965 – the year that changed Britain’, together with the inauguration of an annual lecture. This builds on important progress in 2014 when parts of the upstairs of the house were opened to visitors for the first time. These include Sir Edward’s study, which features a desk once owned by Lloyd George. Visitors were so appreciative that the house ended the 2014 season rated as Salisbury’s third biggest attraction by Trip Advisor – after the Cathedral and Close. Part of Arundells’ appeal is the fact that the great majority of the house is kept as it was when Sir Edward lived there – giving a unique insight to the man and his times. At the end of 2013 permission was granted for the house to remain open on a permanent basis and the

trustees have settled on a new plan to ensure financial viability. The house will be open from 23 March - 4 November. www.arundells.org

In the Swim

y wife recently completed the Hot Chilli Big T Sprint Triathlon. It was a great moment. She trained for it for months, doing countless laps in the pool, going out on her bike in all weathers (except rain and, er, strong winds so mainly sun and cloud) and pushing herself to run mile after mile. She was even doing something called ‘brick’ training, when you cycle a long way, come back home and then go off running immediately afterwards. She even had me join her once doing that. Oh. My. God. I assume it’s called brick training as

It was hellish. So when she completed said triathlon I couldn’t have been more proud of my girl. She even got a t-shirt with her name on it. Fantastic. I have to say my wife’s successes have inspired me – or at least brought out my competitive side. I too shall be attempting a sprint triathlon. It involves a 400m pool swim, a 25k bike ride and by a 5k run. I’m not too worried by the last two disciplines, I cycle a bit and do a lot of spin classes, and as for the run, well, I’m no Mo Farah but I’m no Mo Harris (EastEnders if you are wondering!) either. now a triathlete in her own right, maybe I would get some tips from her first…..not such a good idea! Wives teaching husbands (and vice versa) doesn’t make for the most harmonious of times. You start out with the best intentions but somewhere along the line it all becomes a bit fractious. The mildest of suggestions can be taken the wrong way and before you know it, what started out as a bid by one to help the other has descended into some kind of strange one-upmanship battle that can only end in tears…usually mine!! I have never been hugely confident in the water, although I did used to be able to swim much better than I can

now. We didn’t have a pool at school but used to go to the open air pool in Trowbridge quite a bit in the summer. My memories, though, aren’t of gliding through the water with grace and elegance. I’d usually be the one spluttering and coughing trying not to swallow the whole pool while simultaneously trying to breathe and spit out the rogue band aid that always appears sooner or later in a public pool. I have to persist though, I’m pretty sure you can’t complete a triathlon if you only do two of the events and I’m not sure the other competitors would allow me to bike or run the difference. And if I don’t complete it properly I also wouldn’t get the t-shirt with my name on it, which is obviously the whole point of doing it in the first place.
