SALISBURY FESTIVAL 2016 LINE UP Ockham’s Razor, Tipping Point

The Ageas Salisbury International Arts Festival has unveiled a taster of the 2016 Festival with a characteristically diverse cultural programme celebrating the very best of music, theatre, dance, circus, film, visual arts, literature and family events. 2016 will see the Festival look south to New Zealand, drawing inspiration from the island’s rich fusion of Maori, Pacific Island and European cultures. A curated mix of New Zealand’s finest artistic heritage from contemporary performers to Maori singers, filmmakers and storytellers, will run alongside the Festival’s unique programme of internationally acclaimed performers and homegrown commissions spanning new music, street theatre and dance. Following five-star triumphs at the Royal Opera House and English National Opera, conductor Christian Curnyn leads his Early Opera Company in an opening weekend

performance of Handel’s Acis and Galatea in the stunning surroundings of Salisbury Cathedral. Aerial circus company Ockham’s Razor presents its new show, Tipping Point, where the action veers from catastrophe to mastery as five performers transform simple five-metre metal poles into a rich landscape of images. Kapa Haka Tale is an evening of dance, theatre and music based on the enchanting Maori myth and legend Hinemoa and Tutanekai, one of New Zealand’s finest folk stories. Fusing the native Maori ‘kapa haka’ with contemporary dance, audiences will be transported to a stunning world of ethereal digital creatures and tribal Maori art, music and song with powerful and mesmerising choreography by acclaimed New Zealand choreographer Corey Baker. After a sell-out Festival debut in 2015, OperaUpClose is returning with a compelling new adaptation

of Carmen. and Shakespeare’s Globe Theatre will once again find home in Old Wardour Castle with a new production of The Two Gentlemen of Verona, a magical moment to enjoy the splendour of Shakespeare in this glorious English Heritage setting.

New Zealand circus artist Thom Monckton & Finland’s Circo Aereo will present The Pianist, a contemporary solo circus performance centred on, in, under and around the grand piano. To close the Festival, Salisbury Cathedral will provide the perfect backdrop for The Philharmonia’s performance of Elgar’s Enigma Variations and Vaughan Williams’ Tallis Fantasia, with New Zealander Benjamin Baker joining the orchestra for one of the best-loved violin concerti, the Tchaikovsky. These highlights represent just some of the music, theatre, dance, and circus to form part of the Festival. Festival Director Toby Smith says, “Having looked northwards to Scandinavia and last year to the Middle East, in 2016 we reset our artistic compass to take us to the far side of the world, to the islands of New Zealand. FAMILY FUN AT SALISBURY PLAYHOUSE MERCERS LECTURES The spring/summer 2016 season at Salisbury Playhouse has plenty to keep families entertained including adaptations of favourite stories and visits from renowned companies such as Little Angel Theatre.

February half term starts on Monday 15 February with Oliver Twist, the story of the little boy who asked for more. Presented in the style of Victorian music hall, Red Earth’s production of Charles Dickens’s masterpiece is packed full of surprises and brings Oliver’s story to life for children and grown-ups alike. This production includes integrated Sign Language and Captions and is suitable for those aged 8 plus and their families. Windibops is a rib-tickling new dance piece for families and children aged 4 to 100. The audience is invited into the Windibops laboratory on Wednesday 17 February to investigate flatulence and whether it has an impact on global warming. This comical, fun world combines dance, humour, strange sounds, smells and amusing characters to create an interactive world of dance and science

The Mercers’ Lecture Programme provides Dauntsey’s pupils and people local to the school with a great opportunity to listen – and contribute – to insights from some leading business and political commentators. The season continues in the new year and the school looks forward to welcoming guests for some lively discussions.

Celebrated puppetry company Little Angel Theatre visits on Thursday 18 February with Handa’s Hen – a beautiful show for 2-5 year olds. Based on the book by Eileen Browne, Handa’s Hen features 55 stunning puppets all created by hand for this brand new production. Easter sees the return of Theatre Fest West, the annual celebration of theatre from across the south west region which is now in its 5th year. The full Theatre Fest West programme will be announced in early 2016 and will include performances at Salisbury Playhouse, Salisbury Arts Centre, The Pound Corsham, Wiltshire Music Centre and Trowbridge Arts. History in a cook book Riverford founder GUY WATSON talks about his upbringing in rural Devon, an upbringing that would later inspire him to set up his veg box company.

M

y four siblings and I grew up watching and helping my father farm and my mother cook and garden. Growing, preparing and sharing food was the arranging force of our lives. My mother was a fantastic cook who drew her inspiration from the ingredients in the hedgerows, in the garden or on our Devon farm. She was deeply unfashionable: in the 1950s and 60s, as the nation emerged from the tedium of postwar food rationing to embrace the exotic (which came in tins, cans, jars and bottles), her cooking celebrated seasonality, provenance and tradition. We wanted Hellmann’s but she made mayonnaise from her own eggs, baked infuriating bread that crumbled under often-rancid home-made butter, and made her own bacon and preserves. On top of raising five children and countless calves and chickens, this was a feat that would have been feted by today’s foodies, though I suspect she would not have appreciated their attention. My father wasn’t from farming stock. He was restlessly experimental and, like many pioneers, frequently incompetent.

The farm was run from the kitchen table, giving us all a keen appreciation of the tribulations of business. We learned as much from his failures as from his triumphs, and watched as he lost faith in the post-war rush to intensive farming and sought a better way. Above all we absorbed his optimistic belief that anything was possible given enough determination. Six decades after he came to Riverford, after a little experimentation in the outside world, all five of his offspring are back on the farm. Ben, who runs the farm shop and a very creative production kitchen, two dairy farmers (Oliver and Louise), my sister Rachel is marketing director and me, still as obsessed with growing and selling vegetables 30 years on.

I started growing vegetables in 1986 with an ancient borrowed tractor, a wheelbarrow and a field next to our farmhouse. After 30 years of trial and error, Riverford now packs and delivers veg boxes across the country. It’s been a rollercoaster ride but it feels like a blink since I was picking ingredients from the garden with my mother, washing the mud from them and waiting hungrily for her to transform them into a feast for the family and farm staff. Be inspired to lose weight and feel healthier in 2016 with these great tasting healthy dishes, which come courtesy of Waitrose.

Spicy Wholegrain Bowl With Tomato & Avocado Serves 2 • Low in saturated fat • 2 of your 5-a-day Ingredients ½ tbsp olive oil 1 medium free range egg, beaten 240g pouch Organic Quinoa & Wholegrain Rice 400g can chickpeas, drained & rinsed 2 tomatoes, roughly chopped 1–2 tsp harissa paste 1 ripe baby avocado, skinned and diced 2 salad onions, chopped Juice of ½ lime

Add a splash more oil to the pan and stir-fry the quinoa and rice mix, chickpeas, tomatoes and harissa paste for 4–5 minutes until piping hot. Stir the cooked egg back in.

Meanwhile, roughly mash together the avocado, salad onion, lime juice and 1 tsp olive oil. Divide the spicy grain and egg mixture between two bowls. Spoon the mashed avocado on top, scatter with coriander leaves and serve warm. Cook’s tip Save any leftover grain and egg mix to make a hash. Simply serve alongside cold cuts, green leafy salad or your favourite grilled meat or fish.

Method Heat a splash of oil in a large frying pan. Add the egg and cook for a minute, scrambling until set. Tip out onto a plate.


Indian-spiced mackerel with carrot mash Serves 4 • Low in saturated fat • High in Omega 3 • Rich in Vitamin D Ingredients 1kg carrots, cut into 2cm pieces 1 tbsp sunflower oil 1 tsp cumin seeds 4 mackerel fillets, defrosted if frozen 3 tbsp Spice Tailor tomato, garlic & chilli chutney ½ cucumber, grated 7 tbsp low fat Greek style yogurt 1 lime, juice of half, half in wedges ½ red onion, finely diced 1 green chilli, deseeded and finely diced ½ x 28g pack coriander, chopped

Fragrant Beef Noodle Soup Serves 2 • Low in saturated fat • 2 of your 5-a-day Ingredients 100g rice noodles 2 x low salt beef stock cubes 1 small onion, finely chopped 3cm piece root ginger, peeled and thickly sliced 1 red chilli, seeded and thinly sliced 1 cinnamon stick 1 star anise 230g frying steak, trimmed of fat 150g beansprouts 235g green pak choi, thickly sliced 2 tbsp fresh coriander leaves 1 lime, cut into wedges, to serve Method Place the noodles in a large bowl, cover with a kettleful of boiling water and leave to soak for 15 minutes, stirring once or twice to make sure the noodles don’t stick together.

While the noodles are soaking, place the stock cubes, onion, ginger, chilli, cinnamon, star anise and 750ml boiling water in a large pan and bring back to the boil. Simmer for 10 minutes. Meanwhile, cook the steak in a non-stick pan for 2–3 minutes on each side, until nicely browned but still a little pink in the centre. Transfer to a plate, let it rest for 5 minutes, then slice thinly. Stir the beansprouts and pak choi into the broth and cook for 2 minutes or until the vegetables are tender. Drain the noodles and divide between 2 bowls. Ladle over the broth and vegetables then top with the sliced beef and coriander. Serve with lime wedges for squeezing over.

Method Preheat the oven to 200˚C. Toss the carrots with the oil and cumin, season and spread on a foil-lined baking tray. Roast for 40 minutes, until golden. Meanwhile, rub the fish with the chutney; set aside. Squeeze the grated cucumber to get rid of any excess water, then mix in a bowl with the yogurt, lime juice, onion and chilli; season. Remove the carrots from the oven and heat the grill to high. Grill the mackerel for 2 minutes on each side. Crush the carrots with a fork, mix in the coriander and divide between plates. Top with the mackerel, spoon over the yogurt, and serve with lime wedges.

Cook’s tip The steak can be swapped for 150g raw king prawns. Stir into the soup 2 minutes before adding the beansprouts and pak choi and ensure they are cooked through before serving. THESOUTHWILTSMAGAZINE

Feed the Birds

RICHARD CUMMING Managing Director of Orchard Park in Gillingham, explains how we can all do our bit to help wildlife through their most difficult time of year.

W

inter can be a difficult time for wild birds to fend for themselves with little or no natural food around; the last of the autumn berries have gone, the ground may be frozen and insects are scarce. As temperatures fall birds are using more energy fluffing up their feathers to stay warm and with the short daylight hours there is less time to search for food. However, we can lend them a helping hand!

Mixed seed feeders are great but can get dominated by larger birds that tend to frighten smaller ones away. Bird feeding stations filled with high energy food will give wild birds a greater chance of making it through to spring. Different birds like different food and the more varied the selection of food available, the more variety of birds you will attract into your garden. Peanuts will attract slightly larger birds such as jays, woodpeckers, tits and nuthatches, whereas smaller birds such as robins love meal worms. Goldfinches, siskins and chaffinches are all known to love niger seeds too – it pays to know a little about what birds like if you want them to pay you a visit. Mixed seed feeders are great but can get dominated by larger birds that tend to frighten smaller ones

away. One solution to this problem is to put the foods that attract the larger birds, such as peanuts, in a separate feeder away from the others. Just try to think of fluffy bunnies

o 2016 has arrived and with it thoughts of New Year’s resolutions. Traditionally this would be something you’d do (or not do) to make your life better. This year I have decided to make just one resolution; I’m not going to let the small things bother me. There is enough big stuff going on in and around my own little bubble at the moment, let alone the world, and I should relax and enjoy life a bit more.

What follows next is a short (and by no means exhaustive) list of the things that before the 1st January 2016 would have annoyed me. After this date they will cease to be a problem. I‘ll no longer grind my teeth, hold my head in my hands and generally be downhearted by them. I’ll ignore the frustration, think of fluffy bunnies - or something equally as lovely - and be uplifted and fluffy myself.

grab a handful of crumbs and scoop out the dip with my fingers. All very messy and very annoying. So much so that in a fit of pique I marched over to the bin and discarded the remnants. This, I thought after the event, is dreadful when you consider world hunger etc, but really, who in their right mind wants to eat tortilla chip crumbs as their means of sustenance?! That got me thinking about all the other supposedly inconsequential things in life that I shouldn’t get stressed about but do. If someone hands you a wad of cash…granted not something that happens to me everyday but still… if the notes are not all the same way round, that’s okay. When you get a decent amount of money from a cashpoint and they are higgledy piggledy, back to front and the wrong way round that, dear reader, is unacceptable. What do

As I got closer to the bottom of the bag I realised I was going to finish the dippable crisps fairly early on and be left with about a third of a bag of ‘bits’, leaving me to

people at banks do all day? Surely the minimum standard should be that the notes are all the same way round. The person who puts the money in should at least check. It’s just common decency. I hate to think how untidy their house must be!! When you go to the supermarket (with your money all facing the same

Next time you are in a supermarket keep an eye out for stuff on wrong shelves, you will be amazed how much there is. And what about inappropriate pop up adverts? The fact that these exist at all is a source of minor annoyance but when you want to watch a news video online of something serious, say a natural disaster or similar and because you bought a Monsters Inc. DVD three years ago Mike Wazowski pops up all green and happy and one-eyed trying to sell you more merchandise. It somewhat kills the solemnity of the moment. All these things are pretty small potatoes (sometimes found in the bin bag aisle lol) but, in varying degrees used to annoy me. Not in 2016 though... fluffy bunnies, fluffy bunnies, fluffy bunnies!!!
