f you are anything like me you’ll be constantly surprised at the speed at which the world turns - this is our final edition of the year! It’s hard to believe that the time has gone by so quickly. Fear not though readers, first there are two months of 2016 left to enjoy, and that includes some of the biggest and best events of the year, so sit back, grab a coffee and delve into the latest edition of The South Wilts Magazine!

Keen cooks will no doubt have been drawn in by our cover - now however you feel about Brussels Sprouts they are a lynchpin of the Christmas table, and Riverford have been kind enough to give us a recipe to make them totally delicious (or even moreso, depending on your view. Find that recipe, and others for a real festive feast, on page 14.

Christmas Under One Roof Set in the heart of the Wylye Valley, East Farm Christmas in Codford is a truly enchanting Christmas shop, and it’s open every day until 23 December.

Have an extra tasty Christmas dinner with the help of these stunning side recipes from Riverford - the perfect cook’s companion for the festive season!

Roasted Brussels Sprouts with Sage & Chestnut Butter You will make more butter than you need for this recipe, but it’s not worth making any less. It will keep in the fridge for a week or so, or can be frozen and sliced as you need it. Ingredients 500g Brussels sprouts, trimmed & cut in half olive oil, to roast

125g salted butter, at room temperature 100g cooked & peeled chestnuts, finely chopped 8 sage leaves, finely chopped Method Heat the oven to 190°C. Put the sprouts in a baking dish and toss in just enough olive oil to coat. Season with salt and pepper and roast for 20–30 minutes, until just tender but still with some bite. Toss once

during cooking. Meanwhile, put the butter in a large bowl and beat with a wooden spoon until very soft. Stir in the chestnuts and sage. Lay a piece of cling film on your work surface. Spoon the butter in a line down the middle. Fold the cling film over and twist both ends to form a taut sausage. Chill until needed. When the sprouts are roasted, toss with about six thin slices of the chestnut butter. Check the seasoning and serve.

Serves 4 as a side


Roast Potatoes with Lemon, Rosemary & Thyme Serves 6 as a side

Ingredients 1.5kg fairly waxy potatoes washed but not peeled, cut into halves or quarters, depending on size 2 lemons, cut into thick slices, plus an extra ½ lemon to finish 7–8 garlic cloves, unpeeled, lightly smashed 4 rosemary sprigs 6 thyme sprigs 4 tbsp olive oil Salt and black pepper

Braised Red Cabbage Serves 4-6 as a side A classic recipe for red cabbage braised with apples, this makes a wonderful accompaniment to game and roast meat. It’s worth making a big potful as it reheats very well; try the leftovers in a baked potato with a dollop of crème fraîche and some horseradish. Ingredients a good knob of lard, duck or goose fat, beef dripping or butter 1 large onion, finely chopped 1 red cabbage, quartered, cored & shredded 2 tbsp dark brown sugar 3 tbsp cider vinegar 250ml chicken or vegetable stock 1 tbsp flour 4 tbsp crème fraîche 1 tsp English mustard powder

2 apples (Bramley, if you can get them), grated Salt & black pepper Method Pre-heat the oven to 150°C. Heat the fat in a heavy casserole, then gently sweat the onion for 10 minutes, until softened. Add the red cabbage, sugar, vinegar and stock, season with salt and pepper, cover with the lid and cook in the oven for 1½ hours. Sift the flour and mix with the crème fraîche and mustard powder in a large bowl to a smooth paste. Remove the casserole from the oven, add the apple, then spoon in the crème fraîche mixture, a ladleful at a time. Return it all to the casserole and cook on the hob for 10 minutes over a low heat, stirring regularly to heat the crème fraîche. Check the seasoning. The fresh acidity of the grated apple should come through.

Method Heat the oven to 180°C. Put the potatoes into a pan of cold salted water, bring to a boil, then simmer for 10 minutes. Drain and let dry in a colander for a few minutes. Transfer to a roasting pan and scatter over the lemon slices, garlic, rosemary and thyme. Drizzle over the oil and toss together with your hands, making sure each potato is coated in oil. Tiz the Season to be jolly This year’s Tiz the Season takes place on Sunday 3 December from 11am to 4pm. Always a popular event over in Tisbury, there will be reindeer (supplied by the Somerset Reindeer Company), a mince pie eating contest, and more than 30 stalls from the Anonymous Travelling Market. It’s a small world after all

W

e have worked very hard this year. At least we think so and as we are self-employed ours is really the only opinion that matters! Due to the blood, sweat and tears expended a short, long weekend around Christmas time was in order….if that makes any sense at all!! If you are a couple and believe you deserve a holiday at this time of year you might be looking at some winter sun options. Something involving relaxing by the pool, drink in hand looking forward to eating fantastic,

having photos taken with, normally sane adults dressed up as talking cars, massive bears with a penchant for hunny, one eyed green monsters or a beautiful princess that falls in love with someone so ugly that his name is actually The Beast!! We will be transported, literally, into different worlds. Worlds of wonder and fantasy where everyone loves each other and nothing bad ever happens. What more could you want at Christmas?! As it goes, I am a bit of a fan of Disney. As long as you leave your cynicism at the turnstiles - and take your inner child in with you - it is

Yes, we have bitten the Disney bullet and bowed to the pressure of advertising, 25% off if you book early don’t you know, and are off to Paris for The Disney Land Paris Winter Spectacular Enchanted Christmas Light and Laser Show on Ice Dance Party Spectacular……did I use spectacular already? Oh well you get my drift! We are taking the child on her first plane flight (which could be an interesting occasion in itself ) and spending three whole days in the company of cartoon and film characters galore. I can imagine we will be chatting to, and probably

very easy to get caught up in the occasion and have an amazing time… Although at this stage I feel I should give you a warning. DO NOT go on the It’s A Small World ride after a few drinks….it is without question the most psychedelic experience you can have on this earth without actually ingesting any hallucinatory substances. If you don’t believe me have a look on YouTube; it’s freaky enough sober but with a few drinks on board it would be downright scary!! Slightly weird, stereotypical and mildly racist rides apart, the whole Disney experience - if you are with a child - is pretty uplifting. What I’m not so sure about is the amount of adults you see with no children in tow. Unless they have left their

charges alone with Winnie the Pooh, Cinderella, Lightning McQueen or Mike Wazowski (which I would imagine is frowned upon) then walking around, what is essentially, a gigantic kids’ playground wearing plastic mouse ears is just plain odd. And don’t even get me started on Disney weddings. Yikes. I’m hoping the whole experience will be a really lovely addition to our Christmas. Immersing oneself in the Disney world for a few days may not be everyone’s cup of tea but at this time of year, and with a child who is still pretty full of wonder, it promises to be a fantastic, family weekend… I just need to find my mouse ears!!
