W

iltshire has long enjoyed a close connection with the military. It can also not be denied that Salisbury and its surrounds has endured a tough old year. So it is fantastic that the city gets to play host to the national celebration of Armed Forces Day this June. There is a packed programme over the three days with a parade, air show, military demonstrations, live entertainment, fireworks and a concert as well as a barbecue for serving military personnel and their families. It should be a great event (p10). We also have a fantastic competition to win tickets to the Royal Navy International Air Day (p29). May is a fantastic time to get out and about in the countryside, and there are few finer sights this month than carpets of woodland bluebells. We explore some of the best places to find them over the coming weeks. For more things to do see our previews of Wylye Valley Art Trail and events at Arundells (p12) and a look ahead to this year’s Larmer Tree Festival too (p26). As well as all that, catch up with everything that’s going on in our great listings pages. Plus loads more of course. Enjoy!

ARMED FORCES DAY

Salisbury is set to host a spectacular three-day national Armed Forces Day event.

There is a packed programme over the three days, with Friday focusing on saying thank you to serving military personnel with a free barbecue for them and their families, followed by live entertainment open to everyone. On Saturday morning, the military will parade through the streets of the city centre, a spectacle expected to be watched by thousands of people, while at Hudson’s Field, the Saturday line-up includes an air show, military demonstrations, live entertainment and fireworks. Sunday focuses on veterans and young people – those who have served and those who may serve – with a commemoration and Drumhead service, supported by the Royal British Legion, with the Bishop of Salisbury and Padres leading the service. There will also be the opportunity to help break a world record by creating the world’s largest human poppy in the main arena.

THE 10TH WYLYE VALLEY ART TRAIL

ince its founding in 2001, the biennial Wylye Valley Art Trail has established itself as the largest visual arts event in Wiltshire. This year, in May, is the 10th Wylye Valley Art Trail. The largest and most exciting yet, with 87 venues, scattered across southwest Wiltshire, set in some of the most beautiful countryside this county has to offer, covering Warminster, Westbury, Wylye, Maiden Bradley, Mere, Hindon, Tisbury and villages in between.

Chorizo, asparagus & manchego tarts

Serves 4 Ingredients 320g pack ready-rolled lighter puff pastry, at room temperature 2 tsp milk 100g chorizo, thickly sliced

125g asparagus tips, each cut into 3 4 tbsp soft cheese 75g Manchego cheese, grated 90g pack babyleaf and rocket salad, to serve Method Preheat the oven to fan 200°C. Unroll the pastry on its paper and cut out 4 x 11cm squares. Using a sharp knife, mark a border 1cm in from the edge and score the centre. Transfer to a baking tray lined with non-stick baking paper and brush the border with the milk. Bake for 10 mins, until puffed.

Meanwhile, heat a griddle pan over a high heat. Dry-fry the chorizo for 2-3 mins, until crisp. Remove from the pan and drain on kitchen paper. Put the asparagus in the pan and griddle for 1 min. Flatten the pastry centres, then fill each with 1 tbsp soft cheese. Divide the chorizo and asparagus between each, then scatter over the Manchego. Return to the oven for 10 mins, or until the cheese has melted and the pastry is golden. Serve with something light, like a babyleaf and rocket salad.

These savoury tarts are simple to make and packed full of flavour. Golden, light-as-air pastry topped with smoky chorizo, nutty asparagus and creamy Manchego – baking in the oven makes these beautiful bites, which are perfect for picnicking, gorgeously gooey.

Roasted asparagus, purple sprouting broccoli & feta salad Serves 2 (as main) Ingredients 100g asparagus, woody ends snapped off 100g purple sprouting broccoli, any woody ends cut off 2 tbsp vegetable oil 85g bag watercress For the dressing 1 lemon, juiced and zested 2 tbsp honey or sugar 2 tbsp olive oil 1 tsp Dijon mustard 50g feta, crumbled

Crustless quiche with asparagus & peas Serves 4 Ingredients ½ garlic bulb, cloves peeled ½ tbsp olive oil 125g pack asparagus tips 100g frozen peas 4 eggs 200g natural cottage cheese 1 heaped tsp plain flour (or use

Meanwhile, make the egg and cheese filling. Crack the eggs into a mixing bowl and add the cottage cheese, flour, grated cheese, parsley and a little seasoning. Beat with a fork until well combined. Remove the dish from the oven, discard the garlic, and spoon the egg mix evenly over the vegetables. Sprinkle over the sliced spring onions and crumble over the salad cheese. Bake for 20-25 mins until set. Set aside to rest for 5 mins then ease a knife around the edges to loosen and remove from the dish. Cut into quarters to serve.

Method Preheat the oven to 160°C fan. Pour 2 tbsp oil into a roasting tray and heat it in the oven for 2 mins. Add the asparagus and broccoli, season and roast. Take the asparagus out (especially if it’s the thin, delicate type) after 5 mins, and broccoli after 10 mins. For the dressing, mix the lemon juice, zest, honey and a pinch of salt and stir to dissolve. Then whisk

Asparagus & peas with anchovy dressing

Serves 4

1 tsp Dijon mustard 1 tsp clear honey 1/2 lemon, finely zested and juiced 25g (1oz) pumpkin seeds, toasted A handful fresh basil leaves, chopped 1 avocado, peeled, stone removed and chopped 50g rocket Method Cook the quinoa following packet instructions with the hot stock until tender. Drain, fluff up with a fork and tip into a large bowl. Put a griddle pan over a high heat. Drizzle the asparagus tips with a little oil, then griddle until charred all over and just tender. Cut into bite size pieces and add to the quinoa.

Ingredients 2 eggs 375g asparagus, trimmed 100g fresh podded peas or frozen peas, defrosted 3 tsp red wine vinegar 1 tbsp extra-virgin olive oil 4 anchovy fillets, from jar of anchovies in oil, finely chopped A handful flat-leaf parsley, chopped Method Add the eggs to a pan of cold water, bring to the boil then cook for 8 mins. Remove from the pan and immerse in cold water to stop the cooking process. Cool, then peel and chop.

Quinoa with griddled asparagus and peas Serves 4 Ingredients 200g quinoa with bulgur wheat 900ml hot vegetable / chicken stock 125g pack asparagus tips 3 tbsp extra-virgin olive oil 150g frozen peas, defrosted

Cook the peas for 2 minutes in boiling water, refresh under cold running water and drain. Mix together the mustard, honey, lemon zest and juice, remaining olive oil and season. Pour over the quinoa and mix together. Add the toasted pumpkin seeds, basil leaves, chopped avocado, peas and scatter over rocket. Mix gently and serve immediately. South west of Marlborough, West Woods is a very extensive expanse of beech woodland and becomes very popular in late spring thanks to its fantastic displays of bluebells, which carpet the forest floor. DUNCLIFFE WOOD

This large woodland stretches over the double summits of Duncliffe Hill like a saddle as they rise out of Blackmoor Vale. Lying 3 miles west of Shaftesbury, its prominent setting ensures it can be seen for miles around. The surrounding landscape is characterised by sweeping valleys and rounded hills with a dominance of woodland on the scarp faces. The site is well known locally for its spectacular

Just a mile from Chippenham, Mortimores Wood is a small area of ancient woodland with a recorded history extending back over 800 years. This year, as part of their Floralia festival, look out for stunning floral arrangements, Roman symbols of fertility and stories of Flora in the temples. Their gardeners will be leading free tours every Tuesday and Thursday afternoon throughout May and June. Spaces are limited and available on a first come, first served basis. Book on arrival at visitor reception. Another part of the Floralia festival offers visitors the chance to make a spring wreath in a workshop led by professional florist Sarah Pettigrew. Workshops take place on 21 & 28 May as well as 4 & 11 June, from 10am-12pm. Tickets cost £38 per person and must be booked online. This year Stourhead is also working with the Great Big Tree Climbing Company to offer climbing experiences, so you can see the Stourhead landscape from up high. The experiences are suitable for all over the age of 6 and each session is run for up to 8 people, creating a unique and intimate experience. Travel from the pretty village of Sandy Lane with its thatched cottages towards Lacock and you’ll be greeted with beautiful displays of bluebells in Wheelers Wood as you descend Bowden Hill towards Lacock. A

s I write it is 3.30 in the morning and you’d think I would be a bit hacked off and grumpy that I’m up at this time working. I am tired, definitely, but I have come to a realization over the past few weeks which means that it is okay to be up at this ungodly hour. The reason I am up is that my 18 month old son had a nightmare and had to be consoled, by my wife admittedly, but it woke me up sufficiently to not be able to get back to sleep. then was pretty chaotic…let’s just say I quite liked a party…and I’m not talking about the ones I attend these days which generally involve cake, a children’s entertainer and a party bag when you leave. Actually they’re not so different after all!! The point being that once I met the love of my life…my wife obvs…things started falling in to place. Don’t get me wrong she also loved to party but although she is quite a lot younger than me she is soooo much more mature and helped steady the ship enough so we could think about having kids. The idea of which I had pathologically despised up until then…something to do with not being able to look after myself let alone a child I think! We had around six years together, in which time we had ordered some of the chaos and got ourselves into certain routines that we liked and

My perfect place, my hole that I fit into, if you will, is exactly where I am at this moment. More specifically to be a husband and father. It’s not always fun, especially at 3.30am or if there is a Code Brown (as we call a severe nappy situation in our house), or a myriad of other things that can happen when you are a parent but it is where I was destined to be and where I am happiest. I didn’t meet my wife until I was in my early forties and my life up until

reached a certain level of peace and tranquility…then we had our first child and all the chaos returned but in a much more adult way. The responsibility for that helpless little human just takes you over and before you know it they are the centre of your being. We now have two children and they are both in equal measure frustrating and amazing but the thing that is most enlightening is that I have realized, for the first time in my life, that I am quite good at something. There is still lots to work on, especially at being

a husband, but it seems that I may have actually found my niche. So if I have to get up in the middle of the night, if I have to watch a film for the tenth time in a week, if I take my little girl to her rugby training with bright, sparkly, blue plastic jewel still stuck to my forehead, as I did last weekend, that’s okay because it’s all part of it and it’s where I am supposed to be. Not only that but I get to share it all with my beautiful, lovely wife which is probably the best bit…as long as I don’t hear the words “Phil we have a Code Brown in here!!!” coming from the baby’s room…Then she’s on her own!!!
