June // WELCOME The Queen’s Diamond Jubilee gets June off to a flying start and will mark the beginning of a summer of celebration here in the UK. With so much to look forward to, we at The West Wilts Magazine, are shaking off the economic blues and embracing what should be a great few months. With the weather on the turn, we’ve taken a look at some of the best places to eat al fresco in the region (p21) too, and our

list includes some of the greatest establishments in the region. Another thing the warm weather does is makes us head back into the garden, which, given our chilly spring, didn’t get as much attention as was required. If you have some catching up to do head to p56 for a comprehensive list of gardening

Paintball is still the most popular activity. Shakespeare LIVE!

T

welfth Night has always been one of Shakespeare’s most popular comedies, combining romance, confused identities, music and plenty of laughs. The self-centred, selfdelusional Malvolio, the love-struck Orsino, and the beautiful Countess Olivia who cannot love him back, are all living in an artificially-heightened self-indulgent emotional state. As genders cross and confusions abound, it is the shipwrecked stranger Viola who leads them all towards self-awareness and, for some, true love. Shakespeare Live, now in their 23rd year, are presenting the play outdoors at Lackham House, Lacock, for seven performances from Monday 9th July to Saturday 14th July. Set in 1600 - with the gorgeous costumes that allows - the company will, as Feste sings at the very end ‘Strive to please you’ with a fastmoving, clear and vibrant production.

Performances are at 8pm each evening with a matinee on Saturday at 2pm. However, the lovely grounds of Lackham House are open from 6.30pm (12.30pm for the matinee) so audience members can bring picnics, take advantage of the licensed bars, buy homemade burgers, cakes, smoothies and ice creams, or buy in advance

I

n the dark months of 1998, a few regulars at The George, Woolley Street sat together and talked about things to look forward to. The George was a music pub then, as it is now, and it did not take long for the idea of a Woolley Festival to take shape. The first festival took place in a local field adjacent to Woolley, over a Friday night and Saturday in July 1999.

The festival proved instant hit, drawing in not only the Woolley community but the rest of Bradford on Avon and the surrounding area. The musical offerings over the years have varied, with the key criteria for band selection being local connections and a sense of fun! There has always been entertainment for children and their families; a consistent

theme of coming together to celebrate at a community event. In 2010 the festival returned to the field in which it all began (in the fields of The Woolley Grange Hotel) and it now has an even more varied line up than ever. As always there is an Acoustic Stage and an Electric Stage, with two acoustic

Meet the Chef The Bell on the Common in Broughton Gifford has been a West Wiltshire staple for many years now. Wayne and Helen Plummer took over at the back end of last year to carry on the good work so we thought a chat with the new chef, RoB PhilPoTT was in order... Ploughman’s is particularly good, but I suppose you would say our seafood. We get fresh fish delivered daily from Cornwall that is as good as it gets, and it always finds its way onto our specials board. There is seldom any left at the end of service! What advice would you give anyone interested in a career in food? You have to be passionate about cooking. Once you have this passion you have to be able to keep it too and if you can then you won’t go far wrong. You cook all day long, what do you do if you ever get time off? I like to go sea fishing and relax in the great outdoors when I can.

How and when did you first get interested in cooking? I was lucky enough to be placed on a school work experience at Salisbury Catering College; I caught the cooking bug and have never looked back really. How would you describe your style as a cook? I would describe my style as Traditional English with a hint of European and a dash of Asian! Who were your early inspirations? I had a great Head Chef that I used to work for at the Swan Hotel in Bradford on Avon. He was a huge inspiration. Where do you like to eat out in our area? There are a huge amount of great pubs and restaurants in and around 36 THEWESTWILTSMAGAZINE

rian and his wife, Isobel, started making sweet and savoury crumbles by-hand with local and seasonal ingredients in August 2011. They sell fresh crumbles at farmers markets in Somerset and Wiltshire and are now supplying a growing number of independent shops with frozen Yumbles. “Traditionally, frozen food has been seen as something of a poor relation to fresh products”, says Brian Noctor, co-director of Frome-based, Yumble Ltd, “but that’s all changing. CORNISH MACKEREL WITH LIME & CORIANDER Serves 2

Method Make 4 diagonal slashes across the mackerel on each side, cutting down to 42 THEWESTWILTSMAGAZINE

the bone. Place in a shallow dish. Make the rub by mixing the chilli, lime zest and juice, olive oil, coriander, garlic and a little sea salt. Place one-third of the rub into the cavity of each fish and rub the remainder over the skin. Cover, place in the fridge and marinate for 30 minutes-1 hour. When ready to cook, preheat the grill to high - or heat the barbecue, making

sure the coals are glowing red under a thin layer of ash before you start cooking. Place the mackerel on a grill rack, drizzling over any remaining lime juice from the rub, and cook for 6-7 minutes on each side until the skin is crispy and the flesh just cooked. Serve the mackerel with a fresh tomato salad and chunks of floury wholemeal bread.

recipes Ingredients 500-600g British Pork Spare Ribs ½ x 300g jar Hoi-Sin Sauce for Spare Ribs 2 tbsp clear honey 2 tbsp tomato ketchup 2 tbsp sesame seeds ½ x bunch salad onions ½ x 20g pack fresh coriander, chopped For the roasted potatoes 500g pack baby new potatoes, halved A spray of olive oil for cooking 1 tbsp butter

MANGO CHUTNEY WITH BARBECUED LINCOLNSHIRE SAUSAGES Serves 4 Ingredients 8 Lincolnshire sausages 1 large ripe mango 2 shallots, finely chopped 3 tbsp red wine vinegar 3 tbsp light brown muscovado sugar 1 tbsp black mustard seeds Method Preheat the grill or barbecue to a medium heat. Thread the sausages onto 4 pairs of parallel skewers so they look like two rungs on a ladder. Barbecue or grill for 18- 20 minutes, turning once, until golden brown and cooked through.

CHINESE SPARE RIBS WITH HOI SIN SAUCE AND ROASTED BABY POTATOES Serves 4

Toast the sesame seeds in a small, hot non-stick frying pan for 2-3 minutes, stirring all the time until just golden brown. If cooking on a barbecue, make sure the coals are glowing red under a thin layer of ash. Alternatively, preheat the oven to 200°C, gas mark 6. Place the ribs in the foil on the barbecue or in the oven and cook for 30 minutes. Open up the foil and cook for a further 25-30 minutes until the meat is thoroughly cooked. Meanwhile, spray the potatoes with oil and sprinkle with sea salt. Place in a large sealed foil parcel to barbecue, or on a baking tray to oven roast. Barbecue or roast for 30 minutes until the potatoes are tender. Pour any remaining sauce in the foil over the ribs and serve, scattered with toasted sesame seeds, coriander and half the salad onions. Top the potatoes with the remaining salad onions and serve with a crisp green salad of Romaine lettuce.

Meanwhile, hold the mango firmly on a board and slice down either side of the central stone to remove the 'cheeks'. Place the two sides, flesh side up and score a lattice into the flesh. Gently push out the skin from underneath and cut away the cubes. Remove and dice any flesh still clinging to the stone. Place the

mango in a pan with the shallots, vinegar, sugar and mustard seeds. Season, and cook over a medium heat for 15 minutes until tender, adding a splash of water if necessary. Serve the sausages with a generous helping of fresh mango chutney.

Method Place the ribs on a large piece of doublethickness foil. In a jug, mix the hoi-sin sauce, honey and ketchup and pour over the ribs, coating them well. Scrunch up the foil loosely and twist to make a sealed parcel. Marinate in the fridge for 1-2 hours.

When Lisa Rockliffe caught up with him to talk about the launch of the Bertinet Bakery at Neston Park Farm Shop and his new book, Pastry, he was, thankfully, required to wear just two of them... W

hen I meet Richard Bertinet on a sunny morning at Neston Park Farm Shop the café is its usual level of busy, serving teas, coffees and yummy mid-morning snacks to the masses. And so it is, across the gentle hubbub of conversation, stirring spoons and clinking china that we converge. The reason for our meeting is twofold - the first item on the agenda is the new range of Bertinet Bakery breads now available in the shop; second, his new book, Pastry.

the produce from Bertinet Bakery is of the highest quality, and truly delicious. Richard is a great guy to have around too, he is full of enthusiasm, be it for his breads or our other local produce. Just last week he came along to see how things were going and before you knew it he had taken over and started a cooking class with the kids, teaching them about bread, showing them how to knead it properly. The children were enthralled, the parents delighted, and at the end they got to take warm bread rolls home with them. We couldn’t ask for more, though I doubt he’ll be available every week!”

As of the end of April, a new dedicated bakery area is in situ at Neston Park. Basic white and brown loaves for sandwiches and toast sit alongside more specialist loaves like his award winning sourdough. How though, I wonder, did the partnership between The Bertinet Bakery and Neston Park Farm Shop come about? “Well I’ve been shooting here for about four years, and so have gotten to know Venetia (Lady Fuller, the Estate and Farm Shop owner) very well and it evolved from there. Fairly recently we opened up our bakery in Bath and for me this place is just perfect, and hopefully it is ideal for those who can’t make it into Bath. Here we have a wide selection of Bertinet Bread and some of our pastries too, including the almond croissants, which everyone seems to love! Over the coming months look out for some new lines designed to complement Neston Park’s meats and using produce from the Estate. We are hoping to keep developing the relationship over time, as yet it’s early days but it’s exciting.”

And so to Pastry. This is Richard’s fourth book; his most famous thus far has been Dough, which to date has sold more than 100,000 copies and has been translated into eight languages. In that book, Richard shaped his recipes around learning five different types of dough, the mastering of which then leads on to the cook being able to make a variety of different breads. How does Pastry compare? “It’s very similar to Dough in that I talked about the simple pleasure of making bread and went back to basics, teaching you how to make three or four good types of dough and go from there. With pastry, and we’re not talking patisserie here, we are talking pastry, it’s about learning three or four different types of pastry; getting confident with those before they progress to more complex dishes. We make a salted pastry, a sweet pastry, a choux pastry and a puff pastry. That’s

Before speaking with Richard, I asked Lady Fuller how the new breads and pastries had gone down with the Neston Park crowd. “We couldn’t be more thrilled. First and foremost all of 46 THEWESTWILTSMAGAZINE

So Richard is all about the fundamentals. Why this approach? “Well, so often cooking is about confidence. You have to enjoy being in the kitchen, enjoy the nature of cooking and then you can progress. So often amateur cooks will watch all this glamorous stuff being made on television or in magazines and they can’t do it. I hope that this way we can give people the confidence that you get from having a firm footing and they can go from there. It’s like anything. You have to learn the basic principles of driving in the first instance. The Bertinet Kitchen opened in September 2005 in the centre of Bath. Having been teaching amateur cooking enthusiasts for many years, Richard brings this approach to the book. He is a natural teacher, and it is evident in the style of the book. “In Pastry, the recipes are given in a step by step format with pictures, and it all links back in with videos from our website so that you can look at those too and see how each aspect is done. What’s great is that some of our customers have already bought the book and we’ve had some great feedback. They’ve been trying it out at home. They’ve been sending me pictures and they’re just as good as mine! That’s what makes it worthwhile for me. I love teaching. From the moment we started back in 2005 I really enjoyed it, and I can’t imagine ever not doing it.” Originally, Richard hails from Brittany. This gives him an interesting insight into the

skills and at how those basics had disappeared? “I think the skills are still there but they are dormant. The artisans are all out there, the bakers, the cheesemakers and so on, but it’s all about demand. What is heartening though is that demand for good food is coming back, and there are outlets for it in places like Neston Park Farm Shop. People want a higher quality of those basic things, they want good bread,

“the South West is like the larder of England; it’s a particularly great place to be.” good milk, good cheese, good meat and good fruit and vegetables and as a result we are seeing those skills return and these wonderful products are springing up.” And how do we compare with our friends across The Channel? “Oh, we eat much better here than in France. You can stop in so many pubs around here nowadays and get great food. In France, you stop by what you think will be a great little bistro serving regional food and it’s just sh**e. It drives me mad!” Do my ears deceive me, does a Frenchman think his country’s food standards have slipped?! And what has brought this about? “If you ask me, I think it’s since we joined Europe. Since then the labour laws mean you can only work a certain number of hours a week just 35 - it’s unworkable. You cannot run industry, a farm or a kitchen on 35 hours a week. So people cut corners, and if you cut corners you lose skills. Don’t get me wrong the skills are still there, just as they are in England, but we are seeing a revival here now that has taken England ahead in my opinion. And the South West is like the larder of England; it’s a particularly great place to be.”

HOW DID LOVEJOYS COME INTO BEING? The wholesale business gradually built up by itself from people seeking out local produce in our retail shop and asking me to supply their restaurant, hotel, school etc.

DO YOU HAVE A FARMING BACKGROUND? I went to Pershore Horticultural College and then came home to work on the family farm, responsible for growing 250 acres of vegetables and arable, at the time probably the biggest market garden in Wiltshire.

WHERE CAN WE BUY/TASTE YOUR GOODS? We are a wholesale business, we mainly supply fruit and vegetables, local when in season, but also supply milk and cheese from the local area. You can find our produce in farm shops and village shops like Freshford, Steeple Ashton, Hinton Charterhouse and Hartley and Neston Farm shops, Prior Park Garden Centre in Bath.

DO YOU SUPPLY ANY LOCAL EATERIES? We supply many of the best restaurants in Bath and West Wilts. Too many to name! Most of them have our mission statement on display as they know that

their customers care where the food they are eating comes from! Just ask if we supply them!

WHAT’S THE SECRET TO YOUR SUCCESS? Growing ‘organically’ (excuse the pun!) has been the best way to grow the business - by word of mouth. A service we pride ourselves on as being second to none is highly valued by our chefs and hopefully they spread the word that we are reliable and that they can depend on the quality. I know all my chefs by name and they can all contact me personally at any time and I will regularly pop out and see them.

WHAT DO YOU LOVE ABOUT BEING A FARMER/SUPPLIER? I used to love being outdoors all day in the fields, especially in the spring. My favourite bit was harvesting on the morning, knowing what we picked would be on sale that day! Although other people grow for me now, I’m still very in touch with the seasons and we grow many crops ‘to order’ after discussion with the chefs; in the last couple of years we have grown Heritage (old) varieties, pink fir apple potatoes, stripy beetroot and more recently mixed colour carrots, which our chefs cannot wait to get hold of! I also like eating out

I have two! The unsung heroes in my mind are the growers at one end - they get up early in the morning and harvest so I have their goods fresh to send out on the same day. They work out in all weathers, irrigating in the heat and getting soaking wet and cold in the rain and wind. Having done it myself I feel they are taken for granted. The other food heroes are my chefs, whether in a school cooking interesting meals for children, in a care home, making food to tempt the elderly or in the finest restaurants - they are all so inventive and skillful and feed me back the knowledge I need of upcoming trends and best varieties for different uses - eg potatoes

DO YOU HAVE ANY SPECIAL EVENTS PLANNED THIS YEAR, OR ANY NEW PROJECTS? We are taking our chefs to one of our vegetables growers in June so they can see for themselves how hard they work to get the product right for them. Get in shape for summer There’s still time to get your body looking in great shape for the beach this summer. Here are our top ten tips to make sure you look great in your swimsuit...

Take up weight training Contrary to popular belief, the best way to burn fat is not the cross trainer. Next time you go to the gym, try doing squats, bench presses and dumbbell rows instead.

Take fish oil Fish oil has multiple health benefits one of which is that when taken in high doses it burns through body fat! For ease, take 2 tsp of liquid fish oil (a flavoured oil is recommended) three times a day with meals.

Try interval training To go with your new weight training routine, try some interval training on a static bike, rower or by running on the road or fields. This creates high levels of lactic acid in the body which has been linked to fat burning. Have a go at doing 250m on the rower as hard as possible, then go easy for 250m, repeat this process until you have completed 3000m. Similar protocols can be applied to the bike or running.

Drink more water Try gradually increasing your water intake up to 3 litres a day. This will instantly put your body in a better state of health, meaning you can burn through fat much quicker. For even better results, drink bottled mineral water, not tap water.

Eat your greens Green vegetables will provide you with a high dose of antioxidants along with vital vitamins and minerals. This will make you healthier overall and contribute to you getting leaner.

Sleep better Easier said than done, but simply making your room as dark as possible and taking some magnesium before bed can help you fall and stay asleep. (Consult a doctor before taking any supplements). Your body regenerates during sleep, meaning anything you do will have a better effect.

Take time out Life is hectic these days. Stress is a major contributor to fat storage, especially around the tummy. Try to take 10 or 20 minutes a day just doing something you love, so you can unwind and relax.

Reduce dairy & gluten intake A surprisingly high number of us are gluten or dairy intolerant. Try removing them from your diet and see how you feel - many of you will see a dramatic improvement in the results you get, and you’ll feel a lot better too!

Scratching a twitch

D

id you know there are flamingos in Wiltshire? How about golden eagles? Well according to my younger self both of these breeds and many more exotic birds were alive and well and living in Southwick, unknown to Bill Oddie and his fellow twitchers. I had a book into which I would tick off sightings of different breeds. This was because I was (and still am) a bird watcher. It seemed to me that the object of the exercise was to try and fill up my little book as soon as possible. What kind of person - by the way - puts breeds of birds into a book for seven year olds they have absolutely no chance of seeing?! That’s called setting people up for failure from a very early age…that can affect a person you know. I’m not, however, a twitcher. A twitcher, as far as I can see, is a rather unbalanced version of a bird watcher. If I happen to be on a walk along the canal and a bullfinch flies across my path that’s great. A sighting of a bird that’s becoming rarer by the year is welcome at any time but I’m not about to pack up all my gear and

decamp to the Outer Hebrides and stand in the cold and the rain for hours to catch a glimpse of a bird who’s only there because it’s migration radar doesn’t work very well. Can you imagine, by the way, expecting to be wintering in Barbados and ending up on the windswept shores of The Hebrides… you‘d be most disappointed. “I don’t remember this being in the brochure?” I’m a big fan of all birds and of course I‘d love to, at some point, own some chickens. The unfortunate thing is that my wife has a phobia about birds. Apparently it’s the result of a particularly nasty childhood experience at Bristol Zoo, involving some ‘kamikaze’ penguins. I’m told it’s the beaks, size and the eyes that are relevant. Ducks, for instance, are okay as they have rounded beaks but swans, although they also have

I find myself crestfallen at times when I’m relating a sighting of, say, a yellowhammer only to be answered with, “That’s lovely dear, oh by the way we need to clean the oven this weekend”. Sadly I think this will be a lifelong, solitary interest but that’s okay. I’ll just have to keep the excitement of seeing a Californian condor gliding on the thermals over the White Horse to myself.
