elcome to our first edition of 2018. As I write the last rites are being read to 2017 and, as seems the norm these days, it went all too quickly. Mustn’t grumble though, there’s much to look forward to in 2018, not least this brand new edition of The West Wilts Magazine! Those looking to get the new year off on the right fitness note will no doubt be drawn to our New Year, New You feature (p63). It covers all aspects of health and wellbeing, and also includes a competition to win a spa day for two at the wonderful Spa at Woolley Grange - see p69 for details! As well as looking after ourselves, many of us also need to consider the health and wellbeing of a loved one. Our retirement planning feature (p37) covers all aspects of later life, from financial planning to care homes and even funeral plans. Finally, be sure to make a beeline for our interview with comedian Ed Byrn, where we discuss his new tour, Spoiler Alert ahead of his appearances in the region later this month. As well as all that we’ve plenty of the usuals you’ve come to know and love, including a wordsearch that hopefully works this month (sorry about that!). Enjoy!

BANFF MOUNTAIN FILM FESTIVAL RETURNS TO THE UK

The Banff Mountain Film Festival World Tour is returning to the UK for 2018, with more shows and more venues than ever before. The tour features two different collections of brand new adventure films, starring the world’s top explorers on mind-blowing journeys in wild and remote parts of the globe. “This is the first time we’ve topped 100 shows in the UK and Ireland, which is really exciting!” says Tour Director Nell Teasdale. “UK and Irish audiences have a huge passion for adventure, so we’re delighted to be able to share these amazing films and their intrepid characters with wider audiences and even more venues. BRADFORD ROOTS FESTIVAL 2018

For the sixth year running Wiltshire Music Centre hosts the popular Bradford Roots Music Festival. On 20 & 21 January, the Centre will host performances by over 50 musical acts plus workshops, family fun, dance and magic, celebrating the very best in local talent. Following the success of last year’s food marquee, the festival will again be catered by Hartley Farm Shop and Kitchen and Box Steam Brewery, who will be selling their ales. The line-up for Saturday is headlined by Bristol-based singer-songwriter Sam Brookes, one of alt-folk’s best kept secrets with over 10 million streams on Spotify. Also performing will be Verdisa, a six-piece inspired by Jimi Hendrix, bluegrass trio Feral Beryl and Wiltshire’s own reggae outfit TrainToSkaville. For the first time this year, Bradford Roots welcomes the talents of magician Ben Woodward, a veteran of Covent Garden whose charisma has captivated audiences from Hokkaido to Hollywood. St Margaret’s Prep School’s Headmistress KAREN CORDON explains how teaching ‘mental toughness’ is having incredible results.

n 2015, after a great deal of research and debate, we introduced a targeted approach to learning, across the whole school, enabling pupils to understand how they learn best and encouraging them not be afraid of making mistakes. This coincided with taking part in a large research project organised by the Independent Schools Council (ISC) into Effective Learning Skills, which can also be referred to as mental toughness. We were confident that by encouraging our children to understand ‘how’ they learn and develop, they would not only do better in examinations but also have a growth mind-set that would set them up to succeed in later life.

Wiltshire Music Centre celebrates 20 years

W

iltshire Music Centre is celebrating its 20th Anniversary in 2018 with a host of special events and activities. The nationally recognised concert hall is also launching a fundraising Appeal to raise £100,000 to support its future. “Wiltshire Music Centre has come a long way in the past 20 years” explains Maud Saint-Sardos, the Centre’s new Chief Executive, “But what hasn’t changed is our commitment to supporting young people in their musical journey. Across 2018 we’re going to be celebrating in style.”

The centre will be fundraising to support its education programme to take musicians into local schools its two county-level youth orchestras to France, as well as the funds to install new LED lighting in its auditorium. A busy first year for the HUBnub Centre

E

d and Io Fox-Roberts have beautifully restored the former United Reformed Church in Frome to create the HUBnub Centre, a Community Hub for Frome. In all this fantastic multi-purpose facility is home to the HUBnub Hall, Studio, HUBnub Gallery, the Rye Bakery café and the learning disability charity, the Openstorytellers. It really is a place to eat, learn, play and get together. The venue spaces are hired for a huge variety of weekly classes, events and performances. The centre aims to cater for all interests, opening their doors and welcoming people of all ages. Classes include yoga, pilates, sound healing and meditation, postnatal exercise, belly and hula hoop

ew Year is here! Now I am looking forward to the new growing season as the days slowly start to get longer and we have more light. Hopefully the weather will be kind like the last two growing seasons where we have seen some wonderful crops. Leeks and Savoy cabbage are plentiful and good at this time of year and they are a great reliable crop as they aren’t too affected by extreme weather. Another seasonal favourite is celeriac, which is now grown

in Bromham due to its popularity, something that could not have been guessed 10 years ago! It can be used in many ways and people are finally realising what a great taste it has and how versatile it can be. I like to mash it half and half with potato, give it a try if you haven’t already. It is a shame that the turnip is not more popular, I love the taste. My father always used to leave a patch and let it start going to seed. He would then harvest the turnip green. It has a very bitter taste and is well used by our chefs if we can get hold of it. As always please email me with any of your veg-related questions. Enjoy these delicious dishes that taste all the better for a little more time… They come courtesy of Waitrose.

Slow-Cooked Pig's Cheeks with Pea Tops & Seared Scallops Serves 2

Ingredients 6 pig’s cheeks, about 400g, or alternatively use a pork belly joint Seasoned flour 1 tbsp olive oil 75ml dark soy sauce 100g clear honey 300ml chicken stock 4-5 star anise 20ml Chinese rice vinegar 4 roeless scallops 10g butter 25g pea tops

Method Preheat the oven to 150ºC. Coat the pig’s cheeks in seasoned flour. Heat the oil in a flameproof casserole dish on the hob, add the pig’s cheeks and cook for for 1–2 minutes until browned. Add the soy sauce, honey, stock, star anise and rice vinegar. Cover and bake in the oven for about 3 hours until the pork is tender and falling apart.

Just before the pork is done, in a small frying pan, sear the 4 scallops in the butter for 2–3 minutes on each side or until golden brown. To serve, place the pig’s cheeks together in the centre of 2 plates, top with a handful of pea tops and 2 scallops, then lightly drizzle with some of the cooking liquid. THEWESTWILTSMAGAZINE

Hearty Beef & Beetroot Stew Serves 4 Ingredients 400g diced braising steak 3 beef stock cubes 1 tbsp plain flour 1 tbsp olive oil 2 onions, sliced 2 carrots, thickly sliced 1 cinnamon stick 180g pack Waitrose Sweetfire Beetroot Wedges, cubed Method Tip the beef into a large bowl then crumble over 1 of the stock cubes. Add the flour and toss together well until the meat is evenly coated.

Method Preheat the oven to 170ºC. Toss the pork in the seasoned flour to coat. Heat half the oil in a non-stick frying pan and fry the pork on all sides until browned. Remove with a slotted spoon and place in an ovenproof casserole dish.

Return the meat and any resting juices to the pan. Add the carrots, cinnamon stick and 500ml water then crumble in the remaining 2 stock cubes. Bring to the boil, cover and simmer gently for 2–2½ hours until the meat is very tender. Stir in the beetroot and cook for 5 minutes or so until heated through. Serve with mashed potatoes.

Heat the remaining oil in the pan, add the onion, celery and chopped garlic and cook gently for 3–4 minutes until softened. Add the spices and cook for a minute. Add the thyme leaves, dates, apricots and orange juice and wine. Season and bring to the boil. Pour over the pork in the casserole dish and place in the oven for 1½–2 hours until the pork is tender.

Ingredients 800g any stewing pork leg or shoulder 2 tbsp plain flour 3 tbsp sunflower oil 1 large onion, sliced 3 sticks celery, sliced 2 cloves garlic, chopped 1 tsp ground cinnamon 1 tsp ground mace 1 tsp mild curry powder 2 tbsp thyme leaves 100g soft dates, chopped 100g soft apricots, chopped Juice of 1 orange 500ml dry white wine 25g walnut pieces Chopped parsley, to serve

Heat the oil in a large saucepan and cook the meat over a high heat until nicely browned. Remove with a slotted spoon and set aside. Add the onions to the hot pan and cook for 5 minutes until softened and golden.

Ingredients 1 tbsp olive oil 600g lamb shoulder chops 400g pack vegetable and bean stew mix (find in the chiller) 2 tsp Bart Ras El Hanout Spice Mix 1 tbsp tomato purée 1 tbsp clear honey 100g soft apricots, halved Method Heat the oil in a heavy based ovenproof casserole dish; add the lamb and fry until golden on both sides.

Serves 4 Add the stew mix, spice mix, tomato purée and seasoning and pour in enough cold water (about 500ml) to just cover. Bring to the boil then reduce the heat and simmer gently for 1½ hours until the lamb is tender, stirring occasionally. Add the honey and apricots to the pan and return to the heat for a further 30 minutes. Serve with cous cous.

Cook’s tips At the end of step 1, transfer the meat to a slow-cooker dish. Add the stew mix, spice mix, purée, seasoning and 250ml cold water. Cover and cook on low for 6 hours or on high for 3 hours, until the lamb is tender. Add the honey and apricots, cover and cook for a further 30 minutes. Season again to taste.

d Byrne has been an acclaimed stand-up for 20 years. His success with shows such as the Roaring Forties, Different Class and the 1998 Perrier-award nominated A Night At The Opera led to him appearing on the box in the likes of Mock The Week and Father Ted, while his love of hillwalking resulted in him writing a regular column for The Great Outdoors magazine. The first time I used one I was fine, though I think it worried my parents that I had bought a chainsaw.”

BATH MEN’S WALK

Coming this March is the Bath Men’s Walk, a charity fundraiser designed specifically for men, raising funds for the Bath Rugby Foundation and Dorothy House.

n Saturday 17th March, St Patrick’s Day, two local charities are hoping a record number of men and boys will take to the Kennet and Avon canal towpath in the sixth annual Bath Men’s Walk. Walkers will be supporting the Bath Rugby Foundation and Dorothy House Hospice Care. The eight-mile hike takes approximately two hours to complete. It starts with registration and refreshments at Dorothy House in Winsley at 11am and finishes at Bath Recreation Ground, the home of Bath Rugby. Of course, there will be an essential detour for refreshments at The George in Bathampton! Once at The Rec, walkers are treated to a live screening of two of the day’s Six Nations matches plus a free pie and a pint. Linking nicely with St Patrick’s Day, walkers (and Leprechauns!) will enjoy the craic of the England v Ireland match at 2.45pm, followed by the Wales v France match at 5pm. Apocalypse Now...

have witnessed Armageddon. Not actually of course but what I think would be a very close approximation of said apocalypse... I have had my first experience of non-term time Saturday morning soft play. When our daughter was under school age we could pick and choose when we went… Usually as early as possible and on a school day so it would not be too busy. There would be a few kids there for her to play with and a few likeminded parents to have a chat with if you felt the need to be sociable. To go to soft play at 10.30am on a Saturday morning is like entering the seventh circle of Dante’s version of Hell. If you have never been

Once you locate the child - who, of course, is having a great time and doesn’t understand what all the fuss is about - you then have to make the return journey, which is just as treacherous. You finally stumble out, red faced with hair all over the place, sweating profusely with a half eaten lollipop stuck to your forehead and you see someone from the school run looking as pristine as when they arrived… they’ve been messing with Facebook the whole time . . . probably!!
