s usual the weather can’t decide what it’s doing. After the longest build up in years, spring suddenly burst forth on us a week or so ago and everything seemed to come to life. So it seems the new season is here at last and we have to face the prospect of the spring clean! If your interior needs a revamp look no further than our spring interiors special, it has 18 pages of house and home inspiration, covering everything from the actual spring clean to building works and renovations - see p51 for details. With gardens now awah with colour there are a few gardening events to look forward to. The first is local, and involves a tour of the fabulous Walled Garden at Bowood (p44). The other is one of the highlights of the RHS show season the Chelsea Flower Show (p42). We preview them both. Away from homes and gardens our other main feature this month is on the Great British favourite - the Sunday roasts - read our guide to the best around (p21). CORSHAM WALKING FESTIVAL RETURNS FOR A FIFTH YEAR
The 5th Walking Festival, which runs from 8 to 10 June, is the largest so far with 27 walks in total. Walks cover from 1.5 to 20 miles, so there is something for everyone to enjoy.
They have some new walks and have fine-tuned some favourites. Walk leaders and experts will ensure you have a good day out in the fresh air. Themes this year will cover: manor houses, quarrying, wildflowers, railways, natural and local history

The free programme features the Children Treasure Hunt, Peacock Walk, Sustainability Walk, Mindfulness Walk and a Nordic Walking Taster. Taste of Corsham takes place on 16 June
Taste of Corsham (16 June 2018) is a delicious experience, set in and around Corsham’s beautiful High Street, with something for everyone. Come and try, buy and enjoy the best local and regional food - from gin and cider to ice-cream, pickles to chocolate cake - plus there will be sampling tents, master classes and guest speakers, and the chance to eat your way around Corsham as the great local cafes, pubs and restaurants offer a free ‘Taste’ of what they do best.
Taste of Corsham is teaming up with the Pound Arts Centre to bring music and entertainment on the Taste Stage, as part of the Blue Sky Festival (12-17 June, blueskyfestival.org.uk). There will also be street theatre, crafts, some delicious art to enjoy and lots more fun for all the family - and you can get involved with The Great Get Together, in memory of MP Jo Cox. VFB presents The Sleeping Beauty
C
lassical ballet takes centre stage soon when the highly acclaimed Vienna Festival Ballet Company bring their stunning production of The
Sleeping Beauty to the Strode Theatre, Street on Sunday 20 May.
Celebrated Austrian dancer Peter Mallek founded the company after his illustrious career as a dancer of international renown, in 1980. Vienna Festival Ballet are known for their beautiful and lavish handmade costumes as well as their commitment to bringing the greatest classical ballets to the widest possible audience. The Sleeping Beauty is a breathtaking ballet for all ages and is set in the magical world of a fairy kingdom where the King and Queen are celebrating the birth of their daughter, Princess Aurora. The lilac fairy and her attendants have been invited to the Christening but the wicked fairy, Carabosse has
been forgotten. Angered by this, Carabosse casts a spell on Aurora that on her sixteenth birthday she will prick her finger and die. The lilac fairy changes the spell so that Aurora will not die but will fall asleep for 100 years until a handsome Prince will awaken her with a kiss.
This magical ballet is set to be a wonderful evening for the whole family. Following the traditional tale of Sleeping Beauty and with a musical score by Tchaikovsky, this ballet is sure to enthrall audiences of all ages. soups, sauces and pesto whilst nettles can substitute for spinach so you can add them to lasagne or throw them in soups or stews. If you grow your own produce in your garden or are lucky enough to have an allotment remember to keep an eye on the forecast for any late frosts that could damage any tender plants. You can protect them by covering with fleece or a plastic cloche. For quick results you can now sow radish, basil, lettuce and spring onions. You can also put in beetroot, carrots, courgettes and french beans which will take a little longer. May is the last month to sow broad beans and parsnips or plant out potatoes.

LEFTOVER POTATO HASH
The perfect brunch dish to use up leftover roast potatoes and cooked veg! Try out different flavour combinations or make it vegetarian by eliminating the bacon and using a vegetarian cheese.

Ingredients 1 large onion, chopped 1 clove of garlic, chopped 3 or 4 slices unsmoked bacon, roughly chopped 6 - 8 leftover roast potatoes, cut into cubes 200g of leftover cooked veg (kale,
green beans, red peppers) 75g smoked cheddar, grated olive oil salt & pepper to season 2 or 3 large free-range eggs
Method Preheat your oven to 190˚C / 170˚C fan. Heat a little olive oil in an an ovenproof skillet or pan on medium heat. Add the onions and allow to cook for a couple of minutes, before adding the garlic and bacon. Fry for a couple of minutes allowing the bacon to

start to crisp up, before adding the potatoes. Turn up the heat a little and cook for a couple of minutes. Add the cooked veg, season and cook for a few more minutes. Add the grated cheese and mix through before removing from the heat. Make sure the hash is spread evenly across the base of the pan. Crack the eggs on top of the dish before transferring to a the oven and cook for 8 minutes, or until the egg whites have set. Serve immediately! THEWESTWILTSMAGAZINE

SAVOURY FRENCH TOAST Serves 2
Ingredients Two slices of thick-cut bread (if it’s slightly stale, even better!) 3 eggs A dash of milk Salt & pepper A handful of chopped chives A tablespoon of butter
GREEK-STYLE LAMB, SPINACH & FETA PIE Serves 6
Ingredients 250g pack filo pastry 75g butter (melted) 200g roast leg of lamb, finely chopped 1 large or 2 small onions, chopped 2 cloves of garlic, finely chopped 200g spinach leaves 150g Feta cheese, crumbled 1 tsp dried mint 1 tsp dried oregano 4 tbsp chopped fresh flat-leaf parsley zest of 1 lemon olive oil salt and pepper to season Method Preheat your oven to 180oC / 160oC fan. Heat a little olive oil in a large non-stick pan on medium heat. Add the onions and soften for a few

minutes, before adding the garlic, oregano and mint. Fry on a low/ medium heat for 2 minutes to allow the onion to soften. Add the pieces of chopped lamb, and then season well with salt and pepper. Add the spinach in batches, allowing it to wilt slowly. Finish with the fresh parsley and lemon zest. Stir well and then remove from heat and set aside. Layer 2 sheets of pastry into an ovenproof dish, allowing the edges to fall over the sides. Using a pastry brush, brush all around the base and sides with melted butter. Repeat the process two times, so that you have 6 layers of pastry in total.
When the butter is starting to brown, add the eggy bread to the pan and fry for a couple of minutes or until the underside turns golden brown. Flip with a spatula and do the same on the other side. Transfer to a serving plate, and while the toast is still hot, grate over some cheese and allow to melt slightly. Add a handful of chopped chives and serve immediately. Fill with the lamb and spinach mixture, and then sprinkle the crumbled Feta across the top. Bring the sides in and brush the top of the pastry with melted butter. Cook in the oven for 45 minutes - 1 hour, until the Feta is melted and the pastry is golden. Serve this tasty dish with a fresh tomato salad.

This fantastic dish makes the best of leftover roast lamb, takes its inspiration from Greek cuisine’s aromatic flavours and uses filo pastry. Any leftover pastry can be wrapped up in cling film and frozen to use another time. Feel free to experiment with different dried or fresh herbs that you might have in the kitchen.

Meet the Chef SAMUEL WHITE, head chef at The Red Lion in Heytesbury, talks summer ingredients, Mexican food and chocolate! What was your first job in catering? First job was at The Hedgehog Inn, in Crawley where I was a prep chef.

I have to say the homemade burger, and it’s still one of my favourite things to cook today! Where do you source your ingredients and do you have any favourite local suppliers? Heritage Fine Foods is our fruit and veg supplier, Cooper Foods deliver our fish and my favourite is our meat supplier, Prime Cuts Butchers from Shaftesbury. They are great butchers, with superb free range pork, beef and lamb. What is your favourite dish on the menu? I have a couple – I really like the Mediterranean chicken en croute and our burgers (pictured). What is the most memorable event you have cooked for? When I first started I cooked a meal for my mum and dad’s anniversary. Do you have a favourite season for cooking and if so why? I love summer, it’s sunny and it’s all about bright colours and fresh looking food.

THE MAGIC OF
MOROCCO This month KATIE THOMSON explores two cities in Morocco, Essaouira and Marrakech.
H
ow amazing it is that after only three hours on a plane, one can arrive in a country as beguiling, exhilarating and so far from the familiar as Morocco. This is a country famed for its mazes of souks, beautiful coastlines and dramatic scenery, and we were hoping to take in as much of it as possible in only 6 days. When planning a visit to Morocco, most people swarm straight to the buzzing souks of Marrakech or the beaches of Agadir, leaving the wonders of Essaouira undiscovered. Immensely popular with French holidaymakers, this Bohemian seaside resort has much more to offer than the sum of its parts. Culture lovers can still get their taste of the medina, visiting some of the artisanal craftsmen who have plied their trade here for hundreds of years. There are lots of interesting sights to enjoy here including the fishing port with its whitewashed walls and cerulean blue boats, and the old port with its sea battered fortress walls. The constant breeze, which makes sunbathing here so pleasurable, is amplified on
the coast, where watersports like windsurfing and paddle boarding are enduringly popular. Our accommodation in Essaouira was the lovely Le Jardin des Douars. The hotel, located about 20 minutes from the centre of the town, is an oasis of tranquility, and is made up of a collection of traditionally built buildings, connected with winding paths of beautiful greenery and flowers. The vibe here is chilled, and deliberately so, it is a place to come and switch off. The onsite spa continues this quest for wellbeing, with a selection of classic Moroccan treatments on offer. We opted for the black salt hammam, a soothing yet uplifting treatment that warmed us to the bone and purified the skin. The kitchen takes inspiration from classical French, Moroccan staples and, most impressively, seasonal vegetables direct from their garden. Chef Joseph makes the most of the abundant produce grown in the kitchen garden to create perfect tagines, melt-in-the-mouth lamb shanks, fresh seafood and decadent puddings.
Whilst it’s difficult to tear yourself away from the pool, a trip into Essaouira is certainly worthwhile. It’s a great place to get used to haggling and to soak up a culture so different from our own. Spend the day and really walk the streets and when you get tired of shuffling from stall to stall, head up to one of the many rooftop cafés and restaurants to take in the panoramic sea views and enjoy the cool breeze. There are loads of fab foodie spots we particularly liked Taros Café with its great views and lively atmosphere. After some relaxation, the madness of Marrakech was beckoning. We headed to the coach station ready for our three hour return journey. The coach is a really convenient way to hop between cities and a great chance to experience the undulating terrain and pockets of civilisation in the vastness of the Moroccan landscape. The Almaha Hotel is one of those secret jewels tucked away in the myriad of streets in Marrakech’s Kasbah, complete with Moroccan lanterns and a majestic courtyard. The traditional water pool was surrounded by colonnades draped in white chiffon, leaving the walkways light and airy, with high ceilings dotted by large lanterns. By night, this scene transforms, with soft lighting and floating candles in the water. The Almaha is a hotel of great beauty and little wonders, exquisitely decorated and carefully curated, with a beautiful blend of traditional Moroccan elements with a strong contemporary design. Marrakech is of course famed for its labyrinthine souks, where you can find some truly amazing items, handcrafted by local artisans. But there is a lot more to the city than the
shopping and the bustling madness of the Djemma El Fna main square. But there is a lot more to the city than the shopping and the bustling madness of the Jemaa el-Fnaa main square. It is sometimes easy to forget that Marrakech is an Islamic city and one that is also considered to be a holy pilgrimage site. The Qur’an was traditionally taught at a madrassa (religious school) and a spectacular remnant of this tradition is the Madrassa Ben Youssef. It is one of the most exquisite examples of Moorish architecture in the world, reminiscent of the Alhambra in Granada or the Alcázar in Seville and its intricate carvings and dazzling mosaics are world-renowned. As well as being very religious, Marrakech is an historic city, and an excellent place to experience this is the ruined El Badi Palace where you can learn about its amazing history and Saadi Dynasty. If you have never visited Morocco, it is a country that can offer the traveller so many experiences - wonderful hospitality, true relaxation, a glimpse into tribal life, the bustle of city life and centuries of history. That and some much needed sun, what more are you looking for?!
TRAVELLER’S TIPS Fly with RyanAir from London Stansted (STN) to Marrakech (RAK) from around £200 return in May. Spring is a lovely time to visit, with temperatures in the mid to high 20s. High summer is very hot, but if you don’t mind it a little cooler, it’s a decent year round destination. We got a return coach between Marrakech and Essaouria. This is extremely comfortable, convenient and cheap - it is run by Supratours and tickets can be purchased in advance or on the day from the offices in each area. You can only by them in person, so it is worth buying your return at the same time as your outbound ticket. Tickets are about £10 each way - and the journey takes 2-3 hours. Try to take probiotics for a month before you go - it can help stop tummy troubles developing. When you are there, avoid ice in your drink and uncooked vegetables that may have been washed in tap water. Arabic might be beyond many of us, but some conversational French will get you a lot further than English and locals will appreciate the effort. We all know you have to haggle in the souks, some people recommend starting at half the price the shop owner quotes. I think that is still too high. A good deal is generally about a third of the price they start with. If there are certain items you want, do your research before and get a gauge of what you should pay. The bottom line? If you love it, just buy it - you’ll forget that you overpaid by £10 and you’ll have a memento to treasure forever.

t was famously said that photographs help us ‘understand what our lives mean to us’, and this idea feels particularly relevant when looking at a family photograph, of a special moment caught in time. DON’T SAY CHEESE! The best way to avoid the headache of a staged family shot, is to avoid it all together! We say, forget the awkward ‘who’s taller?’ line up, and have a go at taking some documentary-style shots around your home. When the family comes together for Sunday lunch, have your camera to hand and photograph some everyday family moments! This is a much less painless way to capture family life and enables

IT’S ALL ABOUT THE EYES When taking any portrait, you’ll almost always want to place the emphasis on the subject’s eyes. So, whether you are using your phone or your camera, take the time to think about the position of the focus spot. If you are taking a group shot (around a dinner table for example), it’s best to try and concentrate on just a few people, rather than the whole gang, as your picture may turn out crowded and a little bland. Tell a story with every image, and don’t be afraid to include blurred figures in the scene, as this is a great way to portray movement and liveliness at a family gathering!
THINK TIMELESS Black and white photographs have a timeless quality, and when successfully executed in family portraits, it can produce a striking

and poignant image. By eliminating colour, you can really focus on the expressions and action in the photograph, not to mention that black and white portraits are usually rather flattering! There are two ways to take your black and white snaps, either by converting the image during the editing process; allowing you to choose images that are best suited to black and white, or by applying a setting or filter (on your camera or phone) whilst shooting, so you can view your black and white scene in real time.

Chelsea Flower Show The RHS Chelsea Flower Show is returning from 22 – 26 May at the Royal Hospital Chelsea in London.

he most prestigious flower show in the world will this year feature a mix of returning favourites, new designers, and some exciting changes.
THE SHOW GARDENS 10 Show Gardens will fill Main Avenue this year, where tradition and romance will contrast with contemporary and urban design. You’ll see the return of multi-award winning designer Sarah Price after a five year absence, who has designed a garden for show sponsor M&G Investments. Sarah’s garden will be primarily made up of water, planting and earth to represent a romanticised Mediterranean haven that celebrates the expressive and sensual language of colour and texture, light and shadow.

Tom Massey will make his debut at Chelsea this year as designer of The Lemon Tree Trust Garden, which emulates a garden used by a community of refugees displaced in Domiz camp, Northern Iraq. importance of gardens and gardening to the thousands of displaced people trying to rebuild their lives with the support of the Lemon Tree Trust. Other highlights in this category include award-winning designer Jo Thompson’s The Wedgwood Garden, and last year’s People’s Choice winner, Monty Don will be anchoring the BBC coverage of the show

Walled Garden Tours

ay is the month when the wisteria bursts forth at Bowood House’s Walled Garden and, thanks to two guided tours marked in the diary for Wednesday 9 and Friday 18 May, members of the public have the chance to capture the eye-catching pale blueish-lilac, climbing shrub in all its glory. The popular series of tours, led by one of a team of highly-informed and welcoming garden guides opens

made up of four distinct, one-acre squares comprising formal borders, a picking garden, glass houses and a working kitchen garden packed with fruit and vegetables. The 60-minute tours are angled around the season and what is in bloom at the time. Roses will then take their turn from mid-June and through to mid-July. A new feature for the Walled Garden this year are the pair of doubleborders, each 50 metres in length. A collaboration between Head Gardener, David Glass and consultant garden designer, Rosie Abel-Smith, this planting has been devised with a long season in mind and for the borders to be fully in flower from June through to early October. With the first border planted in 2016 and appearing last year, the second of these two double borders was only planted in 2017 and so is to be seen for the first time now. A simple colour scheme of whites, creams, lime
Starting at 11am and lasting roughly an hour, the guided tour sets off from the Italianate Terraces outside Robert Adam’s Orangery and in front of Bowood House. Views stretch out across the Grade I listed, 2000-acre ‘Capability’ Brown parkland and down to the sinuous lake he designed for Bowood. From here, the tour will head on into the Walled Garden and then out through parts of the surrounding Pleasure Grounds and back to Bowood House for lunch in the Stables Restaurant. Tickets to be booked in advance and are priced at £34 per person, which includes a two-course lunch in the Stable Restaurant and enjoyment of the House and Gardens for the rest of that day. Will David Cameron’s (DC) legacy be BREXIT or Social Care Reform? We asked ANDREW DOUGLAS, a partner at Awdry Bailey Douglas Solicitors who specialises in elderly care, for his views. SURELY IT MUST BE BREXIT?
Because it gets all the headlines BREXIT will almost definitely be what DC is most remembered for? It is my belief however, that running a close second will be David Cameron and his Government’s unfulfilled pledges in respect of social care.
WHY DO YOU THINK THAT?
People may well recall that when Cameron won his last General Election in 2015 the Tories were saying that people would only have to pay for the first £72,000 of their elderly care costs. This was known as the “CAP”. The flagship for the CAP at the time was the Care Act 2014. Shortly after DC was elected as Prime Minister this pledge was broken (17.07.15 to be precise) and in December 2017 Jackie Doyle-Price, a Minister in the Department of Health, said it would not be reintroduced.
WHAT DOES DC SAY ABOUT THIS?
Recently David Cameron was interviewed by the FT Weekend and stated he was disappointed at his Government’s record on social care and that the CAP was not capable of being pursued. His disappointment was because he thought that with the support of insurance products, which the insurance industry were not

interested in, the CAP could have been a long term solution to the ongoing crisis in social care.

THE FUTURE’S BRIGHT... Academy Manager ANDY ROCK is confident there are some real stars coming through the Bath Rugby Academy over the next few years.

t has been a hugely frustrating season for all involved with Bath Rugby. A season which promised so much at the halfway stage, with Bath competing on three fronts, has limped to a sorry conclusion. However, the man charged with bringing through the next generation of talent at Bath Rugby, Andy Rock, believes all the hard work going in the background means the future is bright at the club.
“We’re really confident we have some good young players with long term potential here at the Club,” begins Rock, who joined Bath from Yorkshire Carnegie in 2016. “We’re also blessed that right across the organisation, everyone wants to see these young players come through and represent Bath Rugby for a long time. If we get our jobs right and continue to invest in this pathway, we will see more Academy players continue to come

Rock also says the chance to work with old friend and colleague Stuart Hooper was a key factor in his decision to join the club. “To be successful in a team sport or team environment, you need to know that you’ve got people around you who you can totally rely on to be ambitious, challenging and push you to improve yourself,” he said. “We’re no different to the players in that regard and I knew that I’d be able to have that relationship with Stuart here.”

Nowhere was this better demonstrated than in the club’s run to the Anglo-Welsh Cup Final - a cup traditionally seen as a competition for emerging talent. The list of players making the next step to the first team has been fulsome this season: Beno Obano, Zach Mercer, Josh Bayliss, Levi Douglas, Darren Atkins, Miles Reid, Sam Nixon, Will Vaughan and Levi Davis.

e have recently booked our summer holiday double the usual price as we now have to go in the school holidays obviously and, once again, we will be gracing France and the French people with our presence. Until 2015 I had never been to France, and frankly had no desire

We made the collective decision not to fly - I don’t know how people with young children do it - and that meant a ferry crossing and a drive so France was chosen as the easiest option. I was less than impressed but despite

For some, still unknown and unexplained reason, I absolutely did not like France, or The French, even though every French person I had ever met, I even worked with two of them, were amazing. They were, to a man and woman, kind, funny, caring and great company; they were pretty much everything you would ever want in a person given the choice. For some reason though I wouldn’t give them, or their country, the time of day en masse. As I’m something of a foodie (I really like eating anyway), my wife in particular couldn’t understand it. ‘But that’s where all your favourite cheeses come from’ she’d say, hopelessly trying to convert me, but I wouldn’t be moved. I wasn’t going to France and no one could make me.

As you can imagine I had a terrible time right from the word go… I did not!! It was fantastic. The French people were brilliant, apart from the Gendarme who pulled me over for an on the spot speeding fine 20 minutes after leaving the ferry port. Even he was very pleasant. The country was beautiful, the villa we were staying at was wonderful, the area we were in , The Vendée, with its lovely beaches and forests was just stunning. The food, as you might expect, was top notch and best of all, for me at least, being a bit of a bread fiend, there was a local bakery 5 minutes away so fresh croissants and baguettes were on the menu every morning for brekkie. My wife, having been proven utterly right, was unsurprisingly rather smug.
that we might go to Paris to watch the England v France game in The Six Nations. Paris does not have a fantastic reputation for hospitality but, once again, our Gallic friends did themselves proud. The hotel staff were polite and helpful. The waiters, who probably have the worst rep of all, were brilliant and and even helped us out with our pidgin French. The city itself is absolutely stunning and deserves to be on everyone’s bucket list. The famous tourist attractions were obviously amazing but it was while walking around the city that it came into it’s own. We did get lost on the way back from the game late on Saturday night and ended up walking through a less than salubrious industrial estate on our own (I’m happy to say my wife’s fault, the universe does let me win once in a while!!) but we managed to flag down a taxi and didn’t even mind that he ripped us off a bit. As you may have guessed I am now a converted Francophile and am very excited about going back this year. We are staying at the same place as we did before so, as long as I can dodge the Gendarmerie, I will be dining on freshly made bread and patisserie for two lovely weeks in August.
