WHAT’S ON AT LACOCK ABBEY THIS CHRISTMAS From Talbot’s prolific letter writing, to lighting yule logs and candlelit wild-turkey dinners, winter is a time when we celebrate traditions old and new. The magic of the cloisters and of breathing in the crisp cold air make that hot bowl of soup all the more rich in flavour and the perfect way to round off a visit to Lacock this month. RUN THE BATH HALF MARATHON FOR JAMIE’S FARM! In 2019, Jamie’s Farm is celebrating 10 years since their therapeutic programme, Farming, Family & Therapy, for disadvantaged children began. Delivered via a 5-day handson residential at their working farm in Box, and accompanied by an in-school follow up programme, they specifically help those with poor behaviour, low self-esteem and a lack of engagement at school. Profound evidence for

improvement, ultimately leading to fewer exclusions and educational reengagement, now sees them host weeklong visits 40 weeks a year at three rural farms; in total, 5,500 children have benefitted. CARLY PAOLI CHRISTMAS CONCERT World renowned classical music star Carly Paoli is appearing at a concert in Devizes on 21 December

World renowned classical star and local resident, Carly Paoli will perform at an exclusive Christmas concert at St. John The Baptist Church, Devizes on 21 December. The concert is being held to raise money for the Devizes charity of Caenhill Countryside Centre, who work with and support children and young people by providing courses, placements and hands on experiences in a rural setting.

Singing in the afternoon is proving to be a great past-time for hundreds of people across the region. In the weeks up to Christmas, the nine Good Afternoon Choirs will raise thousands of pounds for local charities. Started by West Country music man, Grenville Jones, over 800 people now sing in the choirs. Each group chooses a local charity to benefit from concerts and fundraising through the year and they are all hosting an open carol service with free admission. As well as raising funds, the event aims to bring together the local community including the volunteers and families the charity works with. The Frome Good Afternoon Choir meets on Mondays at Holy Trinity Church from 2-4pm. They are led by Matt Finch. Their Christmas celebration takes place on Monday 10 December from 2pm-3pm and the WHY Charity is benefitting from the fundraising events from the choir. The choir have already raised just under £650 for the charity.

Smoked Sausage Stroganoff (Korv Strogano) Serves 4 Ingredients A knob of butter 1 large onion, peeled & finely chopped 350g falukorv or smoked sausage, very finely diced 1 tbsp tomato purĂŠe 1 tbsp Dijon mustard 1 tsp paprika 130ml single cream Sea salt & black pepper 400g tagliatelle/pappardelle 2 tbsp eldercapers or capers A handful of finely chopped chives Method Bring a large pan of salted water to the boil for the tagliatelle or pappardelle. Put the butter, onion and sausage into a large pan. Fry, stirring occasionally, until the sausage and onion are golden. Add the tomato puree, mustard, paprika and cream, continuing to stir so the flavours mingle, and simmer gently for 5 minutes. Season to taste.

Add the pasta to the pan of boiling water. Cook for 7 minutes (or

according to packet instructions). Drain the pasta, reserving a small mugful (around 80ml) of pasta water. Add the mug of pasta water to the sausage sauce. Stir in with the capers and take off the heat. Toss the pasta in the sauce until well coated, and sprinkle over the chives. Serve immediately.

Get ahead The sauce can be made the day before (just don’t add the chives) and warmed up gently when you need it. You can also freeze the sauce in an airtight container for up to a month. Simply add the pasta water as stated above just before serving, and cook the pasta fresh. THEWESTWILTSMAGAZINE

Swedish Beef Stew (Skånsk kalops) Serves 6 - 8 Ingredients 4 tbsp rapeseed oil 4 onions, peeled and sliced 6 Swedish anchovies (see top tip) 2 tbsp plain flour 1 tsp ground allspice Sea salt and black pepper 1kg chuck steak or stewing beef, cut into bite-sized pieces 8 thin carrots, peeled 1 tbsp red wine vinegar 1 litre beef stock 1kg potatoes (Désirée work well) A knob of butter A small handful of fresh parsley leaves Picked beetroot, to serve Pink pickled onions to serve Method Heat 2 tbsp of the oil in a large saucepan over a medium heat and add the onions and anchovies. Fry, stirring occasionally, for about 10–15 minutes, until the onion begins to turn golden brown. Meanwhile, mix the flour with the allspice and 1 teaspoon each of black pepper and salt, then toss the cubed beef in it.

ready, peel the potatoes, chop into large chunks and cook in boiling water until tender. Drain and toss in the butter and parsley. Taste the stew and add more salt and pepper if desired. Serve with the boiled potatoes, the pickled beetroot and pickled onions.

Top tip If you can’t get Swedish anchovies, use regular ones plus 1 teaspoon ground allspice, ½ teaspoon ground cinnamon and a pinch of nutmeg. Get ahead As with most stews, this is often better the day after it’s cooked.

Once the onion is golden brown, remove from the pan and add another 2 tablespoons of oil. When hot, add the meat (you may have to fry it in two or three batches if your pan is too small) and brown all over. Once the meat is brown, put the onion back in, along with the carrots, vinegar and beef stock. Half cover with a lid and leave to simmer gently for 1–1½ hours or until the meat is tender.

Västerbotten pie (Västerbottenpaj) Serves 8 Ingredients For the pastry: 130g plain flour ¼ tsp fine sea salt 1 tbsp wholegrain mustard 80g cold butter, cubed 1 tbsp vodka For the filling: 3 medium eggs 300ml single cream ½ tsp fine sea salt 1 tsp black pepper 300g Västerbotten or mature Cheddar cheese, grated 1 small onion, peeled and thinly sliced For the mushroom topping: 75g butter 250g chanterelle mushrooms, brushed clean A small handful of fresh parsley leaves, finely chopped

Remove the pastry from the fridge and use it to line the pie tin. If the pastry is too hard, leave to soften for 5–10 minutes before lining the tin. Prick the pastry in the tin with a fork. Line with baking paper and pour in baking weights. Bake for 20 minutes, then remove the baking weights and paper and bake for a further 10 minutes, or until the base is dry and firm.

To make the filling, beat the eggs with the cream, salt and pepper until you have a smooth mixture. Stir in the cheese. Pour into the pie case, put the onions on top and bake for another 25–30 minutes, or until the mixture is set but still a little wobbly.

Leave to cool slightly. Scatter the pie with parsley and top with the mushrooms to serve. Get ahead This pie is also great cold. If making in advance, cook the pie and keep for up to 2 days in the fridge, but don’t cook the mushrooms until just before serving.

When the pie has cooled, heat the butter for the mushrooms in a large frying pan. Once the butter is foaming, add the chanterelles and cook for 4–5 minutes, or until lightly golden The Little Swedish Kitchen by Rachel and cooked Khoo (Michael Joseph, HBK £20) through.

Method To make the pastry, mix together the flour and salt. Add the mustard and cold butter, then use your fingertips to rub it all together until you have a sandy texture. Add the vodka to bring it into a dough. Place between two sheets of baking paper and roll into a circle that is larger than your quiche tin. Leave to chill in the fridge for 30 minutes. Preheat the oven to 180°C.

GOLDIE HAWN’S FETTUCCINE ALFREDO

Finished with fresh truffle or nutmeg

Serves 4 Total time: 45 minutes, plus resting ½ x Royal pasta dough (find this recipe on jamieoliver.com) fine semolina, for dusting 150ml double cream 150ml single cream 1 large free range egg 60g Parmesan cheese, plus extra to serve 1 fresh truffle or 1 whole nutmeg, for grating truffle oil

Make the Royal pasta dough. Once it’s relaxed for 30 minutes, roll the sheets out to 2mm thick. Set up the fettuccine attachment on your pasta machine and gently run through each pasta sheet, placing on a semolina-dusted tray as you go. Or, if making by hand, loosely roll up the pasta sheets, cut into strips just over ½cm wide, then use your fingertips to shake out and separate into strands. When ready, cook the fettuccine in a large pan of boiling salted water for 1 to 2 minutes, or until al dente. Meanwhile, gently heat all the cream in a large frying pan on a low heat, then separate the egg and whisk the yolk into the pan (save the white for another day). Finely grate and gently whisk in the Parmesan, then season with sea salt and black pepper. Homemade pasta, in a silky sauce of double cream, Parmesan and fresh truffle (or nutmeg, which is easier to get hold of and just as tasty!) is a well-known Italian dish that I cooked up for Goldie – she loves it! This is my take, swapping in some single cream to make it a little less naughty. Trust me, it’s still a heavenly mouthful.


SCARLETT MOFFATT’S SCOTCH EGGS

With fresh herbs & a spicy kick Transform any buffet or picnic into something extra-special with these beauties – golden and perfectly crisp on the outside, juicy and flavour packed on the inside, plus that allimportant runny egg yolk. There are no words. Scarlett told me she likes to dip Scotch eggs in chocolate spread, but I’m not sure I’d endorse that! Serves 6 Total time: 1 hour 10 minutes 1 sprig of fresh rosemary 1 sprig of fresh sage 600g higher welfare pork shoulder, diced 1 whole nutmeg, for grating 1 pinch of smoked paprika or cayenne pepper 3 anchovy fillets in oil, from sustainable sources 8 large free range eggs 100g plain flour 200g breadcrumbs 3 litres vegetable oil, for frying Pick the rosemary and sage leaves into a food processor, add the pork shoulder, a good grating of nutmeg, the smoked paprika or cayenne, the anchovies and a pinch of sea salt and black pepper, then blitz to combine. Cook 6 of the eggs in boiling salted water for 5 minutes, then remove to cold water, carefully peeling as soon as cool enough to handle. Meanwhile, line up three shallow bowls – place the flour in the first, beat the remaining eggs in the second, and tip the breadcrumbs into the third. Divide the meat mixture into six, and roll into balls. Place a ball on the palm of your hand, then pat and flatten until it’s big enough to wrap around the

egg. Place a peeled egg in the centre and mould the meat up and around it, sealing the egg inside so you end up with a perfectly round ball. Coat it in flour, dunk it in the egg, allowing any excess to drip off, then roll in the breadcrumbs until well coated. Repeat with the remaining ingredients, then chill for 30 minutes. When you’re ready to cook, just under half fill a large sturdy pan with oil – the oil should be 8cm deep, but never fill your pan more than half full – and place on a medium-high heat. Use a thermometer to tell when it’s ready (170°C), or add a piece of potato and wait until it turns golden – that’s the sign that it’s ready to go. Carefully lower one Scotch egg into the pan – after about 8 minutes it should be golden and perfectly cooked through, so scoop it out, drain on kitchen paper and cut it in half to check your timings, then cook the rest, in small batches, adjusting the time, if needed. DEXTER FLETCHER’S PARTY-TIME MEXICAN TACOS Tender chicken, zingy salsa, feta & seeds

Serves 16 Total time: 2 hours 1 x 1.8kg whole free-range chicken 4 sprigs of fresh thyme olive oil 1 lemon 1 bulb of garlic 500g plain flour, plus extra for dusting 1 cos lettuce 250g ripe cherry tomatoes 2 ripe avocados 100g mixed seeds 200g feta cheese SALSA 2 fresh red or green chillies 500g tomatillos or green tomatoes 1 bunch of fresh mint (30g) 1 bunch of fresh coriander (30g) 2 spring onions 1 clove of garlic 2 tablespoons cider vinegar

At Ye Old Crown, Broadstairs, Kent while training at Thanet Catering College. Where have you worked before? There are various allowances which mean you can give certain amounts to certain people or organisations without any taxation consequences. For example: • You can give as much as you like to your spouse without any taxation consequences. • You can also give to qualifying charities tax free. For other recipients it will depend on how much you wish to give and why.

ifting money is becoming increasingly popular for parents and grandparents, who are keen to help their loved ones by providing them with their “inheritance early”. If you are thinking of gifting money or assets there are some key factors you need to be aware of that may impact upon your decision. Is gifting the best option for you? Before making any gift you should consider whether or not “gifting” is actually the best way to achieve your goal. There are other options and these can be explored. You also need to consider what the impact of making the gift will have on your own situation – can you afford to be without the assets or money you are giving? What exactly can you give? A gift can be anything of value, such as cash, personal possessions and property. If you choose to dispose of an asset for less than what it is worth, the difference in value also counts as a gift. If you choose to give something away that has risen in value since you acquired the asset then there may be Capital Gains Tax consequences to making the gift. You should seek professional advice if you think this may be an issue for you.

How much are you giving and why? You can gift £250 to as many people as you want every year for any reason. This is to cover birthday gifts, Christmas presents etc. There are no implications to making this gift either for you or the recipient. You also have a £3,000 annual exemption which you can use to make gifts to anyone for any reason. If you didn’t use your exemption the previous year, you can carry it forward, giving you £6,000 which is exempt from Inheritance Tax. You can give also give up to £5,000 as a wedding present (£5,000 to your child, £2,500 to your grandchildren and £1,000 to others). If you wish to give more than this then you should consider a few other factors in order to establish the consequences of the larger gift.

One-off gifts exceeding the £3,000 won’t be counted for Inheritance Tax purposes – as long as you survive for seven years afterwards. legal & financial | (£325,000) available to offset against your estate. If the value of your gifts exceeds your Nil Rate Band then there could be Inheritance Tax to pay at that point. For the “seven year rule” to apply the gift must be outright to an individual and cannot be to a trust fund. Gifts to a trust fund will immediately use your Nil Rate Band and if the value of the gift exceeds the Nil Rate Band the excess will be subject to an immediate charge to Inheritance Tax of 20%. What if I am thinking of gifting on a regular basis? If you intend to make gifts more regularly and have surplus income to cover those gifts, then you could benefit from an exemption applying to gifts out of income. For this to apply the gifts must: • Be part of your normal expenditure, ie: the gifts must be part of a settled, regular pattern of gifting. The intention to gift should also be evidenced and within a reasonable time span. • All gifting must be made out of income and not from capital. You cannot use money from your capital savings to top up your income in order to facilitate giving. • You must have enough income to be able to make these gifts and maintain your current standard of living, without having to resort to capital. With proper consideration of these exemptions and allowances, and awareness of how they could apply to your own situation, you could achieve a more tax efficient way of giving, which benefits your loved ones and provides you with real peace of mind. CHILD ARRANGEMENTS ORDERS – BREAKING THE DEADLOCK MATTHEW ROBERTS, a solicitor at Wansbroughs Solicitors in Melksham, discusses child arrangements following a separation.

U

nfortunately it is not always possible for parents to agree the care arrangements for their children following separation. In those circumstances the Court can be called upon to determine what arrangements are in the best interests of those children. These arrangements can be set out in a Child Arrangements Order specifying, amongst other things, with whom the child is to live and spend time with. In reality, a Child Arrangements Order will not always bring matters to a conclusion. Often one parent will be unable to accept the terms of the order and will obstruct its implementation. This article briefly examines what options are available to parents to enforce the terms of a Child Arrangements Order and ensure that contact arrangements are not frustrated unnecessarily:Formal correspondence: Further proceedings should always be seen a last resort and if parents have been unable to resolve matters between themselves, further formal correspondence from a legal representative can still sometimes help break the deadlock. Their role may simply be to clarify the terms of the order or set out in detail the consequences of breaching it; Variation of existing order: If circumstances have changed

significantly since the initial Child Arrangements Order it can sometimes be helpful to seek a variation of the order to reflect or take account of the current state of play. In extreme cases, the court can be asked to determine whether it would be in the child’s best interests to transfer their primary residence to ensure their relationships with both parents are being promoted equally;

unless the court believe this to be in the best interests of the child or children in question. ast year on Black Friday at the Currys/PC World store on Oxford Street in London there were TV cameras in place to document the rush into the store when they opened the doors at 5am. What was very, very funny was that when the big moment came a chap in a red fleece, called Marcel apparently, rather sheepishly wandered in, all on his lonesome, to pick up his pre-ordered laptop computer. It was reportedly a similar story at lots of shops, malls and shopping centres up and down the country and although the media and the big retailers would have you believe that Black Friday is some

I think the pictures of people fighting and arguing over the latest ‘must have’ toy or gadget in out-oftown megastores has also put customers off. Why would you put yourself through that when you could instead pop into some of our fantastic local family run shops and retailers and enjoy a civilised shopping experience?! Personally I like to start my Christmas shopping quite early, sometime in late January or early February. I don’t buy everything then of course, I just start to look

At least out on the streets! My guess is that most people must be buying online these days as the estimates for how much will be spent range from £2.5 - £3billion…. which is an enormous amount in anyone’s book and it must be coming from somewhere! One thing that seems to be happening this year is that the great British public are getting wise to the big retailers ways and realizing that actually things aren’t any cheaper on the day anyway and often they

around for things that might be good and pick up stuff throughout the year so there is no huge rush in November and December and I can be pretty relaxed about the festive season’s arrival. Regular readers will know, I don’t like to be flustered!

is a really important time of year for our independent retailers so I hope you all go out and do at least some of your Christmas shopping with them. Enjoy the civility of a small boutique store, a chat with a cheerful member of staff and the tactile pleasure of holding the gifts in your hands. And if it does cost you a couple of quid more, at least you know it’s going to a local business owner who pays things like rates and rent on their shop and not some faceless-tax-avoidingwarehouse-owning-multinational that sends all its funds offshore to avoid pay any tax on its gazillion pound profit. OK, rant over! I am usually pretty good at buying presents, I like to think I have reasonable taste in most things but if I have to buy clothes for people I have learnt, over the years, that I must, must, must keep the receipt. If it’s socks, pants or vests (basically anything not on show) then I’m okay but with anything else I have no real fashion sense at all. I have one pair of jeans I like so I bought four pairs of them and I have a rota of about six t-shirts…that’s it…who needs anything more?! The relatively recent phenomenon of the giving of gift cards being acceptable has been an absolute godsend for me… You cut out the middle man and just let peeps buy their own gifts!!!

If I am shopping on Black Friday, which is highly doubtful, I much prefer to visit the shops in person and have a bit of a browse. Saying that, I do like to be left to my own devices, I don’t like someone hanging around me as soon as Merry Christmas, Happy New Year they sniff a sale - let me peruse in and see you in 2019. peace! I will buy I promise, I won’t just scope it out and then go and Phil Rockliffe spend an hour scouring the internet to find it a pound cheaper! This
