iltshire College Lackham is busy preparing for the 20th anniversary of its annual Lambing Weekends, which always attracts thousands of visitors from near and far.

One of the highlights of the spring calendar, those attending can enjoy a great day out where they can see newborn lambs at Lackham Farm, sheep, pigs, feed the deer and see dairy cows being milked. This year the event is taking place over the weekends of 22/23 and 29/30 March.

There are also free tractor and trailer rides between the farms, children’s rides, refreshments and stalls selling souvenirs, gifts, plants and produce. ngland’s longest heritage railway is the West Somerset that runs its services over the 20 miles of route between Bishops Lydeard (near Taunton) and Minehead. Steam trains will be operating on weekends in March and from April 5 to the end of the month excepting the 25 and 28. In what is believed to be a first for a British steam line the WSR is launching its “Heritage Hunter” app for mobile phone users to seek out “targets” at stations and locations along the route with its 10 stations? Apart from the normal train operations the WSR will be promoting a series of special events throughout the year. For younger members of the family there will be “Meet and Greet” Days on April 12 with Wallace & Gromit and on May 3 with Mike the Knight. Between March 27 & 30 the Spring Steam Gala offers an intensive timetable of trains, up to 8 steam engines in action including a trio specially hired in for the four days. There will be plenty to see and do at locations along the line including a Model Railway Exhibition and Railway Literature Festival at Minehead station between March 28 & 30 (delete if necessary). A popular feature for a number of years has been the “Dunster Castle Express” which will run on every Wednesday and Saturday from April 5. Other places of historic interest along the route include the ancient harbour town of Watchet and Cleeve Abbey, which is served via Washford station. SMOKED HADDOCK & SMOKED SALMON SOUFFLÉ

TOFFEE APPLE PUDDING

Makes 6

Ingredients 200g unsalted butter 200g caster sugar 4 eggs, beaten 200g self raising flour, sifted 150g bramley apples, peeled cored and chopped For the sauce 30g unsalted butter 70ml whipping cream 85g soft dark brown sugar

Serves 6

Ingredients 12 slices of smoked salmon 200g smoked haddock, diced 4 eggs 375ml double cream 1 cube chicken stock concentrate ½ tbsp cornflour Soft unsalted butter for lining moulds For the sauce Double cream Juice of half a fresh lemon Chicken stock concentrate Method Butter each ramekin then place in the fridge for 30 minutes. Remove from fridge and line each ramekin with 2 slices of smoked salmon slightly overlapping each other and over the

edge of the ramekin. Place the smoked haddock in the bottom of the ramekin and chill. Separate the eggs, whipping the whites into firm peaks. Bring the cream and stock to the boil and thicken with the cornflour. Take off the heat. Whisk in the egg yolks and allow the mixture to cool to room temperature. Gently fold in the egg whites. Spoon the mixture into the ramekins. Place in an oven dish with a little hot water and put in a pre heated oven 160°C for 2025 minutes. When cooked gently lift out of the ramekins and serve. For the sauce, bring the cream, stock to the boil. Reduce the heat and add the lemon juice. Season and add fresh dill to garnish. Serve with a crisp green salad.

To make the sauce put the butter cream and sugar in a saucepan, bring to the boil and simmer until the sauce thickens slightly. Pour the sauce into the bottom of the greased basin add the remaining 50g of chopped apple then pour the sponge mixture on top. Seal the basin with a lid or foil and steam for approx 2 hours until firm to the touch. Serve with custard. • www.biddestonearms.co.uk

Meet the Chef This month we caught up with CLAIRE JEFFERIES, who is co-head chef at the Longs Arms in beautiful Steeple Ashton. Tom Kerridge inspires me due to his Michelin star and pub style creations this is what I try to emulate at the pub. Where did you eat your best ever meal? I had the best 10oz ribeye steak in the Steakhouse Grill in Florida! What’s your signature dish? My homemade steak and ale pie. The simplicity of the dish, produced from locally sourced beef and ale, highlights the quality of our local produce.

Where did your interest in food come from? I’ve been interested in cooking from an early age. I grew up on a farm watching my mother create homely dishes with local, fresh produce. However, I really discovered my love of food at the age of 14 when I started working in a local pub and was surrounded by inspiring chefs. What’s your cooking style? I am a fairly traditional chef - working in country pubs means often the focus is naturally on hearty comforting food. That said, I like to introduce a modern twist on classics to suit the different clientele who come into the pub – for instance our Lamb Shank Curry. What’s your favourite season for food? Autumn is by far my favourite season to cook due to our initiative whereby in exchange for a free pint or two, local villagers can bring in their homegrown produce such as blackberries and apples

for me to create recipes with. This means the menu is forever changing - to suit the produce available - and I get to create the freshest dishes possible.

THE FAT FOWL REFURB Following the floods in Bradford on Avon the Fat Fowl is undergoing a total refurbishment, with plans to reopen in the coming weeks. The extent of the damage has meant the building has had to be stripped back to the original stone, showing glimpses of its past as the old post office sorting rooms. Local builder Barney Allin is overseeing the work and furnishers Dible & Roy are helping Fat Fowl staff with the transformation, which is involving the restoration of the original features. The original post office turntable has been

unearthed in a garden in Bath and will take pride of place in the restaurant. Naturally the building is also being reinforced with serious flood defences. Downstairs will be jazzed up with a new bar and open plan kitchen serving fantastic food in a relaxed environment. Upstairs will still be available for private functions. Keeping you in the know as to what is coming into season each month is Neil Mortimer from Lovejoys Wholesale... t last spring has arrived. My mood improves no end once everything starts to grow again, and hopefully some March winds will dry the soil out. This is desperately needed after the wettest winter I can remember, although we’ve had it easy compared with the farmers in our neighbouring Somerset. This season we will be growing a selection of baby vegetables, hopefully you will be able to try them from the farm shops we supply or if you go to a restaurant that we supply they should be on the menu. Winter vegetables are now getting short in supply so make the

most of what we have left of the staple root crops, leeks, cabbages

Catch Day Fresh seafood, cooked well, is one of life’s great pleasures. Here are some tasty recipes that make the most of what’s in season now. As usual, the recipes come courtesy of Waitrose…

SALMON WITH PEAS & BACON SERVES 2

Ingredients 2 slices unsmoked back bacon 150g frozen garden peas 1 tbsp chopped fresh mint (optional) 1 little gem Lettuce, shredded 100ml vegetable stock 15g butter 2 x 175g fresh salmon fillets

Method Preheat the oven to 220ºC. Thinly slice the bacon then place in a small pan and cook over a medium heat for 1 minute until soft. Add the peas, mint (if using), lettuce and seasoning. Pour in the stock and bring to simmering point then set aside.

Heat the butter in a non-stick frying pan and cook the fish on one side for 1–2 minutes until lightly browned. Transfer to a small roasting tin, cooked side up, and surround with the pea mixture. Roast for 8–10 minutes until tender. Serve immediately.

EASY KING PRAWN RISOTTO WITH ROSE CAVA SERVES 2

SERVES 6 AS STARTER (2 AS MAIN) Ingredients 1kg rope-grown Scottish mussels 25g butter 1 small red onion, finely chopped 400g can chopped tomatoes 145g tub fresh green basil pesto Method Scrub the mussels well in cold water, removing any beards from the base of the shell. Discard those with damaged shells, or open shells that do not close when tapped sharply with a knife. Melt the butter in a large, heavy-based pan with a tight-fitting lid. Add the onion and cook for 3-4 minutes until softened. Stir in the chopped tomatoes

and 150ml boiling water and bring to the boil. Tip the cleaned mussels into the pan and cover. Cook for 3-5 minutes, shaking the pan a couple of times until the shells have opened (discard any that remain closed). Using a slotted

he recent floods have caused havoc across our region, not least in Bradford on Avon where the river burst its banks and water cascaded into local homes and businesses. Lying to close to the Avon, The Three Gables was badly affected, but despite having to close through the middle of the festive season, the team pulled together to open for New Year’s Eve, pulling out all the stops to ensure diners saw in 2014 in fine style. A winter of incessant rain has meant the Avon is still flowing dangerously high, but at The Three Gables they are

or my husband's recent birthday our daughters had treated to us to a night at Whatley Manor. We were there to enjoy a fantastic tasting menu and the delights of the Dining Room restaurant headed up by two star Michelin chef Martin Burge. With a delicious glass of Merlot, my husband settled on one of the comfy seats of the drawing room, allowing himself time to chill out. Meanwhile, I was whisked off to the Aquarias Spa for my own bit of relaxation. I had been booked into an ila facial. Within a few moments of being met by Kelly I was settled into a calm and fragrant environment and I found myself totally at ease. The music was extremely relaxing, making me feel as if I had been transported to exotic climes. Kelly started my treatment with a foot massage and it was heaven. The facial

Whatever techniques Kelly used had me almost falling asleep. As the pure Damascena rose oil was worked into my face and shoulders I experienced a wonderful sense of calm. Before I knew it the hour long facial had sadly finished, however my skin smelt lovely and felt soft and velvety. I was given to understand that the treatment removes tension and toxins and stimulates the energy flow. This it certainly achieved with me. I left feeling wonderfully relaxed and revived. As well as my Ananda facial, there are many wonderful body treatments also

YOUNG MAN… One of the stand out factors in Bath Rugby’s season has been the strength in depth of the first team squad. Last month we caught up with Martin Roberts, this time it’s fellow scrum half MICKY YOUNG, both of whom are fighting it out with Peter Stringer for the number 9 jersey.

A

certain well-known pundit once said Micky Young would never make the step up to the next level if he stayed at Newcastle Falcons. “I don’t like to be influenced by other people’s opinions,” says the 25-year-old from West Hartlepool. “When I left Newcastle it was because I felt the time was right for a change.” Since making the move from the North East, Young has felt first-hand the stark contrast between two rugby-dominated cities and one which is enamoured with a different sport: “Football is the life of Newcastle, it’s an awesome atmosphere for that, but with rugby you don’t get the same reception compared to Bath. You walk down the high street in Bath and get people stopping you whereas in Newcastle you never got that.” 2009 was to be Young’s breakthrough year, and one he says went by “in a blur”. His exploits saw him star with England Sevens and cement his place as first choice scrumhalf at Falcons. Enter Stuart Lancaster. “I knew Stuart from when he was the Leeds Academy coach, and Newcastle used to play them regularly,” says Young. “When he took over at England Saxons, he came to a Newcastle training session and afterwards approached me. I was a little taken aback: things were going well at Falcons but I didn’t know they’d progressed to that. He just said ‘you’re not far off’”.

It was during the Twickenham Sevens that Young got the call to say he was going to Denver for the Churchill Cup. “Stuart Hooper was captain, we had some great times,” he remembers fondly. “Unfortunately we got well beaten by Ireland Wolfhounds in the final, but it was a massive eye opener for me. Being 20 in the USA, I couldn’t get a beer in, but David Flatman was there and he took me under his wing!”

Time out of the game was spent productively – not just in rehab but in an educational sense: he recently graduated with a business management degree from Northumbria University. “When I finished my A-levels, I was originally going to study full-time at university,” he says. “I did one year at Northumbria, but then rugby took over, so I finished it through distance learning.”

Young made the move to Welford Road in 2011. “Leicester is notorious for its brutal training sessions, but over the years that’s changed and it’s not as bone-on-bone as people might think. It is a tough place to be, no doubt, but the record they have there speaks volumes. It didn’t quite work out for me, but I value my time at Leicester and still have a lot of friends there.”

Young has already played a key part in the club’s early-season success, starring in Bath United’s A League final win against Northampton Wanderers in December. It is the team environment at Bath that is getting the best out of Young. “Nobody gets left behind,” he says. “The sessions we do are spot-on and executed very well. If you’re in a happy mood, you’re always better in training and improving yourself. Everything seems right here.”

Young made an uncapped appearance for England in 2011 against a starstudded Barbarians side at Twickenham – a decent reward after desperately bad luck with injuries at Tigers. “I’ve spoken to a few older boys when I’ve been down because of injuries, and they’ve told me, ‘Don’t worry, the years you miss out you put on the end of

BATH RUGBY have two cup games to look forward to in the coming weeks, both at The Rec. The first is the LV=Cup Semi Final against Exeter Chiefs (9 March), who have never beaten Bath in the modern era; the second is an Amlin Cup Quarter Final against Brive (6 April) – Bath’s opponents when they lifted the Heineken Cup in 1998. There May Be Trouble Ahead

W

hen you have a child, especially the first one, you understand you are at the beginning of a very steep learning curve. A bit like, I would imagine, standing at the top of the skeleton run in the Winter Olympics knowing you have to throw yourself down the track headfirst, not really knowing what’s going to happen but doing it regardless. One of the fairly obvious things, which for one reason or another wasn’t that obvious to me, is that the baby in the equation….that’s not me honest!!....is also on a massive learning curve. At least as adults we have some frame of reference. We usually have had some contact with other babies

You have always known that you can cry and the louder it is the quicker the response from the big ones that seem to be hanging around quite a bit. In the baby’s head they have just described, in great detail, that they would like to pick up and play with the yellow block with the number 7 on, to the left of the brown teddy with the wet ear that I have just been chewing on. All we hear is ‘goo, goo ga ga’ and hand them the red brick with the number 5 on. No wonder they cry!!

How, in the future, will I be able to say “You’re not going out looking like that!” when with one cuddle and smile I would allow her anything…as long as she doesn’t want to do the things me and my friends did! When I think of all the dangerous situations we got into, all the times we rolled in two hours later than promised without so much as a phone call, all those times we did things we knew our parents would not have approved of it makes me shudder. I fear there may be trouble ahead!
