here is something that happens around this time every year; the region, like the rolling fields that surround us, seems to come alive. The garden is growing, the fields are filled with lambs and calves and there are stacks of events to look forward to, most of which we are covering in this edition of The West Wilts Magazine. To name but a few we have the Selwood Steam and Vintage Vehicle Rally, the Corsham Walking Festival, Devizes Food & Drink Festival, Lacock Abbey’s Weird World Trail, Bradford on Avon’s Secret Gardens, the Celebrating Arts in the Garden exhibition plus the 10th anniversary of the Hope Nature Centre to look forward to, and that’s just in May! FROME FESTIVAL: COMING THIS JULY!

This year’s festival will see Frome come to alive with nearly 200 events. Headlining acts include singer/ songwriter and activist Billy Bragg; the Ukulele Orchestra of GB; Bruce Foxton’s From the Jam, rock band Reef, and James Browns’ legendary saxophonist Pee Wee Ellis. Arthur Lee’s Californian rock band ‘Love’ reunite with ‘Love revisited’ for a special pre-festival show. Billy Bragg is one of the festival’s headline performers

Frome FM is working with the Festival again this year on the Frome FM Festival lounge at the Granary. Free events start with an opening party - a complimentary double bill of electro legends Alan Clayson and Sweet Machine. Later in the week are the Lump Chronicles, Worry Dolls and Bonne Nouvelle, Three is the Magic Number, the Three Corners and Molly Ross Gum Girl. Ticketed events include comedienne Viv Groskop (one of Jo Brand’s favourites) and Arch Garrison of North Sea Orchestra fame.

RUN THE BUBBLE RUSH FOR DOROTHY HOUSE THIS JULY!

Bubble Rush 2016 is on Sunday 31July at Castle Combe Circuit near

Chippenham. Entrants will embark on a 5km run, walk, skip or dance along a route filled with huge bubbly clouds of rainbow-coloured foam.

The Bubble Village will be partycentral with jazzy pre-event warm up routine, live entertainment, children’s activities and lots yummy food! There are no age restrictions and the route is child friendly. The circuit is not a race and is suitable for wheelchairs, pushchairs and prams.

There will be three waves, which take place at 3pm, 4pm and 5pm. Entry is free for children aged 3 and under, children (aged 4-16) cost £7.50 and adults (aged 17+) cost £25. CORSHAM WALKING FESTIVAL

Corsham Walking Festival (17 – 19 June) has gone from strength to strength - organisers are now planning for their third festival. There are 17 walks on offer this year with something for all abilities. For more information on the routes just visit the website, where you can also reserve your spot, (walks sell out so book ahead) and download the festival brochure. Many walks start from the new Springfield Campus in Corsham, others from local villages, all are planned to offer insights into the landscape and history of our beautiful countryside. Led by walk leaders, walkers will be accompanied by specialists who offer insights on quarries, canals, Brunel’s railways, geology, wildflowers and more en route; so you can learn as you walk!

There’s a ‘Mindfulness’ walk, a free children’s treasure trail, an accessible walk round Corsham’s jewel of a town centre and much more. CELEBRATING ART IN THE GARDEN West Lavington Manor, a stunning garden on the edge of the Salisbury Plain, is the setting for a major exhibition (in association with Pound Arts Rural Arts programme) that features work in bronze, ceramic, glass, steel, stone and resin by 29 contemporary sculptors. Eight of the artists are drawn from across Wiltshire. The remainder come from much further afield and for many this is their first showing at an exhibition in the county. The Manor’s long established garden is absolutely stunning and provides a beautiful settings for placing artists’ work. The exhibition runs from Thursday 26 May to Sunday 12 June, 11am – 6pm. BRADFORD ON AVON SECRET GARDENS Enjoy a great day out for all ages exploring picturesque Bradford on Avon and its hidden gardens on Saturday 29 May and Sunday 26 June. Hope Nature Centre celebrates 10 years!

T

he Hope Nature Centre is situated in the Southwick Country Park, Trowbridge. They provide work placements for adults with learning disabilities who work in the tearoom and nature park. In May the centre celebrates its 10th anniversary. Started by two parents of adults with learning disabilities, the charity occupies a 15 acre plot with a variety of animals including emus, alpacas and donkeys and a tearoom that provides freshly cooked meals as well as catering for birthday parties, wakes and business breakfasts. Last year they were awarded a Certificate of Excellence by Trip Advisor and in 2011 were awarded a Queen’s Award for voluntary service. As well as the animal park, they also have a range of play equipment for children and have recently installed

an inclusive playground area with a wheelchair accessible roundabout. We also have a storyteller’s chair and run story sessions during the summer. The addition of a Fairy Wood all makes the entrance fee of £2.50/adult, £1.50/ child or £7 for a family of 4 fantastic value for money.

Proclaimers to headline Village Pump

L

ast year’s Village Pump Folk Festival was hailed by independent reviewers as virtually flawless from start to finish” and “one of the friendliest festivals we’ve had the pleasure to review”. What makes “The Pump” so good? It’s a small-scale event with large ambitions,

t last May is here again. It is my favourite month of the year, and not just because I have my birthday! The main reason I like May is the weather, it really starts to warm up - even though this winter has by no means been harsh I do get fed up with grey skies and wearing coats - it is lovely to feel a bit of warmth on your face when you are outside isn’t it?

English asparagus! Hopefully you have planted your main crop potatoes as I suggested last month. Even if you do not have a garden and just a few deep pots you can still plant a few potatoes! This month you can sow beetroot, carrots, courgettes, squash and pumpkins. You can also pop in your brassicas for harvesting in the winter.

Watercress It’s tasty, it’s healthy and it’s grown right here in Wiltshire. Enjoy these wonderful dishes that make the most of seasonal watercress – recipe courtesy of Waitrose.

Watercress & Buttermilk Vichyssoise with Crab Toast Ingredients 35g butter 1 large onion, diced 1 medium potato, peeled and diced 500ml vegetable stock 200g watercress 100ml buttermilk 60g white crab Freshly grated nutmeg, pinch Grated zest and juice 1 lemon 2 slices Waitrose White Sourdough Bread, halved to make 4 pieces

Method To make the soup, melt 25g butter in

a medium saucepan and gently cook the onion for 2-3 minutes until softened but not browned. Add the potato and stir to coat with the buttery onion. Pour in the stock, bring to the boil then simmer for 12-15 minutes or until the potato is tender. Add the watercress (reserving 1-2 tbsp to garnish) and simmer for a further minute. Remove from the heat and leave the soup to cool slightly then blend or whizz in a hand-blender to make a smooth purée. Stir in the

buttermilk (reserving 1-2 tbsp to garnish the soup) then cool and chill until ready to serve. Season the crabmeat with the nutmeg and lemon zest plus lemon juice to taste. Lightly toast the 4 pieces of sourdough, spread with the remaining butter and top with the seasoned crab. Watercress & Cream Cheesestuffed Chicken Serves 4 Ingredients 100g pack Waitrose Watercress 150g Paysan Breton Luxury Cream Cheese 2 tbsp Lingham’s Chilli Sauce Pack of 4 skin-on essential Waitrose British Chicken Boneless Breasts 2 tbsp olive oil Method Preheat the oven to 190ºC. Finely chop the watercress and beat into the cream cheese with the chilli sauce and seasoning. Using a small sharp knife, cut a pocket into the side of the chicken breasts, carefully push in the cream cheese mixture and securely close with a cocktail stick.

Ingredients 320g ready-rolled all-butter shortcrust pastry 1 leek, finely sliced 2 medium free range gggs, lightly beaten 150ml whole milk 30g grated Parmigiano Reggiano 30g watercress leaves (stalks discarded), finely chopped 170g pack Waitrose Lemon & Herb Poached Scottish Salmon Fillets, skin removed Green salad, to serve Method Put a baking sheet in the oven and preheat to 200ºC. Line a 20cm loose-bottomed tart tin with

pastry, prick the bottom with a fork, line with baking paper and baking beans and bake for 15 minutes. Remove the paper and beans and bake for 5 minutes more or until golden. Turn down the oven to 180ºC. Meanwhile, steam the sliced leeks for 5 minutes or until tender, then set aside. Mix the eggs with the milk and most of the Parmigiano Reggiano. Stir in the watercress and season well with black pepper.

Place the chicken breasts in a small roasting tin and drizzle the skin with the olive oil. Season and cook in the oven for 25–30 minutes until golden and the juices of the chicken run clear when pierced with a knife. There should be no pink meat. Transfer to warmed plates, remove the cocktail stick and serve with new potatoes and a sliced tomato and red onion salad or chantenay carrots.

Spread the steamed leeks over the base of the tart, then pour over the egg mixture, flake the salmon over the top and sprinkle with the remaining cheese. Bake on the preheated sheet for 25–30 minutes until the filling is just set and the pastry is golden. Serve warm or chilled, in wedges, with green salad.

Meet the Chef

This month we spoke with OWAIN PARRY, head chef from the award-winning Lamb on the Strand pub and restaurant in Semington. What was your first job in food? My first job was in a café, straight out of school; I enjoyed it so much I went to catering college. After college I secured a job as a commis chef in a large hotel and then moved around hotels and pubs where I moved up to head chef. I moved to Wiltshire in 2002. What was the first dish you mastered? A simple steak & ale pie. It’s a real classic and when done well, it’s delicious. Do you have any favourite local suppliers? I would have to say Lovejoys Wholesale. I have used them for many years; the quality of their local vegetables from Bromham is outstanding.

Flying High If you have a love of all things aeronautic you may be interested in joining Warminster & District Radio Control Flying Club, which flies at Keevil Airfield.

arminster & District Radio Control Flying Club was started by a group of enthusiasts in 1952 when equipment was very basic but extremely expensive. Today, the club, flying at Keevil Airfield under licence agreement with the MOD, uses sophisticated radio gear and a plethora of aircraft. Members come from all over the west of Wiltshire.

Bath Rugby’s club captain Stuart Hooper called time on his playing career last month. Here is what he had to say about his retirement. It must have been a difficult decision to retire, what led up to it? Injury basically. I’ve seen a surgeon and he has said that it’s not safe for me to carry on. I hurt my back playing earlier this season and it’s not recovered the way that we’d have hoped. You have to be fully fit to play at this level and I’m not, nor will I be again, so that’s it, the end of my playing days.

Threenage Kicks

W

hen you decide to have children there are some things you know are on the horizon. Most are pleasant, lovely things that you will not be able to get enough of. Some, aspects on the other hand, will not be quite so welcome. These can range from not sleeping properly for weeks on end to your phone being locked as sticky little fingers have been pressing buttons and swiping screens. Then there are the almighty toilet situations and being late for appointments because not only do you have to strap the child into the car but you also have to arrange a myriad of soft toys on the back seat (in the correct order) before you can set off. Then you have to go back in the house as you have forgotten ‘favourite blankie’ and as we

When I got back to the car I realised why. Just before I left the house I had been playing with my daughter who had just had a bag

becomes persona non grata and gets a scowl that would frighten the devil if he dared approach. You think you’ve found a formula that works, a phrase or a movement or sometimes just one word that will send them into raptures of laughter…..two hours later….. nothing. The mood swings are just incredible and the stubborn streak borders on freakish. You used to be able to use bribery to great effect. Trips to the

park, ice cream, toys, time watching TV can and have all been used in the past as inducements to get compliance. No longer…. Me: “You can have an ice cream if you get up from the supermarket floor and stop wailing” Daughter: “No” Me:“But you love ice cream” Daughter: “No I don’t, I have never liked ice cream and I never will” I then pick up the mini Beelzebub and one minute later as we are walking along the frozen aisle I will hear…” oooooh ice cream. Daddy can I have an ice cream” If you are thinking of having children I would urge you to do it. It will be the most exciting, rewarding, fantastic thing you will ever do. Just remember though terrible twos are a piece of cake, it’s all about the threenager and if it gets too much buy yourself your own favourite blankie…you may need something to cry into now and then!!
