ROSSINI’S THE BARBER OF SEVILLE

London based Garden Opera Company are returning to Bath to stage a very special open air performance of Rossini’s masterpiece, The Barber Of Seville. The event, organised Bath homeless charity Julian House, will take place on Thursday 7 July at Prior Park College, Bath. The Barber of Seville is Rossini’s best known work, and rightly so. The well-known hummable tunes along with the humorous plot have made this the most frequently performed opera of all time. Upbeat, optimistic, and full of wit, you will be carried along by a whirlwind of crazy disguises, twists and turns and unlikely interventions. Set within a travelling circus, the many famous melodies will be sung in English by some of the profession’s finest singers who are accompanied by an acclaimed ensemble of chamber musicians.

This unique open air performance, against the stunning backdrop of the city of Bath, promises to be a highlight of the summer’s events calendar. Picnic in the picturesque college grounds (gates open 5.30pm) prior to the performance which starts at 7pm. Tickets cost £38 per person (£20 per child under 16 years old) In case of wet

weather the performance will be moved to the Assembly Rooms, Bath. You will be given 48 hours notice in this instance. Frome Artists Open Studios 2016

rom 2 – 10 July, find time to visit the Frome Open Studios, open 11am-5pm each day during Frome Festival. Their excellent brochure, with full details of studio locations, is already available in and around Somerset.

This year the studios are featuring specially created artworks for Black Swan Arts Secret Swan Event in some of the venues. Every dog has his day at Bowood

B

owood Dog Show takes place over the weekend of 18 and 19 June. This new two day event, organised by Living Heritage with the support of Lord Lansdowne, retains some old favourites and hosts lots of new features and attractions. At the centre of the show are the two main arenas, the Show arena and the Activity arena. The Show Arena hosts a top line up of performers that

include dog display teams, sheepdog, gundog and falconry displays, whilst The Activity Arena is where it all happens. It’s where you can take part in as well, from serious competition, or just for fun. One of the old stalwarts of the event is the Companion Dog Show, it is again organised by Wiltshire Sight with entry proceeds going to the charity. Full entry details on wiltshresight.org.

A new section of the show is the working dogs featuring dogs straight from the countryside, with competitions, demonstrations and vulnerable breed displays. Learn how to train a gundog, see them in action in the working test or even enter yourself. There’s also a chainsaw carving competition where all the main show piece sculptures will be dogs, providing a lively display of skills. See who carves your favourite breed and maybe make a bid in the following auction. Moving around the show there’s lots of other attractions including craft marquee, food hall, ferrets, hamsters and puppet shows All in all, Bowood Dog Show offers a superb family day out for dog lovers. The American Museum in Britain

T

he American Museum in Britain, based at Claverton Manor near Bath is the perfect venue for a great day out for all ages. Located in an Area of Outstanding Natural Beauty, its grounds and parklands are wonderful to explore. Inside the manor house there is a superb collection of paintings, furniture and quilts set out in a series of period rooms.The grounds and café are now open at

the earlier time of 10.30am, so visitors can explore the gardens and enjoy the café terrace which offers stunning views over the Limpley Stoke valley. There are also three shops selling a delightful range of jewellery, books, postcards, Shaker boxes, quilts, plants and the famous Tussie Mussie – a traditional posy of flowers and herbs. There are also two exhibitions on offer to visitors: • An American Toy Story which features a wonderful collection of toys and collectables from films

spanning the 1930s to the present day. • Jeremiah! Inspired Interiors – the first European show of sumptuous room portraits from American artist Jeremiah Goodman whose iconic paintings are stunning. As well as all of that, the museum also runs a variety of music events, workshops, talks, children’s activities and classes. The museum is open Tuesday – Sunday 12 noon – 5pm (café and gardens open from 10.30am). Closed Mondays except during August and Bank Holidays. Century up for Holburne Museum

S

aturday 4 June marks 100 years since Sir William Holburne’s collection moved to its current home at Sydney Gardens in Bath. To celebrate reaching this landmark the Holburne Museum is inviting everyone to head over and decorate a huge fake cake, make bunting and badges and to take part in a giant Century of Art game. As well as that there’ll be lots of other art-based activities, international accordion music from Coeur Vagabond and a barbecue. The event is free, but charges do apply for some activities. The other big event to look forward to at the Holburne Museum this month is the launch of a brand new exhibition centred around the works of acclaimed artist George

Stubbs. Stubbs & The Wild (25 June – 2 October 2016) delves into the visionary eighteenth century world of George Stubbs through his realistic animal studies and sublime fantasy pieces. The exhibition presents the early encounters between polite Georgian society and the wild creatures and places depicted in Stubbs’ work. The uneasy relationship between the domestic and the exotic is explored through important paintings, prints and drawings by this extraordinary artist, curated by Amina Wright.

his is the last month of the English asparagus season so make the most of this wonderful vegetable. Also being sourced locally are the baby bunched carrots and the mixed colour heritage varieties, spring onions, spring cabbage, broad beans, fresh herbs and many more salad crops. There are plenty of Jersey Royals and Cornish new potatoes available in the shops now, look out for them. Fresh peas should be around very soon too. As the month progresses our suppliers will also be sending us baby salads, mixed lettuces and stunning heirloom tomatoes.

I hope those of you who have tried a bit of home growing, or those more experienced with your own allotment, are now seeing the ‘fruits’ of your labours. Pumpkins and radish should go in now as well. If you have planted the following they should now be almost ready to harvest - red chard, lettuce, rocket and french beans. Super SPuds New potatoes are one of the foodie treats of late spring. Enjoy them at their best with these delicious recipes, which come, as usual, from Waitrose.

Lemon & Rosemary Chicken

Ingredients 750g baby new potatoes, halved 1 bulb garlic 800g chicken thighs 1 lemon, quartered 4 rosemary sprigs ½ tsp dried chilli flakes (optional) 1 tbsp olive oil 450g asparagus, trimmed

Method Preheat the oven to 200ºC. Separate the cloves of garlic but leave them unpeeled. Place in a large, shallow roasting tin with the new potatoes, chicken thighs and lemon. Tuck in the rosemary, scatter over the chilli flakes (if using) and drizzle with olive oil.

Serves 4

Roast for 30 minutes then lay the asparagus on top and return to the oven for a further 10 minutes or until the vegetables are tender. Ensure the chicken is crisp, golden and cooked through with no pink meat. Divide between plates and serve. THEWESTWILTSMAGAZINE

Grilled Mackerel & New Potato Salad Serves 4 Ingredients 500g new potatoes ½ cucumber portion, peeled and cut into large cubes 4 tbsp mayonnaise 1 tbsp wholegrain mustard 2 tbsp lemon juice 4 fresh mackerel, butterflied Method Cook the potatoes in boiling water for 15–20 minutes until tender. Drain and mix with the cucumber. In a bowl stir together the mayonnaise, mustard, half the lemon juice with seasoning and toss with the warm potatoes and cucumber.

Beans & Greens Salad with Crispy Chorizo & Pesto Serves 4 Ingredients 750g baby new potatoes, halved 220g fine green beans 240g tenderstem broccoli spears, halved 400g can butter beans, drained and rinsed 145g tub fresh green pesto 90g Spanish Chorizo slices

until all are tender. Drain the vegetables, place in a large serving bowl with the butter beans and pesto and toss well together. Heat a large frying pan and cook the chorizo slices in batches for 1 – 2 minutes on each side until they

Meet the Chef This month we caught up with KIM STEEVENS, head chef from Vaughan’s Kitchen Event Caterers, about growing up in New Zealand, working across the world and mastering Eggs Benedict. What was your first job in catering? Whilst training to be a chef in the late 90s in New Zealand I worked at a woodfired pizza restaurant. We made our own dough and cooked up to 170 pizzas a night. It was there my taste for fire and smoke was born. That rustic style and flavour still features heavily in my cooking at Vaughan’s kitchen events. Where have you worked previously? Auckland is a melting pot of Asian inspired Pacific Rim cuisine. As a student I worked my way up the ladder all over the city until I had the opportunity to run a fine dining restaurant in a boutique vineyard in the Bay of Islands. I spent most of my twenties travelling around the world cooking everywhere from the Rocky Mountains to Nova Scotia, back street food vendors in Sydney to English country pubs. All those high end and low end jobs have helped me gather a wide range of styles and flavours, which is great when designing menus for our event catering and helping wedding couples have a unique menu for their special day, rather than an ‘off the peg’ menu that has nothing unique about it. What was the first dish you mastered? It would have to be Eggs Benedict, mastering a great hollandaise sauce is an art. Eggs Benedict is New Zealand’s national breakfast dish and I rate a café by how well it makes its hollandaise. It’s one of the recipes I

love to teach at Vaughan’s Kitchen Cookery School. What is the most memorable event you been part of? I am lucky to be part of so many amazing special events and weddings. I recently worked with a bride and groom who requested dry ice as part of their feast display. The theme was burlesque/steampunk style. Incorporating food into such a theatrical event was so much fun. Which local pubs and restaurants do you like visiting? My favourite bar is The Vaults in Devizes. It is an amazing ale house run by Kennet and Avon Brewery where you can always guarantee a tasty pint. When you cook for friends, what’s on the menu? Being from NZ it has to be a BBQ whatever the weather! There will always be grilled halloumi, baked spiced sweet potato, local meats, Barbados slaw and maybe steamed mussels or grilled crayfish and of

course home brewed beer and cider! I am planning a BBQ/smoking class for the cookery school so keep an eye out! What’s your favourite kitchen gadget? I love my homemade smoker made out of an old filing cabinet but as I do a lot of big volume events it’s a tie between our potato rumbler (I hate peeling potatoes!) or our industrial veg prep machine which grates 20kg of carrots in 2 minutes. The Fussels Fine Food Forum Andy has invested in a completely new production unit on his farm. A focal point for this will be the Fussels Fine Food Forum, a venue that will cater for an exciting range of food and family based activities that anyone can be a part of.

FORD LEAVES BATH Bath Rugby are looking for a new head coach after parting company with MIKE FORD following a hugely disappointing campaign.

M

ike Ford joined Bath Rugby in 2012, initially as First Team Coach and has subsequently been Head Coach for the last three seasons. Despite a disappointing ninth-place finish in the Aviva Premiership, he had expected to be in charge for the 2016/17 campaign. However, following feedback from a consultant brought in by owner Bruce Craig to conduct an extensive review into a disastrous season, Ford lost his job. Tarquin McDonald, Managing Director of Bath Rugby, said, “Over the four years Mike has been with the Club, both he and the team under his guidance have achieved a huge amount. He has developed an exciting, attacking style of rugby, helped to develop exciting talent and in 2014/15 he brought the team to the final against Saracens at Twickenham. I would like to take this opportunity to thank Mike for all his hard work, passion and commitment to the club and wish him all the best for the future”. Despite obvious disappointment, Ford found time to thank the staff, players and fans via his Twitter account. “It was an honour to be part of the Bath Family for four years. Thank you to the staff and players, past and present, for their commitment. Thank you to the Bath Family for your unbelievable support. Disappointed I couldn’t take the next step with you! I leave Bath Rugby with so many wonderful memories and now look forward to embracing the new opportunities that lie ahead.”

Just Lion Around

ast Friday we decided to go on a family jaunt to Longleat. It had been a while since we had been, the weather was beautiful and, more importantly, it wasn’t halfterm so it shouldn’t be too busy. It is also the safari park’s 50th anniversary so all kinds of celebratory things were going on. We decided we would do everything else first and the safari park at the end of the day. With this in mind we set off for what we hoped would be a fun filled day of adventure. We were not disappointed, the weather was fabulous, and the crowds were just right - large enough for everything to be open, but small enough that you didn’t have to wait to go on anything. We were in for a brilliant day. That is until of course the prime reason for going, our three year old daughter, gets a cob on about ten

to hear “What would you like to do first?” and the even more dreaded reply…”Nothing”. We then proceeded to go through a list of all the animals we could think of asking if they would suit madam’s itinerary for the day but the standard reply was “No!”. There was even a red panda which, apparently, is a character in Kung Fu Panda, one of the favourite films of the moment but even that got a definite “No!”. We gamely struggled on for a while pointing and oohing and aahing at the cute animals without any discernible reaction or enthusiasm. We went on the train (it proved diverting for around 3 minutes), tried to take her into the maze to see if we could lose her (joke….honestly) but it was closed, even the sweet shop didn’t seem to help. The only thing that got any kind of positive reaction was the Adventure Playground and even that didn’t last long.

It was all going well, for the first minute at least, until the dreaded question…the one that no one likes

We then realised we may as well cut our losses and go to the Safari Park. This would surely do the trick. There was a bit more interest, but not too much. This may have been compounded by the fact that I have a bit of history with the Longleat carnivores so I tend not to hang around too long in amongst them. When I was younger - old enough to drive but not rich enough to buy a car - I asked my dad if I could borrow his work van so that a friend and I could go to the Safari Park. We

started driving through and as we approached the lions could see that they were much more animated than usual. They tend to be having a big group snooze sesh when you go through but these guys were up and about, sniffing the air and wandering around as though something had piqued their interest….That something, it transpired was me. The pride came up to the van and started circling it, one lioness even came up to the driver’s side window and I could see her breath on the window. It was at this point, somewhat late in the day I concede, that I remembered what my dad did for a living, he was a butcher….the smell of the meat was driving the lions mad….and I still had the wolves to go. I still hold the record for fastest trip through the wolf enclosure! All in all it was quite a nice day, after the safari park everyone seemed in a much better mood so we returned to the house area, had an ice-cream and revisited some of the mornings failures and this time even had a few successes….I still didn’t go in the Butterfly House though.
