FROME CHEESE COUNTDOWN BEGINS

The clock is counting down to everyone’s favourite fixture, the Frome Agricultural & Cheese Show (Saturday 10 September). The show is renowned for its sensational entertainment. Over the years it has staged thrilling, adrenaline pumping acts, from flying bikes to fire eaters. This year will be no exception, with an exciting line up once again. Bolddog Lings, Titan the Robot and the fast and fun Lamb National will

be there to entertain the crowds, while the FDC Law Animal Nursery, a firm favourite with the whole family, returns for another year.

In a fun new feature, a search has been launched to find ‘Fit Farmers’ who’ll make up the contestants on a new cheese-themed bake off. The Mid Somerset Show returns!

L

ocal residents are being invited to the 164th Mid Somerset Show, the largest free agricultural show in the country, on Sunday 21 August. This year the President’s Ring will feature the fast, furious and fun Scurry Racing as well as the usual favourites: the Inter-Hunt

Relay, heavy horses and the livestock Grand Parade. The Sheep Show is returning by popular demand and the Meerkat Display will make an inaugural appearance, giving visitors the opportunity to meet these cute and ever popular creatures. After popular demand, local band The Mangledwurzels will also be performing at 4pm for those who like to enjoy a cider and some music at the end of the day. The NHS and other state funded healthcare services provide a good support system within their field of expertise. At the same time like all systems they have their limitations and do not work for everyone or in most cases, people need complementary support. We want to inspire, stimulate and provide a highly informative event for people to upgrade their life in whatever ways work for them. It will be vibrant, creative, fun and bring a

his August sees the first ever Great British Food Festival at Bowood House. Email me if you would like a list of the ones we supply. Vegetable of the month is kohlrabi. It is a very odd looking vegetable, with a weird name. It looks a little like a space ship. You will probably find it at a farmers’ market. It is a fantastically versatile

vegetable with a taste and texture somewhere between a cabbage and broccoli stems. It goes well with traditional Indian spices or used in a soup of cream of potato

Our hedgerows and trees and fruit farms are bursting with delicious seasonal delights. Gather them together and create these wonderful dishes, which come courtesy of Waitrose.

British Berry Sherry Trifle

Ingredients 300g raspberries 300g blackberries 2 tbsp icing sugar 100ml Waitrose Berry Red Smoothie 1 Madeira loaf cake, cut into 16 pieces 100ml cream sherry 250g tub soft cheese 250g fresh custard 300ml extra thick double cream 2 tbsp toasted flaked almonds 2 tsp Cooks’ Homebaking Freeze Dried Strawberries

Method Place the berries in a bowl and gently stir in the icing sugar and berry smoothie. Set aside for 5-10 minutes.

Meanwhile, crumble half the Madeira cake into the base of a large glass serving bowl. Drizzle over half the sherry and set aside for 5 minutes, then spoon over half the berries and some of the liquid from the bowl. Crumble the remaining cake on top, sprinkle with the rest

of the sherry, then spoon over the last of the berries and any juices. In a separate bowl, whisk the soft cheese until smooth then add the custard, whisking until well blended. Pour over the fruit. Cover with clingfilm and chill. When ready to serve, spoon the extra thick double cream over the top of the custard layer. Scatter over the almonds and freeze dried strawberries, and serve. Lightly grease a 1-litre shallow ovenproof dish. Place the blackberries and chopped pears in the bottom of the dish and sprinkle over the lemon juice and 1 tablespoon of the sugar. Set aside while you make the crumble topping.

Serves 4 Ingredients 145g butter, cubed 270g self-raising flour 125g golden caster sugar 1 tsp bicarbonate of soda 1 Braeburn apple, peeled and chopped into small chunks 170g blackberries ½ tsp Waitrose Signature Spice (ground) 1 medium egg, beaten 150g pot natural yogurt 100g fondant icing sugar Method Preheat the oven to 170°C and line a 12-hole muffin tin with paper cases. To make the crumb topping, rub together 70g of the butter, 100g of the flour and 25g of the sugar in a medium bowl, until resembling large, coarse breadcrumbs. Melt the remaining 75g butter in a small pan and allow to cool.

In a large mixing bowl, combine the remaining 170g flour and 100g sugar with the bicarbonate of soda. Stir in the chopped apple, blackberries and spice. Add the melted butter along with the beaten egg and yogurt, stirring until just combined.

Place the dish on a baking tray and cook for 35-40 minutes until the topping is golden brown, the blackberries are just releasing their juices and the pears are tender. Allow to stand for about 10 minutes before serving with clotted cream.

BASIL

CORIANDER

Basil is a delicate herb that bruises easily so treat it with care. Spicy and fresh in equal measure, basil pairs beautifully with tomatoes - raw, roasted or cooked into a sauce. To avoid it going black, store somewhere cool rather than cold and slice the leaves with a very sharp knife, or tear them with your hands. Once you’ve picked off the leaves, keep the stalks and throw them into a bubbling tomato sauce to infuse, then fish them out before serving.

Grassy, cooling and citrussy, coriander leaf is a match for hot and spicy food Indian, Thai, Vietnamese and Mexican. Try it, too, on tomato salads, in guacamole or with fatty meats such as lamb and pork. Coriander’s flavour dies when cooked, so use it raw as a garnish or add it to a dish right at the end of cooking. Coriander stalks can be whizzed, along with garlic, ginger or galangal, green chilli and shallots, into a vibrant green Thai curry paste.

CHERVIL

DILL

The flavour of chervil is somewhere between mild parsley and tarragon, with a note of aniseed. It pairs well with delicate flavours such as poultry, fish, eggs and summer vegetables. Use as a garnish, or blitz with tarragon, chives, parsley, oil and capers to make a vibrant green sauce that is fantastic on salmon.

Feathery dill’s mild aniseed flavour is underrated in the UK. Try it in salads such as tomato, cucumber and radish, or with beetroot and feta. Dill also pairs brilliantly with sour dairy produce soured cream, yoghurt and cream cheese - and enhances simply cooked salmon, chicken, new potatoes and eggs.

CHIVES

MINT

Chives have a mild onion flavour that makes them very useful - pair them with anything that benefits from a dose of onion or garlic. Chop them finely to release their flavour and add them at the end of cooking, or use them in salads or as a garnish. Mixed into sour cream, chives make a lively dip. The flowers are edible, too: break them up and sprinkle them over a salad.

Mint has a fresh, sweet flavour and cooling aftertaste. It works well with fatty foods such as lamb or spicy Middle-Eastern dishes. It is particularly good with feta, yoghurt, cucumber, melon, peas, oranges and aubergine. Mint is also great in drinks, from a soothing mint tea to a refreshing mojito. Mint leaves bruise easily: a good way to

cut them, which avoids this, is to stack a few in a neat pile, roll up tightly like a cigar and then slice into thin ribbons.

OREGANO & MARJORAM These herbs are closely related and can be used interchangeably. Quite strong, especially when dried, oregano and marjoram can stand up to spicy flavours, for example in a beef or bean chilli. They work well with meat, fish and vegetables to be grilled or roasted, along with some garlic and olive oil. They also enhance tomato sauces, especially with a little chilli in the mix. As strong herbs, they are better off added early, to give them time to cook and infuse.

PARSLEY (FLAT-LEAF OR CURLY) Fresh, cool and green, parsley’s powerful flavour is versatile, be it in flat-leaf or curly form. Flat-leaf is perhaps more favoured, but unless you particularly want the leaves for decoration, they’re interchangeable in recipes - just use a little more curly for the same flavour.

SORREL Common sorrel has arrow-shaped leaves, which look a little like miniature dock leaves. Its flavour is strongly acidic and sour. Combine young sorrel with other leaves for a zingy green salad, but go easy on the vinegar in the dressing. Use it to brighten up mashed potatoes, meat or cheese pies, or rich spicy stews as is done in parts of West Africa. • riverford.co.uk

Meet the Chef This month we caught up with the head chef at The Rising Sun in Lacock, ROGER COX, to talk piddled pork, Sunday roasts and partying with John Travolta! What was your first job in catering? My first Saturday job when I was a teenager was in a butcher’s shop but soon after that I went to catering college in Birmingham. Where have you worked previously? After several years in the police force and then several more in the fire service I came back into catering with Whitbread. I later went to Turkey, the British Virgin Islands in the Caribbean and Canada. What was the first dish you mastered? I’d have to say the Sunday roast, my mother was a foster mother and we always had a house full of children. As soon as we reacehd 13 my three sisters and I had to help mum prepare the Sunday roast. I loved it! Do you have any favourite local suppliers? I do enjoy working with Lovejoys of Melksham, they provide fabulous fresh local fruit and veg. Much of it comes from Bromham farms, their service is excellent!

What is your favourite dish on the current menu? My ‘Piddled Pork’. It is pork belly that’s been slow braised in Moles’ Black Rat cider, served with minted new potatoes, local Bromham vegetables, topped with local black pudding and drizzled with a creamy cider and apple sauce. What is the most memorable event you have cooked for? When I was in the Caribbean, John Travolta called in to eat. He so enjoyed what he had, he invited me to party on board his luxury yacht. When you cook for friends, what’s on the menu? I enjoy dipping in to my experience

from my travels, so Caribbean chicken or Turkish meze. I was also brought up in Birmingham so I do like cooking curries from scratch. What’s your favourite kitchen gadget? My blender, I love making sauces, in particular using a combination of alcohol and fruit to make a sauce to complement good meat. And your guilty pleasure? The Life Cycle

ear readers, I have a confession to make. It is not too serious but serious enough that I think I should come clean and announce it to the world. I am a MAMIL. There I’ve said it and I can’t now unsay it. What is done is done and I’ll forever be known as one of a subspecies of the human race. A MAMIL, if you didn’t know, is a Middle Aged Man In Lycra. There are of course female equivalents of these but for some unknown reason, they don’t have an acronym… suggestions on a postcard please!!! MAMILs are men who are having a mid-life crisis and instead of buying a flash, new, expensive sports car buy a flash, new, expensive bicycle plus a full suit of figure hugging lycra to wear while riding said bike. Now if you are Sir Bradley Wiggins or Chris Froome then you might just get away with a figure hugging number - although Victoria Pendleton and Jess Varnish

As well as the expensive bike, the padded lycra shorts and the skin tight tops you will also need some technology. Oh, you thought you could just get on a bike and go for a ride didn’t you?! Epic fail….as the kids say. You must have some sort of bike computer and there are loads of them. You need one because you need to know how fast you have gone, how far you have gone, your average speed, how far you have climbed, what you are having for tea that night, where you are going this weekend and what is currently happening with Daenerys Targaryen’s dragons in Game of Thrones. I may have made up the last few but you get my drift. These things range from about £20 to literally £1000. As well as the above you can measure your heart rate, your power output and when you get home you can hook them up to your PC and download the whole ride so you can see where you have been and whether or not your cycling buddies have ridden the

Epic fail….as the kids say.” would probably get my vote - but if you are Phil from Trowbridge who could do with losing a few pounds then this is not a great look; bear in mind that if I wear swimming trunks it looks a bit like a rubber band stretched round an egg!! In my defence, although it may not look the best it is essential for comfort while riding - honestly! I tried not to succumb and for a while just used a normal shorts and T-shirt but the chafing, you don’t want to know!!!

See, it’s an absolutely essential bit of kit, and if having one means the we have to forego a summer holiday this year then that’s a price I’m willing to pay. One of the features on my bike computer is the auto pause. This means that when I stop riding and the bike is stationary the computer automatically stops (so as not to skew the stats,

natch) and once I start riding again it automatically starts. This led to one of the more embarrassing moments of my cycling career so far. I was cycling up a hill, it wasn’t particularly steep but was quite long. I had started off at a decent pace and was making my way up pretty comfortably until about halfway up when it suddenly became much steeper. I gamely carried on and changed gear a few times so I was now in the easiest gear. I was still going though and quite proud of the effort I was making. Then there was a beep from the computer, I looked down and the screen said ‘Auto Pause’!! I was going so slowly the computer actually thought I had stopped cycling and auto paused itself….how rude!! Now I know I don’t look the best in my lycra, but I do really enjoy getting out in the fresh air and cycling around the beautiful Wiltshire countryside. And if you are driving around this summer and happen to see a red faced man cycling up a hill looking at his bike computer with incredulity, please offer me a lift home!
