irstly, an admission. I have spent a decent proportion of the month on holiday. Yes, not on ‘annual leave’ as though I were in the navy, but actually on holiday, doing very little save reading, eating good food, and attempting to get my little girl swimming by herself, though she seemed far keener on jumping in and racing lilos, much to my chagrin! So, having returned (and naturally in between internet searches for last minute escapes to the sun) here is what we have compiled for you in October’s issue.

With Christmas irrefutably on the way (does anyone else’s husband count down from 100 days to go?!), we’ve compiled a great list of options for your Christmas parties this year, including everything from Michelin-starred dining to dinner and a disco, see page 23 onwards for inspiration. WESTONBIRT’S FESTIVE ILLUMINATIONS

The National Arboretum at Westonbirt is once again transforming into a sensory winter wonderland for its annual Enchanted Christmas event.

At the heart of the event lies a spectacular lighting display that takes decorating the tree for Christmas to a whole new level. Westonbirt’s majestic tree collection is illuminated, creating a magical One of the most visually stunning experience for the whole family. A festive events in the region, it will take place every Friday, Saturday and new lighting design is created each year, taking in around a mile of the Sunday evening from the 25 - 27 arboretum’s paths. The trail itself is November to the weekend before pushchair and wheelchair friendly Christmas (16 - 18 December). Westonbirt’s Enchanted Christmas is one of the region’s most popular festive events

There will be a packed programme including free Christmas crafts, festive stiltwalkers, classic carols, a traditional children’s carousel and a shop where visitors can stock up on a selection of festive goodies. Father Christmas himself, dressed in traditional green and helped by his cheeky elves, will also be in attendance. Children can share their Christmas wishes in exchange for a small gift. Mrs Christmas will also be keeping kids entertained with storytelling time in her yuletide yurtwhile mums and dads warm up with a mulled wine, hot chocolate or hog roast.

Silver: Light and Shade explores the unique properties of an extraordinary material. The Holburne Museum presents an exhibition that brings together historic and contemporary silver masterpieces to tell a new story about the texture, form and colour of this precious metal.

The exhibition reintroduces this lustrous material to a wide audience by telling a creative visual story, bringing together around 70 historic and contemporary masterpieces from UK collections including the V&A and the Ashmolean Museum as the Holburne Museum’s own collection.

Silver: Light and Shade looks at the different processes used by silversmiths to create a range of surface textures and patterns. Showcasing the work of skilled contemporary makers alongside masterpieces made over the last 500 years, the exhibition considers how different artists create extraordinary and unusual objects. It will place extraordinary objects of the past in context, highlighting silver’s enduring appeal in surprising ways.

DAUNTSEY’S CONTINUES SUPPORT OF ROMANIAN ORPHANAGE A group of 23 Lower Sixth pupils and seven members of staff from Dauntsey’s School have recently returned from a visit to the Romanian town of Cernavoda to support Nightingales Children’s Project. Over a period of 10 days the pupils worked with local street children and orphans, ranging in age from six months to 24 years, to run a week-long play scheme. On some days there were as many as 120 children attending the scheme. The Dauntsey’s team provided a real treat for the local children with craft, sports, drama, dance and team-building activities as well as parties and themed days. To ensure the trip was a success, the pupils started their fundraising in January, and raised more than £10,000 which financed the week’s activities as well as the renovation of the orphanage’s sports area. This year the money was

raised through a range of initiatives including a “Night at the Races” auction, car washing and a very popular Nightingales cookbook developed by the pupils and staff.

‘DRAWN TO THE LAND’ AT LACOCK

Award winning documentary photographer, Sophie Gerrard, presents a series of photographs of female farmers and crofters in Scotland with ‘Drawn to the Land’, on display in the Fox Talbot Museum at Lacock Abbey. The exhibition will run until March next year.

Drawn to the Land’ is an ongoing and exploratory project which takes an intimate look at the contemporary Scottish landscape through the lives of the women who are working, forming and shaping it. Sophie Gerrard’s extraordinary photographs explore the lives of six of these remarkable women who are ‘drawn to the land’; who shape, and are shaped by, some of the most remote and diverse parts of the Scottish landscape. Super

Squashes

Great for soups and stews, casseroles and curries, squashes and pumpkins are super tasty and really versatile. Here are some great dishes where they really shine – they come courtesy of Waitrose.

Rosemary-roasted Squash with Ham Hock & Lentils Serves 4

Ingredients 500g frozen butternut squash 2 sprigs fresh rosemary, chopped 250g puy lentils 1 tsp olive oil 1 small onion, finely chopped 1 tbsp Dijon mustard 100ml single cream 180g pack pulled ham hock 25g sunflower seeds 20g pack flat leaf parsley, chopped

Method Preheat the oven to 200ºC. Spread

the frozen butternut squash in a single layer on an oiled baking sheet and sprinkle with the chopped rosemary. Bake for 30–35 minutes, turning once until lightly browned. Cook the lentils in a pan of boiling water for 15–18 minutes until tender. Drain. Meanwhile, heat the oil in a large non-stick frying pan and add the onion. Cook for 5–6 minutes until soft and golden. Stir in the mustard, cream and

some seasoning and bring to simmering point. Cut the squash into even cubes and stir into the cream sauce with the drained lentils, ham hock, sunflower seeds and parsley. Heat through gently then check seasoning and serve. Cook’s tips If using fresh squash, reduce the roasting time to 20-25 minutes until tender and lightly browned. THEWESTWILTSMAGAZINE

Chicken & Butternut Madras Serves 4 Ingredients 1 tbsp sunflower oil 1 large onion, chopped 6 chicken thigh fillets, cut into chunks 2 tbsp Patak’s Madras Spice Paste 1 small butternut squash, peeled, seeded and cut into 3cm cubes 400g can chopped tomatoes 150g pot natural yogurt 28g pack fresh coriander, leaves roughly chopped Naan, to serve Method Heat the oil over a medium heat in a large saucepan and cook the onion for 3–4 minutes until softened. Add the chicken and cook for a further 3–4 minutes. Stir in the curry paste, squash, tomatoes and 150ml of water. Cover and simmer for 25–30 minutes, stirring occasionally, until the squash is tender and the chicken is cooked through with no pink meat.

Serves 4

Ingredients 900g small pumpkin, peeled, deseeded and cubed (or 1 large butternut squash) 2 cloves garlic, roughly chopped 2 tbsp fresh rosemary, chopped 1 tsp cumin seeds 300ml vegetable stock (or white wine) 150ml single cream 25g pumpkin seeds

Divide between shallow bowls and top with a spoonful of yogurt and a sprinkle of coriander. Serve with warm naan bread. For a meat-free Method Preheat the oven to 180ºC. Meet the Chef This month we caught up with STEWART HUNT from the Rose & Crown in Hinton Charterhouse, to talk lobsters, day’s off and Chinese takeaways. cooking the duck (pictured below). It’s really popular with customers and comes with sauteed potatoes and asparagus in raspberry jus. What is the most memorable event you have cooked for? A family wedding with 80 friends and family. It was just me and one other but we managed! When you get a day off, which local pubs and restaurants do you like visiting? The Rose & Crown (!) and The Boathouse in Bath; the staff are really friendly and the food is outstanding. When you cook for friends, what’s on the menu? I like to mix it up a bit so freshly made pasta dishes, game and also fish dishes. And your guilty pleasure? A Chinese takeaway with my family probably takes the top spot.

What was your first job in catering? I completed my catering qualifications at Trowbridge College and started my career as a commis chef at The Red Lion in Woolverton.

What was the first dish you mastered? My first head chef specialized in fish dishes so lobster with moules mariniere.

Where have you worked previously? As well as The Red Lion, quite a few other local pubs and restaurants including The Mill at Rode, The Cross Keys at Rode and The Polebarn Hotel in Trowbridge. I’ve been at the Rose & Crown for a year and really have enjoyed it. It’s a very family orientated pub with a fantastic atmosphere.

Do you have any favourite local suppliers? I like to use Thorners and Ruby & White Butchers. The quality is excellent and the prices are really good too.

fter nearly a decade at The White Horse Inn at Compton Bassett, husband and wife team Tara and Danny Adams are settling in nicely in their new surroundings at The Greyhound in Bromham. Having arrived in one of Wiltshire’s prime growing areas,

HOUSTON RETURNS TO THE REC

an favourite Leroy Houston has returned to Bath on a short-term deal. The back-rower left in the summer, having agreed a move to Queensland Reds with the hope of furthering his international career with Australia. However, with the Super Rugby season over, Houston has been released to join his old club as injury cover until the end of October following a spate of injuries to Bath’s other back row options including Taulupe Faletau, David Denton and club captain Guy Mercer. After arriving back at the club on a Tuesday, Houston was in the starting line up the following Saturday against Worcester Warriors, scoring a try and being named man of the match in a fairytale, albeit short term, return. Such was the adulation of the crowd, who broke into chants of “Le-roy” throughout the match, Houston was still at the ground hours after the game had finished, signing autographs, posing for selfies and chatting to fans. Leroy said, “The support here is unbelievable. I’m still on a high because the fans show me so much love. I was just happy to be back with the boys. I didn’t expect to score a try. “I’m here for six weeks, then I’m back to Oz with the Reds, hoping to get back into contention for the Wallaby autumn tour coming up.” Bath fans are certain to savour every minute.

am a cat man. Not like Batman you understand. I don’t run around in a cat costume trying to right the wrongs of West Wiltshire while simultaneously running a multibillion pound corporation... I wish! What I mean is I prefer cats to dogs. I realise this can be a very divisive subject, generally people prefer one or the other. For me it is because cats don’t require much looking after. As long as you feed and water them, keep them healthy and give them somewhere warm and safe to sleep undisturbed for long periods of time you can pretty much get on with your life and they will get on with theirs…
