une can often feel like a bit of an inbetween month those first days of spring feel like a long time ago, but it’s not quite time to jet off on those longed for summer holidays. Don’t worry though, our June edition is stuffed full of ideas for how you can pass the time! Some of the best events of the year are coming up over the next few weeks, including Frome Open Studios and, perfect for cycling enthusiasts, the Warminster Wobble (p14). We preview both, and take a closer look at Frome Festival, which will be heading our way from early July. On the food front we have great salad recipes to try at home (p31) plus there’s the chance to win a vegbox worth £25 from Lovejoys Wholesale (p30). We meet the new head chef at Woolley Grange Hotel (p34) and have all the latest goings on from around the area too (p36 & 38). TAPESTRY: HERE & NOW AT THE HOLBURNE MUSEUM Running from Friday 23 June to Sunday 1 October, Tapestry: Here & Now at the Holburne Museum celebrates the vibrancy of tapestryweaving today. The exhibition brings together the work of international makers to showcase the most innovative approaches to the art of contemporary tapestry. WESSEX MIDSUMMER VINTAGE SHOW The Wessex Midsummer Vintage Show will be held over the weekend of 17 & 18 June on the A361 Trowbridge to Devizes Road, Semington. You’ll find classic cars and vintage motorcycles, commercial vehicles, tractors, full size and miniature traction engines, stationary engines driving a variety of vintage machinery. There’ll be old trades, living history groups, model boats, trade stands, a craft marquee and children’s
fairground rides; plenty to keep the whole family entertained. Full bar and catering facilities are on site and there’ll be live music from Mustang Sally too. Frome Open Studios 2017
T
his year the ever-popular Frome Art Trail, running from 8 - 16 July, promises to be bigger and better than ever! There are a record number of artists and makers involved occupying 29 venues in and around Frome. These will be open 11am - 5pm on both weekends of the festival with many artists also opening from Wednesday
to Friday. To see full details of each venue check the website or grab a brochure. These are available around the area but the main outlets are in Frome - namely the Cheese & Grain, Black Swan Arts, The Library and Tourist Information Centre. The 9th Warminster Wobble
T
he product of a crazy idea between two like-minded cyclists while on a bike ride around Longleat Forest, The Warminster Wobble has grown and grown over the last nine years and is set to get bigger, better and hopefully, more inspirational!
The festival is split into two parts and kicks off on Saturday 17 June at 11am in the Warminster Town Park. This part, the fun day, features the Mad Sports Stunt Team, Donald Trump Mexican Climbing Wall, whacky bikes and spin art, graffiti wall, circus skills, martial arts, a turbo

Choose from an easy road ride (27 miles) with a stop off, a hardcore 40 mile road ride full of climbs and descents to get the blood pumping and the legs burning, a guided mountain bike ride and an easy going family ride where you can bring the everyone along for a 10 mile jaunt. The Wobble caters for all abilities and fitness levels, and is a great opportunity to get our on your bike and enjoy the stunning local countryside. These enormous works are part of a major two stage show, Relationships: An exhibition by Sophie Ryder, which runs until 3 July. Even better, this May you can get involved yourself! A dye is made from crushed plants, which is then applied to paper and exposed to sunlight. The colour of the image all depends on the plant being crushed and Nettie has been working closely with Lacock head
gardener, Sue Carter, to grow specific plants.
‘We’ve been growing ‘Bull’s Blood’ which is a fabulous red-leaved beetroot for Nettie to use in her anthotypes,’ says Sue. ‘I’m really looking forward to seeing her images during the residency.’

2017 Frome Festival The award-winning Frome Festival is just a few weeks away and runs this year from Friday 7 to Sunday 17 July. Frome Food Assembly tasting extravaganza and pop up market

xcitement is building throughout the town as this year’s festival brochures make their appearance with an image of Jane Austen riding into town on a motorbike by festival illustrator Sholto Walker. There are so many things to see and do this year, and so many choices to make from Friday 7 to Sunday 16 July. Events this year include Germaine Greer, Andy Parsons, Dutch Gypsy Jazz Quartet ‘The Busquitos’ and a talk from the Frome Tunnels team at the newly renovated Trinity Church. New to the festival, are tours of the ‘jewel in Frome’s crown’, historic St John’s Church with its Holy Well and unique external Via Crucis, and the Frome Food Assembly tasting extravaganza and pop-up market. Festival-goers are encouraged to try something new this year with many workshops to choose from, from

Enjoy the warmer weather with some delicious salads. Try these delicious offerings from Waitrose…
Fruity lamb koftas with cucumber, feta & tomato salad
�
Ingredients 50g bulgur wheat 250g lamb mince ½ small onion, finely chopped 1 clove garlic, crushed ½ tsp ground cumin ½ tsp ground coriander 40g Ocean Spray Pomegranate Juice Infused Craisins 25g flat-leaf parsley, roughly chopped 1 cucumber portion, halved & sliced 270g cherry tomatoes, halved 125g feta, crumbled 25g pack fresh mint, chopped Juice of ½ lemon 1 tbsp olive oil
Method Place the bulgur wheat in a small pan, cover with cold water, bring to the boil and cook for 5 minutes until the tender, then drain well. Place the lamb in a food processor with the bulgur wheat, onion and garlic. Add the cumin, coriander, Craisins and half the parsley. Pulse until combined, then divide into 12 equal portions. Preheat the grill. Take a portion of the mixture and press tightly round a skewer to form an oval. Repeat

to make 12 skewers. Place on a grill pan and grill for 10 minutes, turning until nicely browned and completely cooked through. For the salad, place the cucumber, tomatoes, feta and mint and remaining parsley in a bowl and toss gently. Stir together the lemon juice and olive oil and drizzle over. Serve alongside the koftas. Cook’s Tip Delicious served with a spoonful of houmous or Greek yogurt. If using bamboo skewers, soak in water for 15 minutes before cooking to prevent the skewers from burning. THEWESTWILTSMAGAZINE

Thinly slice the courgettes and add to the bowl, turning to coat in the dressing. Chill for 10–15 minutes. Meanwhile, cook the broccoli in a pan of boiling water for 3 minutes until tender. Drain and cool under running water.

Ingredients 4 free range eggs 750g baby new potatoes, halved 250g green beans, trimmed 1 tbsp cider vinegar 1 tsp wholegrain mustard 1 tsp clear honey 2 tbsp rapeseed oil 250g cherry tomatoes, halved 100g radishes, thinly sliced Punnet salad cress Method Boil the eggs in a pan of simmering water for 9 minutes, then drain and cool. Shell and halve the eggs.
Whisk the vinegar, mustard and honey together with a fork, then whisk in the oil until well blended. Arrange the tomatoes, radishes and eggs on top of the beans and potatoes. Drizzle over the mustard dressing and scatter with cress to serve. Cook’s Tip A few capers or anchovies scattered over the top before serving would add a nice salty balance to the sweet dressing.
Line a baking sheet with foil, brush lightly with oil and top with the goat’s cheese. Add a drizzle of oil, a grinding of black pepper and scatter over the nuts. Grill under a high heat for 3–4 minutes until golden. Divide the leaves, broccoli and marinated courgettes between 4 serving plates. Break the goat’s cheese into pieces and scatter over the top of each salad along with the nuts, and serve. Cook’s Tip The flavours in this dish would work well with griddled halloumi in place of the goat’s cheese.

Meet the Chef
This month we spoke to ISTVAN TOMAY, head chef at Woolley Grange Hotel, about homemade ice cream and cooking for Hugh Fearnley-Whittingstall. What is the most memorable event you have cooked for? I have cooked for many high profile events for politicians, presidents and celebrities. The most meaningful was cooking for Hugh Fernley Whittingstall at Bordeaux Quay and meeting him afterwards. I like his approach and attitude to ingredients and his food style. Do you have a favourite season for cooking and if so why? This is the best time of year, May to July, there are so many wonderful ingredients to cook with, including asparagus, artichoke, broad beans and lamb.
What was your first job in catering? I was an apprentice in a large 5 star hotel in Budapest, Hungary. It was a tough environment but I received classic training, which has stood me in good stead for my career. Where have you worked previously? I have been in the UK for 12 years and in addition to Rookery Manor Hotel & Spa I worked at Bordeaux Spinach risotto
Quay in Bristol for 6 years. I’ve been at Woolley Grange for six months. What was the first dish you mastered? I trained in pastry first of all, creating a Hungarian version of trifle. When I moved to the UK it was a delicious baked chocolate mousse. Where do you source your ingredients and do you have any favourite local suppliers? Our own kitchen garden where we produce amazing fruit, vegetables, herbs and our gardener forages every week. We have just finished a glut of wild garlic. What is your favourite dish on the menu? Chervil gnocchi with beetroot puree and Helford White cheese, oyster mushrooms, pak choi and roasted beetroot.

1. Iford Manor
Iford Manor has a Grade I Listed, internationally renowned, Italianate garden famous for its tranquil beauty. Designed by architect and landscape gardener Harold Ainsworth Peto, who lived there from 1899 to 1933, this unique and romantic hillside garden is characterised by steps, terraces, sculpture and magnificent rural views. It is open to the public from April to October. From midsummer through to early August, the gardens and cloister play host to a series of opera performances and jazz concerts, as well as a series of free “3-to-tea” concerts on Sunday afternoons by amateur and not-so-amateur artists. Throughout the quiet, rural valley there are also beautiful walks along public footpaths, offering a complete escape from the hustle and bustle of modern life and a fine extension of your day out at Iford. The magnificent gardens at Great Chalfield Manor
2. Great Chalfield Manor
Robert Fuller employed artist Alfred Parsons RA to create gardens to complement his restoration of Great Chalfield 110 years ago. Parson’s spaces, walls, flagstone paths and terraces with the soft masses of yew pavilions offset the fine medieval architecture. On Arts & Crafts principles Parsons copied the roll top coping of the churchyard walls to mark new boundaries. Flat top walls for sitting out mark old foundations around the well. He kept the large medieval lawn and added a terrace looking out over the farmland. South facing stone walls wwith warm borders below replaced grass banks. He put a Garden House under a new spreading cedar. For thirty years Patsy Floyd, wife of Fuller’s grandson Robert, and Neil their gardener have planted the main borders using a soft palette similar to Alfred Parsons’ watercolours. Edwardian roses are abundant, Madame Caroline Testout climbs opposite the parish church, Lady Waterlow overlooks the well. Parsons painted roses in beauty, his drawings were republished by the RHS and Graham Stuart Thomas OBE in “A

Garden of Roses”. The rose arbour, planted with white Bennet’s Seedling, Iceberg and starry yellow Clematis Tangutica was created after The Other Boleyn Girl film in 2006. Beyond, behind the stables Patsy has created a vibrant border of autumn colour. On the first Tuesday of each month (except August and January) there is a Quiet Garden retreat day hosted by the parish church of All Saints’ which adjoins the Manor forecourt. 3. Lacock Abbey
You can see why Ela of Salisbury chose this spot for her abbey in 1232: nestled alongside the River Avon in a rolling Wiltshire landscape. Seasonal colour provides interest all year round, from colourful spring blooms through to the deep reds and oranges of autumn, meaning there is always plenty to see on your visit. Why not enjoy a leisurely picnic on the South Lawn, admire the blooms in the Botanic and Rose Gardens or gently amble your way along level, well-maintained paths, taking in the

6. Lydiard Park
Lydiard Park is a beautiful historic estate on the western edge of Swindon, with the Palladian House, Church and Walled Garden, set in 260 acres of parkland. The children’s play area, Cafe & Tea Rooms, events and education programmes make Lydiard Park a great destination for a family day out. It also runs events all year round, including Open Air Theatre (Great Expectations is being performed on 9 June), Birds of Prey and Auto & Retro Festival. The Georgian ornamental fruit and flower Walled Garden has been faithfully restored with stunning displays of flowers, fruit trees and topiary and in the park, there is more evidence of this once-great country estate, including the castellated dam wall, Ice House and grand avenues. You can lose yourself within the 50 acres of Hestercombe – it lends itself perfectly to family visits and is great for exploration. The National Bed Federation offers some advice for keeping cool in your bedroom this summertime.
un-starved Brits may welcome high-end temperatures this summer, but over-hot nights can play havoc in the bedroom.
The National Bed Federation has advice for sleeping well on hot summer nights
“When the sun comes out we can enjoy days in the garden, a picnic and dusting off the BBQ – but we forget the effect the warm days can have on our bedrooms at night,” said Simon Williams of the National Bed Federation (NBF). “A baking bedroom can impact on our comfort and sleep. An ideal bedroom temperature should be around 16-18°C (60-65°F) and it can be difficult to get comfortable and fall asleep in a hot and stuffy bedroom, leaving many suffering from a disturbed night’s sleep. Continued Simon: “Your body temperature needs to drop slightly before you go to sleep which is why you just can’t sleep when you’re too hot. Below are some simple, very effective steps to take to ensure you stay cool and comfortable in bed this summer.”
KEEPING COOL IN BED THIS SUMMER • Keep windows and doors open to allow air to circulate. • Keep curtains or blinds drawn during the day to keep the sun out. • If you’ve got an attic, try opening the hatch. Hot air rises and this will give it somewhere to go. • Get rid of the duvet and blankets - just use a cotton sheet. Or a duvet with a low tog rating. • Wear light cotton nightwear.

Hair around your neck can make you feel warmer. • Have a cool shower or bath before bedtime to lower your core body temperature. • Drink plenty of cold water during the evening and keep a glass by the bed. • Avoid too much caffeine, alcohol or a big meal. They can all make you feel hot and steamy in the middle of the night through dehydration and over-active digestion. • Put a hot water bottle filled with ice cold water in bed. • Cool a pillow case in the fridge
before bedtime or try one of the new cooling pillows that are available to buy. • Cool socks in the fridge and wear them. Cooling your feet lowers the overall temperature of your skin and body. • Use an electric fan – the remedy for 20% of people. If it’s really hot, put a tray of ice and a little water in front of the fan which will cool the air even more. • Next time you buy a new bed, look out for one that incorporates new temperature regulating technology. • And, if you share a bed, make sure it’s big enough for two people, so you can sleep without disturbing each other: 5ft wide should be your minimum.

The highs and lows of the 2016/17 season for Bath Rugby
he season has definitely been a rollercoaster ride, and to be honest, ended with a fizzle rather than a firework as successive losses away at Worcester and Sale meant they finished outside the top four having been in it almost all season. A heartbreaking loss in their Challenge Cup semi final at Stade Français meant a season that promised so much ended up delivering very little except for solid, if unspectacular, fifth placed finish. Player of the Season: Kahn Fotuali’i Following his arrival from Northampton Fotuali’i has been a revelation, providing real zip from the breakdown, an accurate boot when required and more turnovers than any other Bath player. He’s proven to be a top addition to the squad. Notable mentions: Tom Homer, Nathan Catt, Tom Ellis, Semesa Rokoduguni Best moment: The Clash A great day out at Twickenham as 60,000+ Bath fans made HQ a home from home. The icing on the cake was a fantastic Bath comeback and Anthony Watson’s match-winning try. Notable mentions: Leroy Houston's fantastic return to the Rec in September. Roko’s try to win the game against Exeter at Sandy Park Best performance: Bristol (Away in ERCC) For sheer rugby brilliance it has to be the display against Bristol at Ashton Gate in the Challenge Cup. The game finished 57-22 to Bath and the team was scintillating from start to finish. Notable mentions: Bath’s home win v Saracens, second half versus Gloucester

Worst defeat: Saracens (Away) Unfortunately there are a few contenders here too. The defeats at Worcester, Newcastle and Bristol were all pretty woeful, and the game against Wasps the Rec was dreadful, it was one way traffic and Bath were lucky to only lose 24-3. The worst though was against Saracens at the Allianz, it finished 53-10. Bath were close at half time but were blown away in the second half. Areas to improve There is plenty for the coaches and players to work on but showing greater steel on the road is probably one of the main things. Bath won only 5 games away from home all season, losing 12, not good enough if you want to compete for trophies. They also had one of the lowest try scoring rates in the league – they will need to score more tries next season for sure. Ins and Outs Bath say goodbye to Adam Hastings and David Sisi, who are both off to pastures new, whilst the George Ford saga has been an unfortunate
sideshow all season. In Freddie Burns Bath have a popular replacement who found a rich vein of form towards the end of the season. Bath have also secured the services of flanker Sam Underhill, fly half Josh Lewis and scrum half Darren Allinson. Blackadder and Matson have also worked hard to keep the bulk of the squad together. Verdict With so little time to prepare for the new season, Blackadder and Matson did really well to get the team off to a good start, credit for that must surely go mainly to Darren Edwards and Toby Booth who led most of pre-season training. That the season petered out the way it did ensures there is much to work on, but the squad is now larger and, seemingly, more content than it was 12 months ago. With fewer off field distractions (hopefully) and more preparation time hopes are high for next season as the new coaching team and squad bed in. aking a trip down memory lane the other day…as you do, I was struck by how many of the places I used to drink and socialise in no longer exist. The Top Spot and Trowbridge snooker clubs, The Unigate Club, The Axe & Cleaver, The George, The Carpenter’s Arms and, saddest of all, Peewee’s. There are many others in Trowbridge, the surrounding towns and villages (not that I was an professional level drinker you understand, just an

There were many, many more and as is always the case when you get a large group of people together not all were pleasant, most were though and they could always be counted on for a shoulder to cry on, someone to laugh with and at least one of them would stand you a drink if you found yourself a bit short. I used to see some of these guys when I was in the supermarket or walking through town and it is very strange when you see people out of context. Trying to make conversation with someone you don’t really have a lot in common with (especially sans alcohol) and while stood in the frozen section of Tesco can be quite a daunting task.

One of the pubs I used to frequent towards the end of my drinking career (I stopped drinking in 2009) was an absolute classic of a genre which may, politely, be called ‘a bit of a hovel’. It was fantastic. Not by today’s gastropub standards perhaps but who needs ham hock terrines with homemade pickles served on a roof slate when you can have curly ham sandwiches made that very morning by your friendly landlady?! If you were very lucky you might be

able to purchase a pickled egg too, which I am fairly certain constituted a dessert!!!

I knew I was going to like the place the first time I entered. I was greeted with a set of characters you only ever get in one room together if alcohol was involved and ‘Hand Me Down That Can Of Beans’ was booming out of the speakers….yes they actually had the soundtrack to Paint Your Wagon on the jukebox. The people clustered around the bar were a diverse crowd, male and
female, old and young, well dressed and shabby. There were people of all races and creeds, tall and short, fat and thin…..you get the picture. There were two lads called Pete and to distinguish between the two one was Pete ‘The Tyre’ and the other was Pete ‘The Camera’… Can you guess what they did for a living? You also had a chap who used to stop in every night while walking his dogs… Bob ‘The Dog’. Just to confuse matters there was also a man who looked like Bob, but it wasn’t actually him, so he was called ‘Not Bob the Dog’, his name was actually Nigel! ‘Wolfie’ always wore one of those wolf fleeces, ‘The Hustler’ fancied himself as a bit of a pool player - even bringing his own cue with him - whilst ‘Sock Man’ had an array of very fancy socks which
