e Brits just love a traditional afternoon tea, and with the summer here, and the kids off school, we could all do with a treat! This month we’ve compiled some of the best places around to tuck into a yummy finger sandwich, a slice of cake and a scone - we’ll leave you to argue over whether to add the cream or jam first though! See p23. As well as afternoon teas, our food and drink section is, as usual, bursting with ideas on great places to dine out. This month we discover more about The Red Lion in Woolverton (p38) and the Mill at Rode (p40) and still found time to speak to the chef at Homewood Park (p36). Still hungry for more?! How about our sweet recipes (p31) for dessert? There is plenty more going on in August’s edition too. 10 RARE BREEDS SHOW AT HAYNES LIVE AID EXPERIENCE th

It’s a rare breeds show but not as you know it! Haynes Motor Museum has added an innovative twist to the concept of a show dedicated to the British love affair with rare breeds, but this time of the mechanical variety. The 10th Rare Breeds 100 Show will be held at Haynes International Motor Museum on Sunday 3 September and once again will feature a glorious display of many rare vehicles collected together specially for one day only. The show caters for those vehicles which were produced in small numbers, one offs, vehicles with unusual modifications, or perhaps

it is the only one left! If you are a motoring enthusiast who wants to see something completely different then this is the show for you. As well as the show vehicles there will be a chance for visitors to view the museum collection, which has its own share of ‘rare breeds’. 165th Mid-Somerset Show

he 165th Mid-Somerset Show is being held on Sunday 20th August, and local residents are being invited to come enjoy a day at the largest free agricultural show in the country*. There really is something for everyone, with the usual favourites

remaining central to the one-day show; livestock, showjumping, vintage vehicles and the countryside ring. This year the President’s Ring, sponsored by Morris & Perry, will have two displays by Jonathan Marshall and his horses. Organisers are also excited to welcome back the entertaining and informative Sheep Show, and back by popular demand is the interactive Meerkat Display. Does your dog have a waggy tail or a scruffy coat? Why not enter the Companion Dog Show? Or if your pooch likes running there is always the terrier racing to enter. It’s chaotic but great fun.

1.THE HUMAN ELEMENT If you want to take a fantastic set of travel pics, mastering people photography is vital. Photographing people abroad can be tricky - you’ve got to consider the local customs, you may not know whether to ask permission, and it can be a challenge to capture a natural expression from a stranger. The most important rule to remember is to make a

connection with the person you’re photographing. The best way to do this is by simply asking if you can take their picture, striking up a friendly conversation, having fun when taking the shot (don’t be too serious!), and showing them the image afterwards. By doing this,

You can learn to take fantastic night shots with a little practice and know how

you’ll get a stunning travel snap and a lovely memory to go with it.

2. LOW LIGHT & NIGHT PHOTOGRAPHY As soon as the sun goes down, or you’re somewhere that’s not well lit, you may think there’s no point trying to get that stand out shot: you may be unsure if your camera will cope, or simply feel in the dark about which settings to go for. The important technical point to know is that you need to keep your ISO as low as possible, as this will give you great colours and a super sharp pic! To avoid camera shake, always use a tripod in low light conditions - carrying one around can be a bit of a pain, but it’ll be worth it when you upload those dazzling low light shots.

3. CAPTURE THE LITTLE THINGS Travel photography doesn’t have to be all about the big tourist hotspots, in fact, photographing the little things allows you to capture a more

authentic snapshot of your holiday destination. So, look out for simple and ordinary details that reflect the spirit of a place, and elevate them through photography - for example, when holidaying in Cornwall get some artistic snaps of seafood at a market or of a rusty boat; when in India photograph a street sign or beautiful traditional fabric; you get the gist! If you’re hooked on Instagram, why not try the flat lay technique: taking snaps of everything and anything from an elevated view. Raspberry Meringue Cake

Ingredients 100g butter, at room temperature, plus extra for greasing 300g golden caster sugar 4 medium eggs, separated 2 tsp vanilla extract 2 tbsp milk 150g self-raising flour ½ tsp table salt 50g flaked almonds 300ml whipping cream 200g fresh raspberries Icing sugar, for dusting

Method Preheat the oven to 200°C. Grease and line 2 x 20-22cm non-stick cake tins. Whisk the butter and 100g of sugar together in a bowl until pale and creamy, then add the egg yolks, vanilla and milk. Sift over the flour and gently fold in. Divide equally between the prepared tins. Using clean beaters, whisk the egg whites in a bowl until they form soft peaks. Gradually beat in the salt and remaining 200g sugar to make

a glossy meringue. Spread over the sponge mixture then scatter over the flaked almonds. Bake for 15-20 minutes until golden and set. Leave to cool in the tins. When ready to assemble, remove the cakes from the tins. In a bowl, whisk the cream to form soft peaks. Spoon over one of the cakes and scatter over the raspberries. Raspberry & Rose´ Wine Jellies Serves 4

Ingredients 5 gelatine leaves 400ml rosé wine 100g golden caster sugar Large pinch Bart Dried Lavender 200g raspberries Method Place the gelatine leaves in a small bowl and cover with cold water.

Baked Blackberry & Lemon Curd Cheesecake Serves 12

Ingredients 200g pack Waitrose All Butter Biscuits, crushed 60g butter, melted 300g soft cheese 300ml half fat soured cream 150g golden caster sugar ¼ tsp Ndali Fairtrade Organic Vanilla 6 Powder 2 large free range eggs, beaten 225g blackberries 4 tbsp lemon curd 2 tbsp icing sugar, for dusting

vanilla powder in a large bowl and whisk together until smooth. Add the beaten eggs and whisk again until well blended. Arrange the blackberries on the biscuit base and dot with the lemon curd. Spoon over the cheesecake mixture. Sit the tin on a baking sheet and bake for 40–45 minutes until set and golden brown. Leave to cool in the tin then chill for at least 2 hours or overnight before dusting with icing sugar and serving.

Gently heat together the wine and sugar, stirring until the sugar dissolves but do not allow to boil. Stir in the dried lavender. Lift the gelatine from the water, squeezing the leaves to remove any excess liquid. Add to the warm wine, stirring until the gelatine dissolves, then leave to cool to room temperature. Divide the raspberries between 4 small glasses then pour over the jelly. Leave to cool completely then chill overnight until set.

Method Preheat the oven to 190ºC. Mix together the crushed biscuits and butter until well combined then tip into the base of a deep, 23cm loosebottomed cake tin. Press down firmly with the back of a spoon and place in the fridge to chill.

Meet the Chef

This month we spoke to SCOTT GALLOWAY, head chef at Homewood Park, about moving from front to back of house, mastering pasta and Irn Bru. favourite season is winter though as there are fewer ingredients to work with so it’s more challenging to come up with new dishes. Which local pubs and restaurants do you like visiting? My new favourite is Bare Grills Burger Bar in Larkhall on the edge of Bath. It has only recently opened but serves one of the best burgers around.

What was your first job in catering? Long before I became a chef I worked front of house as a waiter; I worked my way up to restaurant manager before deciding to drop back down the ranks to pursue a career as a chef. Where have you worked previously? My first full time chef’s role was working for Michael Caines at his Glasgow restaurant. I moved to Bath in 2010 as a sous chef at the Royal Crescent Hotel. I’ve also worked at Chequers and the King William in Bath. What was the first dish you mastered? I started working for Michael Caines as a commis chef on the larder section. We made tortellini fresh every day. At first it was tricky but once you get the feel for the pasta it starts to get easier. It was a very satisfying skill to master. Do you have any favourite local suppliers? We work closely with local suppliers to make sure we have the best quality produce to offer our customers. As an

amateur forager it’s also rewarding to collect ingredients from the forests or fields and take them into the kitchen and put ideas together with the team on how we should use them. What is your favourite dish on the menu? Our honey glazed lamb sweetbreads, charred hispi cabbage and blue cheese. It’s a great combination of the charred bitter flavour of the cabbage complemented by the sweetness of the sweetbreads. What is the most memorable event you have cooked for? That would have to have been my mum’s 50th birthday. I hadn’t been cooking for long then and put on a buffet for the whole family. I can remember it being a bit stressful but rewarding. Do you have a favourite season for cooking and if so why? At Homewood Park we make sure our dishes are seasonal all year round. My

When you cook for friends, what’s on the menu? If I’m cooking for friends or family a Sunday roast is my favourite thing to cook. It’s always good to have friends round for lunch and a couple of drinks and catch up on the week. What’s your favourite kitchen gadget? It has to be my knife set; I couldn’t get through the day without it. And your guilty pleasure? A chilled can of Irn Bru and a packet of pickled onion Space Invaders. The Red Lion

Situated on the A36 between Bath and Warminster, The Red Lion in Woolverton is a great place to stop off this summer...

he Red Lion is a traditional pub, and over the last 10 years has been extended to offer a larger seating area and become more family friendly. The main bar forms part of the old building complete with a small cosy snug; during cold winter months it is an ideal spot for enjoying food and drink by the open fire. Etched into the fireplace is a wonderful statement “Drink down all unkindness”. Over the summertime, the recent extensions to the pub’s outside spaces are best appreciated. There are three garden areas on offer in all, including a children’s play area (a must for the summer holidays!) and a patio in front of the pub that really catches the sun. Dogs are welcome at the pub too, and there are always treats available for them to snaffle down eagerly.

The Red Lion is managed by Andy and Lesley Walters who have been at the pub for nearly two years. Andy was a chef in the Royal Navy for 22 years and Lesley worked in administration and accounts. They have been in the industry for some 17 years now, and have brought all their expertise with them to The Red Lion to ensure it is a thriving part of the community in Woolverton. Lesley says, “We love the Red Lion, we are part of a fantastic community who made us so welcome when we first arrived – we live in a wonderful area – what’s not too like!!” As a Wadworth-owned pub, good beers are a given. The Red Lion holds the Cask Marque and serves three Wadworth cask ales 6x, Bishops Tipple and IPA, along with a seasonal guest ale. There is also a comprehensive wine list as well as

the usual array of spirits, mixers and soft drinks. It is also the ‘Summer of Cider’, so, as the weather hots up, be sure to cool yourself down with a refreshing pint of cider or beer! The food is homecooked by Andy and his brigade, with choices to suit all appetites. As well as a traditional Sunday lunch every week – book in advance to guarantee a spot they also have a summer menu and dedicated gluten free menu. Highlights on the summer menu include pan-seared sea bass with stir-fried chilli, ginger & spring onion and a classic caesar salad with cos lettuce, anchovies, parmesan and croutons. Fairies & dragons at Whitehall

Life’s a beach

e have just arrived back from our summer holiday. This year we headed for Spain, at the end of June, taking advantage of our last opportunity for a decent value foreign break before our daughter starts school in September (I know, how time’s flown!). It was blissful to be honest – lovely villa, stunning weather, and no one else around (is it just me or is this

but the wind has whipped up and given you a mouthful of sand. And as for the sea, it’s either full of seaweed creeping round your legs or so cold that your teeth chatter as soon as you get in. And once you’ve gotten wet all you’ve done is give the sand more purchase to attach itself to every limb and orifice. Oh to be a kid, who doesn’t notice these things because they are too intent on making a sandcastle complete with shell decorations. Only our little one’s wasn’t full of shell decorations; shells were rare as hen’s teeth. Instead she had to make do with bits of twig and some washed up bits of plastic – just peachy. My wife and I toughed it out for almost 90 minutes before whisking our daughter back to the sanctity of our villa and our wonderful, sand free pool. I just hope she appreciated the effort!
