hh, breakfast. It's "the most important meal of the day," it sets the tone for your day to follow, it fires up your metabolism for the next 12 hours. Breakfast, nutrition type people tell us, is the alpha and omega of daily meals.

However, breakfast needn't be suicide, nor bland, nor obligatory. Instead, with just a little planning and an extra 10 minutes in the morning, it can kick your day off with taste, nutrition and joy. What's a better way to start the day? Let me be honest. Several times a week, I eat the aforementioned oatmeal. It isn't bad, it's insanely healthy and it gets me to lunch without eating my arm (more on dressing up oatmeal in a later column). But a really satisfying breakfast for me, starts with an egg or two. Yes, eggs. A few years ago, eggs were nutritiously verboten. Not so much anymore as research has demonstrated they aren't the devils were once told. So, while they are passable, take advantage of it! 8 WIREMAG.COM #28 2018

Yet, breakfast doesn't get the respect it does from many Americans. Come on, you know it. For a lot of people, breakfast is a slightly modified dessert – laden with sugar, white carbs and chemicals we can't pronounce. For every health-conscious individual who starts his day with something ideal – say unsweetened oatmeal with blueberries and diabetic-friendly cinnamon, there is the rest of us slathering "lite" cream cheese on a starch ball of a bagel, downing the two for $4 McMuffins, donuts or the faux "coffee" tossed at you by a barista with a heavy hand with the caramel. That's not breakfast. It's suicide!

Two egg options. Years ago, while spending an entire summer in the Caribbean, I enjoyed what I thought was the height of egg-y sophistication. Breakfast every day was a two-minute (soft boiled) egg served in an egg stand alongside "local bread" and a salad of fresh greens. It was heaven. The hardest part was finding an egg stand, which eventually I did on Amazon. The rest is easy. Carefully boil an egg for two minutes, shock briefly in cold water, set in a stand and serve with bread. You chip the top of the egg and use a combination of spoon and bread to extract the eggy goodness. Pure heaven, with the richness cut by the salad. That is still my favorite weekend egg. Weekdays, I prefer an egg bake and accoutrement. Also simple.

With egg bakes done for the week or the quick preparation of a soft-boiled egg, the question is with what to serve your perfect egg on a weekday when your time is limited. Pre-cooking oatmeal for the week or pouring yourself a bowl of cereal is pretty easy. But do either of those things make you look forward to breakfast? Me either. Instead, I like a small arugula salad with tomato slices, a sliver of goat cheese and a splash of olive oil and lemon juice. Now, the idea of a salad for breakfast might not occur to many people. But recently I spent two weeks in a resort hotel and it was a standard with all of the egg presentations at breakfast. It was an epiphany. The crisp, sharp salad cuts the richness of the egg and the lemon lightens everything up. A little sweet finalizes the plate for my favorite weekday breakfast. I eat a lot of fat free Greek yogurt all of the time, so I shoot for something different alongside my egg dishes. Instead of the yogurt, I mix low-fat Ricotta cheese with local honey, cinnamon, blueberries and a couple of crumbled walnuts. The sweet-but-not-too-sweet side has a lot to offer besides a satisfying finish to breakfast. Ricotta is a good source of protein. Fresh or dried blueberries are a delicious superfood whose many benefits are particularly important to men's colon-rectal health. Walnuts are up there nutritionally too. • Line a muffin pan with wrappers as if making muffins. • In a large bowl, scramble a dozen eggs, salt, pepper and your favorite assortment of cheese and vegetables. My choice: Swiss cheese, tomatoes, onion, spinach, mushrooms. If you aren't concerned with animal fat, toss in some cooked bacon, ham or sausage. • Fill each cup equally with egg mix and top with chives • Bake in a preheated oven for 20-30 minutes based on volume and contents. The more in the mix the longer it way take. • Remove, let cool, place leftovers in a plastic bag. They are easily reheated over the course of the whole week. Imagine egg indulgence with only half an hour, oneday's effort!

Cinnamon is one of those things that every time I use, I think I really should find more uses for it because of the distinct, appealing taste. Finally, local honey. You don't want to go overboard, because it is a sugar. But honey has so many healthy properties that it should be incorporated into anyone's diet. Local honey is most important to find, because of the cycle of bees and production of honey; local honey, resulting from local flora, provides protections against allergens in your particular environment. Local is also usually the most flavorful. There you have it – a couple of egg-based weekday breakfasts that will make you dump the drive-through and turn your nose up at the junk food starts to our days too many are accustomed to eating. ven those who aren't fans of the TV series Nashville, or even traditional country music, must have noticed the cool, pop groove that emanates from the Music City these days. Pop country crossovers and hunky frontmen make it hard to ignore, whatever one's own musical preferences are. This isn't the Nashville of yodeling, requisite hats and over-compensatory belt buckles anymore. Although if you're looking for those things, you are bound to find them in this, the Athens of the South.

If not literally, then figuratively, all roads in Nashville lead to the Grand Ole Opry, which for almost a century has been the leading, American-original musical site in the entire country. You name it â&#x20AC;&#x201C; every major country act (and a few others too!) have graced the stage of the Opry and it is an experience unlike any other. These days, the Opry is surrounded by a mega-mall called Opry Mills, if the commercial bug bites you. Plan your Nashville visit around an act you like at the Opry. With enough prayer and supplication, you might catch Dolly Parton. Please don't say Dolly doesn't interest you. I am not sure we could be friends anymore...

Perhaps the single coolest aspect of Nashville is that it isn't just the Grand Ole Opry. There is a culture of honky tonks featuring professional and up-and-coming musicians, pretty much every night of the week. They are legion, but a few bigger names include Bluebird Cafe, Mercy Lounge, Whiskey Jam at Winner's and the outdoor Ascend Amphitheater. With more than 180 live music venues, there is something for everyone. Other must... must-see sites include the Country Music Hall of Fame and Museum, The Johnny Cash Museum and Musica, a 38 foot tall sculpture featuring nine nude dancing figures created by Alan Lequire and which is in a roundabout in the heart of Music Row.
