BEANS, BEANS, THE MAGICAL FRUIT... (PART 1)
LENTIL LOVE
K, so you know the rest of the lyric, but we just won't go there. Instead, periodically, we will return to the subject of beans (actually legumes) numerous times this year, to extol the virtues of this diverse and healthy ingredient. Eventually, we will discuss a number of legumes (beans, peas, lentils), but I am no fool. Growing up in Miami, I'd be setting myself up for a lot of tut-tuts if I dared try to tell a Florida abuelo how to best prepare black or red beans; or one of my own relatives in Western rural country how to whip up the best pintos. Frankly, I can't come close to the experts when it comes to making certain beans – well, making them right, that is. Others, I've gotten pretty good with, especially the ones my particular diet elevates, and which are found in many of the cuisines that I am most familiar with. Among these are lentils. Yes, they are the basis for a satisfying soup, but they can be used for other things as well. Lentils are a lens-shaped legume with high nutritional value. One tbsp of boiled lentils has roughly 14 calories, zero fat or natural sodium, 2.5 grams of carbohydrates (set off by 1 gram of fiber) and a good 1.1 grams of protein. For the vegetarian leaning, they are a good source of protein and earth nutrients; for those worried about blood sugar, they are slow burning, green carbs with lots of fiber and potassium to boot. Some studies declare lentils "superfoods" because of their value to diabetics in particular. 8 WIREMAG.COM #30 2018

In culinary terms, some feel the lentil is more akin to a split pea. But they have less of a "green" taste and maintain some of their texture a little more like a bean. There are all sorts of lentils now, defined mostly by color. Reality check: the variances are really more aesthetic, most people won't notice much of a taste difference when they are included in a dish. So what dishes, you ask? Well, lentils come packaged with a lot more than one person can use without placing an ample supply in the freezer or only using a few at a time. I do things differently... I cook an entire bag of lentils, setting some aside for three different uses over the course of the week. Oh, and that aisle where you find lentils, peas and beans? When someone says he or she can't eat healthy because it is too costly, I like to take them down this aisle and the ones with the ancient grains. Oh, look, some of the world's cheapest food is also some of the healthiest, with rice and beans creating an ideal protein and popular in places with low incidents of diabetes and heart disease.
LENTIL SOUP • Prepare lentils as instructed in the packaging, leaving slightly al dente. Separate into three containers, rinsing in cold water to stop the cooking. • In a soup pot, brown a whole onion, at least four cloves of garlic, a couple of chopped carrots and the flesh of a bell pepper until slightly soft. Some people like celery, but I find it too strong a taste for the gentle goodness of lentils. • Add in one can of good quality chopped tomatoes, stir in with vegetables, season to taste and try an herbal combo you like – I alternate between the European taste of thyme or the central Asian taste of curry. Lentils take on the flavor of the rest of the ingredients, so they are extremely versatile. • Finally, add in your somewhat pre-cooked lentils, mix together and cover with water, chicken stock or my own secret trick – mushroom broth. Mushroom broth doubles up on the earthy flavor of your lentils without being overt. • Simmer until desired consistency is reached. For a thicker, richer stew-like consistency, use an immersion blender once completed. For a lighter, broth-based soup, skip this step. • While I never use a smoked meat product to flavor my lentil soup, the end presentation provides tons of options based on taste: crumbled bacon, crushed pork rinds hot sauce and sour cream, crème fraiche, pepitos, etc. Finish with chopped scallions and you have a soup course or main dish well removed from a canned (gasp!) lentil soup. LENTIL FRITTERS I love fritters of all sorts, despite my general aversion to fried things. It's just that every culture seems to have one kind or another and they are just so good – falafel, hush puppies, tostones, to name a few. These are a few of my favorite things. Lentils are ideal for a healthier fritter. For years, I cooked an alternative Thanksgiving meal for my non-American Miami friends, including one year I made a lentil fritter bar featuring a dozen different sauces and accoutrement. I almost always go Middle Eastern, North African or Central Asian with my flavor profile. Photo licensed by Ingram Image
LENTIL SALAD Lentils work in as many salad dishes as soup dishes. Since I tend to use one bag of lentils for several dishes, I try to go for different flavors in each one to keep some flavor diversity in my week. This is my personal favorite, but if you optimize your use of this incredible ingredient, check into the million recipes online. To cold lentils with some texture to them, I add salt, pepper, garlic, chopped cucumber, chopped tomato, chopped scallions, olive oil, lemon juice and chopped fresh mint. That's it. So easy and so different from the rich, savory soup I'd enjoyed the night before. The lemon and mint brighten the dish right up, the vegetables give it a depth of flavor and the lentils ably absorb it all. Let it sit half an hour before you serve and while it will last, covered in the fridge, the acid will cause it to break down and get more mushy over time – enjoy it for a couple of days as a side dish or as a topping for plain lettuce.
• You'll want to let your third sorting of pre-softened lentils dry in the fridge overnight and still pour out onto a paper towel to absorb as much water/brother as possible. • In a mortar and pestle or pulse blender, meld together lentils, an egg (or two depending on your yield), either Panko bread crumbs or matzo meal (flour tends to create too dense a fritter), salt, pepper, garlic, freeze dried chives, curry powder (better if dry toasted just before application) and either some fresh cilantro or fresh mint, depending on taste. Let the mixture sit for half an hour before forming into tablespoon size balls or half-moons. Again, cover with wax paper and let sit for 30 minutes. • Then, fry your fritters in a healthy peanut oil and set aside on a paper towel to drain when they are well browned. • Drizzle a little lemon or lime juice over the finished product, a sprinkling of chives and/or mint, and serve with a variety of sauces toppings: chutneys, tzatziki, hummus, crème fraiche, an herbaceous Thai lemongrass sauce, Peri-Peri or harissa. • Any leftovers covered in a basic curry sauce are pretty good too.
Lentils are a cheap, incredibly healthy and more diverse ingredient than many might think, and they are ideal components of the ethnic cooking of numerous cultures. Their diversity and frequent description as a superfood makes them well worth exploring in our own home kitchens.

ith a timeline that stretches across the span of eight years, it's hard to believe Palo Santo is only Years & Years' second album. Their explosive debut Communion was the UK's best-selling album of 2015, so it should come as no surprise that the synth-pop trio took the time to make sure their follow-up had the same impact. A strategy that proves to be on point.
It doesn't hurt that the boy's got the chops to back up the curls and gender-bending personas. The session opens with "Sanctify," a dramatic earworm inspired by the singer's experience with closeted men. The sacred theme continues throughout the set with the '90s-house laced "Hallelujah," "Preacher" and the title track (which is Spanish for "Holy Wood"). When he's not pushing the envelope with religious ideology, he's pushing his affliction for all things '90s, evoking the days of Color Me Badd and Boyz II Men without resorting to cheap throwback tricks. This is largely thanks to the genius of producers like Greg Kurstin (Adele's "Hello"), Julia Michaels and Justin Tranter (Justin Bieber's "Sorry"). We also get a taste of the tropics from the Dancehall banger "Rendezvous," an anthem about a stringless relationship. The two
biggest standouts (for me anyway) are the playful current single, "If You're Over Me," and one of the three essential bonus tracks, "Up In Flames." Both songs are as different as night and day, but two perfect reasons why Palo Santo should be in your playlist right now! Thirty five years ago, Madonna shocked the world with her overly-sexual image and controversial messages, but the world eventually caught up to her, and women around the globe were suddenly empowered to step up and take control. To think it all started with a young girl crawling around in a wedding dress. While it'll take more than a handful of songs and provocative videos to change the world today, don't be surprised if Olly Alexander becomes our next "material boy."

Today, Danny is a model and actor, whose life changed when he was spotted by Wilhelmina Models and got the opportunity to sign with them in Miami and in Los Angeles. Rafa Carvajal: Where are you originally from and where do you live? Danny Nova: I'm originally from Colรณn, Cuba. I came to this country at a very young age, when I was only four years old. Thanks to my father, who was a political prisoner over there, we were able to get visas to come to the U.S. RC: Describe yourself in three words. DN: Only three words... ha-ha. Outgoing, fun and adventurous. RC: What do you do for a living? DN: I've been modeling since I was 23. I got spotted by Wilhelmina Models and got the opportunity to sign with them here in Miami and in Los Angeles. After a few years, I was signed by Elite Models in Miami. Then I got into acting, and one thing just brings the other along. I've been in many magazines here in U.S. and in Europe. I have worked with many brands, such as Calvin Klein, Guess by Marciano, Polo Jeans and other European brands. Sometimes things just happen in life, opportunities arise that you're not even looking for. I guess you're just in the right place at the right time. RC: What do you enjoy the most about acting? DN: I mean, I enjoy modeling, but acting is just another world. The feeling that you get and the passion that comes with it. You can be so many characters with so many different circumstances in life, go through so many feelings and sometimes in such a short time that words can't explain. My favorite scenes are passionate love scenes and aggressive scenes, ha-ha.

RC: How did you become an actor? DN: I was spotted in a photo that was shot by a person that I really came to care for a lot, not just professionally but emotionally, and to this day, I say that he's another father figure for me. So, he first got me into television on Univision in Sabado Gigante with Don Francisco, on a segment they called "El Hombre Ideal." Then, I got into La Belleza Latina, where I was the model for the girls that year. After, I was invited to be in EL Gordo Y La Flaca as a permanent model for the show, and I was with them for quite some time, until I went to Mexico to study acting. RC: Who is the professional icon that inspires you most, and why? DN: I could say Nicolas Cage, because he's such a great actor and inspiration for me since childhood. RC: How do you stay in such great shape? DN: Ha-ha, the question of the hour. So many people ask me this question in my social media profiles, especially on Instagram (@nova918). Well, here is my secret: my food almost every day is junk food. McDonald's, Taco Bell, I mean, I eat anything and the time of the day does not matter. I'm a big fan of ice cream and spaghetti, ha-ha. My favorite foods are Italian and seafood‌ even though I'm Cuban, so don't get me wrong. I love arroz y frijoles con bistec, y un huevo frito no viene mal (yes, the Cuban in me just came out). But, of course, I do work out and going to the gym has been one of my hobbies since I was like 17 years old. RC: What do you enjoy the most about modeling for photography? DN: It's just a fun job where you get to meet so many people, travel and get to inspire other people to stay healthy and in shape, and of course the money is good. But most of all, what I love the most is the love and affection from all my fans all over the world. The majority of them don't even know me in person. That means a lot to me, and will be forever grateful to them because that's one of the main reasons I do what I do. RC: Boxers or briefs? DN: I get the most feedback on boxers that are tight on the body though. RC: What is your favorite food? DN: Italian and seafood.

RC: What is your favorite pastime? DN: Well, good question. I guess the most important thing in my life is my son, Daniel Alejandro. If I love doing something in this world, it is spending time with him. Going to the park, playing sports with him, anything that brings a smile to his face brings a smile to mine. Something I try every day in this world is not to be the best model or actor, but to be the best dad, and being able to show him all the values and important things that will allow him to grow up in a world like this one. Another thing that I love is dancing. I've always said I do two things right in this world and one of them is dancing. There's just so much passion involved and it is just very sexy to me. RC: Where would you travel if you could go anywhere, and why? DN: I would love to travel the world. I guess every place has its wonders, but I would love to visit Italy one day. RC: What is your current struggle? DN: I would say that I learned a lot in life from my mistakes, and I try everyday not to repeat them. RC: Is there anything else you would like to share with Wire Magazine readers? DN: First of all, I just want to thank Wire Magazine and its readers. One thing I could say to whoever is reading this, is the following: Enjoy life, enjoy your family and friends. Those are the most important things. We are here now, but life is not forever and time does pass by so fast, so while we can, enjoy it! One day, when we are old and wrinkled, we will look back and say, "Wow, I actually lived my life and enjoy everything about it." or many of us, hearing the word poison may trigger thoughts of lethal bites, poisoned apples, stings or even murder. However, poisons, toxins, and venoms have been harnessed for centuries by humans for their medicinal properties. Thanks to the Phillip and Patricia Frost Museum of Science's largest special exhibition to date, The Power of Poison: From the Depths of the Sea to Your Own Backyard, you can immerse yourself in the world of "bubbling cauldrons, slimy frogs, venomous bites" and learn about the many roles played by poison in nature, literature, and culture – all while stimulating your senses. Supported locally by Jackson Health System and Florida Poison Information Center-Miami, The Power of Poison exhibition will be on display through September 3, inside the Hsiao Family Special Exhibition Gallery on the first floor of the museum, and extends to other parts of the museum in a "toxin takeover." The interactive exhibition features a replica of the Chocó Forest in Colombia, a very cool "enchanted" book with magical illustrations that comes to life with the touch of a hand, iPads that allow you to solve poisoning mysteries, the forest, and much more.

The Power of Poison also displays animals and plants that have been especially helpful in the developments of drugs through their poison, to help treat conditions and diseases such as cancer, diabetes and malaria. The exhibit teaches you about these types of toxins and where they originate. In addition, you can peruse the use of poison throughout fairy tales and mythology, looking into famous works such as Alice in Wonderland, Harry Potter, Macbeth and Snow White and the Seven Dwarfs. During your visit you will encounter poison dart frogs, scorpions, tarantulas, venomous snakes and even jellyfish throughout the exhibits, the rooftop and the aquarium. After my visit to this wonderful exhibition, I sat down with The Frost Museum's Director of Animal Husbandry Donald "Skip" Uricchio to learn more about The Power of Poison: From the Depths of the Sea to Your Own Backyard.

Rafa Carvajal: Tell our readers about Frost Science's The Power of Poison: From the Depths of the Sea to Your Own Backyard exhibition. Donald "Skip" Uricchio: The Power of Poison – the museum's largest traveling exhibition to date – explores poison's role in nature, human health and myth, while putting visitors face-to-face with different poisonous and venomous species from South Florida and around the world. RC: What is your job at the museum and what does it entail? DU: As director of animal husbandry, I am responsible for managing the husbandry staff in the care of our animals and plants, development of new exhibits, and management of animal records and permits. RC: How was the exhibition put together? DU: The exhibition was organized by the American Museum of Natural History in New York. Locally, the exhibition is supported by Jackson Health System and Florida Poison Information Center-Miami. RC: What is your favorite part of The Power of Poison exhibition, and why? DU: My favorite part of the exhibition is the "toxin takeover" aspect. Frost Science really ran with the exhibition's concept and incorporated of The Power of Poison into the museum's permanent exhibitions with activations and exhibition elements on the rooftop, throughout the aquarium, inside our Inventors in Residence Lab, and more.
RC: Why should Wire Magazine readers visit The Power of Poison exhibition? DU: The Power of Poison is only on view through Monday, September 3. As our largest traveling exhibition to date, this is a unique opportunity to learn more about poison and the role it plays in our backyard and beyond. It engages all the senses, including smell – we've used Aroma360 to enhance certain areas of the exhibition. Your readers won't want to miss it. RC: What other exhibitions can we expect this year at the Frost Science? DU: We have many exciting upcoming events, including a new exhibition that's opening in the fall: Creatures of Light: Nature's Bioluminescence. Guests will travel from a warm summer meadow to the deep-sea floor exploring the science behind living things that generate light. Another exhibition you won't want to miss. Also, this August, we'll be hosting a live performance of the award-winning podcast Gastropod. This event is perfect for anyone with a passion for food as there will be live experiments, interactive tastings and more.
RC: Is there anything else you'd like to share with Wire Magazine readers? DU: I would recommend taking advantage of Frost Science's summer hours. From now, through Labor Day, the museum is open Sunday-Friday 9:30 a.m. to 6 p.m., and on Saturdays RC: What do you think visitors will find most 9:30 a.m. to 8:30 p.m. More information is available at frostscience.org. interesting about this exhibition? DU: There's a theater where live presenters share dramatic stories of how poisonings led to advancements in forensic detection. I think guests will find it adds to the experience. RC: Describe the exhibition in 3 words. DU: Enchanting, immersive and educational. RC: What is your favorite venomous/poisonous animal in the exhibit, and why? DU: The Metallic Pink Toe Tarantula is one of my favorite venomous animals in the exhibition. While spiders typically frighten people, scientists are currently exploring how their venom works to help make safe and effective medicines. Research on spiders may soon help doctors treat conditions from pain to heart disease.
