ou don't even want to wander into the argument over the origin of ceviche. No… no… no. It's like arguing which mole recipe was original in Mexico. And, uh, no, that's secretly not a signal to credit Mexico with being the site of ceviche's origin. It's considered Peru's national dish. It's popular in the Pacific coastal regions of Latin America. Then again, it's not uncommon in the Caribbean including in the Caribbean Capital that is Miami.
To answer your first question. Yes, the fish is "cooked." Remember that exposure to heat creates a chemical reaction that we choose to call "cooked." But exposure to acid over a period of time causes a similar chemical reaction, "cooking" lighter and more permeable foods (like fresh fish) without exposure to heat. (Options such as squid (one of my favorites) are often blanched ahead of assembly because cooking times in this method range considerably – you will want to research this). Thus all ceviche is actually "cooked" – that's the role of the citrus, although the flavor is essential too. It's just cooked the lightest way to preserve the natural flavor of the ingredient. Because of the manner of preparation, ceviche must be consumed shortly after the cooking period is complete, it's served So let's not go there. It's important to remember that different sea creatures take different amounts of time to cook. Until you've done it a few times, do your research. Also, yes, the hot pepper is integral. I have yet to find a palatable way around a little heat in ceviche. And for those who feel cilantro is evil... also, I haven't found a substitute. Here is a simple starter recipe for a fantastic, elegant presentation. Toss 1 pound bay scallops, 2 diced green tomatoes, 2 minced shallots, 1/2 minced jalapeño, 1/3 cup lime juice, 3/4 cup orange juice and 1 1/2 teaspoons salt in a glass bowl. Cover and chill, stirring occasionally, 4 to 6 hours. Add salt, pepper, and chopped cilantro. Top with sliced avocado. (source: foodnetwork.com) When ready, kick it up a notch. My personal favorite utilizes squid. Squid is still the wingette of the sea – inexpensive and delicious. Buy or cut fresh tubes into small rings. Blanch in salted water until just cooked through. Rinse, drain, dry, refrigerate. Then add to the preparation a half a red onion, sliced into thin slivers, a jalapeño pepper minced with no seeds or ribs, 1/2 cup lime juice, 1/4 cup natural orange juice, 1 tsp minced garlic, and a diced tomato. Flavors that match well with ceviche include avocado, tomatillo (in the mix) and mango (to finish).

f you're a big fan of sci-fi like I am, you might have heard the term "alternate universe" thrown around once or twice. Without geeking out too much, they're basically worlds that are just like ours, but with a few tweaks. Much like the comic book worlds of DC and Marvel, the music universe has a slightly twisted side to it too. In the past, alternative pop (or alt-pop) used to be the red-headed step-cousin of radio pop; typically played by unsigned artists and enjoyed mostly by misfits, outcasts or those who craved an "alternative" to the everyday top 40 playlist. Today, thanks to this worldwide phenomenon called "the Internet" (you might have heard of that too), alt-pop artists have become just as popular – and sometimes more so – than their mainstream counterparts. Allie X - Super Sunset Citing some of this century's greatest female artists as her influences, this Canadian singer/songwriter/producer/model/actress (whew) has amassed a global following that would make Lady Gaga herself bow in respect. On her latest EP, Allie weaves tales of her time in LA into delicious electropop melodies that fans from any zip code can relate to. If her music alone isn't enough to make you love her, she once told i-D Magazine, "I have a lot of young fans and a lot of LGBTQ fans. After meeting and hugging so many of them, I often picture them when I write now, and I try to send my support."
The Ting Tings - The Black Light These guys have always been a little edgier than your typical pop musicians, but that's what we love about them. They first made their way into our ears in 2008 with their breakthrough debut We Started Nothing, featuring addictive anthems like "That's Not My Name," "Shut Up and Let Me Go" and "Fruit Machine." On their fourth collection, lead singer Kate White still seems to have a chip on her shoulder, but that's when she sounds the best. The crown jewel of the set is the rapid-fire banger "Word For This."

RC: Who is the professional icon that inspires you most, and why? DT: Tyson Beckford, for sure! Since I was a child, I always hoped I would grow to have a striking face like his. RC: How do you stay in such great shape? DT: I keep my great shape by being consistent in the gym, knowing what to put into my body and what not to, and also really good genetics. My father pretty much handed me his body. RC: What do you enjoy the most about modeling for photography? DT: Just being in front of the camera. I feel at home. It's definitely where I am meant to be in life. RC: Boxers or briefs? DT: Briefs. Boxers are far too loose for me and give me anxiety.

RC: What is your favorite food? DT: I honestly don't have a favorite food. Nothing ever comes to mind when someone asks me. I just eat what I eat, when I eat it. RC: What is your favorite pastime? DT: My favorite pastimes are exercise and singing. I could do both all day long. RC: Where would you travel if you could go anywhere, and why? DT: I really want to travel to India. I may make this a reality very soon. RC: What is your current struggle? DT: Staying present. Not placing so much pressure on myself and letting things happen naturally when they happen. Everything we desire has a way of actualizing itself naturally in time. RC: Is there anything else you would like to share with Wire Magazine readers? DT: Chase your dreams! SCORE NIGHTCLUB IS MOVING TO A NEW LOCATION y now you may have heard the news that Score nightclub will be moving to a new location and closing its doors on Washington Avenue in Miami Beach, after 20 successful years on South Beach entertaining the LGBTQ community and providing a safe space for gay patrons to feel right at home. Score's final night at its current location will be this Saturday, November 10, 2018. I sat down with Score co-owners Luis Morera and Billy Kemp to discuss the recent news. Score's owners proactively negotiated a lease extension with their landlord, but were unable to reach a satisfactory agreement to continue operating Score at its current location. Luis and Billy want everyone to know they are excited at the idea of combining all of the wonderful elements of Score's locations on Lincoln Road and Washington Avenue with the prospects of a new events space where the LGBTQ community, Miami's party-goers, and tourists will be able to enjoy all the incredible events, music and world-class DJs that have made Score legendary over the last two decades.

Rafa Carvajal: Why did you decide to close Score and relocate it? Luis Morera: After 20 very successful years in Miami Beach, we have decided to take the business in a new direction. We are looking to relocate Score to the Miami mainland area in 2019. RC: What are you looking forward to the most about a new location for Score? LM: We are very excited about being able to attract a broader audience to the new Score, less city regulations and, the best part, being our own tenant to build a very special new home for the Score family and our loyal customers. RC: What are your plans for reopening Score? LM: The plans are still in the works. We will provide everyone with details as soon as we can. RC: How will the new Score differ from the current nightclub? LM: We plan to combine the two segments of the business that Score is known for, a bar portion and a great events space. The bar will operate regularly and the events space will operate every weekend and for special events. RC: Is there anything else you would like to share with Wire Magazine readers about Score and your future plans? LM: We would like to once again thank our entire team (managers, bartenders, bussers, light technicians, audio technicians, entertainers, and dancers), our patrons and supporters for their continued support. We are ready and excited to work on a new venture. In the meantime, we will be focused on delivering an amazing Circuit Festival Miami, and on continuing our Saturday night events beginning December 15, and until the new Score is ready.
