THE BOZZI AND THE GANZI PHOTOS PROVIDED BY THE PALM RESTAURANT GROUP The history of The Palm Restaurant started when Pio Bozzi and John Ganzi decided to name their restaurant after their hometown of Parma, Italy. In 1926 they went to register the name, but a New York City clerk had trouble understanding their Italian accents and issued them a license for The Palm. What started as a simple mistake has now become a rich 85-year old history of fine dining at the hands of the Bozzi and Ganzi families - who still own and operate a dining destination with 28 delicious locations in 3 different countries. Today, The Palm is still operated with its simple, original philosophy: “treat guests like family, serve great food, and always exceed expectations.” Wally Ganzi and Bruce Bozzi Sr., co-chair and co-own The Palm Restaurant Group and continue to delight diners with an excellent meal. The first thing I noticed when I walked into The Palm Miami was all the caricatures and cartoons hanging on the wall. Later that night I learned that Pio Bozzi and John Ganzi didn’t have enough money to decorate when they opened Palm One, but were lucky enough that their restaurant was close to King Feature Syndicate and attracted many cartoonists as diners. Artists would often draw on the walls of The Palm in exchange for their meals, making the original Palm a living museum of cartoons and caricatures featuring such famous faces as Popeye, Batman, Beetle Bailey, Hagar the Horrible, and characters from The Family Circus. This tradition of decorating with caricatures continues today and before a new restaurant opens, 200 to 300 notables’ likenesses are drawn on the restaurant’s walls, and new caricatures of regulars and celebrities are added quite frequently.

I grew up in a family business that was truly run like a family until we sold it to Heinz after 50 years. We had employees who worked for my family their entire life. They are clearly doing something very well when many of their employees proudly wear badges on their shoulders showing 30, 35, or more years working for the company. If you enjoy a great dining experience, while being treated as family and served delicious food, you need to stop by The Palm for lunch or dinner. You will certainly enjoy their signature prime steaks. Just keep in mind that steaks were not even part of the original menu. Back in the day, if someone asked for a steak, John Ganzi would run to a nearby butcher shop, buy a steak, and cook it to order. The menu has changed since the old days, but the tradition of fine dining and a vibrant, friendly environment remains. I particularly enjoyed starting my dinner with a Carpaccio of Beef Tenderloin and a Beefsteak Tomato Capri with a lovely imported mozzarella di bufala. Then came the beautifully presented Jumpo Shrimp Cocktail, followed by a delicious Iceberg Lettuce Wedge with Danish blue cheese, toasted walnuts, bacon, cherry tomatoes, chives and fried onions. I also loved the Chilean Sea Bass, and the Bozzi Prime SteakBurger with aged gouda, smokey barbecue sauce and crispy fried onions. If all those delicious courses were not enough, you must also try the USDA Prime New York Strip – corn fed and aged a minimum of 35 days – and the Goat Cheese Whipped Potatoes. Tasty! he building itself is classic Edo-era architecture: two stories, made of wood and daub, tatami mat floors (no shoes allowed!), and doors composed of sliding shoji screens. Nothing about them says “hotel.” You could walk by it and never know what it was. There are two Japans: The hyperdriven, LED-spangled, technological wonderland, and everything that came before LEDs. Ryokan, traditional Japanese inns, belong to this second, frozen-in-time, somewhat-romanticized realm. Stepping into one is like stepping back 400 years; today, aside from a few discreetly-placed modern amenities, ryokdan are as they were when they first appeared in the 1600s. And to Western eyes, stripped BARE. Ryokan are Japan at its most rustic. Closets, actually large cabinets for clothes and futons (the real kind, not a convert-a-couch), are inset into the wall behind elegantly decorated panels. You get a low table, a chair, everything needed to make tea, lots and lots of airy space to get your Zen on, and maybe — and I mean “maybe” — a flower arrangement. Anything more and it’s tacky; like much of traditional Japan, a ryokan is all about aggressive understatement.
No night out in South Beach would be complete without TWIST, and Friday nights are some of the best. Guests of all kinds couldn’t wait to get some late night fun with great beats, hot dancers, and a variety of bars for their choosing. “Never A Cover… Always A Groove.”
Including the food. Fare is light, local, prepared on the spot, and without the slightest taint of Western influence. Ryokan appeared when Japan was virtually closed off from the outside world, allowing for a uniquely “Japanese” culture, of samurai and ninjas, to bloom. It was around this time the unmistakable cuisine of the country developed in all its simplistic best. A ryokan’s menu could have appeared on a samurai’s table. And be swiped by a ninja. While any Japanese community of any size will have ryokan, they tend to spontaneously generate where the country is its most scenic, and practically have kids around hot springs. The cities of Beppu, Takayama, and Kobe are famous for their geothermal activity — and the ryokan ringing them. But be warned: Ryokan are not for the financially faint of heart; they dwell on the very top of Japanese accommodations, with a price tag to match. Time warps don’t come cheap. The word “ryokan” comes from the kanji 旅/ryo and 館/kan and means “travel house,” harkening back to when they were stops for wayfarers on the road. Today, the roads are spangled with LEDs, and the wayfarers are hyperdriven. But then as now, they still need to stop, and Zen out. …EVEN WHEN YOU ARE A VEGETARIAN ust because you are a vegetarian doesn’t mean that you can’t build a great body. All it takes is knowing about the right muscle-building supplements and you are good to go. There is a range of different supplements out on the market that can help you gain muscles faster. If you are a vegetarian and want to see rapid muscle growth, it is very beneficial to find a protein powder of high quality. Muscles are built mainly by water and protein and most protein is found in animal products, even though there are ways to get a sufficient amount through a vegetarian diet if you put some energy into it. However, the easiest way is to get a protein powder. You want to make sure that the protein powder you’re buying has all of the essential amino acids and also a good amount of vitamins and minerals. The amino acids are the building blocks for the muscles and are essential if you want to have proper muscle gain. If you are on a strict vegetarian diet, you may want to buy a protein powder that is based on soy. This is rated as higher quality-wise than most other protein sources, containing all the eight essential amino acids. Check carefully if it contains other protein sources, such as milk or egg before you buy it. You also want to make sure that the muscle building supplements also contain vitamin B12 since this is a vitamin that a lot of vegans and vegetarians are lacking.

MIAMI’S JULIUS ANTHONY RUBIO DANCES TO FRANK SINATRA By James Cubby iami audiences are treated to some of Broadway’s top shows with Broadway Across America touring companies. While Miami has become a breeding ground for talent, many performers leave seeking their fame and fortune but often times return in a touring company. Miami-raised Julius Anthony Rubio comes home as one of the performers in the current touring production of Come Fly Away at the Arsht Center. Come Fly Away, a romantic mix of dance and music, fuses the songs of Frank Sinatra with the incredible choreography of Twyla Tharp. This amazing show combines Ol’ Blue Eyes’ unforgettable voice, a thrilling live band, and 14 of the world’s finest dancers performing to such timeless classics as “Fly Me To The Moon,” “My Way,” and “That’s Life.” Come Fly Away is currently touring the country but Wire Magazine was able to catch up with Julius Anthony Rubio to chat about Miami, performing, and Come Fly Away. While still in Miami, Rubio studied at the New World School of the Arts and Dance Attack Studios.

WIRE COVER: COME FLY AWAY WITH OL’ BLUE EYES What is your role in the show? I play one of the three male ensemble dancers and understudy/cover one of the principal roles. A lot of talent comes out of New World School of the Arts. Do you feel the school prepared you for the real world? Most definitely. Although I started dancing when I was 14/15, I started attending NWSA as an incoming sophomore. Learning the ethics and even dance history of what that school taught me has definitely given me such a (no pun intended) ‘leg up’ in the business. New World is a school that really nurses some incredible talent. It definitely was a place for me to not only excel in my craft, but also mature as a young adult at the time. Besides, it’s a performing arts high school, how could you not enjoy your time there? Just dancers, singers, actors, artists everywhere! I’m not familiar with Dance Attack Studios in Miami. Is it still there? But of course! Dance Attack Studios is located in Country Walk/Kendall hood in Miami. It is owned by John Culbertson and Augusto ‘Cookie’ Ramos. This actually is the other half of some of the amazing training and mentorship of my life career. Those two studio owners (John and ‘Cookie’) were the fathers I never really had growing up and can proudly say that still they breed some phenomenal dancers who continue to be doing what I do and more. Have you performed at the Arsht Center before? No! But I can’t wait until I do. Is it dorky that I get butterflies every time I think of that particular venue and me actually performing in it? How crazy is it knowing that I walked/drove by that place so many times growing up thinking ‘one day, I’m gonna perform there and now look! Dreams do come true. What has been the highlight of your career so far? Oh. Hmmmmm? Even after approximately five amazing years living in LA, I would have to say opening up an original Broadway show called WONDERLAND and finally making the move to live in New York City. I never would have made the jump if I didn’t have a secure job. Unfortunately the show closed after three weeks of opening, but six weeks later I landed this gig. So it’s clear that everything happens for a reason, no? Why do you think audiences enjoy Come Fly Away? It’s a show that is so unique in fusing live music, dance and, above all one of the most timeless voices of all time, Frank Sinatra. Twyla Tharp has such a seamless way to make art or better yet a ‘language’ spoken through what we know best, our bodies. It explores so many facets of dance art through Frank’s music and Twyla’s choreography set on some of the strongest dancers of our generation. With that being said,
I can’t express enough to be as grateful (learning the hard and easy way) dancing under the direction of one of the most classic choreographers ever, Twyla Tharp. What an experience! What’s your favorite moment in the show? Well there’s two moments: One would be the opening of the show (“Luck Be A Lady”) where it feels like you’re being shot out of a cannon and where all the characters and ensemble get introduced and it’s a partnering galore! The entire company is on stage and it just happens to always set the tone of the entire night and show... and, oh yeah, the other part is when we all get pretty much half-naked and start taking our clothes off onstage during “Makin’ Whoopee II” Yeah, I’m shirtless and I like it. Is that bad?

Do you still have family in Miami and will they be coming to see you in Come Fly Away? Yes, I do and from what I know yes they are still planning on coming to see it. I’m probably more anxious about playing at the Arsht than I am about family coming to see me... but the more I think about it having them see me AT the Arsht gets me a bit nervous. Are you familiar with Wire Magazine? It’s changed quite a bit since you lived here. Actually, I am. Unfortunately when I was living in Miami I was under 21, so I could only read about these fabulous and fierce events and not be able to go to them but would always appreciate the public attention to what Miami and the gay community had to offer in the arts, nightlife and life. What’s your ultimate career goal? Honestly, just to make my family, friends and the people who helped me get here proud. I sincerely feel that success is not what you accomplish or what’s on your resume, but how fulfilled you are in what you love to do... I can proudly say that there are so many things in this world/business that I still plan to do and will NEVER be fulfilled. Like they say, ‘shoot for the moon for if you miss at least you’ll land among the stars.’ Is there anything else you’d like to tell Wire Magazine readers? very year crowds of music fans swarm the beach for Winter Music Conference, a weeklong celebration of electronic dance music. Every available space, or so it seems, is transformed into a dance club or music listening station with pool parties and listening parties popping up at every hotel, club, bar, and boutique. While many venues are filled with international talent, our pool of local talent takes advantage of WMC and joins the ranks of the musical madness. The New York Times calls WMC “one of the most anticipated clubbing events in the country.” With over 500 events scheduled during the week of the conference, Wire Magazine has chosen a few to spotlight along with some of Miami’s local talent.

Local performer Jei, who many know as Jane on VH1’s reality show Touch Love Miami, will be performing in Made in Miami on March 16, Nervous Records Pool Party at the Shelborne Hotel (1801 Collins Ave.) on a roster that also includes Oscar G. & Ralph Falcon. Jei was first introduced to Miami’s thriving underground house music scene in clubs like Space where she met Edgar V, Oscar G, Ralph Falcon, Charlie Solana and Sammy O. Jei kept active in the club scene performing with Hot Jam Entertainment before she finally recorded “Enlevez-Moe” with DJ Christian Falero. Now Jei has a new release, “Amame,” that she will perform at the Made In Miami event. This song has been nominated for an International Dance Award and Jei will be one of the presenters at the International Dance Music Awards on March 22 at the WMC BeachPlex (21st and Collins). Congrats to Jei (www.missjei.com) on her nomination, Miami will be cheering her on. Another local performer, Ron D 8 Lim, who has been making music since 1977 has been quite active in showcasing talent through the years at WMC. Ron Lim has been producing events at WMC since the very first one in 1999. “It’s a great platform for the experienced artists to exchange and elaborate new projects,” says Lim. “For new talent, it’s an opportunity to showcase their skills.” Over the years he has events at a variety of venues like Salvation, Maze, BED, Rain, Flute, Sofi Lounge, Dream, Shadow Lounge, Sushi Samba, Cafeteria, AERO BAR, The Marlin, The Pelican Hotel, Nowhere Lounge and The Intercontinental. Lim’s music is not the typical house sound but is heavily influenced with sounds from the 60s, rare groove, funk, disco, rock pop, electro and even the 80s. “It’s a mix of those genres with soulful, deep and vocal house music flavors. This year Ron Lim will be playing at the famed LOVE HATE 6th Annual Classic Session (423 Washington Ave.) along with legendary DJs/ producers/remixers such as John Morales (M+M Studios NYC), Gary Wallace (Chicago), Beppe Giola (Italy) and local DJ Paola Albertoni. On March 25, Lim will be performing at the 11th Annual RE-UNION at Tantra (1445 Pennsylvania Ave) with world renowned DJs/producers/ remixers Victor Simonelli, Roy Davis JR, Juan Hoerni, Beppe Giola and violist Carl St. Jacques. “Being the largest electronic dance event in the world, WMC brings the musicians and the music lover closer to each other,” says Lim.

At first I didn’t know what to think about it when commissioners discussed the item. Generally speaking when an event rolls into town – anything from auto racing to festivals, pro tennis, baseball, etc – elected officials are given free tickets ostensibly to give out to constituents. It’s common practice and is built into most contracts for use of public facilities. But a few years ago, the county ethics commission found (following a – gasp – scandal involving Miami Beach strong-arming an arts group for tickets) that the practice was widespread in the county, and that it could easily be used as something to pander, curry favor and build support for individual officials’ little fiefdoms. Um, isn’t that the purpose of the practice? Apparently the ethics commission thinks so. Look, it’s dishonest and unfair to assert that all elected officials use these donated tickets in a politically shady way. I would venture to guess that many do not – instead providing them to truly disadvantaged kids, etc., without a gift label on it making sure the little tykes know which sugar daddy or mommy provided them. And then there are the rest of the elected officials in Miami-Dade County who would use anything to manipulate and unfairly influence constituents. The practice on its surface stinks of potential political favoritism. But initially my thoughts were that if a few kids have an opportunity they wouldn’t have, then it wasn’t the worst form of pandering. After all, entire municipal budgets are manipulated to essentially be payoffs for votes. [Insert union reference here.] Something about the way it works kept nagging at me though and finally I figured out what it is. The practice feels an awful lot like nobles tossing day-old bread from their castle to the starving serfs. Let them eat the Sony Ericsson Tennis tournament, as it were. That makes my stomach churn. Politicians already view themselves too much as the American nobility. They are too comfortable doling out rights and privileges, as if they are rulers and not public servants. They are too comfortable asserting that they know better, what’s best for residents and for communities than what individuals and communities themselves know. Hogwash. The psychological profile of the average politician is closer to that of a serial killer than a Second Coming. The county ethics committee is correct that the practice should be eliminated. It’s just that they didn’t see the full spectrum of just how offensive the ticket gifting practice is. Of course the ethics commission seems to have a hard time seeing actual ethical corruption. o if I wanted to make a lightweight, semi-comic, romantic film and I lived in France, the only actress I’d use is Audrey Tautou. You should remember her as that sweet fey faced beauty from Amélie (2001), The Da Vinci Code (2006), and Coco Before Chanel (2009). That’s exactly what brothers Stephane and David Foenkinos did to turn David’s runaway best selling French novel La Delicatesse into a movie, and as always she makes the film work. Or at least she and French comic star Francois Damiens, Heartbreaker (2010). Without them, I think it would have been a dull trip through the standard romantic universe. As I understand it, in France there’s a controversy going on about the film. I know, I know, that’s not so unusual, there’s always a controversy going on in France, but this one is over the way the filmmakers approached their conversion from the written page to the screen. They took this beloved novel and “Oh My God” added scenes. (How dare they, even when the screenwriter is the person who wrote the novel.) It got thousands of fans of the book incensed. Not that they hated the film, which they didn’t, they just didn’t want the material played with like that. Besides, this stuff is great for conversation over espresso and a napoleon. The story goes like this. Ms. Tautou plays Nathalie, a beautiful, happy, and successful Parisian business executive who meets, falls in love with and marries her true soul mate. After several years of blissful marriage, an accident leaves her a widow locked in the depths of despair. She throws herself into her work and for years lives a very solitary life, locking away her emotions, and disregarding everyone’s attempts to change that. Then, one day, for no apparent reason, Nathalie, possessed of a moment of madness, kisses her co-worker, the odd Swedish employee Markus (Damiens). He, being the strange creature that he is, immediately falls head over heels in love with her, and begins the first pursuit of a woman in his life. I should say inept pursuit, which against all odds, she begins to warm to. But nobody thinks this romance should happen. Not family, not friends, not co-workers, I suppose not even the homeless guy in the street. Delicacy comes off as a sweet romantic story about two people who are too scared to let loose their inner demons and love each other. Their relationship runs the gamut from uncomfortable to genuinely loving. It’s different from the run of the mill romances we usually get these days and tugs at your emotions a bit as you watch it. I had some problems with the progression of the story, some things develop too fast while others progress way too slowly, but as I said before, the performances save the whole thing. You should enjoy the film. Rating: 3 1/2 Stars (out of 5) Delicacy TRT: 1 hour 48 minutes
