White Party Week Has Officially Arrived White Party Week is finally here, and if you are visiting for White Party this week, welcome to our beautiful multi-billion dollar sandbar. If you are a local, get ready for a fabulous week of events filled with delicious out-of-towners, itching for a good time and to make some incredible memories. This year marks the 25th anniversary of one of the largest HIV/AIDS fundraisers in the country, and it’s almost hard to believe that what started out as a one night fundraising event at Vizcaya has now turned into a full week of big dance parties, brunches, shopping events, fashion shows, and, of course, tons of fun in the sun. While putting together our official Wire Magazine’s Guide to White Party Week, I was surprised by the number and caliber of events taking place this year. Care Resource has done an amazing job of lining up international DJs, including DJ Abel, Chus & Ceballos, and Oscar Velazquez, as well as a number of fabulous performers, including one of the biggest names in dance music, Kristine W, who will perform for White Party revelers this Sunday night at White Party’s annual Noche Blanca at Dolce. Check out our special TopTRAX DJ feature on page 38 by DJ FR8-O to get a complete rundown of each of the White Party DJs, working the wheels of steal this week.
On page 34, you will definitely want to check out Wire Magazine’s Guide to White Party Week, where I have listed all of the official events for White Party Week, along with a number of special events taking place that locals get to enjoy all year round. One thing, you’ll probably notice throughout our guide is the number of White Party women’s events taking place. For close to 10 years, Alison Burgos, Yesi Leon, and Amy Alonso of Pandora Events have produced all of White Party’s women’s events, beginning with the first White Party women’s event, Cirque Blanc. Check out Liza Santana’s feature on page 44 to learn more about this year’s fantastic lineup for women who love women. In this issue, you will also find our cover feature on Care Resource, which is the largest organization dedicated to HIV/AIDS prevention and care in South Florida. During the interview with Care Resource executive director, Rick Siclari, I was able to learn a lot about the organization that started out as a gay HIV crisis network in the early 80s and evolved into a full-service medical and social service agency. White Party Week is an incredible fundraising event for Care Resource, but the funds raised only make up about five percent of Care Resource’s $10 million annual budget. Over the years, there have been questions regarding the number of gay men Care Resource actually continues to serve on an annual basis. According to Rick, nearly 52 percent of their clients are men who have sex

with men. Would that mean that Care Resource should be considered a gay agency? I have to agree with Rick when he says, “I would definitely say yes.”

After seeing several high profile investment scams in the news, I decided to write a special feature in this issue to prevent you from falling prey to an increasing number of investment scams and ponzi schemes. Last week, I mentioned that Michelle Spence-Jones had been suspended by Governor Charlie Crist, because she was charged with felony, grand theft, and openly urged that she did not seek to be re-elected in the upcoming special January election to fill her vacated
seat. Surprise, surprise! Spence-Jones announced she plans to run in the special election and hopes to be elected again. Just another typical Miami politician planning to use their power and influence to protect their personal interests at the expense of the taxpayers. Surely nobody in this town believes that she will have time to address the very serious issues faced by our city government, while defending herself against a felony grand theft charge. This just reads like a really bad script to a terrible political story that only former Illinois Governor Rod Blagojevich may enjoy reading. Miami residents need to demand integrity from their representatives!
In closing, I want to urge you to make the most of living in Miami and the Beaches by getting out and doing as much as you can to enjoy what this season has to offer us. If One-on-One is Not Your Thing, Try a Group @

If you are like me, when it comes to working out then you know how difficult it is to actually find the motivation to go to the gym. The thought of putting my body through all that stress and pain just isn’t something I find exciting. Unfortunately when you live in city like Miami Beach, where every person walking past you on Lincoln Road has the body of an Adonis, going to the gym is pretty much a requirement. And as a result, I have spent countless hours searching for ways to motivate myself. After years of searching for the right motivational tool, I have discovered Proper Form’s new group training program, Personal BEST. As someone who is addicted to socializing, this is exactly what I need to motivate myself to maintain a training program. Proper Form’s Personal BEST training program brings a group of about six to eight people together, who are all looking to improve their health, change their body, and just look fabulous. The BEST participants work with Proper Form’s highly experienced trainers to develop better eating habits, lose weight, and increase muscle mass among many other things. The best part of it all is that not a single person in the BEST program is doing it alone. Everyone is working together to collectively succeed in the program. After hearing about this dynamic new fitness program, I took a moment to sit with George Piliblosian, one of the owners of Proper Form, to learn more about their new Personal BEST program. What I learned during our conversation made me even more excited about joining the group. Check out what he had to say: How did you come up with the BEST program? We have seen how well an intensive, six-day per week program has worked with our one-on-one clients, and we realized that in a group setting of three to six participants such a program would have some powerful advantages. In addition, running the program for a pre-determined length of time (eight weeks in this case) adds a sense of urgency for everyone involved, including the participants and the instructors.
Which trainers do you have working on this program? What are their areas of expertise? Three of our trainers work on the program. Because the training is broken down into weight/resistance training and cardiovascular training, depending upon the day of the week, we utilize the trainers with the most specific experience in each area of focus. We also involve our nutritionist, who advises the participants on their eating habits and patterns. This portion of the program receives as much attention as the training portion. Why do group sessions work better than oneon-one for some people? Some people really enjoy the social interaction with others, especially as they go through a somewhat difficult program. It helps a lot to know that the person next to you is experiencing the same challenges you are. And over the course of the program, the participants form a bond with one another, and that helps them to keep going and not give up. What are some of the different exercises participants will be doing during the BEST program? The participants will do a wide range of activities. From weight training, with and without machines, to cardio sessions and Pilates to running at the park and cardio boxing, there will be a lot of variety. How will you benchmark the success of individual participants, when they are working together as a group? Before the eight-week program begins, each participant will go through an individual assessment. We will use the advanced Bod Pod system to measure their body fat content, and we will also measure strength, flexibility, and cardio endurance as well. These measurements are done prior to the program, at the halfway point, and at the end.
What can people expect to experience during this program?
I understand that not only do you train people on exercises they can use on a daily basis, but you also work on building a better diet for them as well. What is the process for this?
At the highest level, they can expect two things: they will work hard and they will see results.
Each morning, before the class begins, we require that the participants hand in a journal, which lists everything they

have consumed during the previous day. Our nutritionist reviews each journal and makes recommendations on improvements for each individual. We also conduct two nutrition seminars and take the group to the supermarket, conducting the class as a show and tell, as we go up and down the aisles. How do participants feel supported throughout the program?
Participants receive support on many levels. First, the entire training team is here to help them, even after hours. They are encouraged to email the team if they have a question, are feeling discouraged, or just want someone to communicate with. Of course they also support each other, which is a key benefit of conducting the program in a group format. What are the price points for this program?

W
hen HIV and AIDS first appeared in the early 80s, many members of the gay community became infected with this new mysterious disease. To make matters worse, there were little to no medical or social organizations dedicated to the prevention of HIV, resulting in more and more infections. It wasn’t too much longer after the epidemic hit the U.S. that organizations like the Health Crisis Network, Miami’s first HIV/AIDS service organization, which eventually became Care Resource, were formed and eventually people living with HIV had access to vital resources and information to help them cope. Since then, hundreds of HIV/AIDS service organizations have come and gone. Some of them have failed because they refused to evolve with the times, and some survived because they advanced along with the epidemic and with our community. This Wednesday, we will celebrate the 26th year of South Florida’s largest HIV/AIDS service organization, Care Resource, and the 25th anniversary of their annual HIV/AIDS fundraising event, White Party Week. Over the past 25 years, gay men have flocked to our multi-billion dollar sandbar to indulge in all that glitters in Miami Beach and support Care Resource's work. This event has helped Care Resource implement tons of HIV prevention and medical programs for the gay community. In fact, internal statistics show that nearly 54 percent of Care Resource’s clients are men who have sex with men. As Rick Siclari, the executive director of Care Resource, would say, “Does that mean that we are a gay HIV/AIDS organization? I would definitely say yes.” And we have to agree! Over the years, the previous owner of Wire Magazine had some concerns regarding Care Resource and the use of the funds raised during White Party Week. In fact, for the past couple of years, Wire Magazine has not taken the time to sit down with Rick to learn more about the work that Care Resource does or where the money from White Party Week goes. Last week, I took some time to sit with Rick Siclari to ask some of the questions and address some of the concerns members of the community have had for Care Resource. And when I left our meeting, I felt very comfortable supporting Care Resource and White Party. They are a $10 million organization that is doing some really great things.

Care Resource began about 26 years ago, and White Party has been around for 25 years. Back in those days, the agency was called the Health Crisis Network, which was exactly that. It was a crisis intervention agency that would assist clients with hotline services, emergency counseling, and various other things. We all know that HIV was pretty much a death sentence back then.
When AIDS first appeared, a number of HIV/ AIDS service organizations popped up all over the country; however, most of them have disappeared since then. How has Care Resource been able to not only survive, but also continue to grow? I think Care Resource has evolved with the epidemic. The epidemic has changed dramatically since it began. Our agency has been very good about identifying the new kinds of needs and evolving and morphing to become what the community needs. First off, by serving a broader community. We still largely serve the gay community, but we also serve anyone living with HIV. We have sort of become something for everyone. We’ve also evolved in the types of services we offer now. We continue to expand our range… medical care being the most perfect example. As soon as it became clear with the advent of protease inhibiters that medical care was going to mushroom, we expanded. People were going to live longer. There were going to be options. There were going to be a lot of people without insurance. Care Resource has always been the organization dedicated to the underdog, the under insured, and the uninsured. When a lot of social service organizations were still focusing on their work, we decided to apply for grants and hire a doctor. Prevention has also changed a lot since the beginning of the agency. The way we communicate with specific populations has gotten much more sophisticated. You can’t just go out into the street and hand out condoms and tell people to be safe. You have to think of better ways to modify behavior. The agency has a really great history of looking at the needs of individual communities and serving them properly. As a result, we have attracted a lot of funds. A good barometer of our success is definitely how our budget has grown. When the agency became Care Resource in 1998, we were working with a $3.2 million budget and this fiscal year, we are working with more than $10 million. We have to be doing something right to attract such a massive amount of funding. If someone were to contract HIV, what is the process for them to receive services at Care Resource? We are a fairly large agency, so while I don’t like to think we’re bureaucratic at all, there is still a process. We actually have an intake department, so that there are designated individuals, who really are the first point of contact at the agency. They can very quickly ascertain what a person’s financial and clinical needs may be. From that point, it could become a slightly more lengthy process, or a more expedited process. I say that because if you are a publicly funded client and need financial resources, for better or for worse, our funders have certain requirements. You have to bring in certain
documents to prove your need. That can sometimes take a week or two. If you have good health insurance and just want to see a doctor and receive great medical care, you can be triaged in a different way. We take people will all types of insurance. We also take people who want to pay cash, and, of course, we take people who don’t have anything. What prevention programs do you have that specifically target the gay community? We have a fairly large initiative that’s targeted to the gay community. One of which is the generic testing program for the gay community, one that is geared towards everyone, and one that specifically targets gay black men. For Latinos we have a special project for men who have sex with men, which is really a secondary prevention project. That program targets individuals who already happen to be HIV positive and aren’t necessarily as conscientious as they should be when communicating with their sexual partners. That is a CDC funded program. There are a number of people who feel that the money raised during White Party Week should be exclusively earmarked for use within the gay community. How do you feel about that? I think first and foremost, Care Resource has been and will always be an HIV/AIDS service agency. We were fortunate enough that in the 80s, when this epidemic began, there was a cohort of gay men, who were very seriously affected by this disease and decided to build this event for us. The monies raised during White Party Week go towards the work we do for HIV prevention. Just like the money raised during The AIDS Walk goes to continuing our services. Most of the participants in The AIDS Walk are heterosexuals. Does that mean that we should earmark that money exclusively for our heterosexual clients? I don’t think so.
When White Party first began, it was organized by a committee of local volunteers, but at this point, you guys have removed the committees and now White Party is produced internally. Why did you do that?
My sense about the community driven event that created White Party precedes my job at Care Resource. In the first 10 years of White Party, the event was completely driven by the community. At that time, White Party was incredibly successful; however, the event was only raising $25,000 or so. Enter 1998, Care Resource merges with Health Crisis Network, and we grew a lot. We still had a committee advisory process, but the dilemma with that process was that the event was driven by the staff, but directed by a steering committee that met once a month and told the agency what it needed to do. That wasn’t a good community process. That coupled with the fact that in 1998, 1999 White Party was hitting its heyday. It became big business. The event was raising $750,000 to $800,000. That is a lot of money to put on the line. Our board, clients, and members of the staff said that the organization process needed to change. I needed to be able to hold someone accountable for the White Party logistics and success. It is impossible to hold a volunteer accountable for doing something or not doing something.
What’s important to understand about the money raised during White Party is that it only accounts for about five percent of our annual budget, but that money is very important because it is unrestricted funds. Most of the money we have comes from grants, so they have very strict guidelines on how we can use that money. These funds allow us to serve members of the community who may slip through the cracks when it comes to grant money. Another thing to note is that we have really been trying to diversify White Party Week. Last year, about 20 percent of the attendees at Vizcaya were heterosexual. Yes, White Party has its history with the gay community, but we are seeing more and more straight people wanting to be involved. What percentage of your clients are men who have sex with men? Between the people we serve in Fort Lauderdale and Miami, 54 percent of our clients are men who have sex with men. Does that mean that we are a gay HIV/ AIDS organization? Wire Cover Story: white party week: 25 years of success! What have you done to involve the community more this year? The community has always been a major part of White Party. At this point, I think we have close to 300 volunteers signed up to help us out this year. We could never pull this event off without their help. This year, we have worked a lot with the original founders of the White Party to pick the DJs, venues, and such. We really tried to bring in a lot of local DJs, so the thousands of people who come into town will get an opportunity to discover new artists. This also helps our local entertainers and DJs garner international exposure. This year Care Resource will celebrate 25 years of White Party. What have you guys done to make this year’s White Party the most unique one yet? We wanted to focus more on the fact that it is our 25th anniversary, as opposed to coming up with a different theme for each party. We decided to unify all the events with one theme – a formal affair. We wanted everything to be a bit more formal this year, since it is our silver anniversary. We wanted to focus on the fact that White Party has been a very successful HIV/AIDS fundraiser for 25 years. What does your entertainment look like for White Party this year? Let’s start with the main event, I have Expose as our headliner for White Party. I have Elaine Lancaster as our hostess for the evening. This will actually be her 10th year as the hostess of the event. This year, we will also have a live jazz band in the VIP lounge area, which is a new thing for us. We are still expanding the restaurant row in the courtyard. We have also upgraded the casino area.

Usually we’ve had just one performer for the night. This year, we are presenting Viva Las Divas in the casino lounge. We’ve reached out to the various female impersonators in the community and invited them to perform. Kitty Meow has been a really big help with this. She will be the emcee for that part of the evening, and she is reaching out to a number of the drag performers. So far, we have about 10 to 12 performers slated to perform. For Muscle Beach we have Debbie Holiday and Jason Dottley. Debbie has a really big hit out right now called Dive. Jason is from Logo. He is the main character in Sordid Lives. He and his partner Del Shores will be down here for the event. Sunday night, during Noche Blanca, we have Kristine W performing and will have Flava working with us there. How has the economy affected ticket sales for this year’s event? We are at the exact same place we were at the exact same time last year. You could say that is a good thing, because we’re in a recession, but last year was not our best year. Ticket sales were off last year by about 10 to 12 percent. Most of the ticket sales take place the week of, so it is impossible to know how the economy is going to affect this year’s event until then. We could really be on target this year or we could potentially not do well. What are you looking forward to during White Party Week? Celebrating the 25 years of White Party success. There are some incredible events, fantastic DJs, and wonderful performers set to take the stage, and I think it is going to be great watching everyone have a good time.

Born in upstate New York, Kenny Calabria moved to South Florida in 1991, where he’d hang at nightclubs and watch the drag queens work the crowd. Not only were they dancers; they were actors, stand-up comedians, makeup artists, and hair stylists. Kenny decided to give it a try, created a character called Daisy Deadpetals and has been performing ever since. In 2003 Daisy added DJ to her skill set and was awarded a community choice award of Favorite DJ (as voted on by readers of Express Gay News). Daisy is still going strong and continues to challenge herself and the audience; proving this drag queen is an artist.

November marks a very important date, as The “Crown Jewel” of HIV/AIDS fundraisers, the 25th Annual White Party Week takes place in Miami. Produced by Care Resource, the annual White Party Week is a series of internationally acclaimed HIV/ AIDS fundraisers – to benefit the men, youth, and women affected/infected by HIV/AIDS. Recognized as one of the oldest and largest HIV/AIDS fundraisers in the world, White Party Week will celebrate a dazzling silver anniversary with thousands of boys and yes, girls.
Wire Magazine took a look at this year’s events and decided to focus on something people are not very familiar with: the fact that thousands of women attend the White Party festivities and that it’s not all male. Having said that, we thought we’d share some of the history, and then share this year’s highlights and new additions. It all had to start somewhere didn’t it?
Back in 1999, three promoters took a crack at producing their own White Party events for women, each after being approached by Clara Eshkenazi and Lark Bennett, who both served on the Care Resource host committee at the time. So off went Alison Burgos, Amy Alonso, and Yesi Leon to create events specifically for the ladies. Feeling there was 44 | wire magazine | wireweekly.com
a void in the community and nothing catering to the girls, Alison created a Wednesday event at a popular venue called Shadow Lounge, and Yesi and Amy decided to throw a Saturday party. The latter recruited all friends and family to help them with the initiative, which took place at the lovely Miami Beach Botanical Gardens. The result, well let’s just say they deserved an A for effort. After the poor turnout, the girls regrouped and decided to combine efforts rather than to compete. A year later, the idea resulted in a positive union that resulted in the creation of a full weekend of events geared towards lesbians. The year 2000 marked a successful Women’s White Party Weekend, featuring an array of local talent, DJs, and a few hundred ladies who love ladies. So let’s talk about the producers. Alison Burgos has been producing and chairing gay and lesbian events across the East Coast for well over a decade, and is the founder of Aqua Girl, the signature women’s event of the Aqua Foundation based in South Florida. Prior to becoming a full time event producer and philanthropist, Alison was an advertising director and has over ten years of experience in marketing and public relations. She has garnered much respect from the community for her activism and support of GLBT rights.
Amy Alonso and Yesi Leon of Pandora Events have been producers of events in the South Florida community for thirteen years. They started throwing small gatherings, (and when we say small, we mean a hundred or so women under one roof) on a weekday. They formalized their company and brand, and decided this would be their “job.” They made a pact that they would provide lesbians ultramodern and upscale entertainment and access to the most trendy and chic party outlets.
The powerhouses have co-produced events annually for the last thirteen years, benefiting Care Resource, as well as other charities such as Llego, NCLR, and RAINN. They also produce other annual events, including Girls at Gay Days, Girls in Wonderland, and Aqua Girl, of course.
As far as White Party is concerned, most ladies tend to remember the main event (also annual) Cirque Blanc. Cirque Blanc began as a spin on “Cirque Du Soleil” and is one of many events that catapulted this trio for their large scale, event production. Although the theme has been tweaked year after year, it has steadily maintained a few elements the attendees look for and expect from Pandora – top female DJs such as DJ Pride, DJ Alyson Calagna, DJ Pat Pat, DJ Wendy Hunt, DJ Meesh, and DJ Cristi Tenhagen.
(Other talent has included dance troupes, musicians and recording artists). Other staple items that remain on the list include having the sexiest go-go dancers in South Florida perform, while donning costumes for the night’s theme, surprise performances, which include an array of specialty performers, and others features such as fashion shows.
Working in unison with local non-profit organizations, these gals have spearheaded some of the most successful circuit and fundraising events to date. They started what many might have considered a movement. As the old phrase states: “if you build it, they will surely come.” This proved very true, as Pandora Events has provided ladies with the best and most innovative women’s events. Their premiere parties and shows during White Party have become legendary across the country. Women plan their schedules months in advance, so they won’t miss this fabulous weekend, where thousands of women converge for several days and nights filled with alluring ingredients.
When asked what the girls should expect this year, Burgos simply stated: “each year we work diligently to surpass what we did the previous and always try to outdo ourselves. We organize events we would like to attend and enjoy. That’s our formula.” Alonso, Leon, and Burgos have worked consistently to build a solid reputation in Miami. The focused trio, now bringing South Florida the tenth Women’s White Party, have produced A-list and top tier events, earning great respect in the gay community, as well as building a positive relationship with the media for continuous philanthropic efforts. Their innovation and unique vision for events have singled them out as masters in the realm of entertainment and nightlife for the gay community. They have paved a lot of the way for other promoters and event producers in the market.

As White Party Week approaches with a full lineup of spectacular parties, from November 25th to the 30th, five are exclusively designed for women – Cirque Blanc, the premier dance party, will be celebrating its 10-year anniversary. But it’s not all about the white clothing. White Party began at Vizcaya 25 years ago as a fundraiser for The Health Crisis Network, which eventually became Care Resource. Profits from the week support various Care Resource programs that include counseling, support services, clinical research trials, community outreach, and prevention education. That’s why it’s so important for people, specifically women to continue to support, come out, and attend the White Party events, which are all for a very good cause. To cater to the female community, other great elements have been thrown into the mix, including a couple of events catered to active professionals and older women, wanting to mingle, but not interested in the dance parties. Chef Sam Gorenstein Serves Up: 7-Spice Duck Breast with

Like most locals, I do everything I can to avoid dining on Ocean Drive. The thousands of tourists wondering the streets and the constant flow of low-riders and motorcycles up and down South Florida’s most famous street tends to ruin almost any meal. If that were not enough, most restaurants on Ocean Drive recognize the need to cater to the tourist dollar by creating tasteless, gimmicky menus that have no appeal to the foodie in me.
This has been the case for most of the eight years that I have lived in Miami until now. A couple of months ago, I had the opportunity to dine at the Tides South Beach and cook with the very talented Chef Gonzalo. I have to admit that I was absolutely blown away by his menu. Last week, I was invited to dine at the new BLT Steak at the beautiful Betsy Hotel, and needless to say, I was not disappointed by chef Laurent Tourondel and chef Sam Gorenstein’s menu. Within moments of sitting down to eat, it was obvious that chef Tourondel has successfully exported the signature style, great cuisine, and exemplary service synonymous with the BLT experience to Miami Beach. As my fellow publisher Rafa Carvajal and I perused the various BLT Steak offerings, our waitress for the evening took us through the menu. Turns out BLT Steak owner and executive chef Laurent Tourondel has created a standard menu for his nine BLT Steak restaurants that includes a variety of cuts of USDA Prime, Certified Black Angus, and American Wagyu beef – all of which have been dry aged to lock in the moisture. selections, ranging from fresh oysters to delicious fish dishes. While debating between the 10-ounce American Wagyu skirt steak and the braised short ribs, the waitress insisted we at least start off with an appetizer. This choice was actually a no brainer, as BLT Steak has an incredible seafood platter that includes jumbo shrimp, kumamoto and Blue Point oysters, Taylor Bay scallops, Island Creek middleneck clams, and a red snapper ceviche - all served on a large tower of ice. By the time the seafood platter arrived, we were finally ready to order. I decided to go with the short ribs, jalapeño mashed potatoes, and some roasted tomatoes. To my pleasant surprise, everything was made to perfection. The short ribs had been braised in a delicious red wine reduction and the jalapeño mashed potatoes were a perfect combination of spice and heartiness. And I cannot even begin to describe the roasted tomatoes, which had been topped with roasted breadcrumbs and served in a small cast iron skillet. By the time I was finished with the entrée, I couldn’t even imagine taking another bite, but, after our waitress described the various desert offerings, I just couldn’t resist and settled on a peanut butter chocolate mousse. As we wrapped up our meal, I was so happy to have found another fantastic culinary destination on Ocean Drive, and just had to meet chef Sam Gorenstein. Of course within seconds of meeting the 25-year old Colombian born chef, I was even more impressed. Chef
Gorenstein moved to Miami when he was 14 and has been cooking with his mother almost his entire life. Chef Gorenstein says that he cannot even remember a time when he wasn’t interested in cooking. With so much skill at such a young age, I was very eager to get into chef Gorenstein’s kitchen and learn to make one of his signature dishes. The fact that he was a little Latin cutie was even more of an incentive.
Luckily chef Gorenstein obliged and a couple days later, I found myself standing in his kitchen preparing BLT Steak’s signature 7-spice duck breast with foie gras and mango chutney.
To begin, chef Gorenstein and I had to make the 7-spice rub for the duck. We grabbed 4 teaspoons of whole cloves, 2 teaspoons of Szechwan peppercorns, ½ a teaspoon of whole black peppercorns, 6 pieces of star anise, 1 teaspoon of ground cinnamon, ½ teaspoon of whole cardamom, and the leaves from 3 bags of earl gray tea bags, and placed everything in a baking pan and roasted the
spices at 350 degrees for 6 to 8 minutes. Once the spices were perfectly roasted, we placed everything in a spice grinder and grounded the spices to a nice fine powder.
wired: inside the chef's kitchen: Chef sam gorenstein With everything combined, we cooked the mixture on low heat for 2 to 3 hours until it had been reduced by about ¾, yielding about ½ cup of duck jus.
Now that our spice rub was ready, we grabbed a whole duck, which you can purchase at Whole Foods, and placed it in a pot of salted boiling water for about a minute and a half. We then brushed a little olive oil all over the duck and rubbed the 7-spice mixture all over, focusing mainly on the breasts. Chef Gorenstein then placed it in the fridge, where it was to sit for the next two weeks. When I asked if that was safe, chef Gorenstein explained that the fat and the bone would serve as a shield between the duck meat and the outside air. It’s a very similar process to dry aging beef.
While our duck breasts were roasting, chef Gorenstein and I began to prepare the foie gras, which needs to be prepared right before serving, as there is nothing worse than cold foie gras. First, we grabbed a 3-ounce portion of Grade A foie gras, which you can pick up at Epicure or Whole Foods. When I asked chef Gorenstein how to pick a good foie gras, he explained that there are three different grades of foie gras, A, B, and C. Grade A being the best and having the least amount of veins and blood in the goose liver.
Before we could finish with the rest of the duck (luckily chef Gorenstein had prepared another duck a couple weeks before, so I wouldn’t have to wait two weeks to finish making this dish), we had to make the duck jus.
First, we grabbed three duck carcasses, which had been roasted in the oven at 400 degrees for 30 to 40 minutes, or until golden brown, and placed them in a large stewing pot that had been glazed with dry vermouth. We then chopped 1 white onion, 1 carrot, 2 stalks of celery, 1 head of garlic – split in half, a bunch of scallions, 1 stock of lemon grass, 1 piece of ginger, and placed everything in the pot along with the duck carcasses. We also added 1 tablespoon of tomato paste, 1 teaspoon of coriander, 1 teaspoon of black pepper, and enough chicken stock to completely cover the carcasses. When I asked about salt, Chef Gorenstein said that it is important to wait until the reduction is done before adding any salt.
board, where we let them sit for about 4 to 5 minutes. Chef Gorenstein says that one big mistake a lot of people make when cooking meats is to cut it immediately after it comes out of the oven. The best way to slice the meat is after it has been sitting for a bit, as the juices inside are still cooking the meat. After letting the breasts sit for 5 minutes, we placed them back in the oven for another minute and a half.
After lightly scoring both sides of the foie gras, we placed it in a small sauté pan, where we seared it for about 2 to 3 minutes on each side, or until it had been reduced by about 40 percent. By the time, we finished searing the foie gras, the duck breasts were done roasting, so we poured about 1/3 of a cup of duck jus into the pan with the duck breasts along with a couple stems of fresh thyme, and sautéed on low heat for about a minute and a half. With the stock simmering on the stove, we began to prepare the mango chutney. First, we chopped up 2 medium ripe mangos and diced 1 sweet white onion and 1 clove of garlic that had been blanched three times. We then placed everything, along with 2 tablespoons of sugar, ¼ cup of white wine, ¼ cup of white wine vinegar, 1 tablespoon of chopped ginger, and 1 green cardamom. We placed the sauce pan on low heat and reduced the mixture down until the onion became translucent and the mixture had a jelly like consistency
Now that everything was prepared, it was time to plate. First, we sliced the duck breasts on a bias, and placed it in a small cast iron skillet along with about a half cup of mango chutney on the side. We then placed the foie gras on top and garnished with some fresh thyme.
With our duck jus and mango chutney simmering on the oven, we went back to preparing the duck breasts. First, we had to cut the breasts from the carcass. Using a very sharp chef’s knife, we sliced the duck down the middle, and began to work the knife along the bone, making sure we got as close to the bone as possible. Once the breasts were removed, chef Gorenstein set the carcass aside, so he could use it to make more jus later.

After all the work that went into this dish, I was more than excited to actually taste our creation. All I can say is FABULOUS! As with almost every duck dish I have ever made, this dish may have been a bit complicated to make, but definitely well worth it!
Now that we had our duck breasts, we took a very sharp knife and scored the duck, which means we diagonally sliced about ½ an inch into the fatty side of the breast. According to chef Gorenstein, you want to cut through the fat, but not into the actual meat of the duck. We placed the scored duck breasts in a sauté pan and cooked them fat side down for about 6 to 8 minutes or until the fatty side was a dark golden brown color. While cooking the duck, a lot of fat was being rendered. According to chef Gorenstein, it is really important to regularly remove the access fat juice or the duck will begin to fry. Chef also suggested that I only cook the breast on the fatty side, otherwise the meat will overcook and become very tough. This is a very important tip since duck is known for being a bit tough and gamey. Once the fatty sides of the breasts were nice and golden brown, we placed the sauté pan in an oven that had been preheated to 400 degrees and roasted the duck breasts for 3 to 4 minutes. First there was Madoff. Now you can’t pick up a South Florida newspaper or watch the local television news without hearing about our local celebrity, investment con artist Scott Rothstein. After hearing how many sophisticated investors and regular Joes had recently fallen prey to ponzi schemes and other types of investment fraud, I decided it was time to help our loyal readers by providing some practical advice to protect themselves from becoming the latest victims, or to seek remedies when they do.

scam was made possible by reaching out to former clients from the late 90s-2000 time period who had made money with him when he was actually trading in New York. Even though it turned out that Healy did work for three of the most infamous boiler room operations in SEC history, he was just a conman who had a good sell.
I caught up with Paul Turner and asked him some questions designed to provide you with tips on how to protect yourself from unscrupulous investment cons.

Also, if you already have money invested, take a few minutes and circle back to check on your current investment advisor. You will certainly sleep better at night knowing your hard earned dollars will not end up in the hands of swindlers.
What was the single biggest mistake made by investors in the recent two cases of Rothstein and Healy?
With Rothstein, people thought they were dealing with a large, (you think) reputable law firm and basically dropped their guard. Investors may have just felt thankful to get into such a profitable opportunity, just like with Madoff. He was able to use his law firm’s “cloth of righteousness” to lend credibility to the securities he was selling.
Why am I providing these tips to you? Four compelling reasons: First, it is really sad to see so many people lose savings and retirement funds they have worked so hard for. Secondly, my mother, brothers, and I fell victim to a financial investment ponzi scheme perpetrated by a former family friend from our Tennis Country Club - about a year after my dad passed away when I was 12 years old - and we lost all our savings. Thirdly, and you many not know this, I have a background and professional experience in corporate finance and investment management. I graduated from Harvard Business School with an MBA in finance and my professional experience includes work as a top-tier business management consultant to Fortune 100 banks and companies, work on Wall Street, and years managing my family’s investments, after sell58 | wire magazine | wireweekly.com
Lack of documentation. There needs to be a certain level of due diligence by the investor that is repeatedly lacking, even going up to the Madoff case. In Healy’s case, the investors put in up to $20 million dollars and they never received any documentation from him, except for some emails and text messages. They did not even receive bank statements or account summaries. Rothstein had a series of documents that were purported to be confidential settlements in different litigation matters. No due diligence was done on these documents to see if these cases actually existed or if the supposed party that settled and was paying the money was actually the party that lost the case. In one of the documents that I reviewed, the defendant actually won the case and did not have to pay monies out. Rothstein was just fabricating documents. Healy was not a “blue-chipper” Wall Street investment manager. No one really new him. His recent investment
In every case, specially institutional type cases like Madoff and Rothstein, there needs to be a truth, thirdparty independent audit and investors should require it.
What additional advice do you want to give our readers to protect themselves from becoming victims of these scams? There are a couple of things learned from my litigation experience and there is a simple, yet powerful, cliché.
Let’s start with your basic cliché. “If it is too good to be true, it probably is.” Any time you are getting these kind of high returns, with little to no risk, you should be concerned and a red flag should go up.
My advice is to get documentation upfront. All legitimate investment professionals are going to answer your questions and provide you with documentation to

Once you know you are dealing with a licensed professional, check, for example, FINRA, the Financial Industry Regulatory Authority, which is the largest independent regulator for all securities firms doing business in the United States, and conduct basic due diligence on your investment advisor’s history and background. Basically, due a little homework on the person who is going to provide investment advice or manage your money.
Why are these investment scams so pervasive in South Florida?
There is a lot of money here in South Florida. There is a lot of money from people from all over the world. There are some very sophisticated scams being perpetrated on people, such as Rothstein’s. Finally, there are a lot of good business people with a lot of money, who may believe that the confidence and experience they have on the business side will translate equally to the investment side and give them the ability to spot good investments. Sometimes, this is not the case.
If one of our readers has been the victim of one of these investment scams, what should they do to seek justice and financial remedy?
One option is a private action by obtaining an attorney to help them recoup some or all of their money through legal action. In addition, they can turn to the government and their governmental entities that specialize in investment regulation and oversight. You can contact the SEC (Securities and Exchange Commission), the State’s Attorney General Office, and file a police report.
As an example, our firm successfully litigated against the ponzi scheme by Sean Healy and will see a judgment in this case. Our client was harmed for about $12 million. Mr. Healy just entered into a plea in a 55-count indictment, where he is facing a maximum of 50 years in prison, and a fine of up to three times the amount of money misappropriated.

If it’s not a scam, but you believe you lost money due to bad investment strategy or negligence by your advisor, you can go through other types of alternatives, such as FINRA arbitration, which is part of the agreements you should sign when hiring an investment advisor.

What can you do as an attorney to help people get back lost money?
I can initiate litigation or send some pre-suit demand letters. A lot of times you may be surprised by how an initial letter may allow you to find out more about your investment. Sometimes you do not get the responses you expect as an attorney, and that’s when red flags go up. At that point, you typically advise your client that something doesn’t seem to be right, and therefore they need to consider litigation or arbitration as an option; in addition to making some potential inquiries with governmental entities, and background checks with the appropriate entities, such as FINRA. Also, we will work hand in hand with governmental entities in order to make sure that criminal actions are promptly brought against the perpetrators. This is very important because on the criminal side the federal government can get results a lot quicker than you sometimes see on the civil side. In the Healy case they were able to get a federal judge to issue a receivership for all of

If you go to a tier-one investment advice company they are not going to cause you harm through fraud. If they cause you harm through negligence, the cases are usually collectable. If you bring an arbitration action or you file litigation, you are going to recoup some or all of the damage that you suffered, plus your costs and legal expenses. However, when you deal with con artists offering pie in the sky numbers you sort of get what you pay for, and it is probably not going to be collectable. You see this happen a lot, especially here in South Florida.
