A top plastic surgeon aims to create a UK-based specialist team to help the victims of the Syrian Civil War after returning from a week treating children injured in the conflict. It was the second time Ali Juma, who is based at Spire Murrayfield Hospital at Heswall has been to the war-torn region to carry out humanitarian work. He was part of a team put together by the USbased LEAP Global Missions, which saw over 90 patients and performed surgery on 37 victims of blast, shrapnel, and severe burns at the Safad Hospital in Tripoli in Lebanon. The 54-year-old father of two was fulfilling a pledge he made 12 months ago after his first mercy relief mission to the region when he and a LEAP team spent eight days in Jordan. On his return this time he said: “It was certainly a busy week and we were able to see between 90 and 100 patients, the majority of whom were children. We operated on 37. The conditions in the hospital this time were more difficult than in Jordan with shortages of staff and local supplies; however, it was fortunate that we had brought dressings, equipment and other materials donated by Spire Murrayfield, and LEAP Global Missions.” Now he would also like to put together a UK-based team and make further visits to the Middle East and set up continuing care for the patients he has treated. He will also continue to work with LEAP Global Missions to offer his services and he added: “Collaboration will always be of greater benefit to all mankind and for the greater good.” Julie Watkinson, Hospital Director at Spire Murrayfield, said: “We were again happy to help Ali with the mission to the Lebanon where he and his team carried out more fantastic work among the victims of this terrible conflict. It would be wonderful if the work he has been involved in so far could continue and that it would inspire a Britishbased response team and we would be happy to continue our support for that.” Mr Juma, who specialises in face, breast and body contouring surgery at Spire Murrayfield, has over 24 years’ experience in plastic surgery and in the management of trauma and reconstruction. 6 wirrallife.com

During the February half term, many children across Wirral will be spending more time in the kitchen. But whether they’re lending a hand or simply seeking a snack, it’s important to make sure that they know the hazards of a hot hob. So as part of the Fire Kills campaign, Merseyside Fire & Rescue Service is encouraging parents and carers to make any kitchen activities a chance for kids to learn about cooking safely. Gary Oakford, Group Manager for Merseyside Fire & Rescue Service, said: “There are lots of creative ways to teach kids about cooking fire safety. And it’s absolutely vital that they know what to do if the worst should happen. So alongside the melting, mixing and making, why not take the chance to pass on your fire safety knowhow? Test your smoke alarms as part of the activity. And remember, never leave a child alone with a hot hob - keep them safe by moving matches and saucepan handles out of their reach.” The kids don’t have to be in the kitchen to change the way you work – distraction while cooking is a main cause of fire call-outs right across the country. Gary added: “Half of all accidental fires in the home start in the kitchen - often because of distractions like phone calls or family. So whatever happens elsewhere in your home, always make sure you have one eye on the hob or oven.” The Fire Kills campaign has released top tips for staying safe in the kitchen. MORE THAN 100 PREMIUM DRINKS TO SAMPLE AT CITY’S BRAND NEW SPIRITS FESTIVAL Some of the world’s finest spirits will be going up for the taste test at an exclusive weekend event devoted to the art of distilling. Taking place at Constellations on Friday 10th and Saturday 11th March, Liverpool’s first-ever Spirits Festival will showcase more than 100 brands including complex gins, rums, whiskies and vodka. The concept of the event being held at the Greenland Street venue, which is located in the Baltic Triangle district of the city, came as a result of a unique collaboration between some of the most knowledgeable drinks experts from Merseyside and beyond. Hosts for Spirits Festival include Tom Mills, founder of acclaimed independent bottler Malt of The Earth Whisky Co; Paul Murphy, of Fenwick Street’s highly regarded Whisky Business shop; and Paul Seiffert, who is the brains behind the beloved Liverpool Craft Beer Expo and the Baltic Triangle’s go-to specialist craft beer bar, Black Lodge. 
Between them, they’ll be presenting a two-day insight into the world of distilled spirits and offering samples of everything from the finer points of modern American whisky to the berry infused botanicals of British gins. The Spirits Festival also includes masterclasses from drinks experts, cocktail workshops and exclusive previews of the new Liverpool city distillery. These alpacas are certainly getting in the mood for Valentine’s Day at Wirral’s Church Farm.

Orb Events is delighted to announce a brand-new festival for Spring 2017 – the New Brighton Seaside Festival!

Farmers at the award-winning tourist attraction captured the pair apparently puckering up for a quick kiss. Farmer Steve Ledsham, who has owned the family-run attraction in Thurstaston for the past 24 years, said: “They are pretty close and you often see them cuddling up to each other in their field but on this particular day, we got lucky and seemed to catch them kissing. It certainly seemed appropriate in the run up to Valentine’s Day.” As well as meeting the smooching alpacas, young guests can also spot the farm’s other resident animals, including pygmy goats, the famous three-legged pig, meerkats, Shetland ponies and Highland cows plus many more. And if the weather takes a turn there is still plenty to enjoy from tractor rides to the indoor play area. Church Farm is open every day throughout the school holidays, from February 18-26, 10am-5pm. SGT. PEPPER’S SUITS A PERFECT FIT FOR THE BEATLES STORY The Beatles Story has unveiled its newest exhibits to mark 50 years since the era-defining Sgt. Pepper’s Lonely Hearts Club Band album was recorded. Top of the bill is a full set of Sgt. Pepper’s suits. The suits were made by Noel Howard, one of the team who designed the original suits in 1967 which adorned the cover of Sgt. Pepper’s Lonely Hearts Club Band and instantly became one of pop music’s most recognisable outfits. As the originals were kept by the individual estates of the fab four, they have never all been on show together since, making this the only authentic set of the much-imitated suits available for the public to see. Noel Howard made the replicas in 2000, using the exact measurements, materials and accessories as were used for the originals. The extremely detailed process involved sourcing materials from around the globe, delving back into the archives from the fittings and even getting special dispensation from Ottawa Police Department. Some of the files charting the process are on show alongside the suits themselves. Another major new addition to the Sgt. Pepper’s room at The Beatles Story is an alternative print of the album cover. It’s a little known fact that Sir Peter Blake shot alternative covers to the album, which were discarded in favour of the famous one. The alternative uses the familiar collage backdrop to the original, but makes some small alterations including the positions of each Beatle. This cover is widely unknown, and this print is one of only 100 given to senior EMI executives in 1987 to mark the record’s 20th anniversary.

Next to the suits will be a limited edition reproduction of the poster which inspired Being for the Benefit of Mr. Kite! The original poster was bought by John Lennon from an antiques shop, before he hung it in his music room in Weybridge. He not only took the title from the print, but also most of the lyrics to the famously surreal song. Visitors will be able to trace what is borrowed and the changes he made to the original. The items are the first in a series of major memorabilia additions planned by the landmark Liverpool attraction to mark the 50th anniversary of the album’s release, and tie in with the wider ’50 Summers of Love’ programme taking place across the city. They will be on show to the public from 1st February, to mark 50 years since the day the band started recording the title track for the album. Martin King of The Beatles Story, said: “The Sgt. Pepper’s Lonely Hearts Club Band album cover is almost as iconic as the music itself, and indeed is one of the defining images of the 1960s. At the very centre of that are the resplendent custommade suits worn by the band, which have gone on to become some of the most recognisable outfits ever worn. “These suits, which are the closest thing anyone will see to the original set, were one of the key items on our wish-list to mark this momentous anniversary and the sheer level of detail and craftsmanship is astonishing. “Then there’s the Being for the Benefit of Mr. Kite! poster and the alternative album photograph, which carry a fascinating glimpse of how this famous album came together. It’s a privilege to bring these three rare items on public display and together they make a perfect centre piece to our Sgt. Pepper’s room.” wirrallife.com 9

WIRRAL ENTREPRENUR’S HUNT FOR STAFF AFTER SEASIDE CAFÉ SUCCESS A pioneering food entrepreneur who created 50 new jobs by ploughing more than £1.5m into a seaside café has launched a recruitment drive for extra staff. Wirral-raised Phil Brown, a former schoolmate of Prince Charles, who built up the Philpotts bespoke sandwich empire after opening his first shop in Chester, which now has 22 outlets across the UK, has now launched the Sea Shanty Café in Trearddur Bay, Anglesey. Working with business partner Neil Gitton, he has created a restaurant that celebrates beaches, holidays and the village’s links with sailing and local history. The nautical-themed bistro, just a stone’s throw from the beach, stands on the spot and bears the name of an old wooden café that was once a much loved haunt of holidaymakers for decades. The new café’s ceiling is hung with historic sailing boats, while the walls are decorated with sand and shells collected from beaches around the world plus other sailing memorabilia and curiosities. So successful has the Sea Shanty become it now employs more than 50 full and part-time staff. “We have been open less than six months,” said Phil, who grew up in Neston, and began his working career as a journalist on the Birkenhead News. “Demand is growing so fast we need to be recruiting more staff at all levels, if we are going to be able to cope with Easter and the summer season. Being open for breakfast, lunch, afternoon tea and dinner seven days a week is taxing our nine superb chefs so we know that when spring arrives we will need more, if we are to maintain the level of service we now offer. These are extra roles to the seasonal staff we will be taking on for the

summer. We are delighted to have found favour with local people in particular. There’s been a real trend for groups and families to come along, because the set up of our seating area means we can easily cater for up to 145 diners and my personal pleasure is the number of characterful dogs we welcome. The ambience of the café is tangible. Children and adults alike are fascinated by the boats in the ceiling and vintage outboard motors etc and the beach-combing bags for children are a real ‘people pleaser’. Even the toilets have charm with the sound of breaking waves on the shore in the ladies and the shipping forecast in the gents.” Phil’s co-director is former chef Neil Gitton, who previously worked with Phil at Philpotts after gaining restaurant experience with pub chain Brunning and Price. Neil said: “This part of Anglesey seems to be getting increasingly popular with day trippers from Ireland and other visitors, who stop off after a ferry crossing - we regularly get Scottish and Irish notes in the day’s takings. This is the Riviera of Wales, it is a beautiful spot and has so much to offer. Talking to other local businesses, they are also seeing an increase in trade, which is good news and shows that Trearddur Bay is seen as a destination in its own right, not simply a place that tourists pass through,” he added. The Sea Shanty Café on Lon St Ffraid is open daily from 9am until late, and also has an popular Edwardian-style icecream parlour. The establishment has won rave write-ups from foodies, families and tourists on online sites such as TripAdvisor and OnionRing. Cheshire born Oli Webb, 25 is a British professional racing driver. Oli began his career in karting at the age of nine and has since gone on to win the European Le Mans, Dubai 24 hour championship and the Asian Le Mans. In an exclusive interview, Oli talks to Wirral Life about his career, dream cars and plans for 2017. You began your racing career aged 9 when you started karting, how did you get into it? I started karting as a child whilst I was away on holiday and at karting parties with friends. I then progressed up to karting at Daytona Manchester regularly before qualifying for a licence to compete on a Pro Level. I won the championship in my first year of main stream competition. It looks like your motor sport career followed the popular pattern of moving up from karting to Formula 3 (like Lewis Hamilton) but you then switched to serious endurance racing at a young age and you’ve become very successful – what made you choose this road? I loved the single seater route, it was fantastic to get spotted as a young talent and BMW helped fund my young racing career before being with Mercedes in F3, much like Lewis. But then as the F1 world changed and financial situations with sponsors became the focus it was time for me to look elsewhere into a career that was long lasting and substantial. Endurance racing seemed the key and Le Mans being the main focus.

Amazingly, so far you have won 2014 European Le Mans championship, 2015 Dubai 24 hour championship and in 2016 you were the Asian Le Mans champion, which of these victories meant the most to you? For me 2014 was my best year. Winning my first ever year in endurance racing for the French brand Renault Alpine. It was my first time I had ever been there and to stand on the podium at Le Mans was truly amazing, I’ll never forget it and I can’t wait to get back up there. Apart from motor sport, you are a keen athlete and keep yourself ultra fit - What is your fitness regime and how disciplined are you? I love to keep fit. Whether it be specifically for racing where I do gym training for the neck and upper body exercises, all the way through to triathlons that I try to compete in regularly. I actually did my first ever triathlon having never ridden a proper clip in bike, that was interesting! I train every day for 2 hours with one rest day most weeks. With the amount of travel I have to do, it’s very hard to keep up the routine but we have trainers at the tracks and a lot of help along the way! wirrallife.com 13


I understand that you are also a budding film maker – what kind of films do you make? Is this an area you’d like to move into after your racing days? Yes I enjoying making the odd YouTube or Instagram short film of my travels as well as some car related content. This is mainly for fun and also to make the most of the fact that I’m so lucky to do all this cool stuff and I feel I should film it and share it with family, friends and of course fans. What is your favourite film? That’s a hard one as I have so many but I love ‘The Shawshank Redemption.’ Who is your hero? I think Zinardi the old F1 driver who lost both of his legs in an horrific F1 racing accident. He is now winning many Olympic gold medals as a paralympian and I find that very inspiring. Have you been lucky enough to meet any racing legends? I have indeed - I guess I’m now at a point in my career that I meet most of the legends at awards nights or TV work/Track functions that we do. However, the one legend that I have never met but would have loved to is Ayrton Senna!

You’ve been to many different places around the world – which is your favourite and why? If it had to be a city centre then it would be Tokyo in Japan. It’s beautiful, clean, the people are polite and I’ve although I’ve been there a number of times, I still feel like I’ve only scratched the surface. Where do you like to holiday? Do you unplug from work or do you always keep your tech with you? Unfortunately I can never fully unplug. However, I like to go to new places all the time, adventure and document it, meet new people and explore places that I’ve not seen! You are the test driver for Liverpool’s Supercar company BAC Mono, so when you are in town - what are your favourite places to eat? I love my work at BAC Mono and it’s great to be in the area. I love eating at Neighbourhood on Castle Street in Liverpool - the vibe and food is right up my street. You have a very busy schedule for 2017, but apart from “work” what other thing would you like to achieve this year?

What are your 3 dream cars?

I’d love to extend my stunt driving career - I’ve worked on two films so far and I would like to do more in 2017. I’d also like to further develop my personal company, Supercar Days, a specialised track day company. It’s all great fun and car related stuff away from my main focus of the motorsport calendar!

LEGEND JOHN BARNES INSPIRES FIRST WIRRAL YOUTH ZONE MEMBERS Saturday 21st January saw Youth Zone Ambassador and football legend John Barnes help inspire the first Junior and Senior young members to sign up to the soon to be built Wirral Youth Zone. The Hive Youth Zone, opening on April 8th 2017, is well into its 100-day countdown to the big day and the team in Wirral held a membership launch at Birkenhead Fire Station next to the Youth Zone on Bright Street as interior work draws to completion on the new £6m centre. Joining ambassador John Barnes was the first Junior member was 8 year old Eva Easdown and Senior member Natasha Atkins, aged 16, who paid their £5 annual membership to sign up and become the first ever Youth Zone members. The youngsters will now only have to pay 50p per visit meaning they can access up to 20 activities from sports and arts to dance drama and employability workshops once The Hive opens its doors.

The 77nd day to opening truly marked a day of ‘firsts’. As well as John and the first members, the first of 19 Founder Patron’s, URENCO Ltd, were joined by the first volunteers, mother and daughter duo Marie Brunt and Annielee Kelly from Birkenhead, the first batch of staff members and Youth Zone Chairman John Syvret CBE. Let’s not forget the ‘first class’ Young People’s Development Group too, who have been involved in the process from day one, forming the brand name ‘The Hive’, recruiting the staff and having their say on the design of the building! The Hive, Wirral Youth Zone’s Chief Executive Stuart Barnes said: “It was fantastic to have both John Barnes and our Chair John Syrvet attend Saturday’s membership launch. It was a landmark day in what will be a long and fruitful history of Wirral Youth Zone. I would urge all young people in Wirral to sign up online now by visiting www. thehiveyouthzone.org/new-member and come and get involved in the host of activities on offer come April 8th.”


Wirral Youth Zone will offer a multitude of activities and services will help raise the aspirations, improve the health and well-being and enhance the prospects of an anticipated membership of over 3,000 young people across Wirral. To make this a reality, The Hive needs to recruit 100 dedicated members of the community to make sure they deliver the best service for Wirral’s young people. If you have a passion for working with young people or simply want to give a little back by helping out in an admin or kitchen role for example then The Hive want to hear from you - contact Volunteer and Training Manager Sam Curley on: sam.curley@ thehiveyouthzone.org. The Hive will cost £1million per year to run and this will be through a combination of public sector and private sector funding. 50% of the running costs has virtually been secured through the local business community but they still need more. to the lives of young people and the future of a prospering region. Their support and endorsement of the project will lead the way to encourage others to invest in the future of the borough’s young people. SWASIE TURNER MBE Wirral resident and former policeman Swasie Turner is well-known throughout Merseyside for his many and varied fund-raising exploits. Swasie will be joining Wirral Life as a regular feature writer in the next issue. Here he shares with us his story and his passion to raise awareness of disability. Since the traumatic loss of my police career due to a gratuitous act of violence whilst out patrolling the streets of Merseyside, my injuries were such that it was deemed necessary to amputate my right leg high above the knee. My ongoing surgery also included three separate knee replacements. Prostheses proved unsuccessful and as a consequence I was forced to adopt a new role as a ‘wheelchair pilot’! I found this to be extremely difficult after an obsessive lifetime in the gym pumping iron, martial arts and boxing. Like all able bodied people I took life for granted until my most rude awakening to my new life pushing a standard NHS issue, 47lb wheelchair with its small front castors. As well as high kerbs, grass and muddy terrain to negotiate, I even found negotiating thick carpets to be an ordeal. However, worse was to come when my beloved wife succumbed to the dreaded disease, cancer. Totally devastated by the death of my wife and lifelong sweetheart 20 wirrallife.com

I became totally obsessed with raising funds to help research into the disease and the hopeful, eventual eradication of such a ruthless and indiscriminate killer. From the start, I intended each of my (eccentric) fundraising efforts would be a first. As a consequence I have now pushed my ordinary chair 38,391 miles worldwide. As well as ‘my’ cancer charity, I have also adopted other charities among my physically demanding endeavours. As well as raising funds by pushing my ‘tank’ all over the world for various worthy causes, I also give illustrated addresses to numerous organisations, clubs, women’s guilds, Rotary, Round Table, Lions, Masonic and being blessed with having written a number of books, I have included these to also assist my charitable causes. I am also totally devoted to raising ‘Disability Awareness’ to all and I am extremely keen to assist the bettering of facilities for the disabled fraternity. I look forward to writing for Wirral Life and furnishing readers with what is going on and who is doing what so that I will (hopefully) generate interest in my future, sometimes possibly controversial scriptures? Lastly, and most importantly, I would like to thank profusely, all those who support my ongoing efforts by their continual generous benevolence. Without your benevolence and kind assistance I could not maintain the success I am blessed with constantly achieving.

AUCHENTOSHAN THREE WOOD

I am stood behind the bar and somebody asks me to recommend a ‘night cap’, something that is smooth, a little fruity, not peaty and nice and rich. As I look along the top shelf, the ‘Auchentoshan Three Wood’ jumps out. I have talked about it before, but I am fascinated by the way a whisky is influenced by the barrels its matured in, so when I came across this whisky a few years ago it immediately caught my eye. There is a saying that ‘good things come in three’s’ from fairytales to Hollywood blockbusters, the rule of three principle suggests things that come in three’s are inherently more humorous, satisfying and effective than any other number of things, so a whisky that is distilled three times and then matured in three different barrels has to be a good thing right ?

to be classed as a bourbon the distillers can only use first filled barrels (along with many other rules) so most bourbon barrels end up being shipped to Scotland to house whisky. Auchentoshan (pronounced “och’n’tosh’n”) is one of only six Lowland Distillery’s. Founded in the very early 1800’s the distillery lies at the foot of the Kilpatrick Hills right outside the heart Glasgow. It roughly translates to “the field of the corner.” Described as perhaps more tarmac than tartan due to its urban location, surrounded by houses, which is probably not what you would expect from a traditional Scottish Distillery.

A few people have asked me recently ‘does the barrel its aged in really effect the whisky or is it just a marketing tool?’ Well all whisky is made in a similar way, it starts life out as a beer - at its purest whisky is just beer distilled. Whisky is made from three natural raw materials; malted barley, water and yeast, the only thing missing from the beer ingredients list is hops.

This is not the only thing that makes them different and unique; they are the only Scottish distillery who insist every-drop is triple distilled, which means less impurities and a higher alcohol content when distillation is finished. This award-winning Auchentoshan Three Wood is then matured in, as I mentioned, three different barrels. First is the American Bourbon barrels where it matures for 12 years before it is transferred to Spanish Oloroso Sherry casks for a year. That is enough to make a great tasting scotch but they don’t stop there. After the Oloroso it is finished for a year in Pedro Ximenez Sherry casks.

After distillation has occurred every whisky starts off as a clear spirit perhaps like vodka, and whilst it is not against the rules to add caramel colouring, most whiskies get their colour and flavours from the barrels they are aged in, so the quality of the casks is vitally important.

The results are a whisky which is rich, slightly sweet with toffee and sherry flavours, a bit like maple syrup on pancakes with a touch of cinnamon. Rich fruits, chocolate and toasted hazelnuts are prominent and it has a little bit of a rum-like quality.

Scotch whisky is the most heavily regulated drink in the world so trying to find ‘new ways’ is very hard, so more and more distilleries are looking for new and excited barrels to use with different flavour profiles, from sherry to port to even virgin oak. Most whisky will start life maturing in bourbon casks, mainly because for a bourbon

The sound of a champagne cork popping is one of the finer sounds in life and at this time of the year, there’s no better excuse than to celebrate with the fine selection here at Hillbark Hotel. From the most expensive in Merseyside to one of the oldest, there’s certainly a story behind them all. One special bottle in particular, a 1988 Krug Clos du Mesnil Champagne from France is priced at over £2,000… so you know you’re in for a special night! Everything about the wine is sensational from start to finish. Bright citrus emerges from the intense, chiseled Champagne and the texture is fantastically rich with the finest of bubbles. This is surprisingly, quite a popular wine, especially by Champagne and Wine connoisseurs. A few years ago, our past Sommelier was asked some advice onto which bottle of Champagne they should move onto next. They were drinking a 1990 Don Ruinart Champagne, priced at £240 but wanted something very special. He recommended the 1988 bottle and they went for it - an upsell of over £2,000. Its needless to say, but they thoroughly enjoyed their Champagne! Hillbark holds another pretty special wine which has a fantastic history. Heidsieck & Co Dry Monopole, 1941

bottle of Champagne priced at £400 and was developed during the war and actually hidden from the Nazis. Soldiers during this time in WWII sent home items such as these bottle as souvenirs to family back home. The Hillbark wine cellar has a number of these bottles however, due to the age, a lot of the labels aren't in very good condition. To drink this particular champagne, I would recommend getting together 6 or so friends as you will need to drink this pretty quickly, preferably within 5 mins before the oxidation process ruins the wine. The first minute the bottle is opened, the champagne will be perfect but every minute after that it will become worse. Here’s some other recommendations for Champagne’s that won’t break the bank, here’s a couple of our favourites for you to fall head over heels in love with! THE WINE CONNOISSEUR

Malbec Ad Alta... Nobody drinks Shiraz anymore. At least not in our restaurant, anyway. With the greatest sympathy to our Australian friends, Malbec and meat have become almost synonymous and the quality of the best Malbecs now is breathtaking. The rise in percentage sales in recent years of Argentina’s flagship wine is in triple figures; if you find a restaurateur who has not put it on their wine list, please give them a good shake to make sure they have not been asleep for the last five years. Less well known is that, as with the world’s most commonly planted grapes Merlot and Cabernet Sauvignon, Malbec is originally from France and grew widely across Bordeaux and the south west. In our last article we mentioned the Bordeaux Classification, which categorised all of the best Chateaux from first growth (e.g. Lafite etc) down to fifth. Back in 1855 when this was put together, Malbec was a key constituent of the blend. A few years afterwards, disease wiped out pretty much all of the vineyards, and when they came to replant, Malbec did not really work. And so, it has nearly disappeared from the region of its birth, un-growable, so the Bordelais moved on. With some fair success, it must be said. The only place left making Malbec is Cahors. Before this catastrophe had hit, thankfully for us, some samples of the vine had been taken from France via Chile to Argentina, where they found their new spiritual home. This was over a hundred and fifty years ago, so why is the grape only being discovered internationally now, when Argentina produces so much of it? The answer is ridiculously simple. They drank it all. Yes, all of it. But now less so – in 2000 they drank on average 47 litres of wine per year, per person, compared to 20 litres in the UK. By 2012 Argentina dropped to 32 litres as younger people turn to beer and spirits (or perhaps just sobriety). So this has driven a change from quantity to quality, and we are loving it. 28 wirrallife.com

The region of Mendoza has a remarkable terroir. Incredible sunlight most days of the year, very dry, but high altitude to moderate the temperature; this is crucial to retain freshness. It is a harsh climate but the intensity of the sun can ripen grapes and soften the tannins in a way that just doesn’t happen in France, even in good vintages. You would not want to sunbathe there, that’s for sure. In France the wines can take many years of cellaring to be approachable, but Argentina you simply don’t need to wait as long to enjoy them, though the best wines can still age and improve for many years. Catena have been a pioneer for Argentina, first coming to the world’s attention for their Cabernet Sauvignon blend, strangely enough. Their Catena ‘Alta’ was the first premium wine, named after the height of the vineyards. Then in 1997 they produced ‘Nicolas’ - blind tastings were held in 2000 where they beat or matched Latour, Opus One and Solaia. This fame has allowed them to focus on become their country’s most famous premium exporter, planting Malbec at different altitudes in different sub-regions of Mendoza. This experimentation has led to the demarcation of preferred regions to achieve different flavours, and the creation of a French style “appellation” system so you know what to expect once you’ve seen the label. And what you come to expect is pretty good - Appellation Vista Flores is a stunning Malbec, with hints of violet, smoky oak and dark cherry. It is easily our most popular wine for very good reason. Last year, your very fortunate writer was also lucky enough to be able to try an extremely rare 2004 vintage of the Catena Alta Malbec. All I can say is wow. Our mission to collect old vintages makes any trip to our temperature controlled wine room a real treat. It is to our good fortune that Argentina and southern Brazil are as famous for meat (and the barbequing thereof) as they are for wine, because it gives us a truly amazing combination. The Aussies can throw as many shrimps on the ‘barbie’ as they like, it leaves more steak for us.

Britain’s undisputed favourite meat… The Great British Chicken. There are many hundreds of varieties of hens; the light Sussex in England; the Faverolles and Bresse in France; the White Cornish and the White Rock in America; and the way these breeds have been developed is a closely guarded secret. Birds are rated by their performance – that is how many days to achieve a certain weight. Chickens are such a versatile food, with virtually no waste, especially if you use the carcase for preparing delicious chicken stock for soups, broths and sauces. Chickens are available throughout the year, fresh or frozen and are usually sold oven ready. Supermarkets usually sell packaged birds by oven ready weight, but a fresh bird bought from a butcher is preferable as it can be prepared in the way you want to cook it. Generally a larger bird gives better value because the ratio of meat to bone is higher. As well as being 30 wirrallife.com

available whole, birds can be bought in individual portions – legs, wings, thighs, drumsticks, halves and quarters. Ask your butcher – we are always happy to portion the bird however you may wish. Chicken is a delicate meat and needs considerate cooking since it has a rapid rate of shrinkage in high heat – But much depends on the age of the bird: tender, young poultry can be barbequed, fried, grilled or roasted; old birds need long, slow braising or stewing. Traditional dishes such as the Scottish ‘cock-a-leekie’ and the French ‘coq au vin’ are unlikely to have been prepared with cockerels but with capons or boiling fowl. The age and the type of chicken therefore determine the method of cookery and the recipe. To roast a chicken – brush with oil or fat, season with salt and white pepper – Birds that are roasted in foil or in a covered chicken pot roaster are in fact cooked by steam and not by radiant heat. They will need a final 20 -30 minutes browning, uncovered.


GRILLED CHICKEN WITH CHORIZO & CHICKPEA STEW SERVES 4

INGREDIENTS

METHOD

In a sauté pan, heat a little oil, sauté the chorizo for about 2 minutes, add the shallots, garlic, thyme and cook for a further to minutes to 2 minutes, add the tomatoes and stock. Bring to a simmer and cook for about 15 minutes. Meanwhile, preheat a grill pan, season the chicken brush with a little oil, when the pan is hot, grill the chicken skin side down for about 6 minutes, turn and cook for a further 3-4 minutes or until cooked. Remove and keep warm. Add the chickpeas and parsley to the stew; bring to the boil and simmer for about 3 minutes, stir and season. Pour into a warm serving bowl serve with the chicken.

Olive Oil 200g (7oz) Hot Chorizo, sliced 2 Shallots, peeled and finely diced 4 Garlic peeled and sliced 2 teaspoons of Thyme Leaves 1 Tin of Chopped tomatoes 1 tablespoon of Tomato puree Chicken stock 2 Tins Chickpeas, drained and rinsed 2 Large Handfuls of finely chopped parsley 150ml (1 /4 Pint) Chicken Stock 4 Supremes of corn fed chicken skin on Sea Salt and Freshly Ground Black Pepper

As a general guide a 1–1.2kg chicken will take 1 hour and 15 minutes to cook at 200c (160c if fan assisted). To test whether the bird is cooked, pierce the thigh or the drumstick to the bone with a sharp pointed knife. If the juices run clear and free of blood, or the joints sever easily when pulled, the chicken is ready for serving.

Fresh uncooked poultry should be used within two to three days of purchasing provided it has been kept in a refrigerator.

Once cooked it should be kept in the refrigerator, loosely wrapped and used within a few days. The meat also freezes well when cooked. When thawing frozen poultry it is best to do it gradually in the refrigerator, allowing about 15 hours for a 1.3kg chicken. It is not advisable to defrost in water. Chickens can often be sold under different names, normally according to their age and weight.

Poussins – Baby chickens 4-6 weeks old, can weigh up to 900g, but most usual are around 500g. Ideal for individual portion roast chicken or split (spatchcock) for barbequing. Broilers – Small birds 1.1 – 1.6kg – these are used mostly for frying or grilling (especially by high street chicken chain restaurants). Roasting Chickens – usually young cockerels or hens weighing from 1.7 – 2.3kg ideal for roasting, portioning for grilling or frying. Boiling Fowl – Older, tougher birds weighing up to 3.2kgs, usually cooked slowly in stews and casseroles.

Milan restaurant situated on Banks Road, West Kirby is an extremely popular contemporary restaurant with a sophisticated feel, original works of art and a chilled and laid back jazz sound track playing subtly in the background. Warmly greeted by Martyn - the restaurant owner and hands on manager, we were shown to our window table overlooking the bustling West Kirby high street and presented with the carefully selected menu and wine list. We asked Martyn to recommend a bottle of wine so he suggested his favourite bottle of white - the beautiful Cloudy Bay. Priced at £33 per bottle this Sauvignon Blanc is a pale straw green in colour with an exotic fusion of fresh ginger. It has a mouthwatering, juicy yet refreshing crispiness... excellent choice. To start, we decided to sample the Crispy Belly Pork, Chestnut Mushroom & Butterbean Tagliatelle and Pan Fried King Prawns & Chorizo. The Crispy Belly Pork was pretty and delicate – cooked in a crunchy batter and served with a plum and apple relish. It was delicious and incredibly tender. The Tagliatelle was stunningly presented with fabulous aromas – notably garlic. The butterbeans worked really well with the Chestnut mushrooms and rich tomato flavours. The King Prawns were spectacular - roasted with garlic and tomato, the intense flavours worked their magic with chorizo being the perfect added ingredient to this excellent starter. For mains, we opted for Calves Liver, Grilled Salmon Supreme and the Honey Glazed Belly Pork. All dishes were of a generous portion size with excellent presentation. The Calves Liver was cooked perfectly pink - tender and served in a rich and delicious Marsala sauce. The Salmon was fresh and juicy with a buttery texture, served with a mixed salad of tomato,

cucumber, onion and a balsamic glaze – this dish works great throughout all seasons. Finally, the Belly Pork… braised slowly for over 4 hours in cider and then pan fried in a delicious lemonade batter... one word – outstanding! We paired our meals with a fabulous Malbec ‘Lunta’. Reasonably priced at £29 per bottle – this is an intense and very fruity wine with notes of raspberries, plums, black cherries and cassis. After a short rest… we decided to order desserts. We opted for the Classic Tiramisu, Homemade Chocolate Brownie and Lemon Cheesecake. The Tiramisu was light with rich flavours of Marsala and a subtle hint of coffee. The homemade chocolate brownie was sticky… gooey… chocolatey… orgasmic! Perfectly crunchy on the outside with a melt in your mouth middle… served with vanilla ice cream, this dish was fabulous. Finally, lemon cheesecake… served in an individual demi jar – this dessert is made to order. Smooth and delicious with clean citrus flavours and accompanied by a wonderfully crunchy base... top marks to Milan! Our entire dining experience was excellent. Martyn and Head Chef, Rob really are great guys and totally dedicated to providing an excellent dining experience for all guests – their enthusiasm and love of Milan shines through, which is brilliant. The restaurant is reasonably priced at £16 for a starter and main course and £20 on Friday and Saturdays. We will definitely be returning – this is a ‘Wirral Life’ gem! THE GASTRO GRAZER by Carl Housbey

I realise by the time you read this, we will be well into 2017, but I had such a fabulous time at New Year that I just had to share it with you all. Instead of the usual hassle of trying to find a taxi at daft o’clock in the morning, this year I decided to book a three-day break at Palé Hall, near Bala in North Wales. Palé Hall is a Victorian mansion that was built in the early 1870’s for a wealthy industrialist called Henry Robertson. Over the years the hall has changed hands many times, before eventually being purchased in 2015 by current owners Alan and Angela Harper who have lavished a small fortune on the place to turn it into a grand country house hotel with restaurant, which opened in September 2016. When you first arrive and crunch down the gravel driveway you can’t help but imagine you’re in an episode of a period drama such as Downton Abbey. The feeling never seems to go away either, especially as Alan and Angela have made a deliberate effort to make Palé feel more like a home than a hotel, and I must say it works amazingly well. New Year’s Eve began with a Champagne reception before we sat down to a delicious dinner expertly prepared by 2 Michelin Star Chef Michael Caines and his protégé Gareth Stevenson. The dress code for the evening was “Black Tie” which gave all the ladies the chance to dress to impress, and I’m sure I wasn’t the only man in the room who secretly thought he was James Bond. Once dinner was finished it was time to break out your best moves and throw some shapes on the dance floor accompanied 34 wirrallife.com

by a nine piece band called Dodgey Practice who played a setlist that included everyone’s favourites. In no time at all the clock struck midnight and we all stood outside wishing each other a very Happy New Year, drinking yet more Champagne whilst watching the most fantastic fireworks display that was the envy of the whole of North Wales. You can tell Alan and Angela are used to throwing amazing house parties, as not only had they organised bacon butties after the fireworks, but they made sure a hearty breakfast was served on New Years Day until 1:00pm to allow everyone the chance of a decent lie in. New Years Day can sometimes be an anticlimax, but not at Palé, as we spent the afternoon in the gardens watching a display of some magnificent birds of prey, which gave us the opportunity to get some fresh air, and recharge our batteries before another superb dinner hosted by Michael Caines himself who not only cooked, but also introduced each course in the dining room whilst providing some fascinating and amusing anecdotes. THE HAZELWELL OPENED IT’S DOORS AT CHRISTMAS A care home in the Wirral dished up free Christmas dinners to elderly residents in the town in an effort to tackle what can be a lonely time of a year.

The Hazelwell care home manager Liza Millington said: “Christmas can be a very lonely time for lots of people and many may have ended up spending it alone.

The Hazelwell, a new ‘all inclusive’, residential, nursing, palliative and respite care home in Heswall, organised the three-course charitable lunch followed by an afternoon of entertainment for those who may have ended up spending Christmas Day alone last year.

“Here at The Hazelwell, we wanted to do something for the community in the lead up to Christmas which would give elderly pensioners, who have no family around them, some companionship and festive cheer. It also gave them the chance to see what life at The Hazelwell is like.

Guests enjoyed a traditional Christmas dinner with all the trimmings and a glass of bubbly all prepared by head chef Steve Devenport. The Hazelwell is a £5.5million-pound development built on the old site of the Cleaver Hospital and opened last summer. PRETTY IN PINK The Au Natural look isn’t the only trend that has been pulled from the runways, there are also the brilliant and bright runway colours devised to grab attention. Pink emerges as the key colour of the season and is seen across eyes, lips and cheeks for an all over pinky glow. One of my favourite products to achieve this look is the ‘Too Faced Sweet Peach Eyeshadow Pallet’ where the eyes are shaded with varying intensities of pink for a twist on the smokey eye. GEOMETRIC EYES Eyes are also brought to life in bold lashings of purple, aqua, green and blue, applied liberally in geometric blocks. I was lucky enough to be invited to the launch of MAC cosmetics new Spring Summer collection with demo’s from MAC Senior artist Rebecca Butterworth. Characterful, bold and colourful eyes were paired with nude lips for a statement look, while the eyes were dominated by tones of blue, green and purple. I loved the purple with iridescent pigment which was applied heavily to the entire lid, up to the brow. On the lips, brown based nudes were applied in a matte formula while skin was also matte, with cheeks gently contoured. Here are my favourite products from the launch:

BREATH IS MEDICINE BY JOEL JELEN OF RESET BREATHING

In 2016 I was given an opportunity by Wirral Life magazine to begin highlighting the power of the breath and it’s role in improving health and creating wellness. Hopefully, some of you will have felt the benefits and now appreciate how nature and the breath used correctly, really is pharmacy-free medicine. For the remainder of you and the magazine’s flourishing new audience, whether you were born with a condition that affects your breathing or you subsequently developed one over time, have you thought about a resolution for the remainder of this year to breathe better? Irrespective of you acknowledging or not, how your breathing affects your mood, your health and everyday life, how about treating yourself to some more calm, relaxation and energy in 2017 because that’s exactly what the breathing techniques that Reset Breathing teach will give you. We work with companies and organisations as well as offering individual breathing re-training. In our workshops, we regularly cite how practice of these techniques known as Buteyko, are a really powerful tool in combatting everyday stress in the workplace as well as the home. When we’re feeling stuck or under pressure to make an important decision quickly, it’s perfectly natural to react from a place of fear or to become too easily overwhelmed. Setting intentions and breathing consciously for a few minutes each day can help us break those habits of the mind that hold us back. Just to emphasise, it is literally a few minutes each day.

For example, you may have received an email that really upset you and you were about to reply with a harsh response. Everyone knows the phrase ‘and breathe’ but we take advice that a little step further. Try taking yourself off for a twenty minute breather as soon as possible before replying to an email like that. Stay with the emotion that’s in your body, feel it and breathe through it, very gently and silently through the nose and tummy, not analysing the situation but just staying present with your breath and feeling that emotion. Enjoy the calmness and the different perspective that appears. It’s highly likely you’ll want to step away from the drama and calmly reply asking not to be forced into making a choice or decision. The mind is like water. Sometimes it’s still and calm like a beautiful lake. Throw in a pebble (a thought) and we create a little ripple. At other times, it can be a murky, stormy, rough sea. When it settles, it becomes clear again. As Bruce Lee once said: “Be like water making its way through the cracks... do not be assertive but adjust to the object and you shall find a way around or through it. Union House has undergone a substantial makeover with Union 22, an understated luxury menswear boutique opening. HOTTEST DESTINATIONS OF 2017 Thomson Holidays reveals its travel trend predictions for 2017

With 2016 having drawn to a close, we’re now dreaming of our holidays we will take this year. Leading holiday company Thomson shares with us its predictions for the latest travel trends Brits will be adopting in 2017. Following a somewhat unpredictable year, holidaymakers are looking to make the most of their trips, packing more into a typical week-long break whilst looking for ways to make their money go further. Thomson is predicting that holidaymakers in 2017 will be looking to experience more during their annual holiday, resulting in the rise of the ‘microadventurer’. With a growing emphasis on experiences and people now sharing pictures and memories more often than buying souvenirs, microadventurers are increasingly seeking a trip that lets them embrace the sense of adventure; visiting more than one destination and trying something new. To meet this demand for microadventures, Thomson is launching multi-centre holidays for 2017 via its website using market leading technology with six exotic, longhaul destinations currently on sale – Costa Rica, Cuba, Thailand, Sri Lanka, Goa and Vietnam. Thomson expects big demand for US city breaks with more than half of its city break customers expected to book New York, Las Vegas and Miami. Closer to home, short and mid-haul beach destinations such as the Balearics, mainland Greece and the islands of Corfu and Rhodes will continue to remain firm favourites with Brits, however far flung, long-haul hotspots are again expected to top the wish list in 2017. With more than three-quarters of people (77%) happy to travel more than nine hours to find their perfect break, many more are expected to book exotic holidays in 2017 with Vietnam,

Mark Hall, Director of Product at TUI UK & Ireland, said; “2017 promises to be another exciting year for travel. We’ve seen strong demand for our favourite destinations like Spain and Greece but this year we’ve also seen a big trend for ‘microadventurers’ looking for holidays that offer more than just a week on the beach. Our multicentre and city breaks programmes are catering for this demand and we’re predicting that Brits will be heading to more exotic and relatively undiscovered destinations such as Vietnam and Cayo Santa Maria.” ‘Hot spot’ predictions for 2017 Vietnam – The stunning beach island of Phu Quoc, off the coast of Vietnam. Phu Quoc is Vietnam’s largest island and is fringed with white-sand beaches ideal for relaxing, and features dense, tropical jungle and stunning reefs, perfect for intrepid explorers. Cayo Santa Maria – Often referred to as Cuba’s best kept secret, Cayo Santa Maria is a truly secluded beach paradise. Just 1.2 miles wide and 10 miles long, the island’s main attraction is its eight mile stretch of white sandy beach. Connected by a 30 mile causeway from

mainland Cuba and next to neighbouring resorts of Cayo Ensenachos and Cayo Las Brujas, the hidden gem is located in the Bahía de Buena Vista. New York – Possibly one of the most famous cities in the world, New York is set to be back at the top of bucket lists across the UK next year. With skyscraping sights, plenty of museums and fashion houses galore, holidays to New York will keep customers wide-eyed from dawn to dusk. Singapore – Singapore is one of only five city-states in the world, which means it’s both a city and a country in one. Residents call it the Lion City and this powerful creature symbolises it in many ways. Singapore is an important business hub, with an impressive financial and economic status and is a melting pot of Chinese, Malay and Indian culture. Sardinia – The island of Sardinia in the Mediterranean Sea isn’t short of beautiful weather boasting temperatures of around 30 degrees in July and August. The Light Cinema New Brighton was illuminated on Saturday 21st January by the tri-4-life SPITFIREHEART Lesotho 2016 event celebrations. Over 200 guests of tri-4-life were joined by the Lord Mayor of Liverpool to watch the ‘memories of Lesotho’ Film. Produced and edited by event director Liam Hanlon. Liam presented a colourful overview of the three projects that made up the event and congratulated the individuals and organisations that helped in it’s success. Cheques were also presented to the charities supported by the event. The film showed the raw intrepid endeavours of the team that transported the enthralled audience to the extreme mountain environment of Lesotho, The Kingdom in the Sky. The team took part in the Lesotho Sky Mountain Bike Challenges. A six day stage race over 3600km with 10000 mtrs of climbing. A high altitude, cold water SWIM in the Katsi Dam before trekking to the summit of the Sani Pass.

There is a lot of misconception regarding the fundamentals of the golf swing. When I ask my pupils the question, the common answers are grip, stance, posture, alignment etc. These are very important, however, fall under ‘preferences’ or ‘variables’ rather than fundamentals. Take two Ryder cup captains and their grips for example. Jose Maria Olazabal played with a notoriously weak grip whilst Paul Azinger had one of the strongest ever seen, both won Major championships. So what are the key fundamentals of the long game? 1. Control the low point of the swing arc 2. Hit the ball far enough 3. Know your shape. Number one is the number one fundamental, and the main reason why we have a handicap system. Delivering the club back to the same point relative to the ground consistently is not easy. Here’s a simple drill to help you control the low point. On the practice ground get some white paint/chalk and draw yourself a straight line. The first Cars and Coffee Liverpool meeting for 2017 took place in January with our hardcore motorheads making a grand entrance, including Oliver Webb in his muscle powered ‘Eleanor’ Shelby Mustang GT500 fastback and the extraordinary BAC MONO single seater factory supercar built nearby in Speke-Liverpool. The charity this month was Tom Harrison House (Honor, Hope & Healing) which is also the Liverpool Lord Mayor, Roz Gladden’s chosen charity. Tom Harrison House is a specialist facility providing addiction treatment exclusively to military veterans, reservists, emergency personnel, and their families. Thank you to all of our motor community for donating at the meeting. The day brought a vast array of Supercars, classics, retro classic cars and bikes as expected, even dog walkers and cyclists came along! Amongst the crowd shone two beautiful MK1 Ford Escorts - an Olympic Blue Mexico owned by Les Durrant and a Sebring Red RS2000 owned by his best friend Mac. The bright colours of the cars attracted everyone’s interest, making them a talking point with young and old. Les’s car is his daily ride covering 12,000 to 15,000 miles per year, an example of a true hardcore all-year round motorist who is not phased by the salted, icy morning roads. A 1600cc crossflow engine gives it an amazing 93 bhp, not up to some of our Cars and Coffee visitors power but without a doubt, two of the most outstanding visually. Les said: ‘The car is used to help a charity which is close to our heart, Parkinson UK - a disease from which I suffer. A trip around Europe involved visiting 14 countries in 14 days getting down as far as Croatia, covering 4,000 miles and raising around £15,000.” The monthly meetings bring the unexpected and random vehicles to our motoring audience. This quirky, rustic, tin can looked weird but wonderful humming down the road coming into the meeting, a 1963 3-wheeler - fundamentally an Italian Lambretta scooter 175 cc 2 stroke known as an Innocenti Lambro. They were generally used for delivery around the narrow streets and villages of Italy. We love the patina with the ‘Lambretta Servizio’ recovery truck livery. The Lambro is a river of Lombardy, northern Italy and a left tributary of the Po. The Lambro ran close to the Innocenti factory site and provided the basis for both the Lambretta name and the three-wheeler’s name. The term ‘Lambro’ is today used to refer to Lambretta’s entire range of 3 wheeler vehicles although the name Lambro was actually only used from 1963. Here at the home of Cars and Coffee Liverpool, we have access to all local motoring knowledge and legends. We are still persuading and encouraging many motorists with wonderful gems, timewarp vehicles and collections to come along to the meeting to educate and exhibit the range of wonderful mechanical creatures all great and small to our young visitors. We believe it’s a place to inspire the young to work hard and dream to own these toys one day themselves. Introducing Mono, a lightweight, ultra high performance, road legal supercar designed and manufactured using the latest racing technology. Aimed at drivers who seek a purist driving experience and for whom design, engineering excellence and performance are of paramount importance, Mono is an aggressive design and sets a new benchmark in the small, but elite segment of radical, lightweight sports cars. Design: The single central-seat gave our designers and project engineers the ultimate blank canvas on which to assemble their dream. The organic, enclosed front and exposed mechanical rear typifies the unique appearance of Mono. The design aesthetic is intended to combine sculpted, sleek, organic forms to provide an emotional, human connection juxtaposing the technical, mechanical elements of the car. While this vision runs throughout Mono’s appearance it was fundamental to our designers that form follow function on all aspects of the car. The necessity to gain access to the central driving position and adjustable dampers as well as providing clean airflow to the radiators and engine are just some of the factors on which Mono’s architecture is built. Technology: Above all else Mono has been designed to optimise the driving position – in the middle, central to the wheels, and the balance of the car. Mono is constructed using high-strength carbon fibre composite around a steel safety cell. The cell is designed to offer maximum safety featuring a FIA compliant steel rollover structure, a sophisticated side impact structure and a front carbon crashbox. 94 wirrallife.com

Powering Mono is a longitudinally mounted 2.5 litre, 305 bhp fourcylinder power plant provided by Mountune. Coupled to that engine is an F-3 spec 6-speed sequential gearbox from Hewland. Suspension is a fully-adjustable pushrod suspension with damping elements made by SACHS Racing. Fitted with 295mm ventilated discs, AP Racing brakes provide stopping power. Tyre manufacturer Kumho has used their vast experience in motorsport and road cars to develop a special rubber compound for Mono, which is designed to work with the low weight and optimized pushrod suspension. Mono’s central driving position makes the driver an integral component of the car, creating an unparalleled synergy between man and machine. With this in mind, each customer is fitted for his or her seat, pedal reach and preferred driving position. Performance:

PORSCHE 911 TURBO S

I’m going to be honest here, unlike Si – our editor, I am not a big Porsche fan – but the 911 Turbo is a amazing car. So first off - here are some stats; inside you will find a 3.8 litre twin turbo horizontally opposed engine that sits at the rear and produces 397 kW (540 hp) and a maximum torque of 710 Nm. 0 to 62 mph comes up in 3.0 seconds (with launch control) and a on a race track you will reach a max top speed of 198 mph. Now I have your full attention I will begin;

Design: The new 911 Turbo is one of the best looking in the range and it has this ability to appeal to a person’s heart as well as their heads. I said I was not a Porsche fan – but if I am honest, I can’t stop looking at it because it is such a stunning looking machine that’s extraordinary in every way. Looking down its flanks makes me go all giddy – as does looking at that rear end because it is positively one of best designed rear flanks you are ever likely to see. Yes the 911 has been around since the beginning of time – but then Porsche have an ability to take a design that let’s face it, has had many incarnations over many years - and then refine it until they end up offering you something that is simply staggering - this will of course immediately send you into a sort of daze with a lust beyond words. You’ll find an all new front section which has the addition of LED headlights and 4 point daytime running lights as standard specification on all models. Then, at the rear you will find the elegantly designed three dimensional tail lights and the powerfully shaped twin tailpipes that you tend to find nailed to the back of NASA Rocket. The interior is just as dynamic as the exterior. Sitting inside a modern Porsche is just as good as it has always been. This is a driver focused car - everything is in the right place and placed perfectly at the drivers fingertips. Nothing in here is out of place or fussy. One of the most important features for me is the next generation steering wheel which is derived from the 918 Spyder. You can actually feel those emotions associated with motorsport once you press the starter and take control. The only way I can describe the feeling is that – and this may sound completely bonkers - but it feels like the 911 has become part of your central nervous system. You instantly have this feeling of wanting to race. What other car makes you feel this way – nothing I have been in for a while anyway.

As standard the Turbo also comes with plenty of equipment, including dual-zone climate, heated windscreen washer jets, electric sports seats and a media system that features integrated sat-nav, USB, Internet functions and a whole host of things to keep you happy for hours.

Chassis: The chassis of the 911 Turbo is epic – there is no other word to

describe it. The smooth high speed manoeuvrability of the 911 is the icing on your nans sponge cake when it comes to having a lot of fun with a car that basically, has a very large engine hanging out the back. Also, being a 911 it has exceptional levels of stability and cornering agility thanks to those Porsche engineers and those large 20 inch wheels which all help in playing their part in keeping the 911 firmly planted onto the tarmac. Even with four-wheel drive, if you are planning on dialling in a generous amount of throttle, a degree of caution needs to be applied in the wet by the driver, no matter what your experience level is - because it will – make the car rotate with ease and catch you out when you are least expecting it. But, the chassis is transparent enough to make up for the loss of traction from the rear and you can feel when things are getting on the edge so that makes it a little bit more predictable - which then allows you to correct any errors you may have made in your quest for hyperspeed. Also, remember 540bhp should not be dismissed – because at times it can be a little scary – especially because of the way the 911 Turbo gets you from standstill to Defcon1.

Rear-axle steering: I am not sure I understand this fully – but here goes

anyway. Porsche says: ‘Thanks to the rear axle steering - at speeds up to 31 mph, the system steers the rear wheels in the opposite direction to that of the front wheels. This has the virtual effect of shortening the wheelbase. The turning circle is reduced, steering into corners becomes much more dynamic and parking is noticeably easier. At speeds above 49 mph, the system steers the rear wheels in the same direction as that of the front wheels. The result is a virtual extension of the wheel base and increased stability when performing high speed manoeuvres on the motorway’. I hope you all got that – so, for people who don’t understand it either, this basically means is that it is pretty much nailed to the deck at any speed. To sum up: Everything about the 911 Turbo is absolute perfection, I’m missing it terribly already. Price: Porsche 911 Turbo costs from 126,925
