Claire House helps families smile again, when life couldn’t get any tougher. Does Claire House hold a special place in your heart? Janet Abraham, Legacy Manager at the hospice, talks about the many ways people support the hospice from the very ordinary to the very extra-ordinary. Claire House Children’s Hospice means such a lot to many people. The children and families that use the hospice, our staff and volunteers, local residents who admire the work we do and people from far and wide who simply care about children. In my role as Legacy Manager at Claire House, I have the privilege of not only meeting the children, young people and their families that come to the hospice but also our amazing supporters. People that run, buy a lottery ticket, bake cakes or support us through their place of work. I love getting the opportunity to thank them for their generosity. However, when Claire House becomes a beneficiary in someone’s Will, I can never say ‘thank you’ to that person or find out why we were chosen. Yet, what is clear from such a generous gesture is that the hospice meant a great deal to that particular individual. One of these kind-hearted people was Wirral pensioner, Mr Frederick Kay. Shortly after Mr Kay from Bebington died, I was told that he had left a significant amount of money to Claire House in his Will. Mr Kay had never married or had any children of his own, but had volunteered for many years for a specialist cancer charity that supported children. Having worked with sick children who sadly, do not live to adulthood, and with Claire House providing vital care to such children on his doorstep, Mr Kay made the momentous decision to leave his worldly possessions to his local children’s hospice.

Explaining Mr Kay’s decision, close friend Christopher Hall said: “Fred was an unassuming gentleman who did lots for his community. He was a pillar of society and his decision to leave a gift in his Will to Claire House illustrates the kind and generous spirit that he will be remembered for”. Mr Hall and his wife, Carol, have since visited Claire House to see for themselves how Mr Kay’s donation helps seriously and terminally ill children live life to the full; experiencing firsthand the wonderful experiences and memories the specialist nursing team create to help families smile again when life couldn’t get any tougher. However, for every child and their family who are getting our help, another struggles on alone, not having the chance to have the fun, support and care that we offer. This is why leaving a gift in your Will is so important to our fundraising. Clearly, it is a big decision, and ensuring that families and friends are well looked after is understandably a priority for many people. Therefore, it goes without saying that people only leave a gift to charity if it holds a special place in their heart. I hope that sharing Mr Kay’s story will inspire other people to support us in this way. We are always grateful for every single donation we receive, no matter how big or small. A gift in a Will can be whatever you want to give; whatever the amount, it really does make a difference and will help us support many more children in our local area. IN BRIEF £13,000 RAISED FOR THE CLATTERBRIDGE CANCER CHARITY Sainsbury’s Upton has enjoyed a fantastic partnership with The Clatterbridge Cancer charity, raising over £13,000 as part of the Local Charity of the Year scheme. The scheme has raised over £9million over the last seven years and has helped thousands of charities across the UK. By supporting The Clatterbridge Cancer Charity, the Upton store has helped to improve patient experience, fund vital research into the latest therapies and innovations in cancer treatment. The Charity was chosen by customers and colleagues and has received support from the store for one year. There have been many fundraising activities including bag packing, collections, bike rides and flower wrapping, but the store has also donated hundreds of pounds worth of goodies for events and for patients.

NEW WATERFRONT HOME FOR EXPANDING CITY ICE FESTIVAL Liverpool’s UNESCO World Heritage Waterfront is set to be transformed into a winter wonderland from next month, as the annual Christmas Ice Festival returns, with more attractions and a bigger, brand new site. Opening on Friday 11th November, the Ice Festival will take over the Pier Head during the Winter months, running until 3rd January 2017. Previously located on Chavasse Park, the move to the Waterfront has allowed event organisers to grow the festival content, increasing the programme of activities for visitors to enjoy in the lead up to Christmas. This year’s event features under-cover ice-skating, exhilarating rides and entertainment for the whole family amongst its attractions, as well as food outlets, bars and cafés.

CHLOBO & CLAIRE HOUSE 2016 COLLABORATION For the second year running, ChloBo has launched its collaboration with Claire House Children’s Hospice to raise money for the fantastic programme of support and kindness that the centre provides. The Charity also benefited from the Carrier bag charge that was brought in, on 5th October 2015, by the Government. The scheme aims to reduce the use of single-use plastic carrier bags, and the litter associated with them, by encouraging people to re-use bags. Every Sainsbury store’s Local Charity received a payment of £1577. Mike Paterson, Store Manager of Sainsbury’s Upton, said: ‘’We’ve had a great year supporting The Clatterbridge Cancer Charity. Our customers and colleagues have been involved in a number of fundraising activities. We’d like to thank everyone at The Clatterbridge Cancer charity for making it such a great partnership.’’ Elspeth Wilson, Fundraising Manager at The Clatterbridge Cancer Charity, said: “Thank you so much to all the staff and customers at Sainsbury’s Upton, who have raised such a phenomenal amount for the charity. LIVERPOOL INTERNATIONAL HORSE SHOW PREPARES TO RIDE INTO LIVERPOOL

IT’S A WHITE CHRISTMAS FOR BIRKENHEAD OPERATIC SOCIETY TRUST The award-winning Birkenhead Operatic Society Trust (BOST) will create history later this year by becoming the first Merseyside amateur theatre group to perform the lavish musical “White Christmas”. White Christmas the musical is being staged at the Liverpool Empire Theatre in November. It tells the story of two ex-army pals who team up with a singing sisteract to put on a show to save a remote ski lodge in Vermont, which has fallen on hard times. It includes some show-stopping tap routines in addition to musical numbers which are guaranteed to leave you singing well into the festive season.

This year’s Equestrian.com Liverpool International Horse Show will be launched in spectacular fashion with a Ride Into Liverpool featuring 1981 Grand National winner Bob Champion.

Society Chairman Meryl Langford said “We are always looking to expand our repertoire and to treat audiences to different shows they may not have seen before. We are delighted to be able to bring White Christmas to audiences across Merseyside this year. It really does promise to be a fantastic show. “White Christmas the musical” runs from 17th to 20th November. Tickets are on sale from the Liverpool Empire Theatre or BOST www.bostmusicals.co.uk.

Around 50 riders are expected to take part in the event on October 25 along a route from the city’s Garden Festival Site, then into Riverside Drive and on to Salthouse Quay before ending at the ACC Plaza and Echo Arena.

The celebration ride comes ahead of this year’s Liverpool International, which takes place at the Echo Arena from December 31 until January 2.

Bob Champion returns to Liverpool, where 35 years ago he won the National on Aldaniti, two years after being diagnosed with cancer. His inspirational story was subsequently made into a film “Champions” when Bob was portrayed by actor John Hurt.

Managing director Kay Finlay teamed up with daughter Ellie Ruddy, owner of local bakery The Mixing Bowl, as part of a dynamic mother and daughter collaboration.

International show jumper Geoff Billington and carriage driver George Bowman are also set to take part in the ride, while Liverpool International’s charity partner the British Horse Society will send riders from their approved centres such as Croxteth Park, Beechley, Gellings and Knowsley Village. The ride starts at 11am, and will take approximately an hour. Those taking part must be aged over 16, unless accompanied by an adult, and they will need to bring their own horse. The fundraising efforts saw a total of £716.71 raised for Macmillan Cancer Support. Kay said: “Macmillan Cancer Support has become something close to many people’s hearts. We wanted to help to do our bit to further the great work that Macmillan does. It was great to see so many local businesses pop in for cake and a cuppa, all the while supporting the cause.” Ellie added: “It was fantastic to have teamed up with my mum to mark this heartwarming occasion. TALKS TO LYNNE HAGUE

Andrew Collinge Hairdressing is a modern creative force, renowned for contemporary, desirable and wearable hair. Exceptional salons, products and training has ensured this award-winning salon group is firmly established as one of the most influential in the UK. Lynne Hague caught up with the man himself. The family has been trading in Merseyside since 1940 and is famed for top quality training as well as being considered one of the finest salon groups in the UK, does the responsibility of all this tradition affect creative innovation? If I had been asked this question a couple of years ago I might have said yes, as over time I was finding myself more behind a desk than behind a hairdressing chair, however, I’m pleased to say that my son Charlie is now responsible for the running of the business ensuring the family business moves onto a fourth generation. Charlie appreciates the tradition and values of the company but will bring his own ideas and long term strategy so the company continues to evolve. I can now concentrate more on a creative role which will involve me working within the training salons as well as working closely with the creative team on fashion shows and photo shoots. I love working with hair and still get as much buzz from creating a new look as I did when I started out as an apprentice. You have styled the hair of two royal brides but whose hair would you like to style and why? I would have loved to have styled the hair of Audrey Hepburn, an A list film star whose hair always looked beautiful whether it be a gamine crop or a chic up-do. Today it would be Jennifer Lawrence, a brilliant actress 10 wirrallife.com

whose hair always looks great, she changes it regularly and also I think she would be fun to meet. Where do you stand on the question of whether mature women should embrace their grey hair or not? Grey hair can look fabulous particularly with a great cut. The IMF boss Christine Lagarde is a perfect example of how to wear grey hair and look cool. What do you think was the worst look/trend that you have seen? A mullet done badly. There is a fine line between getting it right or it looking awful. You have won many awards and competitions – which one are you most proud of? It would have to be winning British Hairdresser of the Year for the first time. It was something I worked hard for and the competition that particular year was very tough with the other nominees coming from top London salons. Liz and I hadn’t long opened our salon in Heswall and winning resulted in the BBC Clothes Show coming to the salon to interview me, it was fantastic publicity. The company has an excellent reputation for training, how did this come about ? My father Peter, started our hairdressing training division over 40 years ago and ever since then education and training have been the backbone of our business. Over the years thousands of young people have trained with us and gone on to pursue successful careers themselves whether in our own salons or elsewhere. Today his high standards carry on through a dedicated team, who over the past 20 years have been directed by my sister, Sarah. We now provide high quality apprenticeship training to over

100 salons throughout the North West, which has been recognised by OFSTED as Outstanding in our last three inspections. Dad’s services to hairdressing were acknowledged in 2012 when he was awarded the OBE, an extremely well deserved award for a legend within our industry. Has hairdressing given you any unexpected opportunities? I have been lucky enough through my work to travel all over the world, meet Royalty, politicians and celebrities. But probably one of the least expected opportunity was back in 1988 when Liz and I were invited to do a make-over on ITV’s new daytime TV show This Morning. It was the first week of the show which was then only a pilot series and it was tremendously exciting to be broadcasting from the Albert Dock. There was immediate interest from viewers and a huge rush of requests for make-overs which resulted in us working on the show for 9 years completing over 500 makeovers. The show also took us to many unusual places but probably our proudest was going to Bosnia at the end of the war there to do make-overs on women and men from the IFOR forces for a special fashion show. We were flown out by the RAF on a Hercules and met many truly inspirational people, it was certainly a career highlight. What’s the key to the success of a good salon? I think it’s two fold; a talented, motivated team and a tremendously loyal clientele. We are very fortunate to have both in our salons. What new projects are you working on at present? We recently launched a new product range called CO by Andrew Collinge. Although there are many ranges to choose from, there is nothing quite as exciting as developing your own range. The products are all about empowerment - helping customers achieve their desired hairstyle. The feedback we were getting from our own stylists and clients has been that too much choice is confusing and also that our

clients don’t want to look or feel that they have product loaded in their hair. So we have made a compact styling range, easy to understand and easy to work with whilst keeping the hair natural looking. You do a lot with charities, tell us about the forthcoming Hive project you are involved with. The Hive is presently being built in the centre of Birkenhead, it’s an incredibly exciting project and will give all young people somewhere safe and inspiring to go in their leisure time. The Hive Youth Zone is part of the OnSide charity and I’m proud that Andrew Collinge Hairdressing is to be one of the Founder Patrons and will be actively involved. There are other Youth Zones already operating in towns and cities throughout the North West and I have seen for myself the fantastic facilities and opportunities they can offer young people. I have no doubt The Hive will be brilliant for youngsters in Birkenhead and the region, but will require as much support as possible from individuals and businesses on Wirral - whether that be financial or volunteering. With so many aspects to the business and keeping busy, how do you relax? We have recently moved to Hoylake and enjoy living there. Liz and I go for long walks and never fail to be blown away by the stunning sunsets if not by the wind! I have started to cycle, particularly along the coastal route which is ideal for my leisurely cycling as it’s so flat. We both love the great outdoors, earlier this year we travelled to Torres del Paine National Park in Patagonia which was awe inspiring.

ROYAL MARINES MASSED BANDS PREPARE WORLD-CLASS RETURN TO LIVERPOOL AFTER 15 YEARS The Massed Bands of Her Majesty’s Royal Marines are set to make a triumphant return to Liverpool this October, debuting their famous Mountbatten Festival-inspired show, more than 15 years after they last played the city.

“The programme of music is based on our very successful Mountbatten Festival of Music that we perform every year in London’s Royal Albert Hall. Liverpool has such a proud musical heritage as well as an enduring relationship with the Naval Service and I know that everyone who attends the concert is in for a very special evening.”

The Massed Bands – comprised of over 100 musicians from six nationwide bands – will demonstrate their outstanding precision and versatility when they perform at the world-class Liverpool Philharmonic Hall on Saturday 29 October, backed by spectacular lighting and big screen imagery.

The opening sequence of the concert will feature the worldrenowned Royal Marines Corps of Drums with spectacular fanfares, military marches and their breath-taking Drum Display.

They will be joined by special guests which include the city’s very own Danielle Thomas, a mezzo soprano who will perform Puccini’s Nessun Dorma, and legendary broadcaster and Classic FM presenter John Suchet, who will host the concert. “I am delighted to be presenting this exciting concert at the Liverpool Philharmonic Hall with this world famous Band,” says Suchet. “I have worked with the Royal Marines for many years now and I am always amazed at their musical virtuosity and versatility. There aren’t many concerts where, on the same programme, you can enjoy the music of Edward Elgar and Michael Jackson, but it works. The audiences, young and old, absolutely love it and come back year after year”. All profits from the concert will be donated to The Royal Navy and Royal Marines Charity, the principal and chosen charity of the Naval Service, a fundraising and grantmaking charity whose aim it is to support sailors, marines, and their families, for life. Lieutenant Colonel Nick Grace OBE, Principal Director of Music Royal Marines comments: “I am delighted to be bringing the Massed Bands of Her Majesty’s Royal Marines to perform in Liverpool for the first time in over fifteen years.

THE PROGRAMME

The exciting new overture Amphibiosity by Martin Ellerby brings the opening sequence to a conclusion before the wonderful Royal Marines soloists take centre stage with a stunning violin and clarinet duet and a trombone feature. The second half commences with music from the movies in Symphonic Animation featuring great themes from all the Pixar blockbusters. The percussionists then take centre stage with a lively rendition of Billy Joel’s Root Beer Rag played on two xylophones. The concert finale brings all the performers to the fore firstly with a moving tribute to mark the centenary of the Battle of Jutland. Using archive footage, Remembering Jutland tells the story, in words and music, of the important First World War sea battle and is a fitting tribute to all the people who made the ultimate sacrifice. The concert concludes with all the pomp and pageantry that you would expect from a Royal Marines Band concert with Rule Britannia and Land of Hope and Glory which will once again feature Liverpool’s very own, Danielle Thomas. Si Hall talks to Sam and Victoria Johnson

Oldfield Farm can be found in what was known as Heswall-cum-Oldfield, which is between Heswall and Thurstaston, a beautiful location overlooking the Dee Estuary. The farm was bought by William Hough in 1733 and has been owned and run by the same family ever since. It is currently run by Sam Johnson in partnership with his mother Mary Johnson (nee Hough) which makes Sam the eighth generation to farm this land. Sam and his wife Victoria are ably helped by their two children, little Charlotte and William who may well be the ninth generation of this family to carry on the tradition. As you may well expect, the farm has seen huge changes in farming methods since William Hough first bought the farm in 1733. Sam’s grandfather (another William Hough) was still using horses to plough the fields and these horses were doing all the field work as recently as 1950. Today the horses at Oldfield Farm are only used for pleasure and they enjoy their lives in this lovely, quiet place with super hacking right on their doorstep. There were many dairy farms on the Wirral and Oldfield Farm was one of them up until the 1960’s. The family are proud to still be farming the land, but now they have suckler beef cattle which have replaced the dairy herd they once had. The Galloway cattle breed that they have originates from South West Scotland and is famous for its tender, flavoursome meat. The nucleus of their home bred herd is comprised of pedigree Dun Galloway cows and they also currently have a Dun Galloway bull. In addition to this herd they also have some cross bred Aberdeen Angus, South Devon and Simmental cows. At Oldfield Farm, Sam believes in raising the cattle as naturally as possible which means that the calves born in Spring and Autumn stay with their mothers until they are approximately one year of age. The calves are then weaned and turned back out to pasture overlooking the Dee Estuary until they are aged

about eighteen to twenty months. After their life outside the youngsters are brought back inside to be finished and fed on grass silage, hay and home grown barley. They are ready for the butcher when they are about twenty to thirty months old. Sam feels that this rearing method and the quality of the pasture which is constantly subject to salty sea breezes, helps produce the exceptional flavour of their beef. “We believe that our animals have the right to the very best quality of life right up until it’s time for slaughter. We transport the cattle to the butcher ourselves as we believe that this reduces their stress as they are familiar with us handling them and we take small numbers each time. We think that this further improves the quality of our beef” explained Sam. Although primarily a beef farm, Oldfield Farm does offer some other facilities such as a small DIY Livery Yard which makes use of the old stone farm buildings now converted into stables. A “turn out to grass” service can also be provided 365 days a year weather permitting! There is also a menage surfaced with a sand and rubber mix which is available to their clients at all times. The location of the farm means that there is easy access via quiet roads to the Wirral Way, Heswall Dales and also to the beach. The latest venture at the farm is to provide a location for couples who want to have an outdoor wedding reception. There are breathtaking views overlooking the River Dee and the North Wales coast in a tranquil country setting ideal for those special photographs. There are a limited number of receptions that can be held each year, so get in touch as soon as possible if you have a special date in mind! The beef is sold either through Boxes of Beef direct from Oldfield Farm or at Heswall Farmers’ Market, which is held the third Saturday of each month in the Church of the Good Shepherd Parish Hall, Heswall. THE GIN QUEEN

It is the quintessentially British drink ‘Gin and Tonic’, seen by many as ‘Mothers ruin’ or a drink only for old people. Perhaps bars and clubs would stock one or two different gins, well a lot has changed over the past few years as people discover gin once again.

The Red Fox in Thornton Hough, formerly ‘The Grange’ reopened in 2015 with 15 gins on the back bar, however, the love and passion for gin shone through and the number of bottles started to increase. After two gin festivals and many tasting events The Red Fox now have a separate gin bar stocking over 120 gins, 8 different tonics and lots of garnishes.

The 'gin-assaisance' has seen the spirit grow in popularity among the younger generations and it’s estimated that Britons alone will drink 32m litres of gin this year spending £1.04bn on the juniper berry spirit.

Before this years Gin festival they decided they wanted a gin that they could call there own. Something a little different and one that people would talk about and want to drink. They enlisted the help of local distillers ‘Ginhouse Beverages Limited’ the guys behind ‘Wirral Gin’ to help create ‘The Red Fox Gin’.

A surge in popularity has seen a dramatic rise in the number of craft gin makers setting up business. Just five micro-distilleries opened in the UK between 2008 and 2011: the same number opened in 2012, 11 started in 2013, 15 more in 2014 and by the end of 2015 another 19 distillery’s had opened, all producing varieties of the three gin classifications – standard, premium and London Dry. It’s not just the new distillery’s that are increasing the number of gins on the market, existing distillery’s including whisky masters ‘Bruchladdich’ now produce a gin, perhaps because it’s a quick to produce and sell spirit - unlike whisky which has to be aged for at least 3 years. Either way the UK has never seen so many distillery’s or brands and it continues to grow with more and more different ideas, flavours and tastes. 18 wirrallife.com

Many hours were spent looking at different botanicals and flavour combinations, and the one that stood out was bergamot, which is a citrus fruit the size of an orange and is the driving flavour in earl grey tea. Heather was also a big hit probably due to the sweetness it brought to the taste which they thought was a lovely finish. It took six batches to get a gin that everyone was happy with and they describe it as ‘a floral led English Gin featuring a special tea infusion. A hint of heather provides a wonderfully smooth finish’. The perfect serve they recommend is simply with a slice of lemon, lots of ice and fevertree tonic. Simon Parkinson of Whitmore & White West Kirby - an award winning independent wine merchant, food hall and cafe du vin - takes us through the seasons pairing of some of the best wines from around the world with some of the best seasonal foods these Great British Isles have to offer. Mushrooms, Game birds and shellfish are all in season at the moment. I will take you through the transition from Summer in to Autumn, talk about wines that will conjure up memories of the summer days, as well as prepare you for the oncoming Autumn. Whether you forage for ingredients yourself or buy from local independent businesses, here are the wines you should be drinking with your favourite seasonal produce. White Wine - Cà die Frati Brolettino (Turbiana grape), Lugana, Lombardia, Italy This month it has to be a wine that reminds me of the sunny summer days just gone, yet at the same time has the warming embrace of autumnal flavours. Cà dei Frati’s Brolettino, form Lugana, Lombardia, does just that - it is big, bold and rich. Aromas of fleshy stone fruits fill the nose before gently enticing the drinkers palate with subtle notes of vanilla and spice. Upon first sipping, this wine fills your mouth with ripe peach and gentle sweet citrus flavours, a beautiful honeyed textured coats your whole palate. The gentle oak aging this wine has undergone delivers notes of brioche and outstanding length to the finish, yet the wine maintains it’s apple freshness and stoney minerality. Pair this wine with a Mushroom Risotto or Pork Stroganoff - it will stand up to the earthiness of mushrooms and is bold enough to work with the creamy sauce of a Stroganoff.

Red Wine - Goatfather (Sangiovese(50%), Cabernet Sauvignon(27%), Barbera(14%) and Nebbiolo(9%), Coastal Region, South Africa The Red I have chosen this month is a serious wine with a playful side, it is called ‘The Goatfather’ and comes from a producer called ‘Goats do Roam’. Ordinarily, ‘concept’ wines like this are more marketing and less quality, but this wine is different. Charles Back is the brains behind this wine and along with wine maker Anthony de Jager they use a blend of four grapes, Sangiovese, Cabernet Sauvignon, Barbera and Nebbiolo, to produce this refined wine. The nose is full of red fruits and is gently perfumed with hints of violets, there is a hint of spice there, a nod the mix of French and American oak barrels used for aging. The palate, much like the nose, is full of fresh red fruits, red currents dominated with hints of cherry. There is a gentle spice from the oak providing a wonderful and lingering finish to this wine. This

wine is a crowd pleaser, and at only £11.95 a bottle, perfect for when you have friends over. This wine pairs very well with game birds such as Pheasant, red meats and if your brave, one last BBQ of 2016.

Fizz - Vilatnau, Cava Brut (Macabeo, Parellada and Chardonnay), Spain Prosecco might be all the rage at the moment but my fizz of the month is a beautiful Cava by Vilarnau. The nose is dominated by fresh apple notes and hints of apple blossom and is a truly elegant alternative to Prosecco. The palate is full of apple freshness and some complexity from the 2 years bottle age that this fine sparkling wine has. This is from a very modern winery, situated 250 meters above sea level. This wine doesn’t need a wine pairing, it would make a beautiful aperitif, however, Findlaters Smoked Mackerel Paté canapés would make a lovely companion. wirrallife.com 19


VISIT SOUTHERN BOHEMIA VIA THE VIKING PUB AND BAKEHOUSE BY JO MILLER With over 1000 breweries in the UK today most of us at some point, may get the opportunity to visit one. Unlike Wonka’s chocolate factory, most breweries will extend a warm welcome, let you visit and take a look around, but even in a job like mine it isn’t an every day occurrence. Even more rare is being able to drink beer straight from the tank the beer has been brewed in and we all know what happened to Augustus Gloop when he tried to drink chocolate from the river. Tankové Pivo is Bohemia’s answer to being transported direct to the brewery and do that without fear of being carted off by an Oompa Loompa. Tankové Pivo, translated, as ‘Tank Beer’ is the golden ticket to drink beer that is fresh, unpasteurised and direct from the cellars of the Budweiser Budvar Brewery in the Czech Republic. Closer to home it is the beer that Simon Rimmer and the team behind the newly opened Viking in West Kirby chose as their flagship beer. The beer takes a whopping 102 days to brew and as I write this in a September heat of 25 degrees I quickly do the math and make a mental note that the beer brewed today will be ready on Christmas Day. Impressive stuff given that a lot of lagers you see on supermarket shelves take less than a week to brew. Following it’s epic brewing process, it embarks on its special journey of over 1000 miles through Germany, Holland, Belgium and France to the UK in special air tight, cooled containers and pumped into beautiful horizontal copper tanks that make an arresting sight as you walk into the newly opened Viking in West Kirby. Back in late May, the Viking team took at trip to Southern Bohemia to visit the brewery before the restaurant opening so that they take the opportunity to make a batch of Budvar with 20 wirrallife.com

the brewers themselves. As part of that incredible experience, they got to meet the resident Beer Sommelier at the brewery Aleš Dvořák and the rest of the brewing team…sadly I have to leave all references of Charlie and The Chocolate Factory aside at this point as brewing beer is important business and I’m not sure they would be happy with me conjuring up images of the brewery full of folk in dungarees busting into song. Although there are some nice chocolate beers out there but that is for another day. I caught up to Simon to ask him what he thought of his time in Bohemia. “We went to the brewery in the Czech Republic and got to make our own brew, it was an amazing experience to see how it’s all made, and to have a hand in making the beer that we will be serving. It comes in fresh, and is piped directly to the pumps, so no air touches it and you get that absolute fresh taste every time” says simon. Again, doing the math and a first twice in one day for me, I believe at the time this goes to press that if you order a pint of Tankové PIvo, it has a strong chance of being the very one Simon brewed. With this I’d recommend matching it with the Budvar beer battered fillet of haddock, hand cut chips, minted mushy peas and tartar sauce. The all-natural gentle carbonation in the beer gives the batter a beautifully delicate finish and once you have lapped up a little of the haddock, take a sip of the Tankové Pivo as this is where the magic really happens…the bubbles in the Budvar cleanse the palate ready for the next mouthful and the bite of the hops contrasts perfectly with the sweet fish. What is not to like? That’s right, nothing, so repeat several times until your plate is empty and you've made your way down the enticingly chilled glass.

Here you can find an interview (or day in the life if you will) with Aleš called ‘The Man Behind The Beer’ and it gives a glimpse into some of the reasons the Viking team have chosen this beer. There are some people who do a job and then there are some who are their job and it is hard to imagine a world where the two don't co-exist, especially in brewing and Aleš is one of those examples. I reckon watching that in the Viking with a Tankové Pivo in hand is maybe, just possibly, the only form of socially acceptable iPhone usage in this glorious pub…

THE BUTCHERS CUT BY ROB ADAMS

Butcher Rob Adams from Adams of Oxton gives us the lowdown on the Pig and his delicious pulled pork recipe. The pig is such a unique animal – it is easily domesticated and makes an ideal animal to rear for the table. Traditionally the pigs ideal habitat is near water as they have no sweat glands and they need to wallow to keep cool. They are therefore ideally suited to the wet climate of the UK. Pigs also need dense cover for shade – free range pork is happy in the forest, brush and high grasses and make snug dens in caves and hollows between large roots of old trees. This can also be replicated on the farm by building pig arks which replicate their snug dens. Their poor eyesight is more than compensated by their keen sense of smell which helps them find food by rooting in the ground – traditionally they were excellent truffle hunters, but the truffle collector had to be quick otherwise the pig would quickly scoff the prized truffle! Butchers love selling quality pork as there is an old saying in French ‘’Tout est bon dans le cochon’’ (all the pig from head to tail is good). British pork butchers have their own slogan – ‘’we use everything but the oink’’. The versatility of pork is exceptional and has been a staple in the British diet for centuries.

CUTS OF PORK There are 5 main cuts of pork: • • •

Leg – great for roasting whole or boned and rolled, it also produces delicious mini pork steaks. Chump – ideal for small roasting joints or bone in or out chump chops. Loin – this is a very versatile piece of meat, it can be cut into chops, steaks, rack of pork or roasted whole, rolled and stuffed or just simply roasted with the skin for crackling providing bags of flavour. Belly – A really delicious and moist cut – really prized for slow cooking and great with oriental flavours. Cut into strips, marinated and barbequed (belly draught) it is a real favourite. Belly pork ribs are a staple in Asian and American cookery, cut thickly they are meaty and the meat on the bone is sweet and tender. Shoulder – In the USA its called the ‘Boston Butt’ or ‘shoulder butt’ – this is well suited to long slow cooking as it a well- developed muscle with plenty of connective tissue that melts when it cooks – it carries flavours and marinades well and forms one of the ‘America’s’ (North and South) most staple meat dishes ‘pulled pork’. It can also be seam butchered to produce really meaty shoulder blade steaks.

Other cuts include the head, (makes a great dish called Crubeen), the jowl (Bathchap) and the trotters which are more gelatinous than meaty but are delicious when they are slow cooked. 22 wirrallife.com


Home Cooked Pulled Pork – Mexican Mole sauce and Fresh Salsa FOR THE PORK • 1 tbsp olive oil • 750g trimmed pork shoulder cut into 4 large chunks – season well with salt and cracked black pepper • 1tsp tomato puree • 200ml Chicken stock (hot) • 1 orange – zest strips and juice • 1 cinnamon stick • 2 sprigs of fresh thyme FOR THE MOLE SAUCE • 2 onions, peeled and diced into chunks • 2 peeled cloves of garlic • 2 slices white bread – crusts removed • 250g cherry tomatoes • 3 tbsp olive oil • 50g flaked almonds • 50g raisins • 2tsp ground coriander • 2tsp ground cumin • 1 -2 tsp chipotle paste depending how hot and smokey you want the sauce • 25g plain chocolate, finely chopped FOR THE SALSA • 200g radishes, topped and thinly sliced • 2 avocado’s – peeled and chopped • 1 bunch coriander, stalks removed and chopped • 2 limes, zest and juice • 1 or 2 green chillies, finely chopped METHOD 1. 2. 3. 4.

Heat the oil in a casserole dish, brown the pork for about 10 minutes until light brown and golden all over. Stir in the tomato puree and cook out the rawness for 1 minute. Pour over the chicken stock, add the orange juice, zest, cinnamon and thyme. Bring to a simmer, cover and simmer gently for 1.5hrs. Meanwhile make the sauce. Heat a non-stick frying pan and dry fry the onions and whole peeled garlic cloves for about 5 minutes, mixing often until softened and charred all over (not burnt). Place the onions and the garlic into a food processor or blender, return the pan to the heat and add the tomatoes. Cook for 3 minutes until they start to blister and char – then add them to the food processor or blender. Place the pan back onto the stove, add a little oil and fry the bread, coriander, cumin and the almonds until golden – add them to the food processor or blender – then throw in the raisins, chocolate and the chipotle paste. Whizz together until a rough paste forms. Once the meat is cooked – using a slotted spoon, place on a board and allow a resting time of 10 – 25 minutes then ‘pull’ apart with 2 forks. Strain the

cooking liquid and add a little of the cooking liquid to the rough paste in the food processor or blender – whizz gently. Tip the contents of the food processor or blender back into the pan containing the pork juices. Simmer on a medium heat for 10 -15 minutes – then return the shredded pork to the sauce and cook gently for 20 minutes more. Taste and adjust the seasoning if required. TO SERVE Mix all the ingredients for the salsa together and allow to infuse for 10 minutes – simple! Serve as a casserole with toasted corn bread or with warm tortilla’s – topped with salsa.

Tip: This can be made well in advance and stored in the fridge for a couple of days – or frozen for up to 3 months.

THE MALMAISON

Standing on Liverpool’s historic waterfront, The Malmaison enjoys an outstanding location. It’s their first purpose-built hotel and is an impressive eleven storey building alongside Liverpool's Princes Dock in the stylish docklands. Malmaison describe the hotel as being all about elegance and impact and it doesn’t disappoint. There’s a stunning view of the Mersey combined with sweeping views of the city, including the famous Liver Building right next door. We were seated in the Brasserie which has a contemporary and airy feel with high ceilings and original brick walls… and yet it manages to remain cosy and private. Being such a lovely and bright sunny day, we opted for the set lunch menu starting with Summer Pea and Pancetta Croquettes. Delicious and light, they were crisp polenta crumb croquettes filled with pancetta, summer peas and served with a béchamel truffle mayonnaise. Our other choice of starter was the Mediterranean Salad with slices of serrano ham combined with fresh strawberries, watermelon, baked feta cheese and tarragon vinaigrette. The fruit combinations worked beautifully together, each element complementing one another. For our main course, we moved onto the Layered Chicken Flatbread and the Pan fried Sea Trout with a Citrus Salad. The grilled chicken was beautifully tender having been marinated in thyme, rosemary and garlic. It was served on a flatbread brushed with melted herb butter and layers of ripe beef tomato, avocado, red onion and baby gem lettuce. Tasty and definitely filling!

The melt in the mouth Fillet of Sea Trout was served with a fresh crisp salad of sliced cucumber, fennel, pink grapefruit, caraway seeds and dill yoghurt dressing. Simply gorgeous! Well-presented and cooked to perfection with a beautifully clean flavour. We accompanied our mains with one of our most favourite wines yet, a Riesling called Kung Fu Girl. The name itself is fabulous! It was smooth and aromatic with flavours of apricot, key lime and nectarine. Medium-bodied and medium sweet, the Kung Fu Girl has a crisp long finish… and it’s great to see a Riesling making such a comeback! If we could squeeze any more in (yes we could!) for dessert we went with a classic baked vanilla cheesecake topped with Stewarts of Tayside Scottish strawberry compote and strawberry sorbet. This was a real pleasure seeker, gliding through those sumptuous strawberries into the soft vanilla cheesecake. And if that wasn’t enough, we also sampled the Tastes of the Season – a summer trio of strawberry Pavlova, peach and Amaretto Cream and frozen summer berry smoothie. It was gorgeous with a favourite being the peach and amaretto cream…you could really taste the amaretto coming through. To accompany dessert we went with a glass of the Esquinas. This superb Malbec offers vibrant aromas of red cherry, ripe plum, blackberry and truffle. The Malmaison’s extensive cocktail menu is also definitely worth a try especially for a special night out! Overall, a beautiful meal with lots of tasty flavours, in a world renowned location. Great value too at just £19.95 for two courses or £24.95 for three. Malmaison, Liverpool is ideal whether it’s for a relaxing lunch before an afternoon shopping (although don’t expect to get much shopping done after the cocktails!) or for an evening meal a deux. BLACKBERRY GROVE by Si Hall & Karen Booth

Located just off Grosvenor Road, in the revitalised and bustling resort of New Brighton, Blackberry Grove is a friendly independently run, relaxed café, bar and restaurant. With a rustic yet modern décor the restaurant has a good and varied menu. The restaurant is extremely proud to cater for vegans, vegetarians and meat lovers, along with gluten free and other dietary requirements. A great concept. Warmly welcomed by Jo (Restaurant Owner) and Dave (Manager), we opted to sample and share a number of vegan, vegetarian and meat dishes. We started with the Pan Fried Scallops and Chorizo, served on a bed of local watercress, pickled cucumber and a cauliflower puree (£7.95). The scallops were cooked to perfection, juicy with a melt in your mouth texture. In addition, the ‘devilled’ Tofu and vegetable Kebabs (£5.95) seasoned in a spicy paprika marinade, served on a bed of crispy rice noodles and an aged balsamic drizzle. Tasty and very healthy. For mains we chose one dish from the daily ‘specials board’. Oven roasted chicken breast wrapped in crispy Parma ham, served with sweet potato puree, turned and pickled carrots and green trimmed beans (£10.95). The dish was well cooked with moist chicken and accompanied by a tasty chicken jus. Next was the Fillet Steak Diane (£13.95). Plentiful pieces of tender beef fillet in a rich and velvety Diane sauce, served with deep fried tender stem broccoli and steamed wild rice… what’s not to like. Excellent. Next up we went 100% vegan with not one but two main dishes! A first for all of us. Our first choice was a juicy oven roasted red pepper stuffed with spiced Tofu and topped with a vegan cheese gratin (£9.95). Accompanied by red onion petals, crispy basil leaves and a sweet potato puree, this was a colourful and tasty dish with the vegan cheese being a pleasant surprise in both texture and taste. Our second vegan dish was the Vegan Sunday Roast (£10.95). Presented on a sharing board, accompanied by crispy roast potatoes, sides of cauliflower cheese, roasted baby turnips and a jug of rich 28 wirrallife.com

gravy, the oven roasted balsamic infused Portobello mushroom was an instant hit. The entire dish really packed a punch all round in texture and flavour. We devoured every morsel! For our final main we went with one of the restaurants biggest sellers the ‘gluten free’ Fish and Chips (£10.95). Snow white flakes of fresh Haddock in a crispy gluten free beer batter. Served with hand cut chips, pea puree and homemade tartar sauce. A real winner. Desserts are offered on a chalkboard style menu and include classics such as New York Cheesecake and the restaurants very own ‘Flourless’ Chocolate Torte. The kids took the helm … a deliciously rich dark chocolate torte, served with a dollop of freshly whipped cream. Gorgeous. The adults thought it fitting to end their meal with a cocktail or two … A devilishly good ‘Rum Paradise’ and a very naughty ‘Vodka’ ice cream… All cocktails priced at (£5.50). The rum paradise was made using a fabulous imported Venezuelan ‘Panmpero’ Rum, Passoa (passion fruit liqueur), Tia Maria and a splash of lemonade. Served with a cocoa dusted rim and topped with Red Amaranth. The vodka ice cream oozed creamy vanilla ice cream, fresh cream, soaked in Vodka, Blue Curacao liqueur, cherry drizzle and topped with fresh berries. A great end to our dining experience. Verdict: Blackberry Grove is a lovely and relaxed dining destination – fresh local ingredients – tasty, varied and plentiful food – a good selection of alcoholic, non-alcoholic drinks and beverages - served by warm and friendly staff. The restaurant is good value for money and suitable for the entire family, whatever the occasion. They are open six days a week from 11.00am until late; serving brunch, lunch and dinner - Tuesday to Sunday; with a late bar until 2am on Friday and Saturday nights. I have long thought that such a strength of loyalty and appreciation was a preserve of the traditional boarding school, but the bonds here are equally strong and evidence of the value of an educational journey that can start as early as three months in the School’s Nursery and continue through to the Sixth Form.

How do you achieve that? The affection for the School comes from a simple premise in which we believe, and that is to focus on the individual. If this is a value always kept to the forefront of our minds, then good decisions will follow. In understanding that one size or type of education does not fit all, staff and pupils develop a relationship based on mutual respect: a trust that staff are looking to find and fire the passion for learning that will last with the pupils long after they leave Birkenhead School. Our students are entering a globalised economy expectant of five decades of working life. We therefore have a responsibility to instil in our pupils a culture of lifelong learning. This is achieved by giving teachers the freedom to teach and be creative and not afraid to take ‘academic risks’ in the classroom - teaching beyond the curriculum and inspiring pupils through their own passion for the subject. I am also a firm believer in pupils achieving their potential when they are happy. There are too many schools where the focus in recent years has skewed towards grades as a priority, at the expense of a balanced outlook and deteriorating mental health. By inspiring pupils inside and outside of the classroom, and focusing on the individual, teachers get to know what makes each pupil ‘tick’. They can therefore deliver first class pastoral care as they will spot when a pupil is off his or her game, and look after them accordingly. It is a combination of all of these approaches that leads to a tight and caring community, and a special place to work and lead.

You’re joining the school at a successful point – how will you enable that to continue?

I believe there are several strands to this. We must keep building on our strengths, invest where we identify opportunities and ensure that our curriculum continues to be relevant for the world that our pupils subsequently enter. We are rightly celebrating after the 2016 exam results place us as one of the leading schools within the country. Students achieved 100% pass rate at A Level with an impressive 88% awarded at A* to B and 54% at A*/A (compared to 25% nationally). It is important to place this in context. 88% is an outstanding result and an achievement made more remarkable by the fact we are not an ‘academic hothouse’. In fact, a number of our pupils may not have passed the 11+, but by focusing and investing time in each individual, we are able to add value at every stage of the Birkenhead School journey. We all know that children do

not come out of moulds, each is an individual, and I am wary of pigeonholing pupils at an age when their different rates of development can vary considerably. A headline statistic however is no measure of the quality of an education – the real pride comes from knowing the journeys individual pupils have taken underneath such a statistic, the hurdles that were overcome and the skills gained along the way. It is these stories that remind us why we teach – to play some small part in pupil’s gaining transferrable skills such as critical thinking, resilience and responsible leadership which will enable them to succeed once they leave Birkenhead School. I also wish to continue teaching myself. I believe you can only lead a school if you know and understand both the pupils and the staff. It remains uplifting to be in the classroom, whether teaching or listening to the innovative approaches of others, that is the reason we joined the profession in the first place.

It’s not all just results though is it?

To me, grades should be a by-product of inspirational teaching, not the defined target at the outset. The best lessons, delivered by the best teachers, are those where the pupils forget that they are in the classroom, but have the mind stretched within the academic field they are studying. It is this approach that engenders true understanding, not a narrow-minded quest to learn what is felt that the examiner wants. At the start of term, I addressed pupils about the need to bring to School a mindset to challenge and be challenged and to seize the many opportunities offered. It is this holistic viewpoint of education that has been part of the Birkenhead School approach for many years. This year the school is offering over forty different clubs ranging from Orienteering or Mythology through to Gymnastics and Chapel Choir. As the nights draw in, the school is launching its Astronomy Club inspired by Tim Peake’s stay on the International Space Station and in the new year a group of twenty Year 8 – Year 12 girls are travelling to NASA in the US where they are participating in a five-day engineering mission to land a rover on the surface of Mars. Whether a child’s passion is sport, music, academia or service – there is something for everyone at the School and I see it as our responsibility to find and further their interest. Our Alumni include Tony Hall, Lord Hall of Birkenhead, who is the Director General of the BBC, and Sir Philip Jones, First Sea Lord – the highest ranking officer within the Royal Navy so as the debate takes place in Parliament on education reform it is good to know that Birkenhead School continues to deliver excellent results and offer students and parents an education beyond grades and league tables.

You have moved here from Shropshire, how are you and your family settling on the Wirral? I have been taken aback by the welcome we have received and we have enjoyed getting to know the Wirral having arrived in mid-July. All of my three children have settled well into the Prep School and are thriving within the nurturing atmosphere that characterises the younger years provision. Shropshire and the Wirral share a number of characteristics, not least the tight knit communities that mean those born and bred often return to bring up their own children. It is a feature that feeds the strong family connections within the school, both in the pupil body and the Common Room. Vikki and I are looking forward to raising our family within such a great school and the wider Wirral community.

CHESTER ZOO GETS TO WORK ON £7M INVESTMENT Chester Zoo is set to invest £7 million this autumn, enhancing its world class reputation for animal wellbeing by further improving the habitats of some of its 20,000 animals.

UK FIRST AS WORLD’S RAREST MAGPIE HATCHES

Unprecedented visitor figures in 2015, which saw almost 1.7m people flock through the conservation charity’s gates, have been followed up by even higher visitor figures so far in 2016. Income from ticket sales and visitor spending has already helped boost the zoo’s 80 conservation projects to help endangered animals in more than 30 countries worldwide. Now, an extra £7m will be spent within the zoo, including developments to the facilities for animals in Chester. The work continues the ‘always building’ philosophy of the zoo’s founder George Mottershead, 85 years after he created the UK’s first zoo without bars centred on animal wellbeing.

BABY ZEBRA BIRTH AT THE ZOO Four Javan green magpies have hatched at Chester Zoo - the first time the world’s rarest magpie has been bred in a UK zoo - providing a major boost to conservation efforts to save the species from extinction. Conservationists and bird staff at the zoo are making every effort to try and save the species, which has been trapped to the very brink in its native Indonesian forests.

A baby zebra caught zoo visitors by surprise after it was born in front of them. The latest arrival to Chester Zoo’s herd of endangered Grevy’s zebras arrived to mum, Nadine and dad, Mac. The foal became the second to be born at the zoo in the space of just six days. After her 14-month-long gestation, zookeepers spotted that Nadine was showing signs of labour early on Sunday afternoon. They carefully monitored the momentous event from a distance and Nadine gave birth after 40 minutes, in front of astounded onlookers.

Kim Wood, assistant team manager at the zoo, said: “Nadine gave birth in the middle of the afternoon in front of a group of some pretty amazed visitors. At first Nadine was seen lying on her side trying to make herself more comfortable as she began to feel what was about to happen. She then got to her feet and picked her spot in the paddock and a healthy youngster appeared less than an hour later. It was a really smooth delivery. The foal is looking great and, with it being the second to be born here in the space of just a week, we’re sure the two new arrivals will be as thick as thieves.”

The zoo has been working with assistance from Taman Safari Indonesia and conservation partners Cikananga Wildlife Centre. In late 2015, six pairs of the birds were flown from Java, Indonesia to Chester in to establish a conservation breeding and insurance population for the species in Europe, before the birds vanish in the wild altogether. The Javan green magpie is listed as critically endangered by the International Union for the Conservation of Nature (IUCN) but bird experts are warning that the situation may have worsened in recent months amid fears that the magpies may now be close to extinction in the wild – with no recent sightings reported. But now, the breeding of the four new chicks in Chester has given a huge lift to conservation efforts to save the birds. wirrallife.com 37

THE AUTUMN LOOK To add power to any look this season it's all about adding a strong lip colour and nothing else. Keep your lashes bare or add a small amount of mascara, then add a bold lipstick in a shade of red or blackcurrant. Here I have used Dior 962 Poison Matte lipstick from their Rouge AW 16 collection.

DON’T IGNORE THE GIFT FROM NATURE - TO HELP PROTECT AND ENHANCE YOUR LIFE. BY JOEL JELEN OF RESET BREATHING

Given that breathing is a gift from nature to us, it seems as though it’s one of the easiest aspects of our health to ignore. People with asthma and other related respiratory conditions will tell you how happy they are when they can breathe easily. The same goes for the rest of us human beings who experience and then overcome a stressful, fight or flight situation. Likewise, sleep apnoea sufferers too. For the rest of us, it's only when, for example, I ask people at our breathing education workshops to listen to their breathing that they become slightly uncomfortable in doing so. Similarly, when people are asked to perform any one of six core breathing techniques to relax mind and body in a breathing session, it's sometimes only then that individuals in the group begin to think about/ appreciate their breathing and acknowledge the role of the breath in how they think, feel and function. It is a curious phenomenon, but once you try, you'll experience what I’m describing. In fact, it's that curious, many people including the medical profession are unwittingly ignorant of the power of breathing optimally for good health and it is often subsequently ignored in efforts to place a diagnosis where required. Within a working environment as well as a social one, relaxed breathing can have a massive impact on someone's overall disposition in terms of e.g. mood and performance. There are many useful lifestyle tips you can adopt to breathe better, here are just a few:

• • • • • • • •

Practice nasal breathing at all times Exercise, if only mildly, mouth closed! Eliminate sighing, sniffing, big yawning, deep breathing Overthinking – eradicate negative thoughts by focusing on the breath Use carbonated water when enduring a talkative day! Technology – focus on the breath during laptop/ mobile phone use Sleep – put your brain to bed two hours before yourself Live more in the parasympathetic i.e. and less in a heightened sense of anticipation

Finally, have a think about your own breathing. Is it normal? What is 'normal'? Light, quiet, effortless, soft, through the nose, tummy-based, rhythmic, gently paused on the exhale. This is how we breathed until the comforts of modern life came along. There are three levels of breathing: 1. So softly that the person next to you can’t hear you breathe 2. Softly so you can’t hear yourself breathe 3. So softly that you cannot FEEL yourself breathe Try and measure your breathing - via what we term the Control Pause which is a comfortable breath hold: • • • • •

Take a small silent breath in through your nose Allow a small silent breath out through your nose Hold your nose with your fingers preventing air from entering your lungs Time the number of seconds until you feel the first distinct desire to breathe in If it's less than 40 seconds, learning how to breathe optimally will make a huge difference to your health.

THE ART OF JOE FORREST Nicky Rigby-Smith interviews Wirral Fine Artist, Joe Forrest.

Joe Forrest is a Fine Artist from Wallasey specialising in high quality drawings, paintings and sculpture doing both original pieces, commissions and commercial projects. Where did your passion for art come from? I’ve always been artistic, as a child I would sit around for hours with my cousin and older brother drawing, often epic stickmen battles across multiple sheets of paper that we had taped together. I’ve always been encouraged by my parents, family and teachers, so they’ve helped nurture any natural artistic abilities I had and given me the confidence to do it full time. You trained in art including painting, drawing and sculpture - which genre is your favourite? I don’t particularly have a favourite, as I like to try everything and push my skill base, but I probably specialise more in pencil drawings and oil painting. Sculpting is a lot of fun, whether in clay or stone, but it’s not often I get to do it as it’s very messy and time consuming, requiring a lot of space and a large budget because it’s more specialised work. When you start on a new commission to paint a picture, how do you choose which medium to use? I’ll decide the medium with the client based on a number of factors such as size, style and budget. The main point is usually what aesthetic look they’re looking for - is it high detailed and realistic, or more painterly with visible brush strokes. Other factors include the varnish, an oil painting will need to be left for 6-9 months to fully dry before the final varnish can be applied and requires a high gloss varnish to give it depth and to bring out the colours. Where as acrylic paintings can be varnished after 24 hours and can have a matt varnish instead. Have you worked on any notable projects or for any notable clients? Yes, in 2011 my brother and I produced 5ft tall heads of Prince William and Kate to celebrate the Royal Wedding. A CIC in Chester makes giants for community events and we were asked to created fibreglass busts for their royal giants. In 2013, I painted a retirement portrait of Jamie Carragher for his 23 Foundation. It was meant to be auctioned off for 78 wirrallife.com

charity but as it coincided with his retirement it was signed by all the players and staff at the Melwood training ground and presented to him as a retirement gift. More recently, I painted a series of canvases and murals at The Viking pub in West Kirby for Simon Rimmer & the team. All the artwork was of local animals and Viking themed wildlife, which was fun to paint. The murals were done during the day so customers would be watching me and have a chat. The response has been fantastic, everyone loves them! Simon’s favourite is the Raven, but I like the badger most. What do you think is the best piece of work that you’ve done and why? I have a piece called ‘Storm’, an oil painting of a sunset shining through a storm out at sea. My Dad took a series of photos from his house in New Brighton which I used as the basis. I really played with the colour and light throughout it and tried to push myself. The other piece which stands out is a David Bowie portrait I was recently asked to do. It’s quite large, just over 100 x 75 cm. Who has influenced your work the most? My tutor, and friend, Terry McGunigle has influenced me more than I probably know. His guidance into discovering the importance of traditional and classical art has shown me the importance of proper knowledge and training. I often look back to things I used to struggle with and can clearly see I didn’t fully understand what I was looking at, whether it’s anatomy, perspective, light, colour theory or just my technique of painting. What do you think of “competitive” painting - shows like Sky Arts Portrait Artist of the Year, Landscape Artist of the Year? I’ve not seen many of them, but I think they do help promote the arts and introduce it to new audiences, which is more important than anything. How do you relax and switch off? I play keyboards and used to be in a band, so music is always important to me. I like going for walks, drinks with friends, time with friends and family, the usual.

AN INTERVIEW WITH ROB FENNAH Wirral writer and musician Rob Fennah talks to Wirral Life about himself, Helen Forrester and the North West Tour of Twopence to Cross the Mersey. I was born in Liverpool in 1958 and emigrated to the Wirral in 1963. I went to Greasby Infant and Junior schools before failing my 11 plus and getting packed off to Hoylake Parade School for Boys in 1970. The school merged with Hilbre Secondary School in 1974 where I spent most of my time on a bus commuting between the two schools and the playing field in Meols. Fortunately for me, I had already embarked on a career in music having joined a band called, Buster. We went on to have many big hits in Japan, Australia and Germany. I got my first gold album when I was 19. You had a successful career in the pop music business in the UK and abroad – why change to writing musicals? When Buster disbanded in 1980 I formed a new band, Alternative Radio, with my brother, Alan. We were the first artists to sign to the newly re-launched Parlophone label made famous by the Beatles. As we got older we became involved in other aspects of the music business; writing for theatre and producing music for TV. Do you still play the guitar? I have played guitar since the age of 5 and recently opened my own Bluenote Guitar School in Crosby, Liverpool. I teach all styles including ukulele, bass, and a bit of mandolin. I still love playing! Tell us about the North West Tour of Twopence to Cross the Mersey The new Twopence To Cross The Mersey stage play kicked off at the Royal Court Theatre on 20th September before moving on to; Rhyl, Preston, Southport, Warrington, Stockport and St Helens. I see this as a stepping stone to a full blown 'national tour' of the UK. This is something Helen Forrester and I often talked about. When/how did you meet Helen Forrester? I met Helen at a literary lunch in 1992. She was there to talk about her books and I had been invited along by a journalist friend of mine. Some months earlier I had written and recorded a song called, 'Butterfly In The Rain' which was inspired by a line from Twopence (Rick Wakeman played keyboards on it). Helen loved the song and asked if she could

use it when giving radio interviews. It was at that meeting I put to her the possibility of a 'musical' based on her most famous book. Two years later she attended its première at the Liverpool Empire Theatre. I wrote the new 'touring' stage play version last year. Which of Helen’s personal qualities did you most admire? I admired her determination. Despite everything that was thrown at her she went on to become hugely successful. On a personal note, what do you like to collect? I'm not a collector of things. I have a number of instruments which I have had for many years and still use daily. Where do you like to go on holiday? Holidays? I go to the Caribbean pretty often. I like to take my laptop and write while I'm there. Favourite restaurants? I don't have a favourite restaurant. I like to eat at home. What is your guilty pleasure? No guilty pleasures. And if I had any I certainly wouldn't be telling anyone. What is your favourite musical? Although I've written a couple of musicals I'm not a big fan of them. If I had to choose one it would be Chitty Chitty Bang Bang. The songs are brilliant! What decision have you made that you most regret? Do I have any regrets? I don't think it's healthy to dwell on things I can no longer do anything about. After the tour, what is next for you? After this tour I'll be working on getting my new stage play,' Lennon's Banjo', up and running. I'm also writing a sequel to Twopence, 'By The Waters of Liverpool'. Last week the Under 7’s were led out with the team in their 2-2 draw with Hale. Six year old goalkeeper Arthur Palmer said “It was an amazing experience walking out with the goalkeeper. When I grow up I want to be goalkeeper for Vauxhall’s. He asked me what I thought the score would be and I said 3-1. He asked didn’t I think he’d keep a clean sheet and I said no. I was right!” If you would like to get your young child involved in football in the development stage, training runs from 9.30am to 10.30am on a Saturday on the astroturf pitch at Rivacre Park for children 5 and under. The club has a five year plan to get the first team back into the Conference North and the new complex and training facilities will give Vauxhall Motors FC the best facilities outside the Premier League.

HESWALL GOLF CLUB INVEST £200K TO IMPROVE GREENS

Heswall Golf Club has sat on the banks of the River Dee since 1902 and so have many of our greens. The natural land underneath us is mainly clay based. With increasingly wet winters (and a lot of the summer), this surface isn't ideal for good playable putting surfaces all year round. At the end of September, Heswall Golf Club embarked upon a £200k project to convert six more of our old clay greens into the more widely used USGA greens. This construction allows for much more efficient drainage due to the layering technique. The works will be carried out by 1st Golf Construction Ltd, whom in there 28 years of experience have worked on six Open Championship venues. Work will take no more than a month to compete all six greens: 2nd, 3rd (and re-shaped), 4th, 12th, 15th & 17th and will result in members and visitors alike being able to enjoy firmer, faster greens for 12 months of the year with consistency throughout. Whilst the work is underway, there will be a bedding in period over the winter but the main shapes and contouring of the greens will remain the same. It’s not everyday you get to experience the breadth of a Land Rover’s capability - without leaving the city. However, the September meeting of Cars and Coffee Liverpool made it happen. Halewood Land Rover Experience brought the Land Rover Terrapod - a portable urban off-road unit which allows passengers to get a real feel for the prowess of Land Rover’s all-terrain vehicles. Designed to show off the capabilities of the cars – the Discovery 4s, Discovery Sport, the flagship Range Rover and the newly launched Evoque The course features a vertiginous slope and a knife edge ramp, plus ‘walking holes’ which generate a strong rocking action. The experience is not for the faint-hearted. Neil Roscoe, Garry Watson and Richy Soden Barton from Jaguar Land Rover Tata, were more than happy to collaborate with Norman Shum at Cars and Coffee Liverpool in bringing the Terrapod to the meeting to raise money for charity. The chosen charity was the James Apter Friendship Fund. James, passed away in September 2011 after a battle with Acute Myeloid Leukaemia. His parents James and Kim set up the fund last year to buy toys for patients at the West Derby hospital where the nine-year-old was treated. James was born with Cystic Fibrosis, so the fund has donated gifts to both the oncology and CF wards at Alder Hey. To date, Cars and Coffee Liverpool has raised over £1200 and is expected to carry on supporting and raising more towards 2017. Kim Apter said their aim is to brighten up the day for young hospital patients in memory of caring, popular James. “We’ve also given sticker books and little toy dogs like the one James had. James loved them because they took his mind off his treatment. This has never really been done for cystic fibrosis patients - it’s usually for oncology patients, but we wanted to do something for CF kids as well.” Since James’ death, his parents have raised thousands of pounds for the Cystic Fibrosis Trust. The Land Rover Experience team provided the pro drivers and vehicles for the meeting. It was on a first-come, first served basis - free ride. A passenger makes a donation of around £1 for an experience in any of the 4 latest models on this exhilarating Terrapod. All money raised went to the James Apter Charity. Both car fans and children thoroughly enjoyed the experience, giving the opportunity to taste what Land Rover as an off road vehicle are capable of doing. As Land Rover say the Terrapod is designed to demonstrate Articulation, Traction Control, Terrain Response – in short, the state of the art dynamic technology that makes Land Rover a premium SUV. Even old 4x4 enthusiasts gave the team a warm welcome. A fun morning for everyone involved together with many a Supercar, Classic and 4x4 vehicle owners who came from far and wide. But what’s great about Cars and Coffee Liverpool is the sheer variety - you never know what is going to make an appearance lurking away from the main car parks. Inspirator plays a series of engaging video clips while monitoring the users’ facial expressions and reactions. The app then interprets these minute facial movements to configure a personalised Bentley that best suits their lifestyle and preferences. I never quite got to grips with the older ‘Boxy’ XC90 – so, when Volvo announced that they were going for a bold new move on updating the old model, I was a little worried that it would be no more than some new door handles. So, when I first got a glimpse of the new XC90 – I was actually jumping for joy because Volvo had made good on all its promises of producing something bold and new and what you see now before you is something that I can only describe as a thing of beauty that will have you basking in its beauty for some time to come. More importantly here though is, I have a new best friend that I won’t be letting go of anytime soon. Also, people used to think that owning a Volvo was boring or just for pensioners – wrong. Owning a Volvo is now classed as being cool and hip. Many people are now seeing the error of their ways, heading like a Cruise Missile locked onto their nearest Volvo dealer.

Exterior: the new XC90 is a car that stands out from what everybody

else is driving around you. It is very futuristic looking, but it does keep some of the standard Volvo appearance that I loved so much about the older model – such as being Big & Bold.

Inside: is a real pleasure to behold. It’s well equipped and has some very nice touches around the centre console. To be honest, sitting in here is like sitting in the Royal Suite at the The Goring, where everything you will ever need is just a button push or arm’s reach away. Volvo really has done the most brilliant job of making you feel like it was made just for you. Standard equipment on the New XC90 starts with - 9” Centre Console Touch Screen, Sensus Navigation – full European mapping with traffic information and lifetime map updates, Volvo On Call function that also acts as an emergency and tracking service, LED Headlights with Active Beam, two zone climate control with ‘CleanZone’ Air Quality System, Power Operated Tailgate with Handsfree Opening, Keyless Entry and Start, Power Drivers Seat, heated front seats, seven seats three second row individual folding seats with fore/aft adjustment and two third-row individual folding seats, City Safety – includes Pedestrian and Cyclist Detection and Front Collision Warning with Full Auto Brake, including at junctions and Run-off Road Protection. As you can see that’s just the start. There are also additional option packs you can add in to create even more luxury such as Xenium, Winter and Family. Space: inside the cabin is a big plus point for the XC90, it has plenty of room for everyone. Boot space is brilliant and even better with its split folding seats. There is more than enough space in here for your entire family, even with the use of the seven seats, there is still enough room for a few bags etc… not like some seven seat cars I have come across in the past, where you see the third row passengers faces being contorted against the glass in the rear window due to lack of rear seating space.

On the road: the XC90 is comfortable and is agile enough to keep up with the demands of a heavy left foot – but to be honest you don’t drive around in a luxury XC90 with your hair on fire – you simply glide. If you do decide to push the car a bit ‘gung ho’ down a smooth country lane or even around some twisty curves you will find it’s actually very smooth with just a hint of body roll here and there. Hybrid mode: The T8 can be run just on the electric motor alone and

by using just this function - it will provide you with an average range of about 24 miles. But, because I’m a petrol head – I used a combination of the two and decided to let the cars computer switch between the 320hp petrol engine which drives the front wheels and the large 87hp single electric motor that drives the rear axle – also, while we are at it – the XC90 is able to generate electricity under braking which will all help in recharging the system to gain a few extra miles.

Power & performance: is a key part of the XC90 T8. Volvo claims a

5.6sec 0-62mph and I would agree with that because it feels immense and when you think about it – that’s Porsche beating territory, also if you own a Ferrari I would think twice about a race from the lights to 60mph. But remember the XC90 comes in at around 2,300kg, so it won’t keep up for long. If you are a person who only lives 15 miles from where you work – then you could in all possibility effectively run it entirely on electricity alone by charging it from a mains supply – but of course in the UK will are still finding our feet in the new age of Hybrid Technology and finding a charge station when you live in a remote village somewhere in North Wales will be quite difficult. If I was you – I would opt for the ‘Hybrid’ mode setting as this allows you to use the best of both worlds. (I did for most of the time) Safety: Well let’s just say it’s a Volvo and it has you covered. No worries here then. Would I buy one? A big fat YES, but I can’t afford one – but as a man I really, really, really do want one of my own. BTR WIRRAL HALF MARATHON

More than 2,000 runners took part in a hat-trick of race events across Wirral. Runners from across the region descended on Wirral to take part in races BTR Wirral Half Marathon and 10K, organised by Hoylake-based organisers BTR in parks, on the beach and along the coastline. Named as Event Of The Year 2015 at the Wirral Tourism Awards, the BTR Wirral Half Marathon and 10K started at Birkenhead Park, before a picturesque route took runners along the Wirral coastline to Fort Perch Rock, before finishing at The Dips in New Brighton. The half marathon runners continue along to Leasowe before all returning to finish at New Brighton. More than 300 runners also took on the second annual Whistle Stop Tour Of Wirral – a 26-mile three race challenge across three days, sponsored by Heswall-based Creation PT. The Wirral tour event consisted of a fast five-mile race at Arrowe Park followed by a challenging eight miles 94 wirrallife.com

THE RED FOX BEER FESTIVAL The Red Fox held their second beer festival of the year. With over 40 beers on handpull, plus a gin and prosecco bar; there was a great selection of beers on offer, ranging in strength and style - from easy drinking blonde ales to a “Rice Pudding” style beer with nutmeg, rice and blackberries in the brewing process. Peerless and Deva Craft breweries spoke to customers and showcased a few of their beers. For the 3rd festival running, “Odin” by Brightside brewery in Manchester was the champion beer of the festival, with Rosie’s “Black Bart” winning the award for best cider.

The Red Fox also teamed up with Big Hand Brewery in Wrexham to brew a collaboration beer. It was aptly called “Big Fox” and was runner up to Odin. The Gin bar was headlined by Red Fox’s own Gin, alongside Wirral Gin, Liverpool Gin and Hunter’s Cheshire Gin. Overall, it was a great family day out with bouncy castle, garden games, face painting and a Chester Zoo talk about their conservation schemes. We’re already looking forward to the next festival in May 2017.

On Wednesday 28th September The Lord Mayor of Liverpool launched her Supper Club at Olive Restaurant on Castle Street Liverpool. Over the next 6 months, the Supper Club will meet at six different venues around Liverpool and the ticket price is ÂŁ25pp. The first event was hugely successful with 38 people attending and everyone present had a great time. Ticket sales and the raffle raised ÂŁ500 for the Lord Mayor's Charities. The evening also provided an opportunity to meet and spend time with the Lord Mayor and her Consort, Cllrs Roz and Roy Gladden. Liverpool International Horse Show Charity ‘Ride into Liverpool’

On the day, up to 50 horses and riders including key sports figures and celebrities as well as local riding schools will be riding along a designated route from the city’s Garden Festival Site in to Riverside Drive and on to Salthouse Quay before ending at the ACC Plaza and Echo Arena. The route is approximately 4 km and so collectively the horses will take more than 50,000 strides along the way. During the event, the team will be supporting the Bob Champion Cancer Care Trust and Bob Champion will be on horseback during the event for the first time in 4 years. International Guitar Festival

Wirral prepares for a great month of music that will, once again, show the versatility and range of the guitar throughout the history of every genre of music. Wirral and Liverpool are joining forces on a very special event – and there will be fireworks!
