□ 1 small shallot, finely chopped □ 10 ounces button mushrooms, cleaned and chopped □ Vi teaspoon dried sage □ Ground black pepper DIRECTIONS: Preheat oven to 450 degrees. Pierce potatoes all over with a sharp paring knife and bake until knife can be easily inserted into centers, about 1 hour. Let stand for 15 minutes, peel, and mash with a potato masher. Let cool slightly. • Line a baking sheet with parchment paper and sprinkle with flour. Place potatoes in a large bowl. Stir in egg, Vz teaspoon salt and 1/3 cup Parmesan with a rubber spatula. Add flour and give mixture a few turns with the spatula to form a rough dough, then turn dough onto a floured countertop and knead, adding more flour as necessary, to get a smooth (but slightly sticky) dough. • Divide the dough into 4 pieces. On a lightly floured countertop, roll dough pieces into 1-inch-thick ropes. Cut each rope into 1-inch pieces and place pieces on prepared baking sheet. (To give gnocchi classic indentations — optional — hold a large fork, upside down, over each one and then press on each dumpling with tines as you roll it toward you.) Cover with plastic wrap and refrigerate for up to 6 hours before cooking. • Bring a large pot of salted water to boil. Melt butter in a large skillet over medium heat. Add shallots and cook until softened, about 3 minutes. Stir in mushrooms, sage and V2 teaspoon salt and cook, stirring, until they’ve released their liquid, about 5 minutes. Turn off heat and cover to keep warm. Add half of gnocchi to pot and cook until they float to surface. Remove with a slotted spoon and transfer to skillet. Repeat with remaining gnocchi. Heat through, toss with remaining 2/3 cup Parmesan, season with salt and black pepper and serve.

You could have a chef prepare a delicious and nutritious meal, serving it with flare and they would prefer the dog food every time. Most parents have a concern for the health and welfare of their offspring and so they resort to meal­ time bribery, cajoling and eventually bribery in order to get children to eat the proper foods. In the end we cave to their stubborn wills and dump the food. I can recall my own experiences. You work all day. shop for healthy food alternatives and spend your evening boiling and baking while children howl in the background about how starved they have become. Finally presenting the food to the table you collapse in your chair hoping for a peaceful meal. Your once starved children are no longer hungry, at least for the food you made. Losing your will to fight you simply open another box of candy coated sugar bomb cereal and let them eat out of the box in front of the TV. We finally got smart. Instead of repeating the pro­ cess night after night we would simply cook the food and throw it away. Sometimes if we were tired, we didn’t even cook it. The above scenario repeats itself over and over in American homes. It would seem that this would help prevent the obesity problem, but in fact it is worsen-

ing severely. Obesity in America is a tragic problem that is pre­ ventable, but it takes a willingness to change our life­ styles. Fast food is fat food. Due to over scheduled lives, we have shifted from family meals to snacking and eating on the run. Processed foods loaded with unhealthy fats and additives and tons of sodium is replacing the healthy slow food that mom or grandma used to make. Obesity isn’t just the problem; it is also a symp­ tom of a bigger problem. Our lives are out of control. Relationships have become distant. We have avoided direct interaction for texting, emailing and Facebook. These activities are actually inactivities. Instead of walking after dinner, we sit in front of the TV or computer for hours while continuing to snack on Junk food. We are substituting laziness for manual labor. We are making ourselves sick in the process. What can you do?

Make an effort to save the family dinner time. • Children will learn to eat healthy by following your examples. If they never sit down to a meal at home, they will perpetuate the unhealthy practices in their own families in the future. Avoid fast food and eat slow food. • Enjoy active hobbies that involve some physical activities that also involve your children. Hunting, fishing, camping, gardening, softball, hiking are all examples; but there can be numerous others that will meet your needs. • Resolve to lead a better life this year.
