ori is originally from the Downriver Detroit area and moved to the Kalamazoo area twenty years ago. She completed her undergraduate studies at Wayne State University, and received her MSN / Midwifery degree from the University of Michigan in 1993. She has practiced Midwifery for almost 25 years, specifically in the Kalamazoo/Battle Creek area for the last 20 years. Lori enjoys caring for women and their families and has worked with women of all backgrounds and beliefs. Lori specializes primarily in caring for women in pregnancy and labor and assists women in achieving the birth experience they desire safely, while sometimes collaborating with associate physician colleagues who care for at risk women. She also offers routine gynecologic and family planning care. Her life outside of the office centers on her husband and three children - two grown sons and a daughter still in high school. ecently, I’ve spent a lot of time walking outdoors, an attempt to improve my health and hopefully lose some weight! I’m fortunate to live close to a nature preserve so I am blessed by some beautiful views as I walk. On one of those walks I watched a Canadian goose fly overhead and land in the water feet first. It occurred to me that that’s how many of us live life. We jump in, but only after first testing out the water with our “feet.” Sometimes that makes great sense, but there are times when we should throw caution to the wind and “go for it”, even if it means doing a big belly flop into that great pond of life.

Canadian Geese mate for life. If they lose their mate they immediately look for another. A garden caterpillar has 248 muscles in its head. A moth has no stomach. The great horned owl has no sense of smell.

With that image in our minds, allowing it to challenge and inspire us, let’s make this summer one of experimentation and adventure. Have you ever been bungee jumping, horseback riding, zip-lining, kayaking? No? Why not give them a try? Last year I started kayaking and this year I plan to try fly fishing. I’m also looking forward to reacquainting myself with an old favorite pastime; camping. So, what’s going to be your great adventure this summer? Learning something new is an amazing way to stay young, feel refreshed and, at the same time, remember who you are. I challenge you to bring something new into your life this summer...and every summer thereafter. To all the men in our lives …we love you! Thank you for being the outstanding husbands, fathers, grandfathers, sons, brothers and just all-around “good guys” that we know and love. Although we don’t say it often enough, we truly appreciate you and everything you do to enhance our lives. Without a doubt, we are so blessed to have you.

ach month in this section of the magazine we take the time to tell you about the women of Kalamazoo who are making a difference in our community and inspiring us to do the same. Though we are a women’s magazine, written for women by women, we are keenly aware that the men in our lives are so important and need to be celebrated as well. That’s why we set aside June’s edition each year to acknowledge the love, support and influence the men in our lives offer. Who better to acknowledge and honor this month than the man who finally brought Chick-fil-A to Kalamazoo? Idris Rashid was born and raised in Michigan, getting his start in Pontiac before coming to Kalamazoo to attend Western Michigan University, where he earned a Bachelor of the Arts in Business Administration and a Master’s Degree in Leadership. Upon graduation, Idris began working with Daimler Chrysler before leaving them to work for PepsiCo. His work with PepsiCo eventually landed him in Central Texas where he served as Zone Operations Manager overseeing eight facilities. When Idris and his wife, Marcia, decided they wanted to move back to Michigan, he joined Motovicity as the Distributions/Facilities Manager. Not long after his return to the Kalamazoo area, he was thrilled to be selected as a Franchisee for Chick-fil-A. Ever since his youth in Pontiac, Idris has been committed to working hard to make his dreams come true. He had a paper route at ten years old and was soon operating a lawn-mowing enterprise. By the tender age of twelve Idris had learned how to cut hair and quickly built a business doing so. He worked as a behavior specialist and building trainer at Kalamazoo’s Northeastern Elementary School while working toward his Master’s Degree at WMU. Idris credits his work ethic and dedication to his father who earned a purple heart during his service

Entrepreneur & Business Owner in the Korean War and worked for Consumer’s Energy for 36 years without missing a day. Being his own boss has always been a dream of Idris’ and being chosen by Chick-fil-A was an amazing fulfilment of his aspirations. The store opened in February, the third Chick-fil-A to open in West Michigan, and has been a resounding success. He and his lovely wife, Marcia, have a seven-year old daughter named Laila and are in the process of adopting three year old twins Henry and Arnold from the foster care system. Idris is inspired every day by his wife and credits her for encouraging him and believing in his dreams. He knows that, without her unwavering love and support, he would not be where he is today. When he’s not filling the bellies of his happy customers, Idris enjoys a good game of competitive softball. He’s also passionate about inner city economics and education, as well as autism enhancement and resources.

our garden can look rosy and riveting, and you can do it today!

The past 20 years of plant breeding has yielded landscape roses that are hardy, prolific bloomers requiring little maintenance. Known as “shrub” roses, they are grown on their own root, making them versatile and durable. Roses are divas of the landscape, and need ample sunlight to blossom at their peak performance. Plant them in an area that gets at least eight hours of light during the growing season. Roses are also heavy feeders, so make sure to fertilize them during spring and summer with a complete rose fertilizer. If you take care of these classic beauties, they will flower beautifully well into October and even November.

&RIVETING Bear in mind that these new generation roses also are available as groundcover. Varieties like Drift roses can cover a vast amount of space with stunning color. Air circulation is vital to keeping roses healthy, so don’t over crowd them with other plants. Ornamental grasses are wonderful companions for roses, providing a complimentary backdrop for their vivid hues. Blue hues add allure to any landscape, making the sun-loving nepeta and lavender an excellent partner for your roses. Also consider Heliotrope, a deep purple perennial that will show off your roses at peak bloom in mid-summer.

When planting these riveting landscape roses, avoid mixing colors. Plant at least three (odd numbered plantings usually look the most natural) of the same shade together to create visually impactful display.

Today’s landscape and groundcover roses require regular pruning to keep plants compact, but there is no need to shear these “self-cleaning” flowers like we did the large hybrid tea roses in the past to get them to re-bloom; simply prune as needed to keep size in check a couple times a year. You can cut plants back annually by one-third to one-half to encourage fresh growth.

Blackberry Quinoa Salad makes 4 servings For the Salad:

1 cup quinoa uncooked 2 cups water 1/4 teaspoon of salt 1/2 tablespoon vegetable oil 1 pound chicken Italian sausage, cooked and sliced 1/2 cup parsley 1/2 cup shaved Parmesan cheese 1/4 cup green onions, sliced 1/2 cup red pepper, sliced thinly lengthwise 1 cup fresh or defrosted frozen blackberries Bring water to boil in a medium saucepan. Stir in quinoa, oil and salt. Reduce to low and cover. Simmer 10-15 minutes or until water is absorbed and quinoa is fluffy. Transfer to large size bowl. Cool 10 minutes. For the Dressing:

cup white wine vinegar cup Extra Virgin Olive Oil tablespoons chopped flat leaf parsley teaspoon salt teaspoon black pepper

Whisk dressing ingredients in a small bowl. Set aside. Toss quinoa with dressing. Stir in green onions, red pepper slices, sliced sausage and parsley. Mix well. Gently stir in blackberries to combine with salad. Top with shaved Parmesan. Serve immediately.

Pork Tenderloin Medallions with Raspberry Sauce makes 4 servings 1 pork tenderloin (about 1 pound) cut into 8 crosswise pieces Cayenne to taste 2 teaspoons butter 2 kiwi fruit, peeled and thinly sliced 5 tablespoons red raspberry preserves 2 tablespoons red wine vinegar 1 tablespoon ketchup 1/2 teaspoon horseradish 1/2 teaspoon soy sauce

1 clove garlic, minced 1/2 pint raspberries With heel of hand, gently press each medallion to 1-inch thickness; lightly sprinkle both sides with cayenne. Heat butter in nonstick skillet over medium-high heat. Add pork medallions and cook 3-4 minutes on each side. Meanwhile, in small saucepan stir together preserves, vinegar, ketchup, horseradish, soy sauce and garlic. Simmer over low heat for 2 minutes, stirring occasionally. Keep warm. Place medallions on serving plate and spoon sauce over top each medallion with some sliced kiwi. Garnish serving plate with remaining kiwi slices and fresh raspberries.

White Chocolate Raspberry Truffle Bars makes 24 squares 1/2 cup butter 8 ounces white chocolate 1 1/2 cups sugar 4 eggs 2 teaspoons vanilla 1 1/2 cups white flour 1 1/2 cups fresh or frozen raspberries 1/2 cup hazelnuts, chopped

1 cup chocolate chips

Melt together butter and white chocolate in top of a double boiler. Mix sugar, eggs and vanilla in mixer bowl. Add white chocolate/butter mixture to sugar mixture. Mix well. Slowly beat in flour until incorporated. Pour half of mixture into an 8x13x2-inch pan. Sprinkle top with raspberries. If using frozen berries toss unthawed with 2 tablespoons flour. Pour other half of mixture over berries. Top with nuts and chocolate. Bake at 375 degrees F for 35 minutes or until a toothpick comes out clean. Cool on a wire rack. Cut into squares.

Blackberry-Almond Shortcake makes 6 servings For the Shortcake: 2 1/4 cups all purpose white flour 1/3 cup sugar plus 1 tablespoon for sprinkling over biscuits 1 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup cold unsalted butter, cut into small pieces 2/3 cup buttermilk 1 beaten egg 1 teaspoon almond extract 1 tablespoon Grand Marnier 1 tablespoon grated orange peel 1 tablespoon whole milk 1/4 cup sliced almonds

Preheat oven to 425 degrees F. Coat a baking sheet lightly with nonstick cooking spray or line it with parchment paper. Set aside. In a mixing bowl, stir together flour, 1/3-cup sugar, salt, baking powder and baking soda. Using a pastry cutter or your fingertips, cut butter into the flour mixture until crumbly. In a small bowl, combine buttermilk, egg, Grand Marnier, orange peel and almond extract. Make a well in the center of the flour mixture and add the buttermilk mixture. With a fork, stir just until combined, adding additional buttermilk as necessary to form slightly sticky dough. Do not over mix. Place the dough on a lightly floured surface and sprinkle with a little flour. With your fingertips, gently pat dough to an even 1-inch thickness. Using a 3-inch round cookie cutter, cut out shortcakes and transfer them to the prepared baking sheet. Gather together scraps of dough, re-roll and cut remaining shortcakes to make a total of six. Brush milk over shortcakes. Scatter almonds over the tops and sprinkle lightly with the remaining 1 tablespoon sugar. Bake shortcakes for 10-15 minutes or until golden. Transfer them to a rack and let cool slightly. For the Fruit Filling: 6 cups fresh or thawed frozen blackberries or Marion berries 1/3 cup sugar preferably superfine 1 pint heavy cream 1 tablespoon sugar

Blackberry Salsa makes about 2 cups Nancy Zaslavsky’s recipe courtesy of Oregon-berries.com, uses a variety of chilies and citrus fruits to create this zesty salsa for your next get-together. 1 cup coarsely chopped white onion 1/2 stemmed and minced yellow/orange chile manzano (aka chile perón, black seeds removed) or substitute 1 Serrano chile or 1 jalapeño chile (unseeded) 1 cup blackberries (fresh or thawed frozen)

1 Valencia juice orange, juiced 1 Mexican lime (aka Key lime, if available), juiced 1/2 cup chopped cilantro 1 teaspoon organic agave syrup or sugar 1/4 teaspoon sea or kosher salt Place the onion and chile into a blender or food processor. Pulse. Drop in the blackberries and pulse again. Pour in the orange and lime juices. Add the cilantro, sweetener and salt. Pulse one final time to a coarse texture. Taste. Adjust seasoning and add more minced chili for a spicier salsa, if desired.

In a large bowl mix berries and sugar set aside for a few minutes. Whip cream with tablespoon of sugar and liqueur until soft peaks form. Using a serrated knife, split the shortcakes. Set bottoms on dessert plates, then spoon on whipped cream and then the fruit mixture and crown with lids. Top with whipped cream if desired. Serve immediately.

Vitamin DThe Sunshine Vitamin I

f asked, I am sure many would know their cholesterol level, blood pressure and maybe even fasting blood glucose. These are routinely checked and are used for markers to diagnosis disease. What about your vitamin D level? How many know that? Our vitamin D level can also be considered a snapshot to our overall health. Vitamin D is one of the fat soluble vitamins needed by our bodies. We call it a vitamin, but it is actually a steroid hormone produced from cholesterol upon exposure to the sun.

The best way to get vitamin D is via our friend sunshine.

Most promoted for its role in bone health and increasing calcium absorption, vitamin D has benefits that extend way beyond. These include improved mental health and brain function, improved immune function, decrease in pain, appetite reduction and reduced risk of cardiovascular disease and type 2 diabetes, as well as an overall sense of wellbeing. Surprisingly, low vitamin D levels have been associated with all chronic diseases. Its hard to say whether low vitamin D is the cause, but in every case a deficiency is present. Vitamin D is one of the top nutrient deficiencies seen today. (I once heard it described as a silent epidemic, and I think that is true.) A simple blood test will tell you where you fall. Optimal range is between 50-70ng/ML. I know my level is 31ng/ML, which is considered deficient. The best way to get vitamin D is via our friend sunshine. Unfortunately, we live in Michigan and we don’t see the sun very often. Add the use of sunscreen which blocks the harmful rays of the sun and therefore production of vitamin D, and it shouldn’t be a shock that we need more. The best food sources of vitamin D are from fatty fish (cod, tuna, mackerel, salmon

and sardines) and eggs. Otherwise, the food we is eat is ‘fortified’ by adding in additional vitamin D. This makes it very hard to maintain normal levels. Therefore, the best way is to supplement. It can be fair to assume 2000- 5000IU of vitamin D3 daily is needed to maintain current level, and higher doses can be necessary. There is perceived misconception that because vitamin D is stored in our fat, taking too much can become toxic. So grab a friend or two and fill up your tank because we’re taking a West Michigan Road Trip—one diner at a time.

STOP 1 - BLUEBERRY PANCAKES AND BLUEGRASS

Breakfast is to diners what corned beef hash is to eggs. We begin our tour at the marvelous Nena’s Cooper Café in Cooper. You know that the breakfast is going to be excellent when a diner doesn’t even try to mess with offering dinner. This quirky diner features an electric train that circles the dining area, and while you’re enjoying your breakfast burrito, you just might be serenaded by a bluegrass band that drops in regularly. Make sure to take the scenic drive up M-43 to NEDS. Slow down as you pass by the North end of Gull Lake. n the spring, Girl Scouts sell cookies. In the summer, they head to camp. But that’s not all Girl Scouts in southwest Michigan can do, said Jan Barker.

Girl Scouts Heart of Michigan, the organization covering the Kalamazoo area, is launching what it’s calling the equality campaign this year. Barker, the chief executive officer of Heart of Michigan, said the goal is to go beyond the stereotypes of Girl Scouts and even young women outside of scouting.

“Everyone knows incredible leaders are born out of the Boy Scouts program,” Barker said. “The same applies to Girl Scouts.”

A NEED FOR MORE The Heart of Michigan council includes 34 Michigan counties, from Kalamazoo to Ann Arbor, and north to Lansing and Saginaw. It includes about 25,000 members. Girl Scouts are between the ages of 5 and 18, moving into different levels of the program as they graduated into new school grades. The highest award for a Girl Scout is the Gold Award, though Barker acknowledge that the insignia and requirements for Girl Scouts aren’t as well-known as their male counterparts. To earn a Gold Award, girls have to work on projects in media awareness and social advocacy, among others. Another area that many girls are interested in is science

Scouts trying things they’re asking for, things outside the “traditional” list of activities for girls. It’s also to put them in charge. In June, Barker and scouts will be headed to Savannah, Georgia, to visit the birthplace of Girl Scouts founder Juliette Gordon Low. The journey there and back will be planned by the scouts, Barker said.

“We want to teach decision making, team building, and leadership skills... Girl Scouts is the place where girls learn how to advocate for themselves and others.”

The Source, a listing of 2017 events available to Girl Scouts in Michigan, includes arts and craft projects, cooking and other traditional scout activities. But there’s also a new press corps, where scouts can write and publicize their own media releases. One program leads girls on a tour of the Michigan State University Federal Credit Union to see the day-to-day activities of a business. A “puberty workshop” encourages mothers and daughters to talk with social workers, health care professionals and one another. Wall climbing and white water rafting is planned. And summer Camp Merrie Woode in Plainwell is adding archery and rifle shooting to the list of options.

“We want girls to know about golf, because (business) decisions are made on a golf course,” Barker said.

“They get to practice skills like planning a route and planning meals,” she said. “They learn how to share their gear and make decisions — someone wants to eat seafood, but someone else is allergic.” Scouts will also start to lead their own activities in camp, and develop the skills to talk with adult leaders about what they want to be able to do and learn.

So far, the equality for girls program is a creation of the Heart of Michigan group, after discussions with Girl Scout leaders, parents and girls themselves. Barker said she hopes a positive response will result in the equality program being copied across the country, or at the very least attracting more attention to the scouting program here in Michigan. Pork Schnitzel with Jager Sauce JAGER SAUCE (MUSHROOM BEEF GRAVY): ½ cup diced onion 2 cups sliced mushrooms 1 Tbsp. oil (your choice) 1 tsp black pepper ½ tsp salt 2 cups beef stock Roux 4 Tbsp. butter and 3 Tbsp. flour

Sauté onions and mushrooms in oil. Add pepper, salt and beef stock. Cook on med heat. Make Roux by melting butter and slowly whisking in flour till it forms a thick paste. Add to hot beef stock mixture. Stir constantly until thoroughly mixed.

Pound the pork loin with meat mallet until 1/8” thick and even. Season flour with salt and pepper. In a separate bowl season bread crumbs with salt and pepper. In another bowl whisk eggs and water until frothy. Dredge pork in flour, then eggs, then bread crumbs making sure all surfaces are evenly covered. Heat ¼” of oil on medium heat. Place pork in oil and cook until golden brown, 2-3 minutes. Flip over and cook other side for the same amount of time. Remove from oil and remove extra oil by placing it on paper towel. Cover schnitzel with gravy and serve with sauerkraut and German potato salad.

Hit The Road, Class Comstock-area students and mentors ready for the Great Race BY ANDREW DOMINO

E

ach week this winter, high school students Jacob Onderlinde, Madison Gremore and Coleman Rodriguez prepared for a race by going back in time. They’re three of six high school students, joined by four adult mentors, taking part in this year’s Great Race. Teams ride in classic cars from Jacksonville, Florida, to Traverse City over the course of nine days in June and July. The car, a 1935 Packard, has been rebuilt by hobbyists over the past few years at the Gilmore Car Museum. Onderlinde, Rodriguez, Gremore and others will be riding in the car during the race, and making sure it stays in shape over the 2,400 mile route. “It’s a lot simpler (than modern cars),” said Onderlinde, a home-schooled freshman from Comstock. “There’s not so much plastic in the way.” The car was donated to the museum, located in Hickory Corners, in 2006, said the museum’s marketing director Jay Follis. The Great Race has been taking place since 1983, but this is the first time the route has run through southwest Michigan. It’s not a race for speed, but instead an endurance rally, giving crews a chance to tour the U.S. in cars made before 1973. Teams stop for meals and to tour car museums; the Gilmore is hosting racers for lunch on June 29.

Only a few of the students are working on the ‘35 Packard competing in the Great Race; the museum’s Gilmore Garage Works program runs throughout each school year, bringing students and adult classic car fanatics together to rebuild cars, in some cases, from the ground up. “Body work is completely new to me,” said Gremore, a senior at Comstock High School. “My teacher says, ‘My favorite car is a broken one — so I can make money from it.’” The cars the Gilmore Garage Works teams revitalize are included in the museum’s collection. More importantly, they’re great teaching tools.

been learning about the car so they can fix it if something goes wrong on the race route. The 10 members of the team will take turns behind the wheel of the car, while the rest of the group follows in a van. The race has a pre-set time to achieve; move too slow and the team gets a lower score.

“It’s a bonding time with people who are making these cars and want to show them to the world,” said Andrew McFarlen, who was part of the Gilmore Garage Works program all through high school and is now a technology student at the University of Northwestern Ohio. His schedule keeps him from joining this year’s Great Race, but he said he appreciates the skills he learned building cars at the Gilmore Car Museum. They’re skills that are being lost. “My professor, he can’t find kids who want to do the work,” McFarlen said. “A computer will tell you something is wrong, but you still have to replace it.”

Gremore said she doesn’t travel often, so she’s a little nervous about actually heading out on the Great Race. But she isn’t worried about her chosen career path. “I was worried I wouldn’t have enough experience when I was first in class,” she said. “But it turned out I knew some things the guys didn’t. Now people respect me and ask me for help.”

Kote is the quiet innkeeper of a small rural village and knows how that the world is in a state of disillusionment. When a mysterious writer called Chronicler arrives at his inn, Kote reluctantly reveals himself to be Kvothe, the legendary adventurer, and thus begins a three day recounting of his amazing tale.

On a trip to Hawaii with her servant Gulietta, LeighCheri meets charmingly unstable Bernard Mickey Wrangler, better known as notorious outlaw bomber The Woodpecker. The results of their meeting is more explosive than they could have ever imagined. Robbins writes his with a signature, unabashed wackiness. Occasionally philosophical, often lyrical but mostly just plain fun, this unrelenting tale allows readers to witness a truly unique kind of love.

Rothfuss writes with an intensely poetic prose. A healthy mix of Game of Thrones and Lord of the Rinds with a dash of Harry Potter, The Name of the Wind is a fully engrossing fantasy experience that should not be missed.
