CARROT CAKE RECIPE CAKE INGREDIENTS ½ c Oil ½ c Castor Sugar 3 Eggs 1t Vanilla Essence 100g Chopped or whole Walnuts or Pecan Nuts 1t Bicarbonate Soda 1c Finely Grated Carrots 1t Baking Powder ½ c Flour 1t Cinnamon (ground) Pinch of Salt ICING 1tub Smooth Plain Cream Cheese 50g Melted Butter ½ t Vanilla Essence ½ c Icing Sugar Pecan or Walnuts to Decorate – Optional Carrot Cake Instructions Preheat Oven to 180 Grease cake tin. Beat oil and sugar and then add one egg at a time in between beatings. Add Vanilla Essence, Flour, Bicarbonate Soda, Baking Powder, Cinnamon and Salt and whisk well. Add Grated Carrots and then stir in the Nuts. Pour mixture into cake tin and bake for 45-60 minutes. Once cake is cooled, whisk together the icing ingredients. Can be served on the side, or decorated on the cake, with the nuts.
