Your kitchen philosophy? I like to reinterpret the tradition in my own way. For example, the Riso in cagnone (Rice with butter and cheese) has become a signature dish, but that wasn’t expected. The dish was so successful, we still have it on the menu. At first I was worried, I though “I wonder what the Milanese will think”, but instead it had the opposite effect, many have appreciated and thanked me because it somehow reminded their mother’s or grandmother’s cooking. From Apulia to Milan, with a significant experience at the Pellicano in Porto Ercole (Toscana): where did this passion for cooking come from? I take my passion for cooking and produce from my mother who still calls me from time to time asking for advice… She is an excellent cook, her eggplant rolls and her lasagne are worthy of three Michelin stars. Memories are fundamental in cooking. This is why it is important to reinterpret the tradition: many dishes are no longer prepared at home, so it is interesting to play with memories creating dishes that move the customer; this is our ultimate goal. © CHRIS TERRY

If you should give some advices to those who book at the Seta? I would certainly recommend booking the chef ’s table: it is a unique experience, which allows to witness first-hand the rhythm of the kitchen, creating a synergy with our brigade. For those who prefer an easier approach instead, or who come for a business meal, I recommend the carte blanche menu, which we offer for lunch – Saturdays included – and has three surprise courses, different each day. Sometimes for me this is a test for new dishes that still aren’t on the menu.

What is the secret of your success? We have a fantastic team, some people have come with me from the Pellicano, our strength is teamwork. Our pastry chef Nicola Di Lena has been working with me for eleven years, and Federico Dell’Omarino for eighteen. Without this team I would be nowhere. Knowing how to listen is just as important; we must always question ourselves, and travel. I can also reveal another secret: never take yourself too seriously. This should be a game, a pleasure. So cooking is a pleasure for you? Of course, it would be impossible otherwise. Every dish carries a message. Many customers tell me that could sit at the table blindfolded yet still immediately recognize that they are tasting a dish from the Seta: this is a huge satisfaction for me!

DISCOVER MILAN

Not an ordinary walk

Today’s Milan, between skyscrapers and futuristic squares, is all about the districts of Garibaldi, Isola and Varesine.

Just look up at the sky to see the Diamond Tower – so named because of the geometry that characterizes it – or the Unicredit Tower, the highest in Italy, at whose foot lies Piazza Gae Aulenti, with its unique 105 metre curvilinear bench that runs around the three circular fountains. From the square you can see the two residential towers of Bosco Verticale, designed by Stefano Boeri, a symbol for sustainability in Milan, which has at is heart a 95000 square meter park with over 450 trees, with areas dedicated to sports and food halls. With its long longitudinal profile, mostly in glass, lies the first work in the city signed by the Swiss studio Herzog & de Meuron: it is the building that houses the Giangiacomo Feltrinelli Foundation and Microsoft Italia, in Viale Pasubio. Face to face with James Bradburne

Architect, museologist and aesthete, the director of the Pinacoteca di Brera talks about the museum and the precious lesson of humanity he learned from his predecessors.

What does the Pinacoteca di Brera represent for the city of Milan, and how do you feel, as a foreigner, working for such an important Italian institution? I have been working in Italy for many years now, so many that I can hardly consider myself a foreigner any more. Milan is such an incredibly dynamic reality, after Expo the city experienced a true rebirth, rediscovering that social and civic cohesion that characterised it throughout the 50s and 60s; the same can be said of Brera, which, having survived both world wars, since 1950 has been at the forefront of an incredible artistic and cultural activity. Since then, it has faced the common fate of all state museums, whose management was consigned to the Ministry of Culture, that until 2014 managed and controlled from a distance all the different aspects related to management, prices, opening hours, activities, funds. Regaining decision-making authority allowed to bring new life and prestige to the Pinacoteca, so that it could stay in step once again with its city.

Which aspects of your management really made the difference? When I arrived in Brera I realised that there were many people working in the museum, but very few actually working for the museum. Just to give an example, no one had ever touched the correspondence of its three great directors, Modigliani, Wittgens and Russoli: it had been completely forgotten. Rediscovering those precious documents allowed me to not have to invent anything, but simply recover a vision of Brera that already existed, the “Great Brera”.

“The museum should live in the present time” In October the new set-up of the museum’s 38 rooms was completed; which was your inspiring guideline? The idea was to bring the visitor back to the heart of the museum experience with a more theatrical language, playing on contrasts and bringing the focus back on the object itself. The last set-up dated back to 1978 and at the time the colour white was chosen for the walls, as a symbol of light and modernity. 40 years later we needed to opt for something new, adopting a concept almost similar to fashion shows, in order for the artworks to speak a contemporary language once again. It is fundamental for a museum to keep pace with the times and stay relevant: it shouldn’t have the age of the artworks it houses. It is up to us directors to continuously revive and revalue our assets and our heritage.

Opening the Pinacoteca for social events has provoked scandal and outrage, for what reason? Frankly, I was struck by the lowliness of the controversies that these initiatives have raised. Fashion and design are part of our culture, they are two essential aspects especially in a city like Milan: this is what I meant

when I said that the museum should live in the present time. Fernanda Wittgens had conceived something similar back in 1956 with the “Fiori a Brera” (“Flowers at Brera”) initiative, opening the museum to fashion shows. Unfortunately we suffer from the fact of forgetting our own history: it’s amazing how people can live so strangely uncultivated all while being surrounded by a cultural heritage as rich as the Italian one. In what terms do you conceive a museum? And what limits did you find in Italian museums? The museum is an instrument of our social memory and as such it should be a living space, not a simple repository. If we don’t remember our past, we are doomed to repeat its errors, this is why an institution such as Brera must return to be discovered and loved once again. One often hears that in Italy there are many great museums: I disagree; there are indeed many great collections, but a museum isn’t simply the collection it houses. Artworks speak for themselves, but it isn’t enough, museums must know how to attract and create emotions around them. Fortunately this tradition already exists in Brera, it is only a matter of rereading its history, living our time in light of the wisdom of those who preceded us.

Elegance is an attitude

CEO of Larusmiani and President of Montenapoleone District, Guglielmo Miani talks about the association’s future projects and reveals his favourite places to go.

“First of all, an introductory remark: Milan is the world’s only metropolis with just one luxury shopping area, the Montenapoleone District. It is a unique feature, and the convenience of having all the most important and significant Made in Italy brands within a one kilometre range is undeniable”. Thus begins our conversation with Guglielmo Miani, who since 2010 is the President of Montenapoleone District, the association representing over 165 Global Luxury Brands and Real Estate Owners, all located in Milan’s Quadrilatero della moda that is via Montenapoleone’s fashion district. Heir, as well as president and CEO of Larusmiani, one of the fashion houses that are a symbol of Made in Italy and the oldest brand of Via Montenapoleone, he is a lover of beauty with a strong aesthetic sense and clear objectives for enhancing the luxury district. How do you manage to maintain the ”status” of this district? The Montenapoleone District –which includes the major luxury brands with a presence in its streets: Montenapoleone, Verri, Sant’Andrea, Santo Spirito, Gesù, Borgospesso and Bagutta– is today the leading destination for any refined shopper constantly searching for exclusive products, as proved by the dedicated collections of the different luxury brands which have their boutiques here.

You are promoting the culture and the city of Milan through events and activities: where did this idea come from? Any new projects ahead? This year for the very first time we will celebrate the Chinese New Year, from February 3rd to the 10th, for which we have designed street installations with an internationally renowned Chinese artist, Liu Bolin. The Chinese clientele represents the leading nationality among the district’s buyers, and organising such an event allows us to bring the Chinese and Italian cultures closer together, all while addressing a high profile target that appreciates our country’s excellence. La Scala and the Seta restaurant” Through its monthly events and activities, the Montenapoleone District strives to ensure that tourists are impressed by memorable experiences that will give them a reason to return to Milan. Knowing that there will be other programmed events could provide an excellent excuse to come back to our city as soon as possible. In April, during the Salone del Mobile (the Furniture Fair), there will be street installations; in September we will create an open-air museum with a street exhibition by a world famous photographer; and in Autumn there will be the tenth anniversary of La Vendemmia (the wine harvest), a week-long festival that offers the opportunity to tourists visiting Milan and staying in five-star hotels to access, with a VIP pass, all events organised by over 200 participating brands and wineries.

a contemporary gentleman. Aldo Lorenzi’s old workshop has been completely rebuilt in the basement floor of Larusmiani.

Milan has been selected as one of the best cities for its quality of life; what is your relationship with the city? I have lived in America and Switzerland, yet I feel truly at home here in Milan. It is a little big city with all the benefits of both a large and small community. Any suggestions for places to discover or to visit? A visit at La Scala, including its museum, is a must. Another place I cherish is the park of Villa Reale, just a few steps away from the Quadrilatero. I also recommend visiting the Bagatti Valsecchi museum, the Poldi Pezzoli museum and the Gallerie d’Italia. Finally I would suggest a trip on Lake Como, maybe adding a visit to the Barca Lariana museum, with its unique collection of over 400 boats. Do you spend time at the Mandarin? And if so, what do you like best about it? For me, the Seta restaurant is a must. Larusmiani, of which you are CEO, is a brand with a long history; how do you manage to combine tradition and modernity? Larusmiani is a brand that still hand-sews its clothes, just as its founder did, thanks to the hands of 40 master tailors. A unique savoirfaire combined with a strong textile expertise: every year our textile department produces and sells over two million metres of fabrics

How do you interpret elegance today? Elegance must start from a set of values that we all have within ourselves and that are also reflected on the outside.
